  • This study examined the food culture of the Koryo Dynasty during the early 13th century based on the records of wooden tablets and marine relics from the 1st and 2nd ships of Mado wrecked at sea off Taean while sailing for Gaegyeong containing various types of grain paid as taxes and tributes. The recipients of the cargo on the 1st ship of Mado were bureaucrats living in Gaegyeong during the period of the military regime of the Koryo Dynasty, and the place of embarkation was the inlet around Haenam (Juksan Prefecture) and Naju (Hoijin Prefecture) in Jolla-do. On wooden tablets were recorded 37 items of rice, cereal, and fermented foods. The measures used in the records were seok [石-20 du (斗)] for cereal, seok [15 du, 20 du] for fermented soybean paste, and pot (缸) and volume (斗) for salted fish. The places of embarkation on the 2nd ship of Mado were Jeongeup (Gobu Prefecture), Gochang (Jangsa Prefecture, Musong Prefecture), etc. On wooden tablets were recorded 29 items of rice, cereal, fermented foods, seasame oil, and honey. The volume measure for yeast guk (麴), the fermentative organism for rice wine, was nang [囊-geun (斤)], and the measure for sesame oil and honey, which were materials of oil-and-honey pastries and confections, was joon (樽-seong, 盛). Honey and sesame oil were luxury foods for the upper-class people of the Koryo Dynasty, and they were carried in high-quality inlaid celadon vases in Meibyung style. Food names and measures written on wooden tablets and actual artifacts found in the 1st and 2nd ships of Mado are valuable materials for research into agriculture, cereal, and fermented foods of the Koryo Dynasty in the early 13th century. Besides, relics such as grains and bones of fish and animals from the Koryo Dynasty are expected to provide crucial information usable in studies on food history of the Korean Peninsula.

  • We examined the neuroprotective and neurotrophic effects of genipin fractionated from gardenia (Gardenia jasminoides Ellis) originating from Korea. The neurotrophic effects of the genipin containing fraction was evaluated by microscopically monitoring its potency to induce neurite outgrowth in PC12h cells. The genipin containing fraction from Korean gardenia promoted neurite outgrowth in PC12h cells in this study, similar to previously reported effects by Wako Chemical, Japan. When cells were treated with the genipin containing fraction prior to ${\beta}$-amyloid peptide treatment (active domain of A peptide 25-35 treated), toxicity was significantly diminished (p<0.0l). These results suggest that genipin prepared from Korean gardenia might potentially be used as a precautionary agent in neurodegenerative disease, such as Alzheimer's disease, etc.

Dynamic equilibrium was the most appropriate principle for the new food words, followed by a priority for safety, justice, and environmental preservation. The results of this study implied that moderation and balance is required in our modern dietary life.

  • The number of North Korean refugees residing in the Republic of Korea (South) has reached 17,000, and this number is expected to exceed 20,000 (North Korean Supporter's Association, 2009). Refugees have developed improper dietary habits while hiding and escaping North Korea. They have also developed preferences for exotic food. This thesis attempts determine the changes in Korean food. This study also describes the view on South Korean food by North Korean refugees. According to our survey, women refugees had better dietary habits than men. Moreover, women and those in their 40's showed a tendency to choose food based on quality over quantity. Both men and women refugees responded that they cook food based on North Korean recipes. Those who view their current financial status as average or higher stated that South Korean food is tastier than North Korean food. Those whose financial status among North Koreans was average or higher when they lived in North Korea appreciated the splendor and beauty of South Korean food more. The results of this study are expected to assist in determining the differences in dietary habits between those from the North compared to Koreans living in the Republic of Korea. Therefore, studies between South and North Korean food should continue.

First, it is important to evaluate the leadership qualities of employees in terms of their motivation and competency. Second, it is important to evaluate the ability of employees to interface well with other employees. Third, it is important to evaluate and manage the brand image recognized by customers. Fourth, it is important to evaluate the fairness and regularity of the rewards given for an excellent job performance. Fifth, it is important to evaluate the level of communication and information distribution in the organizational culture. Last, but not least, it is important to evaluate the transparency and fairness of an organization in its human resource management (HRM) and the efficiency of its organizational structure. Using a Text mining technique, this paper discovered the trends of the literature on food tourism that was published from 2004 to 2018. The study reviewed 201 articles that include the words 'food' and 'tourism' in their abstracts in the KCI database. The Wordscloud analysis results presented that the research subjects were predominantly 'Festival', 'Region', 'Culture', 'Tourist', but there was a slight difference in frequency according to the time period. Based on the main path analysis, we extracted the meaningful paths between the cited references published domestically, resulting in a total of 12 networks from 2004 to 2018. The Text network analysis indicated that the words with high centrality showed similarities and differences in the food tourism literature according to the time period, displaying them in a sociogram, a visualization tool. This study has implications that it offers a new perspective of comprehending the overall flow of relevant research.

  • This study was carried out in order to investigate Korean food acculturation by married immigrant women and how it affects their children's eating habits. Using an in-depth interview method, 26 domestically residing married immigrant Chinese, Vietnamese, and Indonesian women in Korea were surveyed to investigate adaption to Korean food at the time of their immigration, their current dietary life, their preferred Korean food, major factors in managing their children's eating habits, etc. The results reveal that depending on the married immigrant women's country of birth, which plays an important role in a family's dietary life and health, acculturation phenomena occurred in which the specific eating habits of each country were grafted into Korean food. Furthermore, due to their school-age children's display of acceptance of both their homeland's and Korea's food culture, we believe that this can become a pivot point for non-governmental diplomacy where Korean food can be understood along with the mothers' countries.
