Effects of Korean traditional soybean fermented foods on weight reduction and lipid lowering activities were studied using Spraque-Dawley (SD) rats fed a high fat diet. The rats were raised for four weeks after adaptation period on either a normal diet (ND, based on the AIN-93 diet), high fat diet (HFD, supplemented with 12% lard oil in the ND), or diets containing 10% of freeze dried Doenjang, Chungkukjang, Kochujang, or Samjang to HFD. The final weight, food efficiency ratio (FER) and the weight of adipose tissue were decreased significantly by the consumption of Doenjang and Samjang, compared to HFD (p<0.05). The contents of cholesterol and triglyceride increased by HFD were reduced by the fermented foods in liver and perirenal fat tissues of the rats, especially Doenjang and Samjang diets showed high lipid lowering activity. And TG and cholesterol contents in the plasma serum were simillar trend to liver and perirenal fat tissue. These results suggested that Korean traditional soybean fermented foods, especially Doenjang showed the highest weight reduction and lipid lowering activities of the rats fed high fat diet.
Background: Despite the increasing role of dry forests in climate change adaptation and mitigation, these versatile resources has got less attention in the national and regional planning, their potential to enhance the local and national economy has been overlooked, and their contribution to sustainable environmental management has not been recognized. Hence, the objective of this study was to assess the socioeconomic contribution of dry forests and forest products to climate change adaptation in the Liben Woreda, Southern Oromia region of Ethiopia. Methods: For this study, an integrated qualitative and quantitative approach was used. A total of 74 households from villages in the Bulbul, Boba, and Melka-Guba kebeles were randomly selected for the household survey. Results: Results showed that 75% of the respondents in the area indicated that climate change has become their major sources of vulnerability, where drought has been manifested in the form of crops failure and massive death of livestock particularly cattle species. The main income strategies of the study households include livestock, crop, forests such as gum and resins, firewood and charcoal and non-farm activities such as in the form of petty trade, wage and aid. The average total household income was ETB 11,209.7. Out of this, dry forest income constituted 15% of the total income. In addition to using dry forests as rangeland for livestock, the communities collect wood for construction, fodder, traditional medicine, and forest food both for subsistence and for sale. On the other hand, dry forest products could be considered as less vulnerable, rather resilient livelihood strategies to climate- and environment-related risks compared to livestock and crop production such as in the face of drought periods. More than 48.6% of the households argued that the income generated from dry forests increased substantially due to increment in the level of engagement of family members in forest based income activities. On the other hand, 35.8% of the households responded that livestock production, particularly camels and goats, have been making the livelihood strategies of the respondents more resilient indicating the shift made from grazers browsers to livestock. In general trends show that, the trends of livelihood dependency on dry forest were highly increasing indicating the importance of dry forest income in responsse to frequent droughts. Conclusions: Dry forest income has been becoming crucial livelihood staretgy in response to frequent droughts in the study area and hence, it is important to improve the management of dry forests for livelihood enhancement, while also securing their long-term ecological functions.

As the global climate has dramatically changed over the past decades, there has been active research on evaluating its effects on food security, which has been recognized as one of the most important issues in the field. In this study, we analyzed the impact of the climate change on the Korean agriculture using meta-analysis methods. Especially, our research focus is on estimating the effect of CO2 concentration and two adaptations (planting-date and cultivar adjustments)on rice that accounts for a larger proportion of the Korean domestic agriculture. Unlike traditional general meta-analysis methods that use summary statistics of effects of interest, meta analysis specific to the agriculture literature was conducted by integrating the data on rice yield that were generated under various CO2 emission scenarios and general circulating models of the 6 collected individual studies. As a modeling approach, the rice yield change ratio was set as the dependent variable and the main and interaction effects of CO2 concentration and adaptation were considered as independent variables in a regression model, As a result, CO2 is estimated to have opposite effects on rice yield depending on whether any of the two adaptations is applied or not; decreasing effect without adaptation and increasing effect with adaptation. In addition, it turns out that the cultivar adjustment has a higher increasing effect on rice yield than the planting-date adjustment. The results of the study are expected to be used as basic quantitative data for establishing responsive polices to the future climate changes.
BACKGROUND/OBJECTIVES: Changes in nutritional status during gestation and lactation have detrimental effects on offspring metabolism. Several animal studies have shown that maternal high-fat diet (HFD) can predispose the offspring to development of obesity and metabolic diseases, however the mechanisms underlying these transgenerational effects are poorly understood. Therefore, we examined the effect of maternal HFD consumption on metabolic phenotype and hepatic expression of involved genes in dams to determine whether any of these parameters were associated with the metabolic outcomes in the offspring. MATERIALS/METHODS: Female C57BL/6 mice were fed a low-fat diet (LFD: 10% calories from fat) or a high-fat diet (HFD: 45% calories from fat) for three weeks before mating, and during pregnancy and lactation. Dams and their male offspring were studied at weaning. RESULTS: Dams fed an HFD had significantly higher body and adipose tissue weights and higher serum triglyceride and cholesterol levels than dams fed an LFD. Hepatic lipid levels and mRNA levels of genes involved in lipid metabolism, including $LXR{\alpha}$, SREBP-2, FXR, LDLR, and ABCG8 were significantly changed by maternal HFD intake. Significantly lower total liver DNA and protein contents were observed in dams fed an HFD, implicating the disturbed liver adaptation in the pregnancy-related metabolic demand. HFD feeding also induced significant oxidative stress in serum and liver of dams. Offspring of dams fed an HFD had significantly higher serum cholesterol levels, which were negatively correlated with liver weights of dams and positively correlated with hepatic lipid peroxide levels in dams. CONCLUSIONS: Maternal HFD consumption induced metabolic dysfunction, including altered liver growth and oxidative stress in dams, which may contribute to the disturbed cholesterol homeostasis in the early life of male mice offspring.

Research articles in food related to climate change were analyzed by implementing a text-mining algorithm, which is one of nonstructural data analysis tools in big data analysis with a focus on frequencies of terms appearing in the abstracts. As a first step, a term-document matrix was established, followed by implementing a hierarchical clustering algorithm based on dissimilarities among the selected terms and expertise in the field to classify the documents under consideration into a few labeled groups. Through this research, we were able to find out important topics appearing in the field of food related to climate change and their trends over past years. It is expected that the results of the article can be utilized for future research to make systematic responses and adaptation to climate change.
Fungal pathogens have huge impact on health and economic wellbeing of human by causing life-threatening mycoses in immune-compromised patients or by destroying crop plants. A key determinant of fungal pathogenesis is their ability to undergo developmental change in response to host or environmental factors. Genetic pathways that regulate such morphological transitions and adaptation are therefore extensively studied during the last few decades. Given that epigenetic as well as genetic components play pivotal roles in development of plants and mammals, contribution of microbial epigenetic counterparts to this morphogenetic process is intriguing yet nearly unappreciated question to date. To bridge this gap in our knowledge, we set out to investigate histone modifications among epigenetic mechanisms that possibly regulate fungal adaptation and processes involved in pathogenesis of a model plant pathogenic fungus, Magnaporthe oryzae. M. oryzae is a causal agent of rice blast disease, which destroys 10 to 30% of the rice crop annually. Since the rice is the staple food for more than half of human population, the disease is a major threat to global food security. In addition to the socioeconomic impact of the disease it causes, the fungus is genetically tractable and can undergo well-defined morphological transitions including asexual spore production and appressorium (a specialized infection structure) formation in vitro, making it a model to study fungal development and pathogenicity. For functional and comparative analysis of histone modifications, a web-based database (dbHiMo) was constructed to archive and analyze histone modifying enzymes from eukaryotic species whose genome sequences are available. Histone modifying enzymes were identified applying a search pipeline built upon profile hidden Markov model (HMM) to proteomes. The database incorporates 22,169 histone-modifying enzymes identified from 342 species including 214 fungal, 33 plants, and 77 metazoan species. The dbHiMo provides users with web-based personalized data browsing and analysis tools, supporting comparative and evolutionary genomics. Based on the database entries, functional analysis of genes encoding histone acetyltransferases and histone demethylases is under way. Here I provide examples of such analyses that show how histone acetylation and methylation is implicated in regulating important aspects of fungal pathogenesis. Current analysis of histone modifying enzymes will be followed by ChIP-Seq and RNA-seq experiments to pinpoint the genes that are controlled by particular histone modifications. We anticipate that our work will provide not only the significant advances in our understanding of epigenetic mechanisms operating in microbial eukaryotes but also basis to expand our perspective on regulation of development in fungal pathogens.
Objectives: Nowadays, the multicultural families make up significant portion of Korean population and communities. Successful re-settling in a new country can be difficult, particularly when there are disparities in dietary behavior compared to home country. The objective of the study was to investigate the dietary behavior of marriage migrant women according to their nationality in multicultural families. Methods: The primary research was conducted targeting 94 marriage migrant women who came from China (40.4%), Vietnam (26.6%), and other countries except for Japan (33.0%). We investigated their dietary behavior, such as eating attitude and food choice behavior for Korea acculturation. We also studied dietary behavior among 14 selected subjects who had high level of integration and assimilation acculturation patterns by administering the Focus Group Interview (FGI). Results: The multicultural families had more integration acculturation patterns, which could have been influenced by their nationality. Vietnamese origin has the highest cultural adaptation as marginalization pattern. The common types of Korea acculturation were integration ($3.03{\pm}1.08$), separation ($3.10{\pm}0.59$), marginalization ($3.10{\pm}0.58$), followed by assimilation ($2.84{\pm}0.51$). There were significant differences in the four types of acculturation by marriage immigrant women's country of origin (p<0.05). According to dietary behavior, 'eliminating hunger' was the most important value in a meal. Chinese marriage migrant women, who had higher level of food intake attitude significantly, also considered 'being healthy' an important value. Regarding food choice behavior, Vietnamese had lowest frequency of homeland food intake. Most of marriage immigrant women were satisfied with the Korean food, and need for education was very high with interest for cooking, good nutrition, and managing their children's dietary life. Conclusions: Coping with a change in dietary behavior is one of the biggest transitional difficulties, and family members may need support to find their familiar food items and to continue their cultural food choice behavior in the local areas. Further researches with quantitative and qualitative analysis are needed to understand the effect of dietary behavior for acculturation in multicultural families.
Effect of terrapin or snake extract on forced-swimming capacity and related biochemical parameters of SD rats was evaluated. Treatment groups were fed diet supplemented with 5% terrapin extract or 1% snake extract for 4 weeks. After adaptation for 1 week, each group was divided into two subgroups: one group swam for 90 min (90-min subgroups), and the other swam until exhaustion (all-out subgroups). No significant difference was observed in swimming time until exhaustion among the groups. After swimming for 90 min, contents of fatigue factors of serum such as lactate, inorganic phosphate, creatine kinase, and ammonia were not significantly different (p < 0.05) between control and treatment groups, including all-out subgroups, except for lactate concentration. These results indicated that terrapin or snake extract had little effect on forced-swimming capacity of rats.

This study was carried out investigate the effects of chungkukjang added with onion (OC) and chungkukjang (C) on the lipid and antioxidant metabolisms of hypercholesterolemic rats. Thirty-two male Sprague-Dawley rats were divided into four groups after 1-week adaptation period and were fed a normal diet, high fat-cholesterol diet (HC), HC-OC or HC-C for 8 weeks, respectively. The supplementation of HC-OC and HC-C groups significantly reduced hepatic total cholesterol and AST activity. HC-C group increased high density lipoprotein, while decreasing low density lipoprotein and AI compared with HC-OC group. Conjugated dienes of HC-C group was significantly lower than those of HC-OC group. $H_2O_2$ induced DNA damage reduced significantly in HC-OC and HC-C groups compared with high fat-cholesterol diet group. $H_2O_2$ induced DNA damage exhibited significant positive correlations with hepatic total cholesterol, AST and CD. These results suggested that supplementation of chungkukjang or chungkukjang added with onion might be helpful in preventing lipid oxidation and leukocytic DNA damage. However, the health beneficial effect has not improved by the addtion of onion in chungkukjang.

The objective of this study was to evaluate the effects of low temperature-adapted Saccharomyces cerevisiae Y297 and fermentation temperatures on the quality of Yakju brewed. Physicochemical properties of Yakju brewed were compared pH, total acidity, ethanol, free amino acid, organic acid contents, and volatile flavor compounds in S. cerevisiae Y297 with control treatment. Cooked non-glutinous rice and saccharogenic amylase in koji were mixed with ethanol-producing yeasts and then fermented at $15^{\circ}C$, $20^{\circ}C$, and $25^{\circ}C$ for 20 days. Yakju brewed using the Y297 treatment showed the highest ethanol yield (17.9%) at $20^{\circ}C$. Expression of heat shock protein (HSP) 104 was evaluated by immunoblotting as an indication of adaptation to low temperatures ($15^{\circ}C$); levels of the HSP104 protein were higher in the Y297 treatment than in the control. Organic acid analysis showed that the lactic acid content of Yakju brewed using the control was the highest at $25^{\circ}C$. Finally, free amino acid analysis showed that the Y297 treatment had a higher proportion of essential amino acids than the control. Overall, these results indicate that S. cerevisiae Y297 could be used as a suitable yeast for Yakju brewed under low temperature ($15^{\circ}C$) condition.
