Preparation of calcium powder from cooking skipjack tuna bone and its characteristics (자숙 가다랑어뼈로부터 칼슘제의 제조 및 특성)

  • As a part of investigation for utilizing of canned tuna processing by-products as a food resource, we examined the processing conditions and characteristics (extraction methods and ashing condition) of a calcium powder from skipjack tuna bone. Among ashing, autoclaving, and shaking methods for extraction of calcium powder from skipjack tuna bone, ashing method was superior to other methods on the aspect of fish odor, white index, and calcium recovery of calcium powder. Based on the results of white index and soluble calcium ratio, the optimal ashing temperature and time for preparation of a calcium powder from skipjack tuna bone was at $900{\circ}C for 15 min$. Cohesive ratio of calcium powder by shaking at pH 7.0 was increased up to 16 hrs, but after that almost unchanged. Cohesive ratio of calcium powder by shaking for 24 hrs was increased at neutral and alkaline conditions (pH 6-8 and pH 9-11), but almost unchanged at acidic conditions (pH 2-5). For the effective utilization of the calcium powder from skipjack tuna bone, a suitable treatment is needed for improvement of calcium solubility at neutral condition.

Comparative assessment of age, growth and food habit of the black-chinned tilapia, Sarotherodon melanotheron (Rüppell, 1852), from a closed and open lagoon, Ghana

  • Background: The black-chinned tilapia, Sarotherodon melanotheron, is the most abundant fish species in the Nakwa (an open lagoon) and Brenu (a closed lagoon) in the Central Region of Ghana. Aspects of the life history characteristics and the ecology of the fish populations in both lagoons were studied to assess the bio-ecological status of this important resource. Methods: Fish samples were obtained from fishermen that fish on the Nakwa and Brenu lagoons using cast, drag and gill nets. The age of the fish was assessed from otoliths analysis and its growth modelled following the von Bertalanffy growth function. Morphometric characteristics of the fish populations were analysed using power regression and ANOVA for parameters comparisons, and Student's t test to determine whether species grew isometrically. The percentage occurrence method was used to analyse the stomach contents of the fish. Results: A total of 382 fish samples from both lagoons were measured, comprising 209 from Nakwa lagoon and 176 from Brenu lagoon. The size and weight of fish samples ranged between 3.9-11.5 cm total length and 1.0-27.3 g for Nakwa Lagoon and 5.6-12.8 cm total length and 3.2-29.8 g for the Brenu Lagoon. The estimated von Bertalanffy growth parameters were L∞ = 12.04 cm and K = 2.76/year for the Nakwa Lagoon samples and L∞ = 13.44 cm and K = 3.27/year for Brenu Lagoon samples. Daily otolith incremental rate ranged from 0.01-0.03 mm per day to 0.01-0.02 mm per day for Nakwa and Brenu lagoons, respectively. Stomach content analysis of the fish samples revealed that the species are planktivorous and the range of food varied between the lagoons. Green algae were the most prevalent food item in the stomachs of the fish samples from Nakwa with the frequency of 69% whilst diatoms (80.5%) were most prevalent phytoplanktonic food item for the fish in Brenu lagoon. Conclusions: The estimates of asymptotic length for the species in both lagoons are close to known values of the species length at first sexual maturity and points to intensive fishing pressure. As a consequence, a comprehensive sample-based survey is required in both lagoons to derive estimates of management reference points. The results of the stomach content analysis are beneficial to the construction of diet matrix for ecosystem models of the two systems.

  • Owing to their high growth rate, marine microalgae such as Chlorella, Spirulina, Porphpidium and Dunaliella have been believed to be potentially useful for the production of foods, drugs and energy from light, $CO_2$ and minerals. In this study, we investigated the relationship between the growth and fatty acid composition in the blue green alga Spirulina platensis when the temperature and light intensity of culture conditions were changed. The optimal growth conditions for Spirulina platensis from the biomass and lipid contents were $30^{\circ}C$ on 6391 $\mu$E/$m^3$/sec and $35^{\circ}C$ on 4235 $\mu$E/$m^3$/sec. The difference of lipid contents between exponential phase and stationary phase were very large according to growth conditions. According to growth conditions the fatty acid compositions of Spirulina platensis differed, but regardless of growth conditions the main fatty acids were C16 : 0 and C20 : 0 in saturated fatty acid, C16 : 1, C18 : 1 and C 18 : 2 in unsaturated fatty acid.

A Study on Objective and Content Domains of Marine Education in the Fish and Marine High School (수산·해운계 고등학교 해양교육의 목표영역과 내용영역에 관한 연구)

  • In this research, there was an investigation about the objective and content domains concerning marine education in the Fish and Marine High School. Also, validity and guidance level on the classification were analyzed. According to the analysis, analyzing guidance level of Marine related contents which are included in school marine education is as follows. There are 971 information and knowledge domains, 710 skill domains, 5 value and attitude domains and 8 behavior and participation domains in the objective domain in school marine education. The number of the knowledge domains was most while attitude domains was least. Content domain of school marine education consists of 774 ocean human and marine ecology domains, 461 artificial marine environment and facility domains, 290 marine resource domains, 76 marine pollution domains, 123 marine conservation and measure domains. So, ocean human and marine ecology domains were most while ethics of marine conservation domains were not included.

  • The fusion type human resources, it is a new human resources to scientific and technical information society of the future demands, and means to enjoy life with a creativity and expertise of fusion of various fields, to communicate in consideration of others. Fusion human resource education(STEAM), of "human resources to practice respect and compassion", "human resources equipped with communication skills", "human resources to pursue creativity and innovation" "human resources to understand the knowledge of the fusion to take advantage" in training I have presented to the area of core competence of the 4C 'Creativity"," Communication","Convergence', 'Caring'. In this study, the area of c ore competency for each element by elementary, middle, and high schools around the analysis of the target can be made by each school level to develop a practical program in the sense of basic research is to conduct. The findings are as follows: First, Area of Creativity, communication area, the contents fusion region, as well as care areas, to the detailed item capacity, the design of the class that contains the entire area should be performed. Second, Elementary and secondary school level analysis, design of the class containing the entire region up to capacity detail is required. High school was required study of school full of normal. Third, In general, for STEAM class environment and teaching model was developed by applying operations. Research and methods of teaching a wider variety of form was required. Later in this study is to develop programs and organize. and It intends to become the base to be able to interest and interest in science education by structured around the status of problems that can be found in the life of around themes STEAM.

  • In order to examine the mesh selectivity and optimum mesh size of gill nets for croaker, Milichthys miiuy, the field experiments were carried out during Aug. 10 to 14, 2002 and Aug. 10 to 17, 2003 at the caostal area of Imja-Do, Shinan, Jeonnam province. The experimental fishing gears were used in two set of gill nets, which one set was consisted of 12 sheets of gill nets, and each set was connected alternatively 4 different sheets that were 129mm, 135mm, 144mm and 150mm in mesh size. The analysis of mesh selectivity curve was done by Kitahara's method. The results obtained are summerized as follows : 1. The total number of catch by the experimental fishing of gill nets for croaker was 719, and it was consisted of 526 croakers (73.1%), 168 blue crabs (23.4%), 17 harvest fishes (2.4%) and 8 other fishes (1.1%). 2. The value of maximum 1/m on the mesh selectivity curve was estimated at 6.91. 3. The value of 1/m on the 50% selection range was estimated at 5.62${\sim}$80.3, and the selection width was 2.41. 4. The optimum mesh size of gill nets for croaker was estimated 142mm, and the 50% selection range of total length of croaker was 798${\sim}$1,140mm.

Characterization of Calcium Lactate Prepared from Butter Clam Saxidomus purpuratus Shell Powder (개조개(Saxidomus purpuratus) 패각분말로부터 젖산칼슘의 제조 및 특성)

  • To facilitate the effective use of butter clam shell as a natural calcium resource, we determined the optimal conditions for calcium lactate (BCCL) preparation with high solubility using response surface methodology (RSM). The polynomial models developed by RSM for pH, solubility and yield were highly effective in describing the relationships between factors (P<0.05). Increased molar ratios of calcined powder (BCCP) from butter clam shell led to reduced solubility, yield, color values and overall quality. The critical values of multiple response optimization to independent variables were 1.75 M and 0.94 M for lactic acid and BCCP, respectively. The actual values (pH 7.23, 97.42% for solubility and 423.22% for yield) under optimization conditions were similar to the predicted values. White indices of BCCLs were in the range of 86.70–90.86. Therefore, organic acid treatment improved color value. The buffering capacity of BCCLs was strong, at pH 2.82 to 3.80, upon the addition of less than 2 mL of 1 N HCl. The calcium content and solubility of BCCLs were 6.2–16.7 g/100 g and 93.6-98.5%, respectively. Fourier transform analysis of infrared spectroscopy data identified BCCL as calcium lactate pentahydrate, and the analysis of microstructure by field emission scanning electron microscopy revealed an irregular form.

Endoprotease and Exopeptidase Activities in the Hepatopancreas of the Cuttlefish Sepia officinalis, the Squid Todarodes pacificus, and the Octopus Octopus vulgaris Cuvier

  • This study examined and compared the exopeptidase and endoprotease activities of the hepatopancreas (HP) of cuttlefish, squid, and octopus species. The protein concentration in crude extract (CE) from octopus HP was 3,940 mg/100 g, lower than those in CEs from squid HP (4,157 mg/100 g) and cuttlefish HP (5,940 mg/100 g). With azocasein of pH 6 as a substrate, the total activity in HP CE of octopus was 31,000 U, lower than the values for cuttlefish (57,000 U) and squid (69,000 U). Regardless of sample type, the total activities of the CEs with azocasein as the substrate were higher at pH 6 (31,000-69,000 U) than at pH 9 (19,000-34,000 U). With L-leucine-p-nitroanilide (LeuPNA) of pH 6 as the substrate, the total activity of the HP CE from octopus was 138,000 U, higher than values from both cuttlefish HP (72,000 U) and squid HP (63,000 U). Regardless of sample type, the total activities of the CEs with LeuPNA as the substrate were higher at pH 6 (63,000-138,000 U) than at pH 9 (41,000-122,000 U). With LeuPNA as the substrate, the total activities of the CEs from octopus HP and cuttlefish HP were higher at pH 6 than at pH 9. However, there was no difference in total activity between pH 6 and 9 for squid HP CE with LeuPNA as the substrate. These results suggest that the octopus HP is superior to the cuttlefish HP and squid HP as a potential resource for extracting exopeptidases. Exopeptidases from octopus HP have potential industrial applications and their use might aid in reducing pollution related to the octopus industry.

Quality Changes of Seasonning Material of the Mixture of Laminaria and Enzyme Treated Mackerel Meat during Storage (다시마와 효소처리 고등어육 조미소재의 저장중 품질 변화)

  • In this study, the quality stability of a kind of natural seasoning material, the mixture of enzyme treated mackerel meat and Laminaria powder during the storage was investigated by measuring the TBA(thiobarbituric acid)value, extend of browning, changes in amino nitrogen and chlorophyll a, and fatty acid composition, and the results of sensory evaluation. Addition of sodium alginates (0.08%) and calcium carbonate (0.02%) seemed effective as a binder to yield clarity of the hot water extract of the product. In results, the mixture of Laminaria powder and the enzyme treated mackerel meat added with 0.08% sodium alginate and 0.02% calcium carbonate was more stable in overall quality than the other cases of preparation. And the taste of the mixture could favorably compete with that of dried anchovy extracts.

  • 유류오염 사고를 사전에 예방할 수 있는 정책 수단으로는 여러 가지가 있지만 주요한 것으로는 인센티브제의 활용을 들 수 있다. 유류오염 사고를 예방하고 관리하기 위한 인센티브는 유출 사고로 인해 발생한 해양자원의 피해에 대해 가해자에게 배상책임(liability for losses due to spills)을 부과함으로써 제공될 수 있다. 유류오염 사고로 인한 피해액을 실제 화폐단위로 계량화하는 작업은 배상책임 부과제도를 정책수단으로 활용하기 위해 해결해야 할 가장 어려운 과제이다. 따라서, 최근 미국과 캐나다를 중심으로 발전하고 있는 자연자원 피해에 대한 가치 평가법(Natural Resource Damage Assessment : NRDA)은 배상책임 부과제도를 정책적으로 보완할 수 있는 이론적 도구로 간주되고 있다. NRDA는 잠재적인 가해자들에게 그들이 자연환경을 보존해야 하는 사회적 의무를 이행하지 못하고 이를 훼손하게 될 때 이로 인해 발생하는 모든 사회적 비용을 직접 부담해야 한다는 명확한 재무적 인센티브(financial incentive)를 부여함으로써 가해자 보상 원칙 (polluter pays principle)을 실현 할 수 있게 한다. 본 연구는, 유류오염 사고로 인한 환경자원 피해의 경제적 가치를 추정하는 가장 중요한 이론적 모형으로 활용되고 있는 가상상황평가법(CVM)에 대한 기초 개념과 이론적 체계, 그리고 이를 실제 피해액 추정에 성공적으로 적용시키기 위해 해결해야 할 문제점 등을 다루었다. 이를 위해, 본 연구에서는 1988년 캐나다 북서부 연안에서 발생한 Nestucca 유류오염 사고를 사례연구의 대상으로 선정하고, 사고 당시 캐나다 연방정부와 British Columbia 주정부를 대신하여 해양오염에 의한 환경피해의 경제적 가치를 추정한 미국의 컨설팅 회사인 RCG/Hagler, Baily Inc.의 가상상황평가법(CVM) 적용 사례를 분석 검토하였다. Nestucca 사례연구에서는 이들 연구자들이 실제로 활용한 설문지 설계, 설문방법 및 표본설계 등을 분석하였으며, 또한 CVM이 본질적으로 갖고 있는 방법론적 문제점들을 연구자들이 어떻게 해결하려고 했는가를 고찰하였다. 그리고, WTP 추정을 위해 RCG 연구자들이 사용한 사전규제접근법(ex ante regulatory approach)으로 인해 야기될 수 있는 환경자원 피해액 추정 방법의 한계점도 함께 검토하였다. 캐나다 연방정부와 British Columbia 주정부는 Nestucca 유류오염 사고로 인한 자연 자원 피해에 대한 손해배상으로 $4.3 Million의 보상금을 지급 받게 된다. 캐나다 정부는 이 보상금으로 Nestucca Oil Spill Trust Fund를 설립하여 피해를 입은 자연자원의 원상회복(restoration)을 위한 다양한 연구 프로젝트에 자금을 지원하고 있다. Nestucca 유류오염 사고를 계기로 캐나다 정부와 학계는 해양자원의 피해에 대한 경제적 가치평가와 자원의 원상회복에 대한 체계적인 접근 방안을 처음으로 마련 시행하게 되었다는 점에서, Nestucca 유류오염 사고에 대한 사례연구는 캐나다의 해양환경 보존 정책을 연구하는 출발점으로 평가될 수 있을 것이다. 이에 비해, 우리나라에서 대표적인 유류오염사고로 알려져 있는 시프린스호 사고와 관련된 손해배상금은 주로 연안어민들의 어업피해 배상으로 이루어져 있으며, 간접피해에 대한 배상액 48억 5천만원도 대부분 치어방류, 여수대학교 종묘배양장건립 등 피해지역 연안어업 발전을 위한 사업에 투자되었다.
