Feature Analysis for Fisheries Electronic Catalog′s Standards (수산물 전자카탈로그 표준화를 위한 속성 분석)

  • Recently, the number of Internet shopping malls increases dramatically Internet shopping malls offer direct sales by electronic catalogs. As compared with to physical stores and paper catalogs, electronic catalogs differ in terms of the varieties and types of products offered, promotional efforts, service, interface, ordering and delivering, and so on. This paper analysed the features of electronic catalogs for fisheries by 45 variables. By descriptive statistics of electronic catalogs for fisheries, most electron)c catalogs had sufficient product related information. But promotion and transaction security related features were scarce. And some development technologies of electronic catalogs for fisheries were obsolete. By factor analysis, there were 9 factors of electronic catalogs for fisheries, that was, design of product pages, transaction information, playfulness, convenience of product selection, interface design, design of homepages, product information, learning capability, other electronic catalog related factor. Thus in standardizing electronic catalog for fisheries products, the above 9 factors should be reflected significantly.

Validation of Korean Meat Products and Processed Cheese for the Detection of GMO using p35S and tNOS Primers

  • In this study, 543 samples of press hams, sausages, processed ground meat and processed cheese acquired from retail markets in Seoul and Gyeonggi province in Korea from 2005 to 2010 were monitored using a one-step multiplex polymerase chain reaction (PCR) method that involves the amplification of specific soya or maize endogenous genes and the amplification of 35S promoter (p35S) and nopaline synthase terminator (tNOS) for GMO detection. Among the 543 samples, 477 samples were amplified for maize and/or soybean endogenous genes. Although one sausage sample collected in 2008 showed amplification of tNOS, the result was assumed to be false positive based on the results from further tests of other sausage samples of the same brand. Our results demonstrate the absence of GM soya and/or maze of livestock products in the Korean market during 2005-2010. In addition, the one-step multiplex PCR using previously constructed primer sets appears to be useful as a screening method for the detection of GMOs in processed livestock products. However, more specific methods should be established and employed to detect the event-specific GM gene for positive reaction samples by screening tests in processed livestock products.

Tuna by-product meal as a dietary protein source replacing fishmeal in juvenile Korean rockfish Sebastes schlegeli

  • This study was conducted to evaluate the use of tuna by-product meal (TBM) as a substitute for fishmeal in juvenile Korean rockfish (Sebastes schlegeli) diets. Five isonitrogenous (52% crude protein) and isocaloric (4.9 kcal/g) diets were prepared. Control diet (Con) was formulated to contain brown fishmeal, whereas 25, 50, 75, and 100% of fishmeal was substituted with the same percentage of TBM in the TBM25, TBM50, TBM75, and TBM100 diets, respectively. Three replicate groups of fish (initial weight, $29.5{\pm}0.6g$) were fed one of the five diets for 12 weeks. The mean weight gain of fish fed the Con and TBM25 diets was significantly higher than that of fish fed the TBM100 diet (P < 0.05), but it was not significantly different from the weight gain of fish fed the TBM50 and TBM75 diets. The feed efficiency and protein efficiency ratios of fish fed the Con diet were significantly higher than those of fish fed the TBM100 diet (P < 0.05), but were not significantly different from those fed the TBM25, TBM50, and TBM75 diets. The TBM25, TBM50, TBM75, and TBM100 diets had significantly (P < 0.05) lower incidence cost and higher profit index than the Con diet. These results suggest that the tuna by-product meal used in this study could replace up to 75% of fishmeal protein in the diet without reducing growth and feed utilization in juvenile Korean rockfish weighing 29-53 g. By considering feed cost, the TBM 75 diet is recommendable for Korean rockfish farming.

  • Post-harvest handling and hygienic level of aquatic products significantly affect the quality and level of safety. Cold chain control is one of the determining factors for the quality of fish and the bacterial community that grows on the fish. Identification of spoilage bacteria and pathogens in aquatic products must be made because it will determine the physical and chemical quality. A molecular identification method with high sensitivity is the solution. This study aims to identify the quality of fish and bacterial communities that grow. The research procedures included sample collection, pH measurement, drip loss measurement, transportation and cold storage treatment, DNA extraction, DNA sequencing, sequence analysis, and bioinformatics analysis. The conclusion obtained from this study is that the simulation of the cold chain system applied to eastern little tuna does not significantly affect changes in the water activity value, pH, and drip loss. The insignificant change indicates that the eastern little tuna samples are still in good quality. The bioinformatics analysis showed the highest diversity and abundance of the bacterial community came from the Gammaproteobacterial class.

  • This research aims to evaluated the structure improvement and new product development of valve tester. A valve tester was redesigned for structure improvement and new product development using 3-D design program CATIA. In addition, behavior analysis was conducted on the modeled valve tester using the ANSYS program. The total deformation, stress and strain were obtained by the internal pressure change. This result was applied to the new product development of valve tester.

  • In order to enhance consignment sale businesses of fisheries cooperatives, it is needed to seek measures to accept needs of customers who use the fisheries cooperatives consignment sale market by examining recognition of fishermen. Thus, the purpose of this study is to develop measurement items and scales of the consignment sale factors for fishermen of the fisheries cooperatives port consignment sale market, and to determine the difference between consignment sale factors importance and satisfaction of fishermen. For this, it conducted a survey targeting fishermen who use the fishery product port market consignment sale of the oyster hanging fisheries cooperatives. It used the Importance-Satisfaction Analysis (ISA) for an analysis tool.

  • Some multi echelon inventory systems carry perishable products. The value of these product reduces as the period of time they spend in the system. In this paper We derive the necessary condition to determine optimal quantity, service level for a perishable product. The systems considered consist of two echelons and carry single item. To determine the optimal order quantity, the demand is assumed to be constant, the holding costs may be different in the echelons, and it allows no shortages. I assumed the price of product decreases by negative exponential function. To determine service level, following assumptions used in the model ㆍlead time is constant. ㆍdemand is normal distribution. ㆍthe product starts to perish at the second echelon. Service level is computed for different levels of lead times and for different variance of demands and for different price functions. The experimental results indicate that the service level in cost is a function of service level in demand and perishability of product. Results of the models exhibit that perishability and the age of the product are critical to determine the lot sizing and service level.

  • In addition to simply providing quality food to the people, the fishery industry must be maintained and developed because it has various functions such as national food security, preservation of natural scenery, protection of national territory, and revitalization of the local economy. However, risk factors such as climate changes and environmental destruction have raised concerns about the sustainable development of the industry. Since these risk factors are becoming larger and more complex over time, it is time to conduct research related to the risk of the fishery industry. Therefore, the purpose of this study is to explore the risk factors facing the fisheries at this point, to analyze the economic ripple effect of regional fishery product supply shortage, and to draw implications. As a result of this study, the economic ripple effect of fishery product shortage per won was highest in Busan, followed by Gangwon, Gyeongnam, and Gyeongbuk. Considering the size of the local fishery industry, Busan had the highest supply shortage per 1% of local fisheries production. It is also necessary to prepare special risk management and countermeasures for these regions since the effect of supply shortage in regions such as Jeonnam, Gyeongnam, and Jeju is large compared to other regions.

  • In this part of the studies on dielectric dehydration of foamed fish-starch paste, qualify stability and shelf-life of the product of which the preparation formula and processing conditions were described in previous report (Lee et al, 1982) were determined by means of accelerated reaction test. The product was stored for 50 days under the conditions of temperatures at 35, 45, and $55^{\circ}C$ in steady state and various water activities of 0.44, 0.52, 0.65, and 0.75, respectively. The loss of available lysine, extent of TBA value, and development of browning during the storage were measured and reaction kinetically analysed to assess quality stability and shelf-life of the product for the storage at room temperature of $25^{\circ}C$. Extent of browning was accelerated with the increase of water activity and temperature marking the time to reach a limit of color and flavor deterioration, or to reach brown color density of 0.17 O.D./g at 420 nm, 106 days at aw=0.44, $35^{\circ}C$, and 41 days at aw=0,65, $55^{\circ}C$, These reaction rates resulted in a prediction of shelf-life, 130 to 110 days in the storage at aw=0.44 to 0.75, $25^{\circ}C$. The quality limit assessed by TBA values and sensory evaluation of rancidity was 87 days at aw=0.44, $35^{\circ}C$, and 30 days at aw=0.75, $55^{\circ}C$ which gave a predicted shelf-life, 128 to 113 days . at aw=0.44 to 0.75, $25^{\circ}C$ storage.

  • In this paper we aim to find out consumer behavior based on fish shares in their buying ingredients, path segmentation, product and service quality, customer satisfaction and then we try to analyze the impact of them on each consumer buying behavior. In this study, first, consumers, divided by general merchandise retail store and traditional fish retail store, these also divided by two groups that are with high spending group and low spending group, so totally we have four parts of consumer behavior segmentation market profiles. Second, we analysis the affect of each factor on consumer behavior. That is, we try to analysis the effect of product and service quality on customer satisfaction in four seafood market group.
