뱀장어(Anguilla japonica)용 사료 기능성 첨가제로써의 발효 혈분 이용성 평가 (Evaluation of Fermented Blood Meal as a Functional Additive in the Diet of Japanese Eel Anguilla japonica)

  • The effects of dietary supplementation with fermented blood meal (FBM) in two forms were evaluated on the growth performance, hematological parameters, innate immune response, antioxidant capacity, digestive enzyme activity and intestinal histology of Japanese eel Anguilla japonica. A commercial powder feed was used as a basal diet (Con). Six other diets were prepared by supplementing 2, 4 and 6% FBM either in powder or liquid form to the Con diet (designated as P2, P4, P6, L2, L4 and L6, respectively). In total 420 eels (initial mean body weight: 55.1±1.71 g) were distributed into 21 tanks (450L) at a density of 20 eels per tank. Three replicate groups of fish were fed one of the seven diets twice daily for 12 weeks. No significant differences were observed in the growth performance and survival among all groups. Fish fed FBM-containing diets showed significantly improved hematological parameters, innate immunity and antioxidant capacity than those in the Con group. Fish fed FBM-containing diets showed significantly enhanced digestive enzyme activity, villus length and goblet cells than those in fish fed Con diet. These results indicate that both powder and liquid FBM could be a good functional feed additive to improve innate immunity and digestion in Japanese eel.

Effects of Feeding Solid-state Fermented Rapeseed Meal on Performance, Nutrient Digestibility, Intestinal Ecology and Intestinal Morphology of Broiler Chickens

  • This trial was conducted to determine the effects of feeding a diet containing solid-state fermented rapeseed meal on performance, nutrient digestibility, intestinal ecology and intestinal morphology of broiler chickens. A mixed liquid culture, containing approximately 5 log cfu/ml Lactobacillus fermentum, Enterococcus faecium, Saccharomyces cerevisae and Bacillus subtilis was prepared in a 1:1:1:1 ratio. A basal substrate (BS) containing 75% rapeseed, 24% wheat bran and 1% brown sugar was mixed with the liquid culture in a ratio of 10:3. Over the 30-day fermentation, isothiocyanates were reduced from 119.6 to 14.7 mmol/kg. A total of 168, day-old male Arbor Acres broiler chicks were assigned to one of three dietary treatments including a corn-soybean meal based control diet as well as two experimental diets in which the control diet was supplemented with 10% of the BS containing unfermented rapeseed meal or 10% of the BS containing rapeseed meal subjected to solid state fermentation. There were 8 pens per treatment and 7 birds per pen. From days 19-21 and days 40-42, uncontaminated excreta were collected from each pen for digestibility determinations. In addition, digesta from the colon and ceca were collected to determine the number of lactobacilli, enterobacteria and total aerobes. The middle sections of the duodenum, jejunum, and ileum were collected for intestinal morphology. Over the entire experimental period (d 1-42), the weight gain and feed conversion of birds fed fermented rapeseed meal were superior (p<0.05) to that of birds fed nonfermented rapeseed meal and did not differ from the soybean control. On day 42, birds fed fermented rapeseed meal had higher (p<0.05) total tract apparent digestibility coefficients for dry matter, energy, and calcium than birds fed non-fermented rapeseed meal. Colon and ceca digesta from broilers fed the fermented feed had higher (p<0.05) lactobacilli counts than birds fed the control and non-fermented rapeseed meal diets on day 21 and 42. Fermentation also improved (p<0.05) villus height and the villus height:crypt depth ratio in the ileum and jejunum on day 21 and 42. The results indicate that solid-state fermentation of rapeseed meal enhanced performance and improved the intestinal morphology of broilers and may allow greater quantities of rapeseed meal to be fed to broilers potentially reducing the cost of broiler production.

Effects of Dietary Fermented Seaweed and Seaweed Fusiforme on Growth Performance, Carcass Parameters and Immunoglobulin Concentration in Broiler Chicks

  • This study was conducted to investigate the effects of brown seaweed (Undaria pinnatifida) by-product and seaweed fusiforme (Hizikia fusiformis) by-product supplementation on growth performance and blood profiles including serum immunoglobulin (Ig) in broilers. Fermentation of seaweeds was conducted by Bacillus subtilis and Aspergillus oryzae. In a 5-wk feeding trial, 750 one-d-old broiler chicks were divided into 5 groups, and were assigned to the control diet or experimental diets including control+0.5% brown seaweed (BS) by-product, control+0.5% seaweed fusiforme (SF) by-product, control+0.5% fermented brown seaweed (FBS) by-product, and control+0.5% fermented seaweed fusiforme (FSF) by-product. As a consequence, body weight gain (BWG) and gain:feed of seaweed by-product groups were clearly higher, when compared to those of control diet group from d 18 to 35 and the entire experimental period (p<0.05). In mortality rate, seaweed by-product groups were significantly lower when compared to control diet group during entire experimental period (p<0.05). However, Feed Intake of experimental diets group was not different from that of the control group during the entire experimental period. Whereas, Feed Intake of fermented seaweed by-product groups was lower than that of non-fermented seaweed groups (p<0.05). Total organ weights, lipids, and glutamic oxalacetic transaminase (GOT) of all treatment groups were not different from those of control group. However, glutamic pyruvate transaminase (GPT) of all treatment groups was higher than that of control group at d 17 (p<0.05). In case of serum Igs concentration, the concentration of IgA antibody in BS, SF, FSF treatment groups was significantly higher than in control group at d 35 (p<0.01). IgA concentration in FBS supplementation groups was negligibly decreased when compared to the control group. IgM concentration in the serums of all treatment groups was significantly higher than in control group (p<0.05) and in fermented seaweed by-product groups were much higher than in non-fermented seaweed groups (p<0.05). On the other hand, IgG concentrations in all treatment groups were lower than in control group (p<0.05). Taken together, our results suggest that by-product dietary supplementation of BS, SF, FBS, and FSF in poultry may provide positive effects of growth performance and immune response.

Effects of Dietary Supplementation of a Meju, Fermented Soybean Meal, and Aspergillus oryzae for Juvenile Parrot Fish (Oplegnathus fasciatus)

  • In this study, dietary supplementations of Korean Meju, fermented soybean meal (F-SBM) by Aspergillus oryzae, and A. oryzae itself were evaluated on growth performance, feed utilization, immune responses and phosphorus availability in juvenile parrot fish, a marine aquaculture fish species. Four isonitrogenous and isocaloric diets were formulated to contain 8% soybean meal (control diet), 4% Meju (50% soybean meal was replaced by Meju), 4% F-SBM (50% soybean meal was replaced by F-SBM), or 0.08% A. oryzae itself. One of the four experimental diets was fed to triplicate groups of fish for 8 weeks. At the end of the feeding trial, no significant differences were found in growth performances and feed utilization. Red blood cell counts in the fish fed the A. oryzae diet were significantly higher than that of fish fed the control diet. The antioxidant activity in Meju diet was significantly higher than that of the control and A. oryzae diets. Fish fed Meju and F-SBM diets showed numerically higher antioxidant activity of serum compared to that of fish fed the control diet, even though it was not significant. Liver superoxide dismutase activity of fish fed the test diets was significantly higher than that of fish fed the control diet. The apparent digestibility coefficients of protein of fish fed all the diets were not significantly different. Phosphorus absorption was numerically increased in fish fed F-SBM and A. oryzae diets compared to that of fish fed the control diet. This study indicates that the fermentation process of soybean meal does not impair growth performance and feed utilization in parrot fish. The fermentation process could enhance the availability of phosphorus in soybean meal and non-specific immune responses of parrot fish.

연근의 성분분석 및 연근 발효음료의 기능성 평가 (Study on the Chemical Composition of Lotus Root and Functional Evaluation of Fermented Lotus Root Drink)

  • 본 연구에서는 연근의 건강식품 소재로서의 활용가능성을 확인하기 위하여 연근의 성분분석 및 연근을 이용하여 만든 연근음료 및 연근 발효음료의 항산화효과를 비교하였으며, 고지방식이를 공급한 흰쥐에게 연근음료 및 연근발효음료를 7주간 공급하여 혈청의 지방대사에 미치는 영향을 검토하여 다음과 같은 결과를 얻었다. 연근음료 및 연근발효음료는 1%에서 각각 25.55%, 23.88%의 항산화 활성을 나타내었고, 10%에서는 각각 87.5%, 95.81%로 항산화 활성이 매우 높게 나타났다. 또한 아질산염 분해활성은 pH 3.0 및 pH 6.0에서 연근음료의 경우 24.97%, 23.73%의 아질산염 분해활성을 나타내었으며, 연근발효음료도 음료의 농도에 비례하여 아질산염 분해활성이 증가하는 경향을 보였다. 고지방식이를 먹인 흰쥐에게 연근음료 및 연근발효음료를 7주간 병행 공급하였을 때 1일 체중증가량은 고지방식이 급여 대조군에 비해 감소하였으나 유의적이지는 않았다. 식이효율은 고지방식이를 급여한 실험군 모두가 정상군에 비해 유의적인 증가를 나타내었다. 체중 100g당 간의 무게는 고지방식이 급여 대조군에 비해 연근음료 투여군은 11.6%, 연근발효음료 투여군은 9.9% 감소하였으나 유의적이지는 않았다. 혈액 중 총 지방함량과 중성지방 함량은 연근음료와 연근발효음료 급여 시 고지방식이 급여 대조군에 비해 유의적인 차이가 나타나지 않았다. 혈액 중 총콜레스테롤 함량은 연근음료 및 연근발효음료 공급 시 고지방식이 급여 대조군에 비해 유의적인 감소를 나타내었으나 음료 종류에 따른 유의적인 차이는 나타나지 않았다.

뱀장어(Anguilla japonica) 자어 먹이로 유기물 분해산물의 활용 가능성 (Fermented Organic Matter as Possible Food for Rearing Anguilla japonica Leptocephali)

  • 본 연구에서는 BFT (biofloc technology) system 수조로부터 분리된 미생물(Bacillus sp.)을 이용하여 Marine snow와 유사한 유기물 분해산물을 만들어 뱀장어 자어먹이로 활용 가능성을 조사하였다. 유기원으로는 계란, 참다랑어, 뱀장어, 담치, 갯지렁이, 멍게, 바지락 그리고 새우를 이용하여 8 종류의 유기물 분해산물(HE, TM, EM, PC, TA, MS, HA, SP)를 생산했다. 생산된 유기물 분해산물은 특정한 형태는 나타나지 않았으며, 크기도 $10-20{\mu}m$의 미세한 것부터 $100{\mu}m$ 이상 되는 것까지 다양하였다. 부화 후 20일부터 다양한 유기물 분해산물을 이용하여 제조한 4 종류의 먹이(A, B, C, D-type)를 급이한 결과 A, B, C-type의 먹이를 급이한 뱀장어 유생은 각각 부화 후 37일, 39일, 37일까지 생존하였으나, D-type의 먹이를 급히한 뱀장어 유생은 부화 후 60일 동안 생존하였다. 각 먹이의 단백질 함량은 비슷하였지만, D-type 먹이의 n-3 HUFA 농도는 다른 type의 n-3 HUFA 농도보다 약 2배 높았다.

Evaluation of FSP (Fermented Soy Protein) to Replace Soybean Meal in Weaned Pigs: Growth Performance, Blood Urea Nitrogen and Total Protein Concentrations in Serum and Nutrient Digestibility

  • A total of one hundred and forty four weaned pigs with an average BW of $8.09{\pm}0.05$ kg were used in a 28 day study to investigate the effects of fermented soy protein on growth performance, blood urea nitrogen and total protein concentrations in serum and nutrient digestibility in weaner pigs. Pigs were blocked by initial body weight and randomly allocated to one of four dietary treatments in a randomized complete block design. There were six replications per treatment. Dietary treatments included: SBM (corn-soybean meal basal diet), F 5, 10 and 15 (fermented soy product was used at 5, 10 and 15% to replace soybean meal in basal diet, respectively). ADG (average daily gain) and ADFI (average daily feed intake) were not affected (p>0.05) by dietary treatments during the entire 4-wk study period. There were linear increments in feed efficiency (p<0.01) as the dietary FSP level increased during the entire feeding period. No significant differences were observed for dry matter and nitrogen digestibility during the experimental period (p>0.05). Digestibilities of histidine, lysine and methionine were increased as the FSP level increased (linear effect, p<0.05, p<0.01). Among non-essential amino acids, alanine, glutamic acid, serine, tyrosine and total non essential amino acid digestibilities were increased linearly (p<0.05, p<0.01). There were quadratic effects in protein digestibility (p<0.05). Total amino acid digestibility of the F15 diet was improved compared with the F5 diet (p<0.05). There were no significant differences in fecal consistency score among the treatments (p>0.05). At the end of experiment, BUN (blood urea nitrogen) concentration was increased as the FSP level increased (linear effect, p<0.01) and total protein concentration was lowest (p<0.05) for pigs fed the SBM diet among treatments. In conclusion, the feeding of 10 or 15% FSP to nursery pigs improved feed efficiency, amino acid digestibility and blood urea nitrogen and total protein concentrations in blood.

Evaluating Nutritional Quality of Single Stage- and Two Stage-fermented Soybean Meal

  • This study investigated the nutritional quality of soybean meal (SBM) fermented by Aspergillus ($FSBM_A$) and/or followed by Lactobacillus fermentation ($FSBM_{A+L}$). Both fermented products significantly improved protein utilization of SBM with higher trichloroacetic acid (TCA) soluble true protein content, in vitro protein digestibility and available lysine content, especially in $FSBM_{A+L}$. Moreover, $FSBM_{A+L}$ produced a huge amount of lactic acid resulting in lower pH as compared to the unfermented SBM or soybean protein concentrate (SPC) (p<0.05). $FSBM_A$ and $FSBM_{A+L}$ raised 4.14% and 9.04% of essential amino acids and 5.38% and 9.37% of non-essential amino acids content, respectively. The ${\alpha}$-galactoside linkage oligosaccharides such as raffinose and stachyose content in $FSBM_A$ and $FSBM_{A+L}$ decreased significantly. The results of soluble protein fractions and distribution showed that the ratio of small protein fractions (<16 kDa) were 42.6% and 63.5% for $FSBM_A$ and $FSBM_{A+L}$, respectively, as compared to 7.2% for SBM, where the ratio of large size fractions (>55 kDa, mainly ${\beta}$-conglycinin) decreased to 9.4%, 5.4% and increased to 38.8%, respectively. There were no significant differences in ileal protein digestibility regardless of treatment groups. SPC inclusion in the diet showed a better protein digestibility than the SBM diet. In summary, soybean meal fermented by Aspergillus, especially through the consequent Lactobacillus fermentation, could increase the nutritional value as compared with unfermented SBM and is compatible with SPC.

FUNCTIONAL PROPERTIES OF SAENGSIK (SUBSTITUTE MEAL) FORMULATED WITH UNCOOKED CEREALS FERMENTED BY LACTIC ACID BACTERIA

  • The objective of this study was to improve the qualities of Saengsik (substitute meal formulated with uncooked cereal powder) such as functionality, safety and sensory preference by using Lactic Acid Bacteria (LAB). The optimum formulation of fermented Saengsik (substitute meal) was verified as $40\%$ of fermented brown rice, $13\%$ of fermented job tears, $5\%$ of yellow soybean, $5\%$ of waxy rice, $5\%$ of sorghum, $3\%$ of Seumok bean, $1\%$ of sesame, $3\%$ of barley, $2\%$ of red bean, $5\%$ of prosomillet, $2\%$ of foxtail millet, $9%$ of black rice, $3\%$ of buckwheat, $1\%$ of chestnut, $2\%$ of pumpkin, $3\%$ of peanut. Fermented Saengsik decreased significantly serum glucose in STZ-induced diabetic rats. However, serum lipid levels were not affected by fermented Saengsik. In rats fed with high-fat diet, serum triglyceride level was slightly decreased and the contents of liver triglyceride were significantly decreased by supplementation of fermented Saengsik.

여러 제형의 홍국발효 홍삼박을 산란계 사료에 첨가시 난각과 난황 특성에 미치는 영향 (Effects of Feeding Various Types of Fermented Red Ginseng Marc with Red Koji to Laying Hens on Eggshell and Egg Yolk Quality)

  • This study was conducted to investigate the effects of dietary supplementation of various types of fermented red ginseng marc with red koji to laying hens on eggshell and egg yolk quality characteristics. A total of 240 Hy-line Brown laying hens (40 wk of age) were randomly allotted to 24 pens (6 replicates per treatment and 10 laying hens per replicate). Experimental diets consisted of 4 treatments containing basal diet (control), 1% fermented red ginseng marc powder with red koji, 1% fermented red ginseng marc pelleted with red koji and 1% fermented red ginseng marc coated with red koji. During the 8-wk feeding trial, there were no significant differences in eggshell strength, eggshell thickness and eggshell color among the treatments, except for eggshell strength at 4 and 8 wk and eggshell thickness at 0 wk. In addition, no differences in egg yolk color and egg yolk index were found for all treatments throughout the 8-wk feeding period, except for egg yolk color at 0 wk. Thus, using various types of fermented red ginseng marc with red koji to laying hens did not improve eggshell and egg yolk quality characteristics.
