A Prospect for Growth and Economic Size of Foods-for-Elderly Industry -Focused on Health Functional Foods and Foods for Special Dietary Uses- (고령친화식품산업의 성장과 규모 전망 -건강기능식품과 특수용도식품을 중심으로-)

  • The purpose of this study is to predict the economic size of foods-for-elderly market, which will be valuable information for establishing related policy and backup system. After setting the scope of related industry, detailed information for current market situation was investigated and a systematic forecast for market changes in the future was performed. Economic growth, changes in consumer expenditure and economic status of the elderly, current subscription of medical insurance and saving for pension were reflected. In addition, a survey toward related firms was completed and changes in aged population and incidence of chronic disease in the elderly were taken into account. Results show that the annual growth rate of the market was predicted to be the minimum 4.54% through the maximum 8.32% from 2010 to 2025 and its market size was forecasted to be the minimum 7,073 ten million won through the maximum 10,976 ten million won. It is expected that the market of foods-for-elderly will grow rapidly with development of foods technology and fast increase of aged population. Especially, growth of health functional foods and foods for special dietary uses for elderly will be distinguished. However, it seems that related firms are on the hedge, watching current trend of the related industry. This may results in insufficient supply against the demand. Therefore, policy for foods-for-elderly should be introduced and systematically administered, including R&D support, standardization and authentication for foods-for-elderly, construction of related database system.

An Application of GIS Technique to Analyze the Location of Fastfood Stores : The Case of Kangnam-Gu , Seoul (GIS 기법을 활용한 패스트푸드점의 입지분석에 관한 연구 - 서울시 강남구를 중심으로)

  • The purpose of this study is to extract the main locational factors to affect the location of fastfood stores in Kangnam -Gu, Seoul by using Geographic Information Systems. The Franchise system, which came to be employed in full scale since 1990, now enjoying the booming period, especially fast food industry. The procedure of this research has four steps. First, the spatial distribution of fastfood chain stores in Seoul is analyzed by the land use and road map. Second, the spatial variations of fastfood stores in dong districts of Seoul is explained by multiple regression analysis. Third, the main locational factors to affect the location of fast food stores in Kangnam -Gu are extracted by demand and supply sides using GIS technologies. Finally, the potentiallocational zones where are selected by extracted locational factors are compared with the actual distribution of f astf ood stores in Kangnam - Gu. In terms of demand side, the main locational factors include commercial and service facilities, sub¬ways and bus stops which have a lot of pedestrians, and large apartment districts that have high popu¬lation densities. In terms of supply sides, the main locational factors include land use types and land value, accessibility. After fast food chain stores of Kangnam -Gu are overlaid final potentiallocational zones extracted by demand and supply sides of locational factors, it can be identified that over 80 % of fastfood stores are located in the potentiallocational zone. In conclusion, this study shows that spatial analysis functions may potentially be improved using GIS technologies. However there are still difficulties for the locational analysis for service industries to col¬lect appropriate data in terms of computerized base maps as well as consumer behavior and store characteristics itself.

  • 식품에 사용되는 식품첨가물의 지정 확대화 및 국제적 조화를 위한 사업으로 한시적 기준규격으로 기 인정된 효소제인 탄나아제, 알파갈락토시다아제, 베타글리코시다아제, 글루타미나아제와 증점안정제의 용도로 사용되는 롤리감마글루탐산 등 총 5품목에 대하여 기준 규격을 신설하였으며, 식품 중 알루미늄 저감화 방안 마련의 일환으로 화학적합성품 중 염기성알루미늄탄산나트륨 1품목을 지정취소하고, 글루콘산칼슘 등 40 품목의 사용기준을 개정하였으며, 황산칼슘 등 6품목의 성분규격을 개정하였다. 또한, 식품첨가물로 인한 통상무역 마찰을 해소하고 식품첨가물 수출입관련 종사자의 편의를 도모하고자 식품첨가물 수출입관련 종사자의 편의를 도모하고자 식품첨가물 영문공전에 미 반영된 품목에 대해 영문화작업을 수행하였으며, 식품첨가물의 국제기준과 조화를 위해 CCFAC(식품첨가물및오염물질분과회의) 및 CCCPL(곡류및두류분과위원회)에서 논의중인 즉석면(instant noodle) 등의 식품첨가물 국제기준 작성 및 제안을 위한 작업을 수행하고 아국의 최종안을 만들어 Codex회의에 즉석면 식품첨가물 목록을 총회에 8단계로 상정하였으며, 즉석면 식품첨가물 목록에서 감미료(아세설팜칼륨, 알리타임 등)삭제 및 타르색소(Tartrazine, Sunset Yellow FCF, amaranth, Fast Green FCF, curcurmin, carmines) 최대허용기준 설정에 대한 아국의 의견을 반영하였으며, CCNFSDU(영양 및 특수용도식품 분과위원회)의 영양강화제와 관련하여 식품첨가물에 관한 내용검토 및 의견 제출, CCASIA(아시아지역 조정위원회)에서 논의 중인 고추장 및 발효 콩제품의 식품 첨가물 내용을 검토하여 아국의 검토의견을 반영하였다.

Discrimination of the Heated Coconut Oil using the Electronic Nose (전자코를 사용한 가열처리 야자유의 판별)

  • Effect of heat (160, 190, and $220^{\circ}C$ for 24 hr) on coconut oil was examined by principal component analysis using electronic nose consisting of six metal oxide sensors. Increase in heating temperature decreased ratio of resistance and first principal component score (from +0.952 to -0.325), indicating rancidity of coconut oil increased at high heating temperature. Result of electronic nose based on GC with surface acoustic wave sensor showed significant changes in volatile profiles of coconut oil. High resolution olfactory imaging $(VaporPrint^{TM})$ was particularly useful for evaluating oil quality. Peak numbers and areas increased with increasing heating time and temperature (160, $220^{\circ}C$). Electronic nose analysis can provide simple, fast, and straightforward results and is best suited for quality control and process monitoring in flavor field of food industry.

Poultry industry of Bangladesh: entering a new phase

  • In Bangladesh, since the beginning of 21st century, the poultry industry has become an unparalleled platform for a quick profit, the generation of local employment, and the production of cheaper animal proteins. This paper summarizes poultry industry-related facts and figures for Bangladesh, starting from the very beginnings of this sector when poultry farming was part of subsistence family farming only to today's highly commercialized horizon, through personal experiences, secondary data analysis, spot visits, and the sharing of views and ideas with stakeholders. A critical analysis reveals that the poultry industry in Bangladesh may become multi-dimensional and more stable in the near future as it establishes sufficient backward and forward linkages to input and output supplies. We can foresee its passing the very fast growing juvenile stages of higher net profit earning and less responsible then becoming fully mature. The projected demand and production potentials of this sector are increasing, but at a slower pace than before, in the face of some important challenges like emerging disease, higher prices of inputs, consumer preferences, and strong market competition. However, evidence suggests that the production systems of poultry in Bangladesh are entering a new era to cater to the needs of consumers, society, and government as it produces healthier and more diversified, further-processed foods, in the coming years. A better economy in the country, a more health-conscious population, and the availability of new and affordable innovations in this sector might be the driving forces to support the foreseen transformations.

Post-Harvest Strategies to Improve Tenderness of Underutilized Mature Beef: A Review

  • Beef muscles from mature cows and bulls, especially those originating from the extremities of the carcass, are considered as underutilized due to unsatisfactory palatability. However, beef from culled animals comprises a substantial proportion of the total slaughter in the US and globally. Modern consumers typically favor cuts suitable for fast, dry-heat cookery, thereby creating challenges for the industry to market inherently tough muscles. In general, cull cow beef would be categorized as having a lower extent of postmortem proteolysis compared to youthful carcasses, coupled with a high amount of background toughness. The extent of cross-linking and resulting insolubility of intramuscular connective tissues typically serves as the limiting factor for tenderness development of mature beef. Thus, numerous post-harvest strategies have been developed to improve the quality and palatability attributes, often aimed at overcoming deficiencies in tenderness through enhancing the degradation of myofibrillar and stromal proteins or physically disrupting the tissue structure. The aim of this review is to highlight existing and recent innovations in the field that have been demonstrated as effective to enhance the tenderness and palatability traits of mature beef during the chilling and postmortem aging processes, as well as the use of physical interventions and enhancement.

  • The purpose of this study is to understand the ideas of characteristic of convergence design related to slow fashion design. Convergence design in digital stage can be defined as a social phenomenon which different function of product move toward one direction for greater efficiency. Slow fashion is based on the Slow Movement. (This is a movement with similar principles to the Slow Food Movement, as it promotes an alternative mass production, such as fast fashion.) The aims of this research are to study slow fashion that has appeared in the fashion industry through various approaches for convergence designs, and to find the possibility of use for slow fashion. The research method consisted of carrying out case studies and analyzing literatures and proceeding cases. The characteristics of convergence designs are classified into technical convergence, emotion-oriented convergence and complex convergence. Technical convergence has an effect on slow fashion as a multi-functional design. Second, emotion-oriented convergence affects social-cultural design. Slow fashion related to a complex convergence design reveals emotion-oriented deign. Slow fashion is related to convergence design is to expect contribute to provide a good source for the future fashion industry and fashion market.

A Study on the Effect of Service Quality on Attitudinal and Behavioral Loyalty by Different Types of Restaurants (레스토랑 유형에 따라 서비스 품질이 태도적, 행동적 충성도에 미치는 영향력 차이에 관한 연구)

  • This study aims to give insight into better understanding how service quality influences customers' attitude and behavior in terms of loyalty as well as how its effects vary by the types of restaurants (family restaurants or fast food restaurants). The results of the study are summarized as follows. First, perceived service quality, which consists of food, service, menu and atmosphere, made a significant impact on customer satisfaction for food, menu, atmosphere, and service, respectively. Second, the study examined how perceived service quality affected future expectations, and found only food turned out to be a significant factor. Third, customer satisfaction affected future satisfaction and customer loyalty, and it had a greater impact on attitudinal loyalty than behavioral loyalty. Fourth, future satisfaction affects customer loyalty, and it had a greater impact on attitudinal loyalty than behavioral loyalty. Fifth, the study examined how service quality, customer satisfaction and future expectation affected attitudinal loyalty and behavioral loyalty differently by different types of the food service industry (family restaurants or fast food restaurants) and found out there were some differences in the effects of customer satisfaction on behavioral loyalty and the future expectations and attitudinal loyalty on behavioral loyalty. The marketing implication is that service providers should be one step ahead in understanding the service quality perceived by customers (food, service, menu, and atmosphere). In addition, they should understand that establishing long-tenn relationships with customers by providing high quality service bas a direct impact on their business performance. Furthermore, management in family restaurants and fast food restaurants should include the improvement of service quality in their employee training programs.

Weight misperception and its association with dieting methods and eating behaviors in South Korean adolescents

  • BACKGROUND/OBJECTIVES: There is little information on the association between weight misperception and eating behavior in Korean adolescents. Therefore, we investigated the association of food intake habits and dieting method and disturbed eating behavior (DEB) in relation to weight misperception. SUBJECTS/METHODS: Data was collected by using a nationwide online panel survey from 6,943 adolescents enrolled in middle/high school. DEB was measured with the Eating Attitudes Test (EAT-26) and those who scored ${\geq}20$ on the EAT-26 were considered to have eating disorder. Logistic regressions were conducted to examine the association between weight misperception based on self-reported weight status and dieting method and eating behaviors. RESULTS: The proportion of weight underestimation was 23.5% and that of overestimation was 24.0%. Weight overestimating girls were more likely to engage in various unhealthy dieting practices (OR = 1.69 for fasting; OR = 1.88 for laxative or diuretic use; OR = 2.05 for self-induced vomiting after meals; P < 0.05). Moreover, there was a strong association between overestimation and undesirable eating behaviors, especially among girls, e.g.: having breakfast (OR = 0.85), high consumption of fast foods (OR = 1.28) and regular sodas (OR = 1.39), but not among boys. In both genders, weight overestimation appears to be a major risk factor for DEB (OR = 1.34 for boys and OR = 1.41 for girls; P < 0.05). CONSLUSIONS: Weight overestimation is associated with unhealthy weight control practices and eating behaviors. We particularly found a significant association between weight overestimation and DEB among nationwide Korean adolescents.

Determining the Optimal Recipe for Long-Grain Jasmine Rice with Sea Tangle Laminaria japonica, and Its Effect on the Glycemic Index

  • Thai Jasmine rice (Oryza sativa, long grain Indica var.) is popular in southeastern Asia and China due to its non-glutinous, fluffy texture and fragrant smell. However it has a high starch digestibility, which leads to an increased glycemic index (GI). Therefore it may require modified cooking methods for diabetes patients. The objectives of this study were to optimize the ratio of Thai Jasmine rice, sea tangle, and olive oil (CLTR) based on consumers' acceptance. The GI of plain cooked Thai Jasmine rice (CLR) was measured as a control. Sensory evaluation and response surface methodology were used to determine the optimal ratio. Texture analysis and nutritional evaluation were also performed on the optimal recipe of cooked Jasmine rice with sea tangle. A multiple regression equation was developed in quadratic canonical polynomial models. We used 26 trained Chinese panelists in their forties to rate color, flavor, adhesiveness, and glossiness, which we determined were highly correlated with overall acceptability. The optimal CLTR formula was 34.8% rice, 2.8% sea tangle, 61.9% water, and 0.5% olive oil. Compared to CLR, CLTR had a lower hardness, but a higher springiness and cohesiveness. However, CLR and CLTR had the same adhesiveness and chewiness. The addition of sea tangle and olive oil delayed retro-gradation of starch in CLTR and increased total dietary fiber, and protein and ash contents. The degree of gelatinization, and in vitro protein and starch digestibility of CLTR were lower than those of CLR. Based on Wolver' method, the GI of CLTR (52.9, incremental area under the glycemic-response curve, ignoring the area below fasting, as used for calculating the GI [Inc]) was lower compared with that of CLR (70.94, Inc), which indicates that CLTR is effective in decreasing and stabilizing blood glucose level, owing to its lower degree of gelatinization and starch digestibility. Our results show that CLTR can contribute to the development of a healthier meal for families and the fast food industry.
