‘쓰가루’사과의 유통용 신선도유지 MA 포장 효과 (Modified Atmosphere Packaging of ‘Tsugaru’Apple(Malus domestica Borkh) for Distribution)

  • 수확후 품질이 급속히 저하되어 저장력이 약한 단점 때문에 유통기간이 매우 짧은 '쓰가루' 사과를 대상으로 플라스틱 필름과 에틸렌 흡착제 첨가에 따른 MAP(modified atmosphere packaging)의 품질유지 효과를 비교하였다. 필름 포장내의 $O_2$$CO_2$ 함량은 포장 후 4~6일 후 까지 급격히 변화하였고, 에틸렌 농도도 밀봉 직후 급격히 증가하여 저장 4일 후 40 $\mu\textrm{m}$ 두께의 LDPE 필름 포장구(40LD)에서 2,045 ppm까지 증가한 후 감소하였다. 저장중 품질변화 측정에서 대조구의 중량손실은 저장 60일 후 3.0% 이상이었으나 포장구는 저장 60일 후에도 0.6% 이하의 수준이었다. 저장중 적정산도 및 가용성고형분 함량 변화는 처리구간 유의적인 차이가 없었으나, pH는 대조구와 포장구간에 차이가 있었다 '쓰가루'의 저장중 경도는 저장초기 18일까지 급속히 감소하였으며, 40LD와 40$\mu\textrm{m}$ 두께의 에틸렌 흡착제 첨가 포장구(40LP)는 저장 60일 후 경도가 높게 유지되었다. 저장중 과피색 변화는 색소 분해로 인한 퇴색이 빠르게 진행되었으며, 저장 30일 이후부터 40LP가 저장중 변색이 가장 억제되었다. 외관품질은 저장 30일 후부터 대조구와 포장구가 차이가 났다. 관능검사에서도 대조구에 비해 포장구가 외관과 종합적기호도에서 유의적으로 우수함을 보였다. 이와 같은 결과를 종합해 볼 때 조생종 사과인 '쓰가루'의 유통중 신선도 유지를 위한 포장재료로 40 $\mu\textrm{m}$ 두께의 LDPE 필름의 사용가능성이 있으며 에틸렌 흡착제를 필름안에 같이 처리하면 더욱 효과가 있을 것으로 판단되었다.

김치즙액의 발효에 미치는 유기게르마늄, 올리고당 및 Starter의 영향 (Effect of Organic Gemanium, Oligosaccharide and Starters on Fermentation of Fresh Kimchi Juice)

  • 김치의 저장성과 기증성 향상을 위한 기초 연구로 서, 유기게르마늄(Ge-132)과 올리고당(프럭토)을 함유하는 배추김치의 생즙액에 3가지 젖산균으로 조합한 스타트를 첨가하여 3$0^{\circ}C$에서 발효시키면서, pH, 산도, $CO_2$생성량, 환원당 및 젖산균수의 변화를 조사하였다. 게르마늄 첨가구는 박테리오신을 생산하는 SNF-13 분리 젖산균주와 E. faecium의 혼합배양(I)에서 유기산과 $CO_2$생성량이 가장 적었으며, 스타트유래의 짖산균수 증식을 촉진시켰고, 환원당 소비량은 가장 많았다. 올리고당 첨가구는 4가지의 혼합배양에서 모두 각각의 대조구 및 게르마늄 첨가구보다 훨씬 유기산 및 $CO_2$생성량이 많았으며, 김치유래의 젖산균수 증식을 촉진시켰다. 유기게르마늄은 박테리오신을 생산하거나 게르마늄 저농도에서 생육이 촉진되는 내산성의 유산균과 혼합병용하면, 김치의 기능성 증진(저장성, 생리활성)의 미네랄로서 활용가능성이 높을 것으로 판단된다.

Changes in Quality Characteristics of Pork Patties Containing Antioxidative Fish Skin Peptide or Fish Skin Peptide-loaded Nanoliposomes during Refrigerated Storage

  • Marine fish skin peptides (FSP) have been widely studied due to their antioxidant and antimicrobial properties. We aimed to use a natural antioxidant, FSP, to replacing synthetic preservatives in a pork patty model, which is safer for human body. Moreover, nano-liposome technology can be applied for masking the fishy smell and improving the stability of this peptide. Therefore, in this study, the effects of FSP and FSP-loaded liposomes (FSPL) on pork patty were evaluated through the tests of thiobarbituric acid reactive substances (TBARS), color, cooking loss, texture, volatile basic nitrogen (VBN), and the pH value, during 14 d of refrigerated ($4^{\circ}C$) storage. The results showed that all FSP-treated patties had lower TBARS values than control patties, which indicated an inhibitory effect of FSP on lipid oxidation. This effect in the patties depended on the FSP concentration. However, FSPL-treated patties showed significantly higher and undesirable TBARS values compared to the control, and this effect depended on the FSPL concentration. None of the physicochemical results showed remarkable changes except the pH and VBN values. Therefore, this study provides evidence that FSP has great potential to inhibit the lipid oxidation of pork patties and is capable of maintaining the quality and extending the shelf life. However, it is necessary to study the application of FSP treatments greater than 3% to improve the antioxidant effect on pork patties and search for other coating materials and technology to reduce the drawbacks of FSP.

The Effect of Modified Atmosphere Packaging and Addition of Rosemary Extract, Sodium Acetate and Calcium Lactate Mixture on the Quality of Pre-cooked Hamburger Patties during Refrigerated Storage

  • The effect of modified atmosphere packaging (MAP; 30% $CO_2$+70% $N_2$ or 100% $N_2$) and an additive mixture (500 ppm rosemary extract, 3,000 ppm sodium acetate and 1,500 ppm calcium lactate) on the quality of pre-cooked hamburger patties during storage at $5^{\circ}C$ for 14 d was evaluated. The addition of the additive mixture reduced aerobic and anaerobic bacteria counts in both 30% $CO_2$-MAP (30% $CO_2$+70% $N_2$) and 100% $N_2$-MAP (p<0.05). The 30% $CO_2$-MAP was more effective to suppress the microbial growth than 100% $N_2$-MAP, moreover the 30% $CO_2$-MAP combined with additive mixture resulted in the lowest bacterial counts. The hamburger patties with additive mixture showed lower CIE $L^*$ and CIE $a^*$, and higher CIE $b^*$ than those with no additive mixture. The 30% $CO_2$-MAP tended to decrease the TBARS during storage regardless of the addition of additives. The use of 30% $CO_2$-MAP in combination with additives mixture was effective for maintaining the quality and extending the shelf-life of pre-cooked hamburger patties.

Effects of Gamma Irradiation on the Fermentative Microorganisms and Lactate Dehydrogenase Activity in Kimchi at Different Fermentation Stages

  • Gamma irradiation treatment was performed at the early and mid-fermentation stages of Kimchi preparation. Changes in fermentative microorganisms and lactate dehydrogenase activity during the fermentation periods were investigated to determine proper irradiation point for extending the shelf life of Kimchi. Initial levels of acid producing bacteria and yeast in Kimchi were 10$^4$ CFU g$^{-1}$ and 10$^1$ CFU g$^{-1}$ , and reached up to 10$^{9}$ CFU g$^{-1}$ after 15 days and 10$^{7}$ CFU g$^{-1}$ after fermentation for 30 days at 1$0^{\circ}C$, respectively. The radiation resistance of acid producing bacteria in the earlier stage (D$_{10}$ value was 0.87 kGy) was higher than at the midfermentation stage (after 10 days at 1$0^{\circ}C$, D$_{10}$ value was 0.69 kGy). Microbial growth and lactate dehydrogenase activity were inhibited significantly by gamma irradiation at the early fermentation stage of Kimchi and acidification was effectively delayed during the subsequent storage period. Although the growth of fermentative microorganisms was inhibited by gamma irradiation at the mid-fermentation stage of Kimchi, lactate dehydrogenase activity was maintained and acidification continued during the storage period.

Gas Diffusion Tube Dimension in Sensor-Controlled Fresh Produce Container System to Maintain the Desired Modified Atmosphere

  • Modified atmosphere (MA) of reduced $O_2$ and elevated $CO_2$ concentrations has been used for keeping the quality of fresh produce and extending the shelf life. As a way to attain the beneficial MA package around the produce, a gas diffusion tube or perforation can be attached onto the container and controlled on real time in its opening/closing responding to $O_2$ and $CO_2$ concentrations measured by gas sensors. The timely-controlled opening of the gas diffusion tube can work in harmony with the produce respiration and help to create the desired MA. By use of the mathematical modeling, the effect of tube dimension on the controlled container atmosphere was figured out in this study. Spinach and king oyster mushroom were used as typical commodities for designing the model container system (0.35 and 0.9 kg in 13 L, respectively) because of their respiration characteristics and the optimal MA condition ($O_2$ 7~10%/$CO_2$ 5~10% for spinach; $O_2$ 2~5%/$CO_2$ 10~15% for mushroom). With a control logic for the gas composition to stay as close as possible to optimum MA window without invading injurious low $O_2$ and/or high $CO_2$ concentrations, the atmosphere of the sensor-controlled container could stay at its lower $O_2$ boundary or upper $CO_2$ limit under certain tube dimensional conditions. There were found to be the ranges of the tube diameter and length allowing the beneficial MA. The desired range of the tube dimension for spinach consisted of combinations of larger diameter and shorter length in the window of 0.3~2 cm diameter and 0.2~10 cm length. Similarly, that for king oyster mushroom was combinations of larger diameter and shorter length in the window of 0.9~2 cm diameter and 0.2~3 cm in length. Clear picture on generally affordable tube dimension range may be formulated by further study on a wide variety of commodity and pack conditions.

한국의 계란 가공제품 개발 동향 (Innovative Egg Products and Future Trends in Korea)

  • 한국의 계란 생산량은 1990년도에 39만 3천들에 달하였으며 연간 1만톤 이상이 수입되었다. 이러한 수입량은 해마다 늘어가는 추세이다. 국내 계란 소비는 가정용 계란이 차지하는 비중이 높아 가공식품의 비중이 증가하는 소비경향에도 불구하고 향후 추가 수요를 기대하기는 어려울 것으로 전망된다. 한국에서의 계란 가공제품은 크게 두 가지로 나눌 수 있는데 그 중 하나는 액란과 난분 등 1차 가공품이며 또 다른 하나는 계란 후레이크, 계란 두부 등과 같이 보다 가공된 3차 가공품이 그것이다. 이상의 난가공제품 이외에도 특정 영양소 둥이 강화된 특수란이 사료의 배합과 사양기술의 개발을 통하여 생산되고 있다. 본고에서는 그 밖에도 계란과 관련하여 현재까지 공고된 한국 특허를 정리 소개하였다. 앞으로는 영양소를 조절한 계란을 비롯하여 계란을 이용한 편이식품이 점차 일반화될 것으로 전망된다. 특히 저콜레스테롤 계란과 다중불포화지방산이 강화된 계란이 소비자의 요구에 부응하기 위하여 생산될 것이다. 그러나 보다 당면한 문제는 계란의 품질 등급제의 도입과 세척란의 저장성 향상 등과 같이 일반 계란의 유통과 관련된 점들일 것으로 사료된다.

Sous-vide Cook Chill System으로 생산된 닭찜의 저장성 향상효과에 관한 연구 - 오레가노-올스파이스와 아스코르브산 첨가를 중심으로 - (Improvement in the Storage Quality for of Steamed Chicken Processed by a Sous-vide Cook-Chill System - Focused on Addition of Oregano-Allspice and Ascorbic acid -)

  • This study aimed to determine the physicochemical, microbiological, and sensory qualityies of steamed chicken samples by prepared with combined additions of oregano-allspice and Ascorbic acid (OA/AA), and processed by a sous-vide cook - chill system. The hurdle effect of the OA/AA addition was examined in terms of microbial stability improvements and their effects on sensory were also evaluated. First, the microbial risk was lowered and chicken quality was good with the addition of the OA/AA hurdle as compared to the control. Second, over various days of storage, the microbial quality of the OA/AA samples was relatively high. In standard plate counts, the control group presented a bacteria level of 2.75 LogCFU/g at 10 days of storage, but the OA/AA groups were had counts of 2.38, 1.89 and 1.81 LogCFU/g, respectively. And at 15 days of storage, the control group had a level of 3.65 LogCFU/g whereas the OA/AA groups had counts of 3.55, 3.54, and 3.24 LogCFU/g, respectively. Lastly, the sensory scores of the OA/AA groups were higher than those of the control group. Accordingly, overall microbial and sensory characteristics were better in the OA/AA hurdle groupsf than in the control group. Thus, the combined addition of Oregano-allspice and Ascorbic acid may be and alternative means for extending shelf - life.

김치의 선도유지를 위한 천연보존제의 탐색 (Screening of Natural Preservatives to Inhibit Kimchi Fermentation)

  • As a primary step to develop natural preservative for extending the shelf-life of kimchi, the effect of 102 edible plants, 21 antimicrobial agents and related compounds on kimchi fermentation was studied. Among 42 oriental medicinal plants tested, Baical skullcap and Assam indigo were found to be highly effective for maintaining the fresh state of kimchi. Although Bugbane, Red mangolia, Bushy sophora, Szechuan pepper, Chinese quince and Scisandre significantly inhibit the growth of Lactobacilli, their effect was not high enough to be used as raw materials for kimchi preservative. When the effect of 32 herbs and spices was tested, peppermint, cinnamon, lemon balm, clove, hop, rosemary, sage, horseradish and thyme showed high antimicrobial activity against kimchi microorganisms. Among them, the effect of clove ranked top. When it was added to fresh kimchi, initial cfu value ($2.4{\times}10^{6}cfu/g$) changed little even after 2 day's fermentation ($2.6{\times}10^{6}cfu/g$). Sensory test was not a good criteria to evaluate the effect of herbs and spices, since their highly specific flavors affected the taste of kimchies. Twenty eight fruits, vegetables and related plants were tested, but only leaves of pine tree, persimmon and oak leaves showed a significant bactericidal effect, finally contributing to the storage of kimchi. In addition, when 21 natural preservatives and other compounds were added individually to fresh kimchi, nisin and caffeic acid could inhibit fermentation.

Optimization of Processing Conditions of Chinese Smoke-cured Bacon (Larou) with a New Natural Coating Solution during Storage Period

  • The study aims to determine the optimum sterilization rate and water activity of Chinese traditional smoke-cured bacon product (Larou) in the preservation with natural coating solution. With the response surface methodology (RSM), we analyzed 3 factors of processing conditions (the concentration of lysozyme, concentration of sodium alginate, and concentration of chitosan) and 2 response factors (sterilization rate and water activity). Sterilization rate and water activity of Larou were largely affected by the concentration of lysozyme, concentration of sodium alginate, and concentration of chitosan. The final optimum concentrations of lysozyme, sodium alginate, and chitosan were 0.09, 1.40, and 1.60% and realized the high sterilization rate. Water activity of sliced Larou was significantly correlated with the sterilization rate. Low-field nuclear magnetic resonance analysis verified the optimum processing conditions. The coating resulted in 99.69% rate of reducing bacteria after 30-day storage. The data of the total number of colony, peroxidation value, moisture content, pH, and sensory evaluation provided the theoretical basis for extending the shelf life of Chinese traditional smoke-cured bacon product (Larou) with natural coating solution.
