대도시 젊은이들의 라이프스타일 유형별 외식서비스 인카운터 중요 속성 연구 (The Important Attributes of Foodservice Encounters According to Life-style Types as Offered by Young Metropolitan Customers)

  • Life-style factors often include social relationships as well as consumption, entertainment and dress patterns. They also typically reflect an individual's attitudes, values and worldview. Life-style types have become and an important factor for segmenting customer markets ever since significant relationships between life-style and customers' behavior was proven. This study examined the relationships between the life-styles of young customers' and the important attributes of foodservice encounters. Factors analysis with VARIMAX and K-means cluster analysis were conducted to group the subjects by life-style. According to the factors analysis, four underlying dimensions were identified and labeled: (1) 'actively fashioned', (2) 'luxury picky', (3) 'healthy toward', and (4) 'utilitarian leisure'. Based on the factor scores derived from the factors analysis, the K-means cluster analysis classified three groups as statistically significant using ANOVA(p<0.05). The overall mean score for the 3rd cluster 'trendy-active picky' was higher than the other two clusters, and represented very picky attitudes about foodservice attributes. The 3rd cluster also seemed to apply higher standards to all of the foodservice attributes. By order of importance, the most important attributes of the 2nd cluster 'pursue-utilitarian leisure' were food serving time, automation systems, server's hygienes, employee kindness, time in line, and menu variety. In spite of low concerns for the life-style attributes, the first cluster 'passively indifferent' recognized menu variety, food sanitation, food serving time, server's hygiene, menu price, air circulation, and room temperature as important. These results suggest that young diners in Korea could be classified by their diverse life-styles that are represented as trendy, utilitarian, and indifferent and will hopefully contribute to the foodservice industry's ability to segment customer characteristics by different life-styles in Korea.

부산지역 병원급식 조리종사자의 직무특성 및 직무만족이 조직몰입에 미치는 영향 (The Effect of Job Characteristics and Job Satisfaction on Organizational Commitment of Hospital Foodservice Employees in Busan Area)

  • Purpose: This study was conducted to provide basic data for human resources management of hospital foodservice employees by determining their job characteristics, job satisfaction, and organizational commitment according to recent hospital environment changes. Methods: Our survey was administered to 248 hospital foodservice employees in Busan area from September 1 to September 25, 2014. A total of 158 questionnaires were used for final analysis. Results: The mean score of job characteristics showed significantly difference by work experience (p<0.001), annual salary (p<0.01), and cooking certification (p<0.05). Job satisfaction had significantly difference by the age (p<0.05), annual salary (p<0.001), and turnover intention (p<0.001). Organizational commitment showed significantly (p<0.001) difference by age, work experience, and annual salary. There was positive correlation (p<0.001) between organizational commitment and job characteristics, job satisfaction. Organizational commitment had significantly positive correlation with skill variety (p<0.001), feedback (p<0.01), and task significance (p<0.001) of job characteristics, with work (p<0.001), pay (p<0.001), and co-workers (p<0.001) of job satisfaction. Job characteristics (${\beta}=0.249$, p<0.001) and job satisfaction (${\beta}=0.380$, p<0.001) had positive influences on the organizational commitment(p<0.001). In sub factors of job satisfaction, work (${\beta}=0.291$, p<0.001) and pay (${\beta}=0.252$, p<0.01) had positive influences on organizational commitment. Conclusion: To develop the organizational commitment, hospital managers need to reinforce responsibility and fulfillment by job enrichment and to consider increasing salaries to get a higher satisfaction from foodservice employees.

부산 , 경남지역 사업체 급식소 운영방식에 따른 고객만족지수 (Customer Satisfaction Index of Business & Industry Foodservice Operations in Pusan and Kyeung Nam Area)

  • The purpose of this study was to compare the customer satisfaction index(CSI) between 8 self-operated foodservices and 6 contract foodservices in Pusan and the Kyeung Nam area. There were 438 subjects for self-operated foodservices, and 384 for contract foodservices. The questionnaire was used in this study as a survey method and was concerned with quality of food(Ⅰ)(Ⅱ), sanitation, facilities, information service, and employee sevice area. Data from customers were analyzed by using the $SPSSPC^+$ program, and in terms of frequency, and t-test. The results are as follows; 1. Sanitation was the most important factor in both self-operated and contract foodservices. 2. Contract foodservices showed a higher mean rating in both facilities and employee service than did self-operated foodservices in the satisfaction. 3. In self-operated foodservices, men had a significantly(p>0.05) higher CSI in all areas then women, but contract foodservices did not have this difference. 4. Contract foodservices had a higher CSI in quality of food(Ⅰ), sanitation, facilities, information service, and employee service area, and was also in higher total CSI, than self-operated foodservices.

중요도-만족도 분석을 활용한 일식 레스토랑의 품질특성에 관한 연구 (A Study on the Foodservice Quality of Japanese Restaurants using the Importance-Performance Analysis (IPA))

  • 일식 레스토랑 경영자는 급변하고 경쟁적인 환경속에서 전략적 경쟁우위를 선점하기 위해서 차별화된 서비스를 제공하고자 노력하고 있다. 이러한 위협속에서 브랜드 마케팅, 확장, 그리고 파트너쉽 등이 경영전략으로 제시되고 있다. 본 연구는 일식레스토랑 고객들의 관점에서 서비스 품질 속성에 대한 중요도와 만족도를 파악하여 차별화된 경쟁우위를 지속하기 위한 전략을 제시하기 위해 수행되었다. 이를 위해, 자기기입식 설문지 230부를 배포하여 205부를 분석에 이용하였다. 전체 20 항목에 대한 Cronbarch's 알파값은 0.911으로 나왔으며 중요도 항목에서 0.887(음식), 0.796(메뉴), 0.851(종사원), 0.815(서비스), and 0.730(물리적 환경)으로 내적일관성이 있음을 보여주었다. 만족도 항목에서도 Cronbarch's 알파값은 0.876(음식), 0.860(메뉴), 0.880(종사원), 0.851(서비스), 0.730(물리적 환경)으로 내적 일관성을 보여주었다. 또한, 탐색적 요인분석은 20항목과 5개의 요인에 대한 타당도를 검증해 주었다. 전반적으로 일식레스토랑에 대한 중요도는 만족도보다 높은 수치를 보여주었다. 특히 IPA 분석 결과 음식과 서비스 요인은 1사분면에 위치하여 중요도에 비해 고객 만족도 역시 좋음을 보여주고 있다. 하지만, 서비스 요인은 2사분면에 위치함으로서 고객이 중요하게 여기지만 그 만족도가 높지 않음을 보여주고 있다. 따라서 이 연구 결과는 일식레스토랑은 2사분면에 위치한 서비스항목에 더욱 집중하여 고객만족도를 위한 노력이 필요함을 보여주고 있다. 마지막으로 메뉴와 물리적 환경요인은 3사분면에 위치해 중요도와 만족도 모두 낮게 나타났음을 알 수 있었다. 이러한 IPA 분석은 일식레스토랑 경영자에게 그들의 강점과 약점을 보여주고 있으며 전략적으로 자신의 서비스 품질을 높일 수 있도록 도와주는 좋은 도구임을 입증해주었다.

위탁급식전문업체 지적자본 측정도구의 운용시험 평가 (Practical Evaluation of Intellectual Capital (IC) Measurement Tool for Contract Foodservice Management Company)

  • The purposes of this study were to a) measure the IC identified of CFMC (contract foodservice management company) ,b) examine IC circumstance of CFMC, c) evaluate practically IC measurement tool of CFMC, and d) present information for selecting an adequate CFMC to clients. The questionnaires of IC measurement were handed out to 108 CFMCs, there composing of main office employees, foodservice managers, customers, and clients of 207 school,38 hospital, and 86 husiness/industry foodservices. The statistical data analysis was completed using SPSS Win (ver 12.0) for descriptive analysis, t-test, Mann-Whitney U test. First, CFMCs had operational experience for an average of 8 years and 8 months, and served an average of 38,540 meals a day. Most of the respondent companies specialized in the school foodservice field and managed an average of 66 clients for the contract period of 2 years and 3 months. Second, the respondent companies had gotten a score of 77.78 points for the total average, 77.7 points in the large enterprise group and 78.1 points in the small and medium-sized enterprise group. Therefore, the minimum number of points for the accrediting license on Qualification is suggested to be over 70 out of a 100 point scale; this study would be serve as reference for the certification license on qualification. On the level of evaluation category, the scores were 14.15 to 20 points on $\ulcorner$finance$\urcorner$, 19.24 to 25 points on $\ulcorner$customer$\urcorner$, 19.33 to 25 points on $\ulcorner$process$\urcorner$, 14.31 to 20 points on $\ulcorner$human resource$\urcorner$, and 8.6 to 10 point on $\ulcorner$renewal and development$\urcorner$ . $\ulcorner$Renewal and development$\urcorner$ and $\ulcorner$customer focus$\urcorner$ received better grades than other evaluation categories. Third, $\ulcorner$Finance$\urcorner$ indicated similar distribution overall. Small and medium-sized companies had lower grades than large companies on 'market ability' of $\ulcorner$customer$\urcorner$ , but, clients of small and medium-sized companies had higher grade for 'client satisfaction' than large companies. Most of the companies supported 'infrastructure support for foodservice operation' of $\ulcorner$process$\urcorner$ by the main office of CFMCs, but, the branch chain offices of CFMCs were not applied efficiently. Large companies made more effort to improve the 'employee ability' of $\ulcorner$human focus$\urcorner$ than small and medium-sized CFMC. The 'research and development cost' of $\ulcorner$renewal and development$\urcorner$ was increased compared to the previous year. In conclusion, if CFMCs were to perform self-evaluation and a routine checkups by utilizing CFMC's IC measuring tool, improvements in CFMC operational capacities as well as foodservice quality can be noted. 외식 산업의 내부 마케팅 요소 개발 및 적용 방법 (Exploring Internal Marketing Mix and Its Applications in the Foodservice Industry)

  • 내부 마케팅은 서비스의 질과 고객 만족을 높이기 위한 방법으로 사용되어 왔다. 그러나, 내부 마케팅의 정의와 그 적용은 연구자에 따라 다르게 사용되어 왔다. 따라서, 본 연구의 목적은 외식 산업에서 사용 가능한 내부 마케팅 요소를 개발하는 것이다. 본 연구는 웹 설문지를 통하여 405개의 자료를 최종분석에 사용하였다. 기존 연구 논문을 바탕으로 다섯 개의 내부 마케팅 요소(비전, 개발, 보상, 동기 부여, 사내 커뮤니케이션)가 채택되었고, 자료 분석, 결과 다섯 개의 내부 마케팅 요소는 직원의 직업 만족도를 향상시키는 데 큰 영향을 미침을 알 수 있었다.

외식업체 직원의 감성지능이 조직시민행동과 직무성과에 미치는 영향에 관한 연구 (The Effects of Employees' Emotional Intelligence upon Organizational Citizenship Behavior and Job Performance in the Foodservice Industry)

  • 본 연구는 외식업체 직원의 감성지능에 따른 조직시민행동 및 직무성과에 미치는 영향을 고찰하고, 감성지능과 직무성과의 인과관계에 있어서 조직시민행동의 매개 효과를 고찰하였다. 총 421명의 외식업체 직원을 대상으로 설문조사를 실시하였으며, 구조방정식 모형을 통해 3개의 가설을 검증하였다. 분석 결과, 외식업체 직원의 감성지능 중 타인 감성의 이해(${\beta}$=0.280), 감성 활용(${\beta}$=0.255), 자기 감성의 이해(${\beta}$=0.232), 감성 조절(${\beta}$=0.123) 등의 순으로 조직시민행동에 유의한 정(+)의 영향을 주었으며, 조직시민행동(${\beta}$=0.600)은 직무성과에 유의한 정(+)의 영향을 주는 것으로 나타났다. 또한 외식업체 직원의 감성지능과 직무성과의 인과관계에 있어서 조직시민행동의 매개 효과를 분석한 결과, 직원의 감성지능과 직무성과의 인과관계에 있어서 조직시민행동이 부분적인 매개 변수의 역할을 수행하는 것으로 조사되었다.

영유아 급식소 위생관리 수행도 현장평가 (Field Assessment of Food Safety Management at Preschool Foodservice Establishments)

  • This study examined food safety management at preschool establishments in Daegu and Gyeongbuk province, to provide data that can be used for food safety improvements. Field assessments of 60 foodservice establishments were executed from July to October, 2007. Statistical analyses of the data were conducted using the SPSS package program (version 14.0 for windows). The results are summarized as follows: 93.3% of the preschool foodservices were self-operated, and 24.1% of the child care centers and 96.7% of the kindergartens had employed dietitians. According to the averaged food safety evaluation scores the kindergartens (80.73) had a significantly higher score than the child care centers (50.37), and the public centers (85.00) had a significantly higher score than the private centers (54.29). While the average score of facilities that employed dietitian (73.58) was significantly higher than that of facilities that did not employ a dietitian (52.65). In addition, the average score of facilities that served meals in a dining room (80.83) was significantly higher than that of facilities that served meals in a classroom (59.33). The highest scoring food safety items included verifying employee health inspection reports (1.87), utilizing non-municipal water and routinely cleaning and well-maintaining the water storage tank (1.85), and disposing small amounts of leftovers in a vat after serving (1.83). In contrast, the lowest scores were for physical separation of clean areas and unclean areas to prevent cross-contamination (0.52), and physical separation between staff and food material entry areas (0.62). In conclusion, the preschool foodservice evaluated in this study required improvements in food safety management, and many of the child care centers were in need of immediate attention. To improve food safety at these establishments, administrators should implement prerequisite food safety programs.

학교급식 영양(교)사와 조리종사원의 직무스트레스, 직무소진, 이직의도 간의 구조적 관계 (The Structural Relationship of Job Stress, Job Burnout, and Turnover Intention of School Dietitians, School Nutrition Teachers and School Foodservice Employees)

  • 본 연구는 학교 급식을 담당하는 영양(교)사와 조리종사원의 직무스트레스-직무소진-이직의도의 구조적 관계 비교분석을 위해 서울, 경기소재 180개 직영, 위탁 초 중 고동학교에 근무 중인 영양(교)사와 서울, 경기소재 50개 직영, 위탁 초 중 고등학교에 근무 중인 조리종사원을 대상으로 실시되었다. 영양(교)사와 조리종사원의 직무스트레스, 직무소진 및 이직의도의 구조모형을 비교 분석한 결과 직무요구와 보상부적절성이 비중이 가장 큰 요인임을 확인할 수 있다. 학교급식의 양적인 확대도 중요하지만 학교 급식에 종사하고 종사자의 스트레스요인을 낮춰 영양(교)사 조리종사원으로써 긍지와 만족감을 가지고 직무를 수행 할 수 있을 수 있도록 인식의 전환과 구체적인 방안이 마련되어야 할 것이다.

급식관리방법에 따른 환자 만족도 비교연구 (A comparison of in-patients' satisfaction in hospital foodservice method)

  • The purpose of this study were to improve in foodservice system, and to evaluate the satisfaction of patient meal. Two General Hospitals (A & B) in Ewha Womans University college of Medicine were selected for this study. The survey questionnaire consisted of general backgrounds and foodservice evaluation. We chosed factors which may influence meal satisfaction such as meal time, amount, optimal temperature, taste, quality, sanitary condition, and employee' s kindness. One-way ANOVA and Pearson' s correlation were used as statistical methods. The results can be summarized as follows 1. In meal time, for the A&B hospitals were 3.46$\pm$0.93 3.63$\pm$0.76 respectively. 2. In cold foods for the A&B hospitals were 3.23$\pm$0.89 3.52$\pm$0.78 respectively while in hot foods 3.29$\pm$1.02 3.27$\pm$0.90 respectively for A&B hospitals. 3. In taste for the A&B hospitals were 2.81$\pm$0.96 3.01$\pm$0.95 respectively. 4. In quality were 2.93$\pm$0.92 3.25$\pm$0.91 respectivly. 5. In amount were 3.38$\pm$0.95 3.36$\pm$0.98 respectively. 6. In sanitary condition for the A&B hospitals were 3.55$\pm$0.88 3.12$\pm$0.97 respectively. 7. In kindness were 3.11$\pm$0.87 3.32$\pm$0.76 respectively. 8. Quality, taste, meal time, kindness, sanitary condition, temperature, amount, age, duration, and room grade were significantly correlated to the satisfaction of patient meal in order.
