Genetic and Phenotypic Correlations between the Economic Traits and Egg Components, Egg Qualities in Korean Native Ogol fowl (한국재래오골계(韓園在來鳥骨鷄)의 주요경제형질(主要經濟形質)과 난구성분(卵構成分) 및 난질간(卵質間)의 유전상관(遺傳相關) 및 표현형상관)

  • This study was conducted to estimate the genetic and phenotypic correlations between economic traits and egg compositions, egg qualities in Korean Native Ogol fowl. The data analysis were the records of 450 pullets produced from 150 dams and 20 sires of Korean Native Ogol fowl at Chungnam National University from June 18, 1987 to April 6, 1989. The results obtained are summarized as follows : 1. The genetic correlation coefficients between the economic traits and egg components were as follows ; between body weight and albumen weight, yolk weight, shell weight were 0.083~0.591, 0.110~0.541 and 0.336~0.782 ; between age at first egg and albumen weight: yolk weight, shell weight were 0.476~0.692, 0.265~0.631 and 0.420~0.519 ; between number of egg production and albumen weight, yolk weight, shell weight were -0.578~-0.240, -0.255~-0.060 and -0.477~-0.313 ; between egg weight and albumen weight, yolk weight, shell weight were 0.825~0.939, 0.382~0.564 and 0.374~0.937, respectively. 2. The genetic correlation coefficients between economic traits and egg qualities were as follows : between body weight and egg shape index, shell thickness, albumen height, Haugh units were 0.215~0.337, 0.248~0.650, 0.161~0.624 and 0.157~0.499 ; between number of egg production and egg shape index, shell thickness, albumen height, Haugh units were -0.384~-0207, -0.557~-0.306, -0.555~-0.198 and -0.582~-0.974 ; between egg weight and egg shape index, shell thickness, albumen height, Haugh units were 0.276~0.697, 0.290~0.627, 0.238~0.538 and -0.207~0.020, respectively.

  • This study was divided into experiment 1(191 g egg-albumen plus 150g sucrose) and experiment 2(222g egg-albumen plus 150g sucrose)which were subdivided into groups treated with 0, 8.71, 17.43 and 26.149 egg yolk. These experiments were incubated in a shaking water bath($50^{\circ}C$ ) with a speed of 92(turnaround) per minute (or a period of times. The pH and specific gravity were measured after 2, 4, 6, 8, 10 and 12 hours incubation. The results obtained were as follows : 1. The pH and specific gravity were steadily increased by shaking time, but decreased by the amount of egg yolk. 2. In the groups treated with egg-albumen, egg yolk, and sucrose of experiments 1 and 2, PH was increased by shaking time and reached highest value at 10 hours shaking time. However, after 12 hours shaking time pH slightly decreased though not significantly. 3. In the experiment 1 and 2, specific gravity had a higher correlation with pH and the regression equation between specific gravity and pH (X) were Y=0.1081x+0.272(r=0.899n) and Y=0.083X+0.476(r=0.825$^{* *}$), respectively.y.

Effect of Hen Weight on Egg Production and Some Egg Quality Characteristics in Pheasants (Phasianus colchicus)

  • A study was conducted to determine the effect of live weight of pheasants on egg production and egg quality characteristics. A total of 48 ring-necked pheasants were divided into control, heavy, middle and light BW groups. Live weights of the control were 1,187 g, 1,352.92 g for heavy group, 1,247.92 g for middle group and 1,003.33 g for light group. Egg production of groups were found as 47.32, 42.82, 45.79 and 46.51% respectively, in 10 weeks of period. There were no statistical differences on egg production among the groups. The effect of live weight on egg weight, shape index, specific gravity, shell weight, shell thickness, Haugh Unit, yolk weight and albumen weight were found statistically significant (p<0.05). The effect of live weight on albumen index, membrane weight and membrane thickness were found not important (p>0.05). On the other hand, other important factors to be effective on the egg quality of pheasants should be investigated. As a result of this study, live weight of pheasant hens is not an important factor to obtain high egg production in pheasants. But, body conformation of breeding materials should be in good conditions.

Effects of Egg Storage, Storage Temperature, and Insemination of Hens on Egg Quality (계란의 저장기간, 저장온도 및 암닭의 수정이 계란의 품질에 미치는 영향)

  • A total of 1,200 eggs obtained from 312-day-old Hy-line Brown laying breeder hens and 319-day-old Hy-line Brown commercial laying hens (600 eggs obtained from each one) at same day were used to investigate the effects of egg storage, storage temperature, and insemination of hens on the change of albumen height, Haugh unit(HU), albumen pH, shell strength, and yolk color. Eggs were stored up to 14 days after lay at $3^{\circ}C$ or $10^{\circ}C$ and sampled one day after stored and then 24 hours interval. Longer periods of storage resulted in lower albumen height and HU at both storage temperatures, but in higher albumen pH. The eggs stored at $3^{\circ}C$ were significantly (P<0.05) higher in HU and lower in albumen pH than the ones stored at $10^{\circ}C$. The eggs obtained from the non-inseminated-hens were significantly (P<0.05) higher in albumen height, HU, and albumen pH than the eggs obtained from the inseminated-hens. Whereas, the eggs obtained from the non-inseminated-hens in the mean albumen pH of eggs stored at $3^{\circ}C$ were significantly (P<0.05) higher than the ones obtained from the inseminated-hens, but the mean albumen pH of eggs stored at 10^{\circ}C did not differ each other. The mean shell strength of the eggs obtained from the inseminated-hens was significantly (P<0.05) stronger than that of the eggs obtained from the non-inseminated-hens at both storage temperatures. Albumen height and albumen pH were negatively correlated $(P<0.01\~0.001)$ in both inseminated and non-inseminated-hen's egg groups. The degree of yolk colors was not significantly changed overall of the experimental periods in both storage temperatures. The study suggests that the change of egg freshness such as albumen height and HU is relatively more associated with storage period and storage temperature than insemination or non-insemination of hens.

Comparisons between Two Different Eggshell Lines on Egg Traits and Egg Production Rate in Layers (계란의 형질들 및 산란율에 대한 난각색이 다른 두 계통간의 비교 연구)

  • The objective of this study was to compare the two different eggshell lines of commercial layers on egg traits and egg production rate. Hy-line W-98 (white shell line; WSL) and Hy-line Brown (brown shell line; BSL) were used as experimental stocks. The birds in each line were allocated to three floor pens each containing 25-birds. They were fed a ration containing 15.5% CP and 2,700 ㎉/kg ME, and were supplied 16 h of light per day throughout the experimental Periods. The egg traits and egg Production rate were measured from 53 to 56-wk-old and 20 to 56-wk-old, respectively. The mean egg weight and the mean percentage albumen were significantly heavier and higher (P<0.05) in the BSL than in the WSL, respectively. The mean eggshell thickness and the mean percentage shell were also significantly thicker and higher (P<0.05) in the BSL than those in the WSL, respectively. However, the mean percentage yolk and the yolk to albumen ratio showed a reverse trend as shown in the mean percentage albumen or percentage eggshell. Although the WSL birds started laying 4 d earlier than the BSL ones, the overall mean egg Production rate for BSL during 20 to 56 wk of age was significantly higher (P<0.05) by 6.6% than the WSL. It was concluded that the eggs of brown eggshell line had heavier egg weight and thicker shell, and they had more percentage of albumen, but less percentage of yolk than those of the white eggshell line. These results suggest that the brown eggshell line raised on the floor might be more beneficial than the white eggshell line not only for the preference of the table egg consumers, but also for the efficient production of the eggs.

  • This study was undertaken to find out the effect of eeg albumen concentration and addition of sugars on the functional properties of egg albumen before and after heat treatment at $60^{\circ}C$ for 5 minutes. The turbidity was decreased until 8.3% protein concentration but increased as diluted and decreased again below 3.32% protein concentration before and after the heat treatment. The foaming power was peak at 8.3% protein concentration but decreased as diluted before and after the heat treatment. The foam stability was decreased as diluted before and after the heat treatment. The turbidity was not changed by addition of sucrose before the heat treatment and decreased after the heat treatment. The foaming power was decreased by addition of over 5% sucrose before the heat treatment and decreased by addition of over 2.5% sucrose after the heat treatment . The foam stability was increased by addition of over 5% sucrose before the heat treatment and increased by addition of sucrose after the heat treatment. The turbidity was increased by addition of glucose before the heat treatment and not changed after the heat treatment. The foaming power was decreased by the addition of glucose before the heat treatment and decreased by the addition of over 5% glucose after the heat treatment. The foam stability was decreased by the addition of glucose before and after the heat treatment.

Immune Status of Breeding Hens Against Newcastle Disease (종계군(種鷄群)의 Newcastle Disease에 대(對)한 면역상태(免疫狀態)에 관(關)한 연구(硏究))

  • The present study was undertaken to observe the immune status of breeding hens and laying hens against Newcastle disease (ND). The methods of extraction of hemagglutination inhibition (HI) antibody from egg yolk, the detection of HI antibody in egg albumen and the correlation between HI antibody titers in maternal sera and egg yolks were discussed. For the purposes of these experiments, 9 flocks of breeding hens and 16 flocks of laying hens immunized against Newcastle disease virus were investigated. The vaccination program of tested flocks was 3-3-3 or 4-4-4 in general. The results obtained are summerized as follows: Freezing-thawing was the best method far antibody extraction from egg yolk for HI test. The HI antibody against NDV was found in egg albumen (geometric mean, 4.5), but lower than that found in egg yolk (32.1). The geometric mean of HI antibody titers of egg yolks (84.1) was higher than that of maternal sera (68.4) and day-old chicken sera (25.3). There was correlation between HI antibody titers of maternal sera(Y) and those of egg yolks(X). The coefficient correlation was r=0.63, and the line of regression of Y on X was $\hat{Y}$=35.91+0.35X.

Effects of Heating Temperature and Shaking Time on Viscosity Change of Whole Egg, Yolk, and Albumen (가온온도 및 진탕시간이 전란, 난황 및 난백의 점도 변화에 미치는 효과)

  • The experiment was performed to investigate the effect of heating temperature and shaking time on viscosity change of whole egg, yolk, and albumen. Shaking water bath was used at 35, 45, and 50$^{\circ}C$ and the viscosity was measured at 0, 3, 6, 9, and 12 hours. There were no significant differences in viscosity of whole egg between 35$^{\circ}C$ and 45$^{\circ}C$( over-all mean). However, the 50$^{\circ}C$ group showed significantly lower viscosity compared to 35 or 45$^{\circ}C$ groups(P < 0.05). Non-significant differences were noticed in yolk viscosity among temperature treatments, but there were significant differences among shaking times(P < 0.05). Heating temperature and shaking time did not show significant effect on the viscosity of albumen, but the lowest viscosity was shown at 0, 9, and 12 hours at 50$^{\circ}C$. The results suggest that whole egg, yolk, and albumen should be treated for more than 3 hours at 50$^{\circ}C$, more than 3 hours at 35$^{\circ}C$ and 45$^{\circ}C$ and 3~9 hours at 50$^{\circ}C$, and 0, 9, 12 hours at 50$^{\circ}C$, respectively and then can be used in the processing.

Studies on the Estimation of the Genetic Parameters on All Traits in Korean Native Ogol Fowl III Estimations of the Heritabilities and Genetic Correlations on the Egg Shape Index and Egg Qualities (한국재래오골계의 제형질에 대한 유전모수추정에 관한 연구 III, 난형지수 및 난질에 대한 유전력 및 유전상관추구)

  • This study was conducted to estimate heritabilities and genetic correlations on egg shape index and egg qualities in Korean Native Ogol fowl. The date analysis were a total of 58,320 eggs in 450 pullets bred from 150 dams and 20 sires of korean Native Ogol fowl raised at Chungnam National University from June 18, 1987 to April 6, 1989. The results obtained are summarized as follows:1. On the egg shape index and egg qualities, the egg shape index at first egg, 300 and 500 days of age were 75.044, 74.169 and 72.601 ; the shell thickness were 0.342, 0.320 and 0.326 mm: the albumen height were 6.014, 5.161 and 4.807mm:the Haugh units were 83.903, 71.348 and 71.136, respectively. 2. The heritabilities estimates of egg shape index and egg qualifies based on the varience of sires, dams and combined components were 0.120-0.827, 0.485-0.503 and 0.232-0.872 for egg shape index at first egg, 300 days and 500 days of age: 0.197-0.819. 0.184-0.756 and 0.279-0.557 for shell thickness at first egg, 300days and 500days of age:0.202-0.678, 0.119-0.394 and 0.225-0.527 for albumen height at first egg, 300 and 500 days of age 0.108-0.669, 0.237-0.251 and 0.354-0.443 for Haugh units at first egg 300days and 500days of age. 3. The genetic correlation coefficients of egg shape index and egg qualifies were as follows; between egg shape index and shell thickness, albumen height and Haugh units were 0.596-0.909, 0.384-0.943 and 0.121-0.619:between shell thickness and albumen height. Haugh units were 0.082-0.596, -0.076-0.167:between albumen height and Haugh units were 0.374-0.964.
