Nutrients and bioactive potentials of edible green and red seaweed in Korea

  • Background: Traditionally, East-Asians (Korea, Japan, and China) utilize seaweeds as a food source and ingredient in traditional medicine. Korea is one of the biggest seaweed producer and consumer in the global trade. Especially, side dishes made from seaweeds are very popular in the traditional Korean cuisines. Seaweeds are popular as fresh vegetable salads and soup or eaten as snacks. Main body: Seaweeds are rich in essential nutrients, minerals, and vitamins as well as a promising source of novel bioactive compounds. The compounds (polysaccharides, polyphenols, and sterols) present in the edible Korean seaweeds possess important bioactive properties such as antioxidant, anti-inflammation, anticancer, anti-diabetic, and anticoagulant properties. Thus, the long-term consumption of seaweed has a potential to reduce the risk of cancer, diabetes, obesity, and inflammation-related complications. However, seaweed consumption is limited to the small population around the globe. Thus, it is important to increase the awareness of the health benefits of seaweeds consumption among the general population. Short conclusion: In the present study, we discussed some popular green and red edible Korean seaweeds and their health-promoting properties. This study might be useful to increase the public awareness of the consumption of seaweed as a food source.

기장산과 완도산 식용해조류 중의 미네랄 함량 (Mineral Contents of Edible Seaweeds Collected from Gijang and Wando in Korea)

  • Mineral and heavy metal contents were determined in three brown edible seaweeds (sea mustard, Undaria pinnatifida; seaweed fusiforme, Hizikia fusiforme; sea tangle, Laminaria japonica) collected from Gijang and Wando in Korea, and two green seaweeds (sea lettuce, Enteromorpha prolifera; green laver, Monostroma nitidum) collected from Gijang. Seaweeds contained high proportions of ash (13.8-24.8%) and sulfate (1.08-3.25%). In brown seaweeds, ash contents (24.5-24.8%) were higher than in green seaweeds (13.8-15.2%). The differences of mineral contents were remarkable in both Gijang and Wando and in 5 various kinds of seaweeds. Brown seaweeds contained higher amounts of both macro-minerals (657-13,947 mg/100 g; Ca, Mg, Na, K) and trace elements (0.27-12.98 mg/100 g; Fe, Al, Zn, Mn, Cr, Cu, Ni), and green seaweeds also had relatively higher amounts of both macro-minerals (233-5,279 mg/100 g) and trace elements (0.26-10.61 mg/100 g).

해조류로부터 항고혈압성분의 분리정제 (Separation and Purification of Antihypertensive Substances from Edible Seaweeds)

  • To isolate natural antihypertensive substances from edible seaweeds, we screened for and separated active compounds contained in natural Underia pinnatifida, cultural Underia pinnatifida, Laminaria japonica, Sporophylls and Agarum cribrosum. They were extracted using room temperature water, boiling water, acetone, and methanol in turn or using room temperature water, ether, acetone, methanol and boiling water in order. The in vitro antihypertensive activity was quantified as inhibitory efficacy against angiotensin-I converting enzyme (ACE), which is a factor inducing hypertension. For all of the seaweeds tested, the fractions soluble in room temperature water and in boiling water showed the strongest ACE inhibitory effect among the extracted fractions. Conversely, the methanol-extracted fractions for all of the seaweeds tested showed no antihypertensive activity. While the ether and acetone fractions had slight antihypertensive effects. The compounds in the aqueous extracts that had antihypertensive activity were presumed to be polysaccharides, such as fucoidan and alginate.

여드름균(Cutibacterium acnes)에 대한 해조류 추출물의 항균효과 (In vitro Antimicrobial Activities of Edible Seaweeds Extracts Against Cutibacterium acnes)

  • The study was aimed at developing an alternative therapeutic agent against acne vulgaris, one of the most common skin diseases, to meet the continuing demand for new therapies. Acne vulgaris is often associated with the acne-causing bacteria such as Cutibacterium acnes. To investigate the safety of agents against acne vulgaris, we evaluated the potential antibacterial activities of edible seaweeds against C. acnes in Korea. Forty-one edible seaweeds, including the brown, green, and red varieties, were selected for the antibacterial test. In comparison with other seaweeds, 70% ethanolic extracts of brown seaweeds, such as Cladophora wrightiana var. minor, Eisenia bicyclis, Ecklonia cava, Ishige foliacea, Ishige okamurae, Sargassum filicinum, and Sargassum miyabei Yendo, exhibited potential antibacterial activity against C. acnes with minimum inhibitory concentrations ranging between 64 and 128 ㎍/mL. To investigate the active anti-acne agents and to enhance our understanding of the antibacterial activities against C. acnes, further solvent-fractionation experiments are warranted. The findings imply that brown seaweeds can be a potential source of natural agents against acne vulgaris.

다소비 해조류 섭취에 의한 유해중금속의 식이노출평가 (Assessment of Dietary Exposure to Toxic Heavy Metals from Edible Seaweeds in Korea)

  • In the present study, exposure to heavy metals by consumption of edible seaweeds (green laver, laver, hijiki, sea tangle, and sea mustard) was assessed based on their concentrations of lead (Pb), cadmium (Cd), arsenic (As), and mercury (Hg). The mean of heavy metal concentrations were 0.006-0.023 mg/kg for Pb, 0.037-0.156 mg/kg for Cd, 1.117-15.928 mg/kg for As, and 0.008-0.021 mg/kg for Hg. In multivariate analysis, the correlations were high between Pb levels in sea mustard, Cb levels in laver, and As and Hg level in Hijiki. However, the estimated daily intake and target hazard quotient (THQ) of the heavy metals in edible seaweeds were below their approved limits suggesting no health risks associated with seaweed consumption by Koreans.

한국산 주요 식용해조류의 미량금속 함량 및 안전성 평가 (Trace Metal Contents and Safety Evaluation of Major Edible Seaweeds from Korean Coast)

  • 우리나라 연안에서 수집한 김(33점), 미역(88점), 다시마(12점), 파래(43점)등 총 176점의 주요 식용 해조류에 대한 미량금속의 함량을 조사한 결과, 아연, 망간, 구리 순으로 우리 체내에서 없어서는 안되는 필수성분들의 함량이 높았으며, 다음으로 크롬, 니켈, 납, 카드뮴, 수은 순이었다. 김에서는 카드뮴과 아연이, 그리고 파래에서는 크롬, 니켈 및 납이 가장 높게 검출되었고, 다시마에서는 수은이 가장 높게 검출되는 경향을 나타내었다. 카드뮴과 아연의 농축계수는 김에서 각각 약 12,000 및 14,000으로 가장 높게 나타났으며 크롬과 납은 파래 에서 각각 약 23,000 및 약 2,500으로 가장 많이 농축되었다. 또한, 구리는 김과 파래에서 약 5,500으로 많이 농축되었다. 다시마에서는 망간과 납 사이에 다른 식용해조류와는 달리 특이적으로 높은 상관관계를 나타내었으며, 금속간의 상관관계도 같은 갈조류인 미역, 그리고 녹조류인 파래와 전혀 다른 경향을 나타내었다. 김, 미역, 파래에서는 니첼-망간, 니켈-크롬 및 망간-크롬간에는 높은 상관관계를 나타내어 다른 금속들과 뚜렷한 차이를 보였으며, 특히 크롬-니켈은 높은 상관관계를 나타내었다. 우리나라 국민의 식용해조류를 통한 수은의 1일 섭취량은 평균 $0.03{\mu}g$이었으며, 이는 PTWI($5{\mu}g/kg$ body weight/week)의 $0.07\%$ 수준이었다. 또한, 카드뮴의 1일 섭취량은 평균 $2.15{\mu}g$이었으며, 이는 PTWI(7${\mu}g/kg$ body weight/week)의 $3.57\%$ 수준이었다. 납의 1일 섭취량은 평균 $2.65{\mu}g$이었으며, 이는 PTWI($25{\mu}g/kg$ body weight/week)의 $1.20\%$ 수준이었다. 따라서 우리국민이 해조류를 통해 일주일에 섭취하는 수은, 납, 카드뮴등의 함량은 PTWI의 $0.07{\~}3.57\%$에 해당되며, 유해중금속 함량은 매우 안전한 수준인 것으로 판단된다. 우리나라 국민은 해조류 통한 구리, 아연, 망간, 크롬의 섭취량은 영양소 기준치의 각각 1.35, 0.89, 4.28, $9.18\%$ 수준이었다.

35종 해조류 추출물의 in-vitro 항혈전 활성 평가 (Evaluation of In-vitro Anticoagulation Activity of 35 Different Seaweed Extracts)

  • 혈전성 질환을 예방, 개선할 수 있는 안전한 항혈전제를 개발하기 위해, 일반적으로 항혈전 효과가 있다고 알려진 식용 해조류 35종(갈조류 17종, 홍조류 11종 및 녹조류 7종)을 대상으로 메탄올 추출물을 조제하고, 이들의 thrombin time (TT), prothrombin time (PT), activated partial thromboplastin time (aPTT)을 평가하였다. 트롬빈 저해(TT)의 경우 35종 중에서 감태, 곰피, 대황, 넓패, 패, 알송이모자반 및 야마다모자반에서 강력한 활성을, 프로트롬빈 저해(PT)의 경우 트롬빈 저해활성이 나타난 7종 중 야마다모자반을 제외한 6종에서 강력한 활성을 확인하였으며, 혈액응고인자 저해(aPTT)에서는 감태, 곰피, 대황, 넓패, 패, 알송이모자반 및 톳에서 강력한 활성이 나타났다. 선별된 8종의 시료를 대상으로 다양한 농도에서 항혈전 활성을 평가한 결과 알송이모자반에서 가장 강력한 활성을 확인하였으며, 곰피, 대황 및 넓패가 효과적이었다. 항혈전 활성과 해조류 추출물의 총 flavonoid, 총 polyphenol, 총당 및 환원당 함량과의 상관 관계를 검토한 결과, 활성물질은 flavonoid성 물질로 추측되었으며, 선별된 8종은 총 flavonoid 함량 및 총 polyphenol 함량이 매우 높은 특징을 나타내었다. 본 연구 결과는 경제적이면서 대량공급이 가능한 식용 해조류로부터 신규의 안전한 항혈전제 개발이 가능함을 제시하며, 야마다모자반과 톳은 트롬빈 또는 혈장내 응고 인자에 대한 특이 저해제로 개발 가능함을 제시하고 있다.

α-amylase and α-glucosidase inhibition effects of Korean edible brown, green, and red seaweed extracts

  • The control of intestinal α-amylase and α-glucosidase is an effective therapeutic strategy for prevention of post-prandial hyperglycemia associated with diabetes mellitus. The objective of this study was to evaluate the anti-diabetes activities of Korean edible seaweed against α-amylase and α-glucosidase, two carbolytic enzymes involved in serum glucose regulation. Of the 41 species initially screened, Cladophora wrightiana var. minor, Eisenia bicyclis, Ecklonia cava, Ishige foliacea, and Ishige okamurae exhibited the strongest inhibitory activities from brown seaweeds. Asparagopsis taxiformis showed the strongest inhibitory effects from red seaweeds. The results of this study suggest that the crude brown seaweed extracts (C. wrightiana var. minor, E. bicyclis, E. cava, I. foliacea, and I. okamurae) and crude red seaweed extracts (A. taxiformis) may have beneficial effects suppressing the rise in postprandial hyperglycemia through the inhibition of α-amylase and α-glucosidase.

비타민 A와 비타민 C의 급원식품 선정 (Food Sources of Vitamin A and Vitamin C)

  • The purpose of this study was to find out and advocate the intake of vitamin A and C rich foods in Korean people. Forty kinds of vitamin A and C rich foods were selected by the vitamin quantity in 100g edible portion. in single serving size. and by the 1997 national food supply data. The results were summarized as follows. 1. The vitamin A rich foods 1) The food sources of vitamin A presented in the middle and high school home economics textbooks were liver. egg/egg yolk. milk/dairy products. and green and yellow vegetables. etc. 2) The vitamin A rich foods by 100g edible portion ere in order of red pepper(dried). laver(dried). carrot. meat edible viscera. eel. etc. And the vitamin A rich foods by the vitamin A content in single serving size were in order of carrot. eel. meat edible viscera. water shield. red pepper(dried). etc. 3) The vitamin A suppling foods according to the 1997 national food supply data were in order of red pepper(dried). meat edible viscera. laver. carrot. etc. The green and yellow vegetables. fish and shellfish. and seaweeds were the most important sources of vitamin A in Korean. 2. The vitamin C rich foods 1) The food sources of vitamin C presented in the textbooks of middle and high school were strawberry. citrus fruits. and vegetables such as spinach. chinese cabbage. radish. crown daisy. etc. 2) The vitamin C rich foods on the basis of the vitamin C content in 100g edible portion were in order of sweet pepper. goose berry. citron. strawberry. water shield. etc. And the vitamin C rich foods by the quantity in single serving size were in order of strawberry. goose berry. citron. sweet pepper. lemon. etc. 3) The vitamin C suppling foods according to the 1997 national food supply data were in order of chinese cabbage. radish. citrus fruits. strawberry. etc. Not only vegetables and fruits but also seaweeds like dried laver and sea mustard were the most important source of vitamin C in korean.

한국산 5종 해조류의 항산화효과와 총 폴리페놀 함량과의 관련성 (The Correlation of Antioxidative Effects of 5 Korean Common Edible Seaweeds and Total Polyphenol Content)

  • 한국에서 널리 식용으로 이용되고 있는 미역, 다시마, 톳(갈조류), 파래(녹조류), 김(홍조류)의 항산화효과와 총 플라보노이드와 폴리페놀 함량과의 관련성을 알아보고자 건조 상태의 시판 해조류로부터 에탄올 추출시료를 얻은 후 $Fe^{2+}$로 유도된 지질과산화 억제율, DPPH 라디칼 소거율 및 MDA-BSA 결합 저해율을 측정하는 3가지 방법으로 항산화효과를 검정 하였고, 총 플라보노이드와 폴리페놀 함량을 측정하였다. 그 결과, 녹조류인 파래의 항산화효과가 가장 우수하였는데, 특히 지질과산화물이 단백질과 결합하는 반응을 매우 효과적으로 저해하였다. 그 다음 김과 다시마의 항산화효과가 우수하였으며, 미 역과 톳은 항산화효과가 거의 없었다. 총 플라보노이드 함량은 미역이 11.63 mg/g 건조무게로 가장 높았고, 총 폴리페놀 함량은 파래가 8.97 mg/g 건조무게로 가장 높았다. 한편, 3가지 방법에 의해 측정된 해조류의 항산화효과 모두가 총 폴리페놀 함량과 유의한 양의 상관관계를 보였으며, 특히 지질과산화억제율과 매우 높은 상관관계를 나타내어(r=0.9351, p<0.0001), 해조류에서의 항산화효과에 폴리페놀 성분이 크게 기여할 가능성을 보였다.
