고압 가열 방식으로 추출한 Brown Stock의 특성 (The Characteristics of Brown Stock Prepared by High Pressure Cooking)

  • The autoclave method and the traditional cooking method were compared for nutrients(especially, minerals), color difference, viscosity, reduction of sugar and amino nitrogen content of brown stock. The autoclave cooking method is better than the traditional cooking method for retaining protein and amino nitrogen contents, as well as for reducing sugar content. Also, reducing sugar content increased by the autoclave cooking method. Since the color of brown sauce was related with the reducing sugar content, the autoclave cooking method was more effective than the traditional cooking method for the color development of brown stock. Since the autoclave method can reduce the cooking time without a loss of quality in brown stock, the autoclave method is a viable alternative to the traditional method of preparing brown stock.

  • The history of medicine has a strong correlation to the ancient development of epidemics. Although the study of the history of East Asian Traditional Medicine does not put much emphasis in understanding the flow of medical history in relation to epidemics, it largely impacted the development of this epidemic and the compilation and evolution of treatment methods. The same was true for Korea as they linked development of epidemics, unusual natural conditions, and social phenomenons from ancient documents. This study methodically classifies the epidemics mentioned in ${\ulcorner}$三國史記${\lrcorner}$ and concludes on how ancient Koreans understood epidemics.

Market Discipline and Bank Risk Taking: Evidence from the East Asian Banking Sector

  • The third pillar of the Basel II highlights the role of market discipline in easing the existing pressure on traditional monitoring measures like capital requirement and government supervision. This study test the effectiveness of market discipline in inducing prudential risk management practices among the East Asian banks over the 1995 to 2005 period. Market discipline is measured using information disclosure and interbank deposit holdings. We find that only the latter is an effective market discipline tool. However, the former becomes effective when market concentration is higher. We find that government owned, foreign owned and recapilatised banks are subject to market disciplining when disclosure in taken account but the opposite is true when interbank deposits is taken into account. Finally, we find that banks that disclose more risk related information hold more capital against their non-performing loan. The implications of the findings are discussed.

미국 거주 한인들의 전통음식에 관한 인식조사(I);이용실태와 개선방안을 중심으로 (The Korean Americans’ Knowledge on Korean Traditional Foods (I) -Actual State of Utilization and Improvement Measures-)

  • This study was conducted to investigate the actual state of utilization of Korean traditional foods by Korean Americans residing in L.A. area and to provide come policies, to improve their attitudes for Korean traditional foods. The proper period preparing traditional foods was the occasion of family events(47.0% )and Korean festivals(40.8%). Festival foods were prepared in Sulnal( =New Year's Day), Chusok( =the Korean Thanksgiving Day), Daeborum( =the 15th of January by the lunar calendar), Dongji( =the winter solstice) and Tano( =the 5th day of the 5th by lunar month), respectively. Sixty five percent of all the respondents expressed their wish to hand down the cooking methods of traditional foods. However, only28.6% of the respondents at their twenties replied positively on this matter. To maintain and develop traditional foods abroad, it is necessary that older generations sometimes offer opportunities to meet with them to the coming korean generations to taste traditional foods and that Korean food companies establish special selling agencies abroad and export standardized traditional foods. And furthermore, if tourism corporations and cooking schools hold a food exhibition and or a food-tasting party, occasionally, in conjunction with the embassies and legations abroad, the utilization of traditional foods will increase.

종가(宗家)의 고조리서를 통해 본 전통주의 연구 (Recipe of Traditional Korean Liquor in Old Cookbooks of Jong-Ga (Head & Noble Family))

  • Recently, a large number of people are growing interested in Korean cuisine and progress Korean culture. This study inverstigated several kinds of Korean traditional alcoholic drinks and brewing methods, including ingredients in ancient culinary manuscripts "Soowoonjabbang", "Eumsikdimibang", "Onjubub", "Jusiksiui", "Uumjeabang" and "Eumsikbangmunnira" of Korean head family. Korean traditional alcoholic drinks were sorted into two groups based on characteristic (danyang ju, yiyang ju, samyang ju, sayang ju, yakyoung ju, gahyang ju, honyang juand soju) and five categories based on preconditioning methods of Korean traditional alcoholic drinks (iporrige, baeksul ki, gumung tteok, godubap, bumbuck). The most announced ancient Korean culinary manuscript is "Onjubub" (57 varieties of Korean traditional alcoholic drinks), the second largest book is "Eumsikdimibang" (49 varieties of Korean traditional alcoholic drinks), and the third highest book is "Soowoonjabbang" (40 varieties of Korean traditional alcoholic drinks). The "Uumjeabang" and "Eumsikbangmunnira" announced 21 and 15 varieties of Korean traditional alcoholic drinks in six books of ancient Korean culinary manuscripts, respectively.

백령도 주부들의 전통 음식에 대한 의식과 세시풍속 실태 (Perception of Traditional Food and Seasonal Customs by Housewives Living on Baengnyeong Island)

  • The purpose of this study was to identify determinants for the perception of traditional food and the probability of belonging to the succession group of traditional food. This study also analyzed foods for seasonal custom and strengths as well as direction concerning improvement of traditional foods, while taking the housewives' hometowns into account. Data were collected from 304 housewives living on Baengnyeong island. Regression analysis showed that family income, age, type, years of residence on Baengnyeong island and hometown were significantly related to the perception of traditional food. Among the significant variables, hometown was the most important factor in explaining perceptional differences. Logit analysis indicated that the probability of belonging to the succession group of traditional food was high with low educational level, high perceptional degree, and North Korea as a native country. The results of chi-square analysis proved that foods associated with seasonal custom, strengths and the improvement of traditional food were different between housewives having South Korea and North Korea as a native country. In this article, similarities and differences in the foods associated with seasonal customs, strengths and the direction concerning improvement of traditional foods are discussed, and implications for both nutritionists and food marketers are provided.

Introducing Daesoon Philosophy to the West

  • Daesoon philosophy has been described as a quintessential Korean philosophy. Given the great difference between traditional Western and East Asian ways of thinking, how can such a quintessential Korean philosophy be explained to people who have no background in traditional East Asian thought? After all, the Daeson Jinrihoe way of approaching such core problems as how to make this world a better place is not only very different from the way the West has traditionally approached such problems, Daesoon Jinrihoe uses terminology which most Westerners are not very familiar with. Translation into Western languages such as English helps, but a conceptual gap remains because of the differences in the way key Daesoon Jinrihoe terms are understood in the West. As a first step toward overcoming that gap, I discuss three key teachings of Daesoon philosophy and how their translations into English need to be amplified so that people in the West who are not well versed in East Asian philosophy can gain a more accurate understanding of what those terms and phrases mean in their original language. The three items discussed here are the tenet "virtuous concordance of yin and yang," the Essential Attitude of sincerity, and the precept "do not deceive yourself."

지식재산으로서의 의방유취의 가치와 DB구축의 필요성에 관한 소고 (A Study for Database of Uibang Yuchui (醫方類聚) and Its Value as the Intellectual Property of Traditional Korean Medical Knowledge)

  • Today, knowledge itself has become a resource which must be protected by the pertinent community of its contributors and users, from being manipulated or distorted by third-party players. The preservation of knowledge in relationship to the cultural context of its origins, has been recognized by international organizations intent on maintaining authentic voice and perspective. Globally, the WIPO (World Intellectual Property Organization) organizes the annual IGC (Intergovernmental Committee) meeting to address various issues associated with each country's utilization of intellectual and bio source property. Korean Medicine is the official name for the traditional medicine that has been inherited from the cultures of the Korean Peninsula. It is one of the four practices of East Asian Medicine including Traditional Chinese Medicine (TCM) from China, Kampo Medicine of Japan, and Sino-Vietnamese Medicine in Vietnam. As a cultural treasure representing centuries of evolving knowledge, Korean Medicine is protected under intellectual property rights afforded by WIPO, and must be understood in relationship to, and distinct from, TCM. It is understood that China has a strong political purpose to claim all the traditional medicines of the East Asian region under the name of TCM, including Korean Medicine. In fact TCM was authorized as the representative name for all East Asian medicine by decisions made by the ISO (International Standard Organization) in 2015. This paper proposes a pilot study on how to protect the intellectual property of Korean Medicine from efforts by China to claim it under the umbrella of TCM. Using the Uibang Yuchui (醫方類聚, Classified Collection of Medical Formulas) this paper suggests establishing a Database of UBYC, which was published in 1477 by the Joseon Korea government. UBYC was the reorganized version of contemporary East Asian medical sources, and has already hundreds of year's rich indigenous and culturally specific medical history of Korea, from which Korean Medicine has been built.

  • East Asian traditional medicine(Asian medicine) should be understood correctly on the basis of Asian medical network. For the correct understanding we analyzed Asian medical history which could be divided into three categories based on Dong-Eui-Bo-Gam. There are three mechanisms of human diseases, which are the pathogenesis of six external etiological factors(wind, cold, summer-heat, dampness, dryness and fire) due to affection by exopathogen [外感六氣], the pathogenesis of five viscera due to internal injury [內傷五藏], and the pathogenesis of physical constitution due to vital activity [生命體質]. While Chinese medicine has mainly developed the pathogenesis of the former two, Korean traditional medicine has mainly developed the pathogenesis of physical constitution.

비정형 한의약텍스트 자동정형화프로그램 알고리즘개발 - 동의보감 약재정보를 중심으로 (A Study of the Production of an Algorithm That Standardizes Descriptions of Medical Techniques Found in Ancient East Asian Medical Texts)

  • For the past several decades, East Asian medicine has been examined in order to uncover its effectiveness in areas where biomedicine is found wanting. Although scientific approaches have been increasingly used to verify the utility of treatment techniques, countless traditional medical techniques found in ancient texts remain to be tested. Currently, about 20,000 or so ancient medical texts are recognized within the East Asian medical tradition. Although some famous texts have been translated and studied, many still exist only as original manuscripts. We are interested in the medical techniques that are listed in those manuscripts. Even before we can ascertain whether such ancient forms of medical treatment can be applied today it is important to understand the full picture of what kind of treatment technology exists. This study aims to develop a database program that automatically converts the original textual description of an East Asian medical technique into a more standardized version. First, our team analyzed the ways that medical skills were described and then designed a database algorithm that recognized the meaningful keywords of the descriptive text for a medical treatment and put it in the right cell in a structured table.
