Quality Characterization of Salmon Oil Microencapsulated with Various Wall Materials (다양한 피복물질을 이용한 연어 오일의 미세캡슐화 및 품질 특성)

  • The aim of this study was to investigate the quality characterization of salmon oil microencapsulated with maltodextrin (MD), cyclodextrin (CD), sodium caseinate (SC), arabic gum (AG) and WPI. After spray drying to ambient temperature, the salmon oil powders were packed (single package) and placed at room temperature ($25^{\circ}C$) for 30 day. The quality characterization of salmon oil powder including total oil (%), extractable oil (%), encapsulation efficiency (%), fatty acid, SEM, pH, acid value (AV), peroxide value(POV) were investigated. Salmon oil was microencapsulated with a high power yield (> 80%); including the formulation MD/SC and MD/SC/WPI. The microencapsules of MD/SC/WPI presented spherical shapes, smooth texture and non-porous surfaces. The pH of MD/SC/WPI varied from 6.11 to 5.99 (p>0.05). The AV of MD/SC/WPI varied from 4.74 to 4.61 (p>0.05). The pH and AV were not significantly different. The POV of MD/SC/WPI increased with storage day (p<0.05). It was concluded that MD/SC/WPI could delay lipid oxidation and high yield (82.55%) of salmon oil powder.

Analytical Studies on the Composition of Oil and Protein in the Seed of Thornless Chinese Pepper Zanthoxylum schinifoilum var. inermis Nakai (민산초나무 종실(種實)의 유지(油脂) 및 단백질조성(蛋白質組成)에 관한 연구(硏究))

  • In order to analyze the composition of fatty acid in the seed oil. and amino acid in the seed protein of wild thornless chinese pepper tree; Zanthoxylum schinifolum var. inermis Nakai. GLC method and amino acid autoanalyzer were applied. respectively. while the general composition of the seed and physico-chemical properties of the seed oil were also determined by A. O. A. C. method. The results obtained were summarized as follow The content of oil, protein and ashes were 47.05%, 20.14% and 3.1%, respectively. The content of sulfur and cyan compound in the seed were 0.02% and 0.00005%, respectively, which were far below than allowed guantity by food regulation. Therefore, it is considered to be safe for edible purpose. The iodine absorption number obtained was 145.2, which might be belonged to drying oil. The physico-chemical properties of the seed oil such as acid value, saponification number and refractive index showed the characteristics of an unsaturated high molecular fatty acid compound. The seed oil was composed of 34.8% of oleic acid, 25.1% of linoleic acid and 26.1% of linolenic acid, which accounts for more than 80% of essential fatty acid. Therefore, it could be used as an edible oil. Seventeen kinds of amino acids were anayzed from seed protein. Among them comparatively high content of threonine, valine, methionine, isoleucine, leucine and phenylalanine were observed. As a non-essential amino acid, glutamic acid was found as high as 4.985%. From these results the seed of thornless Chinese pepper would be good for oil and protein source.

  • In order to obtain the basic data for processing adaptability of hazelnut, physico-chemical properties and heat stability of hazelnut oil were invest igated, and the results obtained are summarized as follows. 1. Hazelnut showed highly nutrient value as the content of oil and protein were 59.6% and 17.35, respectively. 2. In physicochemical properties of hazelnut oil, refractive index was 1.469, specific gravity 0.912, saponification value 167.3 and iodine value 63.43, therefore, it was found to be non-drying oil. 3. In composition of fatty acids in hazelnut oil, oleic acid was contained much in comparisoon with other fatty acids, and which was similar to olive oil. 4. 18 kinds of amino acids were existence in protein of hazelnut cake and among these the content of glutamic acid was the highest. 5. The peroxide value were the highest in the heat ing at $150^{\circ}C$ for 30 hours and at $180^{\circ}C$ for 10 hours, and then decreased as the heating time were longer. The carbonyl value was increased as heating time passed. 6. Acid value of hazelnut oil in the heating at $150^{\circ}C$ for 30 hours and at $180^{\circ}C$ for 10 hours were similar to each other.

A review on processing factors of pesticide residues during fruits processing (과일류 가공 중 잔류농약 가공계수에 관한 고찰)

  • A processing factor (PF) has been used to define the maximum residue limits of pesticide in a variety of processed fruit products. This study summarizes PF by the stage of fruit processing based on JMPR reports from 2010 to 2014. When we compared PF of 19 pesticides in apple products during the processing of washing, drying, canning, juice, sauce, puree and pomace, PF was higher than 1 only in pomace. In the comparison of 21 pesticides during the process of grape (washing, juice, wine and raisin), PF was higher than 1 in raisin. In the comparison of 19 pesticides during the process of orange (juice, oil and marmalade), PF was higher than 1 in oil. When 27 pesticides were compared during the process of tomato (juice, puree and paste), paste showed the highest PF value except pomace. During the process of plum (washing, drying and puree) with 12 pesticides, PF was higher than 1 in drying. The correlation coefficients between physical characteristics of pesticide (fat-solubility and volatility) and PF were statistically significant in the processes of apple juice, orange juice, tomato puree and paste and strawberry jam.

  • Among the dyeing industries, the tenter process is a process that improves the quality of fibers by drying and ironing (heat treatment) dyed fabrics, and drugs such as water repellents, antistatic agents, and fiber softeners are mainly used in these tenter processes. These drugs are vaporized in the process of treatment by high temperatures (180 ~ 230℃), and are observed in a complex form such as white smoke, oil mist, and fine dust, causing odor. To treat the complex exhaust gas at the rear end of the tenter facility, most companies operate by installing a wet scrubber and an adsorption tower alone or in parallel, but there are many problems. In particular, the insoluble oil mist at the rear end of the tenter has significantly low processing efficiency in the cleaning dust collection facility, and there is a problem in the facility by adsorption due to the occlusion phenomenon caused by the oil mist. In addition, the odor gas at the rear end of the tenter contains a lot of aldehydes, and in order to improve these various problems, a complex exhaust purification device using cyclone and electric support collector was developed. This study examined the applicability of economical and efficient technology by removing complex air pollution at the rear end of the tenter and applying improved technology than the existing technology.

Analytical Studies on the Fatty acids and Amino acids Composition of Pinus Koraiensis seed (잣나무 종실(種實)의 지방산(脂肪酸) 및 Amino산(酸) 조성(組成)에 관한 연구(硏究))

  • In order to analyse the composition of fatty acid in the seed oil and amino acid in the seed protein of Pinus Koraiensis seed, GLC method was applied, while the general composition of the seed and physico-chemical properties of the seed oil were also determined by A. O. A. C. method. The results obtained were summarized as follows: 1. Oil content of the seed was high as 70.25 percent, and comparatively high content of protein (16.4%) and ashes (2.34%) were observed. 2. The seed oil seemed to be belonged semi-drying oil based on the iodine absorbtion. number (108.93). The physical and chemical properties of seed oil such as acid value, saponification number and refractive index showed the composition of unsaturated high molecular fatty acid. 3. The seed oil was composed of high molecular fatty acid, 36.6 percent of oleic acid and 46.7% of linoleic acid, totaling more than 80 percent. Therefor it was good quality as an edible oil. 4. In the amino acid analysis of seed protein 16 Kinds of amino acid were determined, among them essential amino acid like lysine, methionine, threonine, phenylalanine, leucine, isoleucine and valine were abundant. From the results it was considered that the seed is good guality as a protein source.

The character and role of Gachiljang(假漆匠) (가칠장(假漆匠)의 성격과 역할)

  • Gachiljang(假漆匠), along with Jinchiljang(眞漆匠), is an important craftsman who cannot be left out during the finishing process of wooden furniture and wooden buildings during the Joseon Dynasty. The current definition of Gachiljang does not properly explain the nature and role of Gachiljang. In many related terminology dictionaries, Gachiljang is defined as "artisan who dose the base paintwork of Dancheong." But an analysis of the Joseon Dynasty's Uigwe(儀軌) shows that Gachiljang appears frequently in works that are not related to Dancheong at all. Therefore the current definition seems to be inaccurate and need to be revised. Gachiljang is a name that contrasts with Jinchiljang, and he makes and paints Myongyu(明油). Just as Jinchiljang uses not only lacquer but also various pigments to paint colorful lacquer, Gachiljang also uses various pigments to decorate buildings or furniture in a fancy way and then finishs with a transparent paint. Even in the Dancheong(丹靑) work of the building, all the base painting and finish coating work will be in charge of Gachiljang, except for the paintings performed by the Whawon(畫員) or the Whasa(畫師).

Manufacture of Sea Salt Coated with Coffee Oil and Quality Characteristics by Storage Period (커피 오일을 코팅한 천일염의 제조 및 저장 중 품질특성)

  • This study investigated the quality characteristics of sea salt coated with coffee oil (SCO). Three-year-old salt was used after drying in an oven at $105^{\circ}C$ for 2 hours. Product A was composed of 100 g of sea salt and 8 g of coffee oil, product B was 100 g of sea salt and 16 g of coffee oil, and product C was 100 g of sea salt, 8 g of coffee oil, and 0.3 g of shell powder. The moisture content, ash content, color, peroxide value, acid value, and sensory evaluation of sea salt coated with coffee oil were determined monthly during 5 months of storage at room temperature. The contents of moisture and ash of SCO were 2~3% and 81~83%, respectively, but not significantly different during the storage period. Calcium content of product C was higher than that of product A or B. Coffee flavor in all SCO products was retained for 3 months. Hunter L, a, and b color values in SCO decreased with increasing storage period. However, redness and yellowness of product B were higher than those of other products. The peroxide and acid values of products A and C were lower than those of product B during storage period. Sensory evaluation during the storage period showed that quality of product A and C was maintained for 4 months, whereas product B was preserved for 3 months.

Effect of Oil Extraction Methods on Sterol Composition of Sesame Oil (채유방법(採油方法)이 참기름의 Sterol조성(組成)에 미치는 영향(影響))

  • In order to examine the effect of oil extraction methods on the characteristics of sesame oil, the unsaponifiable matters, fractionation sterol pattern and sterol compositions of the each fraction of the oil were compared in the oil extracted by the three different extraction methods, that is, pressure extraction of roasted seed (RTP), acetone extraction of roasted seed(RTE) and acetone extraction of raw seed(RWE). The amount of unsaponifiable in RWE oil was silghly higher as 31.8mg per 1mg drying oil than that in RTP oil of 26.1mg. Sesame oils from three different extraction methods were found to contain $0.26{\sim}0.32%$ free, $0.23{\sim}0.42%$ bound, and $0.49{\sim}0.64%$ total sterol. The content of free sterol in RWE oil was higher as 0.32% than that in RTE and RTP oil of 0.26%, and that of sterylglycoside in RTE oil was lower as 0.12% than that in RTP and RWE oil of 0.23%, but that of sterylester was a little difference. The unsaponifiable matter from fractionation sterol in sesame oil by three different extraction methods was fractionated into less polor compounds, 4,4-dimethyl-, 4-monomethyl-, 4-desmethylsterol fraction by thinlayer chromatography, and sterol composition of 4-desmethylsterol fraction was analyzed by gas liquid chromatography. The major sterols were campe-, stigma-, sito-, and ${\Delta}^5-avenasterol$, but, specially, unknown sterol(RRT:1.35) was found as $23.5{\sim}26.4%$ in total sterols, The content of sitosterol, ${\Delta}^5-avenasterol$, campesterol and stigmasterol were $59.9{\sim}60.3%,\;8.1{\sim}11%,\;16.1{\sim}18.4%,\;11.6{\sim}12.8%$ of the total sterol in free sterol fraction, $37.3{\sim}46.9,\;11.6{\sim}14.2,\;6.6{\sim}9.0$, and $6.1{\sim}8.0%$ of the total sterol in sterylglycoside fraction, $55.9{\sim}59.9,\;9.2{\sim}11.4,\;17.1{\sim}18.9$, and $11.8{\sim}13.7%$ of the total sterol in sterylester fraction, and $39.3{\sim}42.9,\;13.0{\sim}17.2,\;9.1{\sim}11.0$ and $7.4{\sim}11.5%$ of the total sterol in total sterol fraction. But the effect of oil extraction methods on sterol composition in sesame oil were hardly found.

Effect of Emulsifiers on Characteristics of Microcapsule Containing Squid Liver Oil as a Core Material (유화제 종류에 따른 오징어 간유의 미세캡슐화 특성)

  • This study was carried out to investigate the effect of emulsifiers on the characteristics of microcapsule containing squid liver oil. The emulsion stability of glycerine monostearate (HLB 4) separated after 1 hr. Sucrose fatty acid esters (monostearate: di-, tri-, and tetrastearate=6:4; HLB 11), sucrose fatty acid esters (monostearate: di-, tri-, and tetrastearate=7:3; HLB 16) and glycerine monostearate (HLB 4) plus sucrose fatty acid esters (monostearate: di-, tri-, and tetrastearate= 7:3; HLB 16) separated after 1 hr 30 min. The microencapsulation efficiency prepared by HLB 16 was 35.0%. The polyunsaturated fatty acid composition was shown to be higher than 50% in all powders, and the ratio of the polyunsaturated fatty acid composition to the saturated fatty acid composition was found to be the same (2.07) for HLB 11 and HLB 16.
