Characteristics of cereals prepared by extrusion-cooking and freeze-drying were compared. Parameters used were water solubility index (WSI), water absorption index (WAI), paste viscosity, and sterilization. Variables for extrusion process were barrel temperature at die section (70, 90, and $110^{\circ}C$) and moisture content (25 and 30%). WAI and WSI of extruded cereals were higher, whereas trough, breakdown, and final viscosity were lower than those of raw and freeze-dried cereals. Plate counting revealed no microbes in extruded cereals, whereas microbe colony was observed in freeze-dried cereals. Extrusion-cooking at low temperature resulted in better sterilization of microbes than freeze-drying for preparation of instant cereal drinks.
This research was performed to identify the components and types of comfort foods and to verify gender differences on choosing comfort food in various emotional states. The total of 425 Korean college students participated in this study. The results are as follows. First, most students rated foods that give warmth and relaxation, foods that are reminiscent of happy memories, food that tastes good, were rated as types of comfort foods. On the other hand, external condition and fast food were less likely to be rated as a comfort food. Second, male students reported meat dishes, stew or soup, and alcohol as comfort foods whereas female students reported stew or soup, fruit or vegetable, and meat dishes as comfort foods. Third, the students chose different comfort food in different emotional states. In negative emotions, most students chose alcohol, chocolate, hot (spicy) food, and drinks as a comfort food. But in positive emotions, most students chose chicken as comfort foods. While male students chose alcohol as high ranking comfort food, female students chose various foods as their comfort food. The limitations of this study and suggestions for future studies were discussed.
The purpose of this study was to investigate the pattern of individual fatty acid intake and to compare serum lipid levels and total serum fatty acid composition of high school students in Seoul (total : 234 ; male : 91 ; female : 143) In serum lipid levels, total cholesterol (Chol.), HDL-Chol. and LDL-Chol. levels of female students were significantly higher than those of male students and there was no significant difference between High Fish & Low Meat intake (HFLM) and Low Fish & High Meat intake (LFHM) groups. The average fat intake was 22-25 energy % of total subjects and especially, that of LFHM group was 29%, which were over the recommendation level. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0, the average range of $\omega6/\omega3$ fatty acid ratio of dietary fat was found to be 17.9-20.7, which was far beyond the suggested range, 4-10. The average intake of cholesterol of total subjects was 360mg. LFHM group had more meats and beverages such as carbonated drinks and tended to have less beans, vegetables and mushrooms. In addition, LFHM group had more energy and fat intake than those of HFLM group, the P/S ratio of dietary fat (0.73) was lower than the recommended ratio. Serum C16 : 0 composition of LFHM group was significantly higher than that of HFLM group, and EPA and DHA composition of HFLM was significantly lower than that of LFHM. Therefore, in HFLM group, the P/S ratio of serum fatty acids was significantly higher and the $\omega6/\omega3$ ratio was lower. Dietary C18 : 0 was negatively correlated with serum EPA and DHA composition. Individual PUFA intake was negatively correlated with serum C16 : 0 and sum of SFA, and positively correlated with serum C18 : $2\omega6(LA)\;,\;sum\;o;\omega6$ and sum of PUFA. Serum C18 : 1, C18 : $3\omega3\; and\; C20\;:\;4\omega6$ (AA) compositions were not correlated with dietary fatty acid. Only serum triglyceride (TG) levels were significantly correlated with serum fatty acid compositions. Sum of SFA, C14 : 0, C16 : 0, sum of MUFA and C18 : 1 compositions were positively correlated with serum TG levels, but LA, AA, sum of PUFA and P/S ratio were negatively correlated with it.
This study examines the types of gods worshiped in the homes of Utsunoya village, the places where they are enshrined, the rituals and food offered to the gods, the decorations during the rituals, and the people's beliefs. Also, by comparing the gods worshiped in houses in remote Utsunoya with those of downtown Shizuoka, the differences and changes in the gods worshiped in the two contemporary spaces were predicted. Today, the gods enshrined in Utsunoya's houses are amatelaseu oomikami (天照大神), ancestor, ebisu, daigoku, kojin, inari, the god of the toilet, the god of land, and the god of water. From December 31st to January 3rd and on January 15th, Obon (July 15th), October when there is a festival at the village shrine, and on Ebisu Day (October 19th and 20th), residents offer drinks and food to the gods. Japanese beliefs at home are polytheistic in nature. They maintain national identity through kamidana and maintain family identity through ancestor worship linked to the Buddhist altar. The Japanese beliefs at home are firmly established in the background of the home, the base of family life. Japanese houses have a strong character as a religious space where they coexist "with the gods," and the residents have a cultural tradition of living with the gods.

This study investigated the status of drinking highly caffeinated beverages by Korean adolescents, and we identified the factors influencing this behavior by Korean adolescents by using statistics from the 13th (2017) Survey on Youth Health Behavior Online Survey. The data was collected from 62,276 middle and high school students and the variables of this study included demographic factors, health behavioral factors, mental health factors and the availability of highly caffeinated beverages. The methods of data analysis included descriptive statistics, Chi-square tests and logistic regression analysis. This study found that the intake rate of highly caffeinated beverages was 1.9% for men and 1.5% for women, and these percentages increased with age (p<0.001). Current smoking and drinking, current drug usage and active people also had high intake of caffeinated beverages (p<0.001). A high level of stress, a low level of subjective sleep satisfaction and a feeling of happiness increased the rate of consuming highly caffeinated beverages. The factors of drinking highly caffeinated beverages were gender, age, smoking, physical activity, drug use, stress level, depression and suicidal ideation. Therefore, continuous discussion is needed to improve both the health behavior and mental health by managing the stress felt by Korean adolescents.
Previous works have observed that persons who have experienced social exclusion have lower perceptions of body temperature and environmental temperature, and seek physical warmth such as warm drinks and warm water shower. The present study aimed to expand the results of these previous works to the dimensions of color emotions or color symbols. Hence, four experiments were conducted in which pictures of people with warm or cold colors applied to them were shown to the subjects, who were asked to evaluate the people in the pictures to determine whether their preferences changed depending on their perception of social exclusion. The results showed that the subjects with perceived social exclusion had stronger preferences for people in warm colors over those in cold colors, but the subjects without perceived social exclusion had no differences in their preferences for the people in the two types of colors. This study is significant in that it expanded the compensation hypothesis, which states that people try to compensate their psychological loss by pursuing external goals from the physical dimension to the emotional and symbolic dimensions. Furthermore, this study has implications in that it proposes the need for warm emotions in places where people who have experienced social exclusion are treated, such as psychological counseling centers.

Background: In this study, we aimed to investigate the drinking behaviors and drinking-related problems of college students in South Korea to produce national alcohol statistics. Methods: We carefully examined the questionnaires and previous research developed in the previous research project and selected questions that reflect the special environment and culture of college students. In order to stratify a nationally representative sample of college students, the distribution of students around the country were found through the educational statistics database of the Korea Educational Development Institute. Based on this information, we conducted a survey in collaboration with Gallup (Korea) to survey and analyze the drinking behaviors of 5,024 Korean students. Results: A nationwide cross-sectional survey was conducted in 2017, for Korean college students. A total of 5,024 students were recruited and analyzed. The monthly drinking rate was 78.0% for male students and 72.9% for female students. The high-risk drinking rate was 23.3% for male students and 17.2% for female students. The most popular category for number of drinks per drinking session was 'more than 10 glasses' per drinking session for both male (44.1%) and female (32.8%). On the alcohol use disorders identification test, the greatest proportion of male students were in the high-risk drinking category (score 8 to 15) 43.8%, followed by the 'low-risk drinking' (score 0 to 7) in 43.6%, 'alcohol abuse' (score 16 to 19) 7.2%, and 'alcohol dependence' (greater than 20) 5.4% categories, respectively. For female students, the greatest proportion of female students were in the 'low-risk drinking' in 49.6%, followed by 'high-risk drinking' 37.1%, 'alcohol abuse' 8.4%, and 'alcohol dependence' 4.9% categories, respectively. Conclusion: The results of the study showed that the drinking behavior of Korean college students was excessive. Overall, it was found that the college population has a greater high-risk drinking behaviors than general adult population. Furthermore, these problem drinking behaviors were prominent among female college students. Results from the present study suggest that it is necessary to monitor the drinking behavior of college students with constant interest and to prepare policies and strategies suitable for these circumstances.
Aloe has been widely used as a cosmetic and medicinal plant. Until now, several effects such as antioxidant, anti-cancer, anti-diabetic, immunity and whitening of aloe gel extract have been reported, but research on aloe by-products occurring in food processing has not been actively conducted. In this study, we investigated whether the aloe by-product extract from food processing could be used as a functional biomaterial. Cytotoxicity was not seen in both the mixer and press extracts. Inhibition of 3T3-L1 adipocyte differentiation was detected only in the mixer extract and not in the press. It was confirmed that hyaluronic acid accumulation and tyrosinase inhibition increased according to the treatment concentration of the mixer extract. The antimicrobial activity of the mixer extract was observed in the Porphyromonas gingivalis strain, but not in the Streptococcus mutans strain. Antioxidant activity through DPPH and SOD analysis increased with the concentration of the mixer extract. In summary, it was confirmed that the mixer extract of aloe by-products has the effect of inhibiting adipocyte differentiation, moisturizing, whitening, and antioxidant, suggesting the possibility of using it as a functional bio-material for health drinks or beauty masks.

In China, liquor has gone beyond mere drinks to become a culture. China's liquor culture has a long history, in China, distilled liquor companies have a huge scale and huge profits. Fenjiu Group has formed and developed the corporate culture based on the core idea, quality and character orientation and honest management. Based on such corporate culture, the company develops organizational structure, manufactures products, and enjoys high popularity and market share. Through this study to improve the understanding of well-known Chinese liquor companies and time-honored brand, and to provide inspiration to Korean liquor companies.
Objectives: The purpose of this study was to evaluate the consumption pattern of sugar-sweetened beverages (SSB) and compare body composition changes by SSB consumption based on 28 days of dietary records from a four-week time-restricted eating intervention among young adults in Korea. Methods: A total of 33 participants completed the four-week dietary intervention with 8-hour time-restricted eating (TRE). The body composition was measured by bioelectrical impedance analysis at baseline, and daily dietary records were collected for 28 days during the intervention after 4 weeks. Results: Based on 924 days of dietary records, the average eating occasion of SSB was 0.9 times per day, and the average amount of SSB was 205.8 g/times. Based on an individual's usual intake of 28 days, the average eating frequency of SSB was 16.6 times out of 28 days, and the average amount of SSB was 184.0 g/day. The average energy intake from SSB was 131.0 kcal /day (8.7% of energy), and sugar intake from SSB was 18.2 g/day (4.9% of energy). The sugar intake was 2.6% of energy from sweetened dairy products, followed by 2.0% from coffee drinks, 0.5% from soda and juice and 0.2% from others. When subjects were divided into high (14 days or more) and low (less than 14 days) SSB groups based on eating frequency, the weight change in the low SSB group was -2.0 kg over 4 weeks, which was significantly lower than -0.7 kg in the high SSB group. However, no significant difference was found in muscle mass, fat mass and body fat percent between the two groups. Conclusions: This study suggests that low consumption of sugar-sweetened beverages is more desirable in weight management despite having the dietary intervention of time-restricted eating without counting calories. Thus, further longitudinal studies on the association between SSB and obesity in Korean adults are necessary.
