Effects of Dietary Polyunsaturated Fatty Acids and Vitamin E Supplementation on Vitamin E Levels of Serum, Liver and Brain in Chicks at Different Ages (과량의 비타민 E 첨가 및 다불포화지방 식이가 Age가 다른 Chick의 혈청과 조직 비타민 E 농도에 미치는 영향)

  • The present study examined the effects of dietary PUFA and vitamin E supplementation(2,000 I.U./Kg diet) on vitamin E levels of serum, liver and brain in chicks aged one week (younger chick) and four weeks(older chick). 1) Younger chicks showed more sensitive response to vitamin E supplementation in the diet than older chicks in their serum levels, but not in liver levels. 2) Chicks fed excess vitamin E showed significantly higher levels of vitamin E in both serum and liver than unsupplemented groups. 3) PUFA diet lowered serum and liver vitamin E levels especially for vitamin E supplemented groups except for older chick liver at 3 weeks of the experimental period. 4) Vitamin E levels of brain were relatively lower than those of serum and liver and showed little change according either to the dietary PUFA or to vitamin E supplementation.

Vitamin E in vivo Studies on the Activity of Antioxidant Enzymes and CYP2E1 Expression in High PUFA-treated Brains (고도 불포화지방산으로 산화스트레스가 유도된 흰쥐의 뇌에서 비타민 E의 항산화효소 활성 및 CYP2E1 발현에 미치는 효과)

  • It is shown that the risk of chronic disease is increased not only by the concentration of fat in the diet but also by the composition of dietary fatty acids. We investigated the anti-oxidant effects of vitamin E on dietary polyunsaturated fatty acid-fed mice. Ninety male Sprague-Dawley rats were randomly divided into 9 groups: a normal diet group (C), 4 dietary polyunsaturated fatty acid diet groups (OA, LA, LNA, DHA), and 4 dietary polyunsaturated fatty acid diet with 0.05% vitamin E groups (OAE, LAE, LNAE, DHAE). The food efficiency in the dietary polyunsaturated fatty acid diet groups was higher than in the normal diet groups. The concentration of malondialdehyde (MDA) was significantly increased by LA and DHA fatty acids. Vitamin E significantly decreased LA and LHA-induced lipid peroxidation. The activity of superoxide dismutase and glutathione peroxidase was increased in the dietary polyunsaturated fatty acid diet groups compared to the control group, while these were decreased by supplements with vitamin E, except in the OAE group. Also, the protein expression of CYP2E1 was significantly increased in only the LNA group, while these were decreased by supplements with vitamin E. These results taken together indicate that vitamin E may have positive effects on a dietary polyunsaturated fatty acid diet-induced oxidative stress in brain tissue.

  • Vitamin E status affected by dietary high PUFA and Se was examined by biochemical and morphological means. Rats were fed four different diets(I : 15% p/s=1 control diet, II : 15% perilla oil diet, III : 15% perilla oil, vitamin mix -vitamin E, IV : 15% perilla oil, vitamin mix-vitamin E and salt mix -Se ) for $4\frac{1}{2}$ weeks. Various dietary treatments had no significant effects on body weight gains of rats. Activities of serum creatine phosphokinase known as an indicator of vitamin E deficiency were significantly higher( P < 0.001) in groups fed diets high in PUFA, regardless of the addition or omission of vitamin E from the vitamin mixture than those in control group. Vitamin E concentrations of serum and liver were affected by experimental diets and serum levels were more affected than those in liver. Electron microscopic observations of the liver revealed 1) the presence of swollen and degenerated mitochondria and lysosome-like body(II), and 2) markedly swollen and degenerated mitochondria, numerous lysosomes and decreased in size and number of microvilli along the bile canaliculus ( III, and 3) a remarkable accumulation of lipid droplets, nuclear pyknosis, degenerated mitochondria and increased number of lysosomes scattered along the cell junction in the hepatocytes (IV).

A Comparative Study of Nutrition Knowledge, Dietary Attitude and Nutrient Intakes of Dietitians and Non-Dietitians Working in the Chonnam Area (전남 일부지역 영양사와 비영양사의 영양지식, 식생활태도 및 영양소 섭취량의 비교 연구)

  • This study was performed by a comparative analysis of nutritional knowledge, dietary attitudes and nutrient intakes of dietitians and non-dietitians. The subjects of this study were 103 dietitians and 166 non-dietitians working in the Chonnam area. The general characteristics, nutrition knowledge and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes were examined using 24-hour recall method. The results were as follows: Dietitian group ($15.17{\pm}3.88$) scored significantly (p<0.0001) higher than non-dietitian group ($13.34{\pm}3.31$) in nutrition knowledge. Dietitian group ($69.58{\pm}10.67$) scored significantly higher on dietary attitudes than the non-dietitian group ($63.97{\pm}11.18$). The correlation between nutritional knowledge scores and dietary attitudes scores were statistically significance on job, age ($20{\sim}39$), education level (below university), marital status and work experience ($2{\sim}5$, above 10). The dietitian group was significantly higher than the non-dietitians in body weight and BMI of anthropometric data. The prevalence of obesity was 5.8% from the dietitian group and 6.6% from the non-dietitian group when judged by BMI and therefore obesity rate was significaltly (p<0.001) different between the two groups. In case of the dietitian group, the average intake of vitamin A, vitamin $B_1$, vitamin $B_6$, niacin, vitamin E, phosphorous, zinc were above the Korean RDA whereas the average intake of vitamin C, calcium, iron, folic acid were below the Korean RDA. The average intake of most nutrients, except vitamin $B_1$, vitamin $B_6$, phosphorus, were below the Korean RDA in the non-dietitian group. Therefore the non-dietitian group needs nutrition education in order to improve their nutritional status.

Long-term Feeding Effects of Different Dietary L-ascorbic Acid Levels-on Growth and Tissue Vitamin C Concentrations in Juvenile Korean Rockfish (조피볼락 치어의 장기간 사육에 있어서 사료내 L-ascorbic acid 농도가 성장과 조직내 Vitamin C 농도에 미치는 영향)

  • A long term feeding trial was conducted to study the effects of different dietary vitamin C levels on growth and its tissue distributions in juvenile Korean rockfish, Sebastes schlegeli. Prior to the start of feeding trial, fish were fed the basal diet supplementing no L-ascorbic acid for four weeks to minimize their body reserves of vitamin C. Then fish were divided into six groups with triplicates and given one of the laboratory semipurified diets supplementing either 0, 25, 50, 75, 150, or 1500 mg L-ascovbic acid (AA)/kg diet $(C_0,\;C_{25},\;C_{50},\;C_{75},\;C_{150},\;&\;C_{1500})$. Fish fed the $C_0$ diet had lower percent weight gain, feed conversion ratio, specific growth rate, and protein efficiency ratio than did fish fed the other diets (P<0.05). After 28 weeks of feeding trial, tissue AA concentrations of fish fed $C_0$ diet were lower than those of fish fed $C_{1500}$ diet (P<0.05). A large amount of total tissue Ah may be reserved in muscle, but the unit AA concentration seemed to be higher in brain than did the other tissues. The growth performances of fish fed $C_{25}$ diet were not different compared to those of fish fed $C_{50}-C_{1500}$ diets (P>0.05), and diet analysis of vitamin C showed that the $C_{25}$ diet had 65 mg AA/kg diet. Therefore, the present long-term study may suggest that the dietary vitamin C requirement is approximately 65 mg AA/kg diet in juvenile Korean rockfish.

A Study on Nutrient Intake During Pregnancy of Women of Premature Delivery (I) (미숙아를 출산한 산모의 임신시 영양소 섭취실태에 관한 연구 (I))

  • Inadequate nutritional status of pregnancy can cause underweight and premature birth, undergrowth and deliverance of physically and mentally defected babyies. The purpose of this study is to provide guidelines for preventing preterm delivery in the aspect of nutritional factors. The nutrient intakes were compared between a preterm delivery group and a normal term delivery group to recognize risk factors of preterm delivery. The results obtained are summarized as follows. The pregnancy period was statistically longer in the normal term group (p<0.0001). Weight increase was statistically higher in the normal term group (p<0.0001). Calories (p<0.05), carbohydrates (p<0.0005), dietary fibers (p<0.0001), potassium (p<0.0005), vitamin $B_1$ (p<0.0005), vitamin $B_6$ (p<0.05), vitamin C (p<0.0001), and folic acid (p<0.05) intakes were statistically higher in the normal term group. Nutrient density of vitamin $B_1$ (p<0.05) and vitamin C (p<0.0001) in the normal term group was statistically higher. Nutrient adequacy ratio of zinc (p<0.05), vitamin $B_1$ (p<0.05) and folic acid (p<0.05) were statistically higher in the normal term group. Index of Nutritional Quality of vitamin $B_1$ (p<0.05) and vitamin C (p<0.0001) were statistically higher in the normal term group. In this study, the normal term delivery showed higher intakes of calories, carbohydrates, dietary fiber, crude fiber, potassium, vitamin $B_1$, vitamin $B_6$ vitamin C and folic acid than the preterm delivery group. Deficiencies in various nutrients may lead to preterm delivery, therefore, balanced nutrient intake is recommended to prevent preterm delivery.

An Assessment on the Dietary Attitudes, Stress Level and Nutrient Intakes by Food Record of Food and Nutrition Major Female University Students (식품영양전공 여대생의 식생활 태도, 스트레스 수준 및 식사기록법에 의한 영양소섭취상태 평가)

  • This study was performed to investigate the stress level, dietary attitudes and nutrient intakes of Food and Nutrition major female students at a university located in Changwon. A total of 122 female students taking the course 'Meal Management' during 2001-2004 participated in this study. The general characteristics, stress level and dietary attitudes of the subjects were surveyed using a self-administered questionnaire. The nutrient intake data collected from 3-day food-record method were analyzed by the Computer Aided Nutritional Analysis Program. The symptoms by stress showed that 'eye strain', 'physically exhausted or get tired' and 'pains on neck or shoulders' were high in 59.4-81.8%. The mean scores of stress in 2001-2004 were 8.5-12.0 out of 30 points and the subjects in 2002 and 2004 scored significantly higher on stress level than the subjects in 2001 did (p < 0.00. The mean scores of dietary attitudes were 58.7-66.6 out of 100 points, most of the subjects are belonged to the 'fair' group in terms of dietary habits level. The stress level had a negative correlation with dietary habits (p < 0.001). About 1/3 of the subjects, the intake of calcium, vitamin $B_2$, vitamin A and iron were less than 75% of Korean RDA, whereas more than half of the subject, protein, vitamin C and phosphorus intake were more than 125% of RDA, and intake ratio of Ca and P showed an unbalance of 1 : 2. The animal protein intake was higher than the plant protein, whereas the animal vitamin A and iron intake were lower than vegetable food source. In 2001-2004, the index of nutritional quality (INQ) of vitamin $B_2$ and niacin was 0.56-0.98, and in 2003, the INQs of vitamin $B_2$ was 0.56, and that of niacin was 0.67, which was extremely low when compared to that of the other nutrients. Therefore, nutritional education is necessary if female university students are to practice optimal nutrition, including well-balanced diets of high nutritional quality.

A Study of the Effects of Dietary Behavior on the Nutritional Status of University Students

  • The purpose of this study was to investigate the effects of dietary behavior on the nutritional status of university students in Korea. A dietary intake survey of 603 university students (223 males and 380 females) was conducted using a 24-hour recall method. The resulting data on dietary behavior and nutrient intakes were analyzed by the SAS program package. The main results were as follows : 1) Most of the subjects were in their twenties and no obese cases were found. 2) Dietary intake data showed that, except for vitamin C in the female students, the average daily intakes of most nutrients did lot meet the Korean Recommended Dietary Allowances (RDA). The study also showed that most of the subjects, especially the female students, were concerned about having satisfactory physical appearances. Fat provided 25% of the daily energy intake, and this level was higher than the 20% recommended by the Korean Dietary Guidelines. In the female students, the iron intake from animal foods was lower than that from plant foods. 3) Male students were not very serious about healthy eating. However, the female group, who obtained a high score in dietary behavior, consumed more vegetables and had higher intakes of energy, protein, Ca, p, vitamin A, and vitamin C than the male group, even though they did not meet the Korean RDA in most nutrients. Energy intake from fats, as a percent of total energy intake, was lower than in the group of females who obtained higher stores in dietary behavior than the other groups. To sum up, the university students surveyed in this study were found to have the typical dietary behavior of young adults, such as frequent eating out and snacking. Female students were extremely conscious of their body images this can exert an important direct influence on their dietary intakes and health status. It is very important for university students to develop healthy lifestyles and desirable dietary behaviors, to best enable them to continue to lead a healthy lift: in their later years.

Evaluation of Nutritional Status of Vitamins and Minerals According to Consumption of Dietary Supplements in Korean Adults and the Elderly: Report Based on 2017 Korea National Health and Nutrition Examination Survey data (우리나라 성인 및 노인의 식이보충제 복용에 따른 비타민 및 무기질 영양상태 평가: 2017 국민건강영양조사 자료)

  • Objectives: This study was undertaken to evaluate the intake of vitamins and minerals from dietary supplements (DSs) in Korean adults and elderly. Methods: Data for this study was generated from the 2017 Korea National Health and Nutrition Examination Survey (KNHANES). We analyzed 4,204 individuals aged 19 years and older (2,579 users and 1,625 non-users). The survey included 24-h recall questions on food and DS intakes, as well as questions on DS use over the past year. The nutrient DSs evaluated were calcium, phosphorus, iron, vitamin A, thiamin, riboflavin, niacin, and vitamin C. Total nutrient intakes were obtained by combining nutrient intakes of foods and DSs consumed by each subject. Results: Most micronutrient intakes from food (except for thiamin) in adult users, and the four micronutrient intakes (iron, vitamin A, vitamin B2 and vitamin C) in elderly users, were significantly higher than values obtained in non-users. For total intake of nutrients and DSs, both adult and elderly users had a significantly higher intake than non-users. While proportions below Estimated Average Requirements for all micronutrients by adding respective DSs in users were significantly reduced in adults and elderly as compared to non-users, the proportions of above Tolerable Upper Intake Levels for calcium and vitamin A in adults, and vitamin A in elderly, were significantly increased. In the total subjects examined, consumption of DSs was associated with lower odds ratios of undernutrition of micronutrients, and with higher odds ratios of overnutrition of calcium, iron, and vitamin A, as compared to non-users of DSs. Conclusions: Although DSs consumption by adults and the elderly improves the micronutrient status, it also increases the risk of excessive intake of certain vitamins and minerals.

Nutritional Evaluation of Traditional Fermented Foods by Dietary Intake of University Students in Chungnam (충남지역 대학생의 섭취실태를 통한 전통발효식품의 영양적 평가)

  • The purpose of this study was to evaluate nutritional value of traditional fermented foods by dietary intake of university students living in Chungnam. 210 students were asked for their daily food intake using 24-hour recall method for 3 days. And daily nutrient intakes from total foods and fermented foods were analyzed and compared. The mean weight, height, and BMI of the subjects were 67.36㎏, 174.39㎝, 22.15㎏/$m^2$ in men and 53.45㎏, 161.86㎝, 20.40㎏/$m^2$ in women, respectively. The daily intakes of protein, phosphorus, and vitamin B1 were 106.82%, 137.88%, and 108.99% of the Korean RDA. However, the energy, calcium, iron, vitamin A, vitamin B2, niacin, vitamin C intakes did not reached the RDA for Koreans. The fermented food intake was 9.09% of total food intake. And the percentages of fermented food intakes were 81.53% for Kimchi and 14.75% for Chang. The vegetable protein, vegetable oil, dietary fiber, calcium, phosphorus, iron, sodium, potassium, vitamin A, vitamin B1, vitamin B2, niacin and vitamin C intakes per 1000㎉ consumption from fermented foods were significantly higher than those from total foods. The fermented food intake showed positive correlation with iron, and plant iron intakes. In conclusion, the percentage of fermented food intake was about 9% and the major items were Kimchi and alcoholi beverages in university students. Fermented food intake may be important to improve the intakes of calcium, iron and vitamin.
