This study was conducted to compare the nutrient content of rice-based meals and wheat-based meals. The subjects consisted of elementary school children, middle school students, high school students, college students and adults living in the Miryang and Daegu area. A dietary survey was conducted using a 24-hour recall method and data were collected from 941 subjects. Nutrient contents were analyzed by CAN Pro. All nutrient contents in rice-based meals, except vitamin B2, were higher than those in wheat-based meals. But lipid and cholesterol contents of wheat-based meals were higher than those in rice-based meals. Comparing age groups, all nutrient contents obtained from rice-based meals, except vitamin B group, were higher than those in wheat-based meals in all age groups except the adult group. In the adult group, protein, fiber, vitamin A, niacin and vitamin C were consumed higher from rice-based meals, but energy, lipid, calcium, iron, vitamin B and cholesterol were consumed higher from wheat-based meals. lipid and cholesterol contents of wheat-based meals were higher than those of rice-based meals in all age groups, except elementary school children. When compared the nutrient intakes of Korean RDA, major nutritional problems of each age groups were due to the inadequate intakes of calcium and iron. And all nutrient contents, except vitamin B group, in wheat-based meals were very low in every age group.

The present study was carried out to evaluate the physiological effects of seaweed supplementation on blood glucose levels, lipid profile, and antioxidant enzyme activities in subjects with type 2 diabetes mellitus. Subjects were randomized into either a control group or a seaweed supplementation group. Pills with equal parts of dry powdered sea tangle and sea mustard were provided to the seaweed supplementation group three times a day for 4 weeks. Total daily consumption of seaweed was 48 g. We found that total dietary fiber intake was 2.5 times higher in subjects receiving seaweed supplementation than in the control group. Accordingly, fasting blood glucose levels (p<0.01) and 2-hour postprandial blood glucose measurements (p<0.05) were decreased significantly in those ingesting seaweed. Furthermore, the serum concentrations of triglycerides were decreased and high-density lipoprotein cholesterol was increased significantly in seaweed supplement group (p<0.05). However, the concentrations of total cholesterol and low-density lipoprotein cholesterol were not affected by seaweed supplementation. The level of thiobarbituric acid reactive substances in erythrocytes was significantly lower with seaweed supplementation compared to controls (p<0.05). Catalase and glutathione peroxidase activities with seaweed supplementation were higher than the controls (p<0.05), but superoxide dismutase activity was not affected. We, therefore, conclude that ingestion of seaweed influences glycemic control, lowers blood lipids, and increases antioxidant enzyme activities.
This was a clinical trial study to aid the recovery of elderly female alcoholic liver disease patients by providing a balanced nutritional supplement comprising soymilk. All patients gave their consent before enrolling. The average demographics of the subjects were age 81.57 years, height 150.43 cm, weight 52.67 kg, and body mass index 24.15 kg/m2. An increase in the daily consumption of fruits and fruit juice was observed after the patients had started taking the balanced meal as compared to before. Intakes of vitamin A, vitamin C, vitamin E, and cholesterol decreased after consuming soymilk, whereas vitamin B12, niacin, folic acid, and dietary fiber significantly increased (P<0.05). Blood cholesterol and BUN levels showed a decreasing tendency. Our results indicate that consuming soymilk in a balanced diet for female patients afflicted with alcoholic liver disease helps improve their nutritional status by increasing the nutrients lacking in the body.

Two experiments were conducted to investigate the effect of feeding a diet supplemented with swine hair protein (SHP) on the nutrient digestibility of Korean native chickens and their egg production as well as on egg quality. In experiment 1, twenty roosters of the Hanhyup-3 strain were assigned to an individual cage to give 10 replicates per treatment (i.e., 0 and 10% of SHP), and the nutrient digestibility in response to the SHP supplementation was measured. In experiment 2, fifty-four layers of the Hy-Line strain were assigned to an individual cage to give 27 replicates per treatment (i.e., 0 and 10% of SHP), and egg production and egg quality were measured. In experiment 1, no significant difference (p > 0.05) was found in the digestibility of crude protein, crude fat, nitrogen-free extract (NFE), and crude fiber in response to the diet supplemented with SHP. In experiment 2, although no significant difference (p > 0.05) was found with the dietary treatments, the 10% SHP supplemented diet decreased (p < 0.05) the feed intake of laying hens. However, the SHP supplemented diet did not affect (p > 0.05) the laying rate, egg weight and feed conversion ratio of those fed the diet. Eggshell thickness and yolk color decreased (p < 0.05); however, eggshell strength, eggshell color, albumen height and Haugh units increased (p < 0.05) by feeding layers a diet supplemented with SHP. In conclusion, the results suggest that 10% SHP supplemented in a poultry diet could be a useful protein source.
In nature, two different types of fructose polymers (fructan) are generally found in dietary fibers; these are the fructose homopolymers levan, which is of high molecular weight and is $\beta$-(2,6)-linked, and inulin, which is of low molecular weight and is $\beta$-(2,1)-linked. The effects of levan and inulin on the intestinal physiology of rats were compared. Sprague Dawley rats were fed one of three diets for 3 weeks: a control diet, a basal diet containing 7% of levan, and a basal diet containing 7% of inulin. Cecal enlargement, together with the lowering of cecal pH, occurred in rats fed on the levan and inulin diets (p < 0.05). The levan and inulin diets resulted in a two-fold increase in the amount of short-chain fatty acids in the cecum, when compared to the control diet. The number of total microbes and of lactic acid-producing bacteria in the feces were higher in rats fed the fructan diets than those in rats fed control diet (p < 0.05). The levan diet also significantly increased the cecal $\alpha$-galactosidase activity by 3.8-fold, when compared to the control diet, indicating that levan stimulated the growth of Bifidobacteria in the cecum. These results show that the intake of levan and inulin stimulated the growth of lactic acid-producing bacteria in the cecum and thereby improved intestinal conditions in rats. The purpose of this study was to investigate the effect of soybean on blood glucose and lipid concentrations, and antioxidant enzyme activity in type 2 diabetes mellitus(DM) patients. We divided patients into two groups and fed them, respectively, a basal diet(control group) and a basal diet with 69 g/d of soybean(soybean group) for 4 weeks. Pills with roasted soybean powder were provided to the soybean supplementation group three times a day. Macronutrients intake except dietary fiber was similar between the two groups. No significant differences were observed in dietary intakes or body weight before and after the supplementation. Energy composition ratio of C:F:P was 65:19:16 in the control group, 64:20:16 in the soybean group. The blood parameters of subjects before supplementation, such as fasting blood glucose, postprandial glucose level, total cholesterol, triglyceride, LDL-cholesterol and $HbA_1C$ were not different between the two groups. After supplementation, fasting blood glucose(p<0.001), postprandial glucose level(p<0.001) and serum triglyceride level(p<0.05) were significantly reduced in the soybean group in comparison with the control group. The total cholesterol level was not significantly different between the control and the supplemented group after 4 weeks of treatment. TBARS levels of the soybean group were not significantly different from those of the control group. The activities of catalase(p<0.01) and glutathione peroxidase(p<0.05) were significantly higher in the soybean group compared to the control group. The results of this study suggest that soybean supplementation would be helpful to control blood glucose and serum lipid in diabetic patients. Also, soybean showed an antioxidant activity that may contribute to enhance the effect of antioxidant defense. This activity contributes to protection against oxidative damage in type 2 DM patients. Soybean may have potential use in the disease management of patients with DM.
The purpose of this study was to compare the nutritional effects of resistant starch, cellulose and pectin on growth rate, metabolic energy and apparent digestibility in rats. Forty eight male Sprague-Dawley rats were randomly assigned to six dietary treatments, Rats were fed, ad libitum one of six experimental diets: 5% of resistant starch (RS), 5% of cellulose (CE), 5% of pection(PT), 2.5% resistant starch and 2.5% cellulose(RS+CE), 2.5% resistant starch and 2.5% pectin(RS+PT), and 2.5% cellulose and 2.5% pectin (CE+PT) during 4 weeks. The results obtained were as follows: body weight gain were higher in groups RS and CE, compared with that in the group PT, where other groups such as RS+CE, RS+PT and CE+PT showed no significant differences to the RS group. Food intake and food efficiency into showed the same patterns. Metabolic energy were similar in the RS and CE, and was the lowest the metabolic energy in the group CE+PT was significantly low. Apparent digestibility of protein was significantly higher in the group RS, compared with the groups CE and PT. Apparent digestibility of mixed dietary fiber groups such as the RS+CE, RS+PT and CE+PT group were also higher compared with the group PT. Apparent digestibility of lipid were significantly higher in the groups RS, CE and PT. Apparent digestibility of lipid in the mixed pectin groups such as the RS+PT and CE+PT growth rate, metabolic energy and apparent digestibility of lipid in the mixed pectin groups such as the RS+PT and CE+PT recorded the lowest, while that of the group RS+CE was significantly high. From above results, following was concluded: The growth rate, metabolic energy and apparent digestibility of protein and lipid of group RS were significantly higher in comparision with the group PT, while availability of energy nutrients of group CE was similar to that of the group RS. Also resistant starch fed with pectin(RS+PT) seemed to have increased the growth rate and the apparent digestibility of protein compared with those of the group PT fed with pectin(PT) alone, however RS+PT scemed to have the apparent digestibility of lipid.

Hypertension is prevalent among older adults, and nutrition is important for hypertension management. However, there are few nutrition education materials developed for older adults. The purpose of this study was to develop a booklet for prevention and management of hypertension for older adults. Based on lesson plans, topics for the booklet included introduction to hypertension, hypertension prevention through weight management, nutritional management of hypertension, and lifestyle modifications. After several revisions of the draft were made, illustrations and icons appropriate to the text were designed by a graphic designer using Illustrator 9.0 and Photoshop 6.0. The booklet consisted of four chapters and 40 pages. The first chapter dealt with information on hypertension, risk factors, complications and dietary guidelines. These were mainly explained by illustrations and characters of older adults. The second chapter included assessment of obesity, reducing fat intake and behavioral change strategies. The third chapter focused on practical tips for reducing salt, eating more fiber and calcium, and sample menus. The fourth chapter presented information for quitting smoking and drinking, and stress management. Finally, games, meal planning and quizes, were presented as reinforcement. Based on pilot testing with 10 adults aged 50 and older, minor changes were made in wording, expressions and information. This booklet is characterized by using simple and specific messages, providing tips for dietary and lifestyle changes, and using illustrations and characters of older adults to increase understanding. The revised booklet is self-explanatory and can be used by older adults or in nutrition education for older adults.
The purpose of this study was to compare the consciousness health status and food habit for farmers in Korea. Eight hundred persons were surveyed by rural leader of RDA, composed with 35.1% of male and 64.9% of female. Data collection includes height weight and blood pressure by measuring method and personal & family situation by interview for influential factor of health status and food habit. The questionnaire was included dietary habit of salt, sugar, dietary fiber and fat intake and other behavior questions related with diet. The subjects were composed 32.5% of elementary school graduated and 50% of middle size farming. Of the all subjects, 54% of were rice planted farming mainly and 19 were over 65 year-aged group. In the concept of disease prevalence. gender difference was exist, liver and heart complains were more frequency in male and waist pain and urinary complain in female, shoulder pain and nervousness were frequently prevalent to all group of farmers. The hypertension prevalence of farmers were 16% by measuring blood pressure, but consciousness of hypertension was very low (5%). The correlation of health status with personal factors were analysed, body weight, number of family, education level, and working level were significant with CMI score and Farmers' syndrome score. The food habit status was negatively correlated with weight and BMI, age was negatively correlated with CMI score and farmers' syndrome. The consciousness of health status and food habit score were significantly correlated with smoking and alcohol drinking. It concludes that good food habit contribute wellness of health. Nutrition education for better food habit would be helpful on health status.
Recent studies described the ${\varepsilon}4$ allele of apoE confers a two-to fourfold increased risk for late-onset Alzheimer#s disease (LOAD), but LOAD pathology does not all fit neatly around apo E. Therefore, the goal of this study was to find the association between Alzheimer and apo E4 genotype in the 107 elderly between 50 to 64 years old who visited to FHWC of Sungshin Women#s University. We conducted the questionnaire survey (general & 24 hr dietary recall), anthropometerics (BP, waist & BMI) and blood biochemistry (FBS & lipid profiles). LDL-c and HOMA-IR were calculated by Friedwald#s and Matthew#s formulas. The apo E genotyping was performed by PCR-RFLP method and subjects were divided into three allele groups (${\varepsilon}3$; wild, ${\varepsilon}2$ & ${\varepsilon}4;$ mutants). The apo E allele frequencies were 7.0% for the ${\varepsilon}2$, 83.6% for the ${\varepsilon}3$ and 9.3% for the ${\varepsilon}4$. In comparison with biochemistry characteristics by apo E genotype, FBS was significantly higher in ${\varepsilon}4(129.2{\pm}6.8)$ than that in the others (${\varepsilon}2$: $117{\pm}7.4$, ${\varepsilon}3$: $107.3{\pm}2.2)$ (p<0.01). More than forty percents of ${\varepsilon}4$ group shown the dyslipidemia [high TG (>150mg/dl) & low HDL (<40 mg/dl:male or <50 mg/dl: female)]. The cytokines levels such as IL-1 ${\beta}$, IL-6 and $TNF-{\alpha}$ were not different among three apoE alleles. After the adjusting sex, age & dietary fiber, LDL-c level was siginificantly higher in ${\varepsilon}4$ ($108.3{\pm}7.7$) than that in ${\varepsilon}2$ ($100.4{\pm}8.4$) (p<0.05). According to food intake and the recipe on the basis of 24 hr dietary recall, the elder]y with ${\varepsilon}4$ allele took higher intake frequency of the light -colored vegetable (radish, onion & cabbage) and pan-fried foods (sauteed beef and vegetables, stir-fried vienna with vegetables) than the others. We knew that the elderly with ${\varepsilon}4$ allele had been restricted the calories intakes with high dietary fiber (33.6+2.5 g/d) to maintain the normal level of FBS and LDL-c. On next study, the prevalence of Alzheimer#s disease in this population who has ${\varepsilon}4$ allele on the condition of calories restriction will be continually follow-up.
