고나트륨과 저나트륨 식이시 성인 여성의 혈중 아미노산 농도변화에 관한 연구 (Effects of High and Low Sodium Diet on Plasma Amino Acid Levels in Korean Adult Women)

  • This study was performed to determine the effect of dietary Na levels on plasma amino acid levels. Plasma amino acid levels were compared in 20 adult healthy women subjects who were given high Na diet (290.48 mEq/day : NaCl 17g) or low Na diet (51.26 mEq/day : NaCl 3g) for subsequent 6 days. Plasma essential amino acids levels were significantly decreased (36%) while plasma non-essential amino acids levels were significantly increased (22%) when subjects were given low Na diet (p<0.001). Among essential amino acids, threonine was decreased (74%) significantly when subjects were given low Na diet (p<0.01). Among nonessential amino acids, serine (49%), proline (20%) and aspartic acid (14%) were increased (p<0.01), while arginine (48%) and glutamic acid (27%) were decreased (p<0.001). In conclusion, dietary Na contents seemed to be an important factor to affect plasma amino acid levels. It would be appropriate to decrease the dietary Na intakes level considering the various clinical effects of dietary Na on the body fluid. For the patients who need low Na diet, it would be suggested that the level of dietary proteins should be carefully considered along with dietary Na manipulation.   • This study examined within-and between-individual variation in nutrient intakes in order to estimate the degrees of precison in dietary assessment among 59 female volunteers aged 21-23 years. Self-recorded 7-day dietary recalls and records were collected by during a 3 month period. Between the recall and record methods, there were little difference of within-and between-individual variations. Within-to-between individual variation ratios were > 2.0 for most of the nutrients examined, and were higher for niacin, vitamin A and C (>2.5) in the recals and for calcium, iron, vitamin A and C(>3.0) in the records. With 7-day dietary data, observed nutrient intakes were estimated to within 26-107% of the subjects' true(usual) intakes, among those vitamin C and energy showed the highest and lowest values, respectively. Correlation coefficients between observed and true nutrient intakes were 0.73-0.81 for the recalls and 0.68-0.77 for the records. In order to estimate with 20% precision, 12-13 days of dietary study were required for energy, 46 for calcium, 71-72 for vitamin A, and 199-200 for vitamin C. Attenuation factor ranged 0.73-0.81 for the recalls and 0.68-0.77 for the records. This study implies that commonly used 1 or 3 day dietary studies may not be appropriate for assessing individuals' nutrient intakes. Further research focusing on the methodological issues in the assessment of Korean diet are needed for between understanding of the relationship between diet and health in Koreans.

관상동맥질환자의 식이이행과 건강신념, 사회적 지지 및 특성 간 상관관계 (The Factors That Related the Dietary Behavior in Coronary Artery Disease Patients)

  • Purpose: This study was aimed to identify the factors that related the dietary behavior in coronary artery disease patients and to made the data for nursing which is thought to improve the dietary behavior. Method: The study population was the coronary artery disease patients who were treated at outpatient base. The study method was the dietary behavior, diet self-efficacy, perceived-healthy behavior, social support measurement & characteristics. All of the above tool was validated for its composition propriety and confidence. The statistical analysis was done by SPSS PC 11.0 program. and frequency, percentage, mean, standard deviation, Pearson's correlation was used for analysis. Results: The score of dietary behavior in the coronary artery disease patients was 4.57 point. The score of perceived-benefits was the highest among the association factor(point) and the score of perceived-barriers(m=2.78), diet self-efficacy(m=5.12), social support(m=4.86 point), exercise and chest pain. Conclusion: The development of the program for the efficient dietary education that prevents the progression of the coronary artery disease is needed.

침수.속박스트레서에 의한 위궤양 모델 쥐에서 식염의 섭취 수준이 궤양 발병 및 회복에 미치는 영향 (High Dietary Salt Intake Increase of Gastric Ulcer in Stressed Rats)

  • This study examined the effect of dietary salt levels on the incidence and cure of gastric ulcer in rats. Two sets of experiment were conducted . In the first experiment, the rats were divided into 3 groups. The 3 groups were fed 0%, 4%, and 8% NaCl diets respectively for 20days. The rats were given water -immersion restraint stress at the end of the dietary period , and sacrificed. The ulcer index by histological test was higher in rats fed the 8% NaCl diet than those in the other groups. The hexosamine and glutathione levels were significantly lower in the rats fed the 8% NaCl diet. Hematocrit and total iron binding capacity(TIBC) showed lower values caused by bleeding of gastric mucosa. The second experiment was designed to determine the effect of soldium concentration on the cure of gastric ulcer . As the gastric ulcer was recovered, ulcer length was gradually deceased in the control group but not changed in the 8% NaCl diet group. The gastric hexosamine and hepatic glutathione were increased in the control group but decreased in the 8% NaCl diet group. The hematologic indices of stressed rats showed the same tendency. As a result, dietary salt per se did not cause gastric ulcer . Once an ulcer is formed by stress or any other factor, higher levels of dietary salt may be detrimental to gastric mucosa, thereby delaying the healing of the ulcer. It is recommended that dietary salt intake be reduced in stress-prone people.

서울 시내 변두리 저소득지역 유아원 어린이의 영양실태조사 (Nutrition survey of young children in a day care center in the low income area of seoul)

  • A nutrition survey of 128 perschool children, 4 to 6 years old, in the Saemaul Youlgok day care center, located in one uplane, overpolulated, poor area of the city of Seoul, sponsered by the Korean Red Cross Society, was undertaken between August 21 and 31, 1984, to investigate dietary and nutritional status. RESULTS: Mean values of height, weight, arm circumference, girth of chest, and head circumference ranged from 95 to 100% of KIST mean. However, 4.8~14.2% of the subjects were assessed as undernourished in terms of 'weight for height'. Mean hemoglobin vcalue was 12.1±0.7gm%, and mean hematocrit value was 38.5±2.2%; 4.1% of the subjects were proven to be anemic according to the criterion of hemoglobin established by the ICNND. Mean urinary urea nitrogen/creatinine ratio was 11.4±3.8. Regarding mean energy and nutrient intake, the following percentages had intakes below two-thirds of the 1985 RDAs: 28.8% of children, for protein; 48.8% of children, for iron; and 28.8% of children, for calcium. About 25% of children had vitamin A intake below one-third of the recommended allowance. Carbohydrate provided 71% of total energy intake; protein accounted for 13%; fat provided 16%. Energy intake was divided among breakfast, lunch, dinner and snacks in a percentage ration of 19:26:21:34. The lunch, and snacks which were served at the day care center provided 36.5~79.1% of daily energy and nutrient intake. The survey clarified that the day care feding largely supplemented the inadequate dietary intakes of these young children at home. According to factor analysis of energy and nutrient intake, there were two factor groups : the first factor group, for energy, protein, carbohydrate, iron and niacin, mainly provided by grains; and the second factor group, for calcium, vitamin A, thamin, riboflavin and ascorbic acid, provided by vegetables, fruits, milk and milk products. The survey also revealed significant correlation coefficients between family factors such as family income, educational level of parents, and number of children; and dietary or nutritional status of the subjects.

Effects of Dietary Betaine on the Secretion of Insulin-like Growth Factor-I and Insulin-like Growth Factor Binding Protein-1 and -3 in Laying Hens

  • The principal objective of this experiment was to determine the effects of dietary betaine on IGF-I, IGFBP-3 and IGFBP-1 secretion and IGF-I mRNA gene expression in the serum and liver of laying hens. A total of 72 ISA-Brown laying hens were fed with four different levels of betaine (0, 300, 600, 1,200 ppm) based on a corn-soybean meal diet containing 2,800 kcal/kg of metabolizable energy (ME) and 16% crude protein (CP) for four weeks. The results indicated significantly higher serum and liver IGF-I concentrations in the laying hens fed with 600 and 1,200 ppm betaine (p<0.05) compared to controls. IGF-I gene expression in liver showed a statistically correlated increase in 600 and 1,200 ppm betaine-fed groups as compared to the controls (p<0.05). Serum IGFBP-3 concentrations were elevated significantly in the groups fed 600 ppm of betaine. However, the secretion of IGFBP-1 in the liver of laying hens fed on 600 and 1,200 ppm of betaine was significantly lower than in the controls (p<0.05). The results of this experiment showed that dietary betaine supplementation plays a pivotal role in changes of the IGFs system in laying hens.

한국거주 외국인 채식주의자의 한국음식 선호도 및 한식선택속성 (Survey of Preferences and Choice in Korean Cuisine of Foreigners who are Vegetarian)

  • Korean food is being recognized for its excellence. This paper attempts to provide material for the popularization of Korean cuisine with respect to foreign nationals living in Korea who are vegetarian by studying their Korean cuisine knowledge and preferences. The results of an Importance-Performance Analysis showed that though the importance values of traditional spice use such as garlic and the consideration of ingredient price were high, their performance values were low. Thus, these were areas identified as needing major improvement. Repeated measured data analysis was performed to determine variations in the perception of major factors for the development of Korean cuisine. The results indicated that simplification of seasoning was the most important factor followed by diversification of food ingredients, resale of vegetables in small quantities, ease of obtaining Korean cuisine recipes, and popularization of herbal and temple food, in that order. The least important factor in developing Korean cuisine was determined to be the reduction in levels of salt. Conjoint analysis was performed on the choices affection the selection of Korean cuisine, and price was found to be the most important factor. It was also determined that the effectiveness in the combination of fusion style, health oriented, concurrently served, medium to low price Korean cuisine was highest in preference. The next highest preferred combination was traditional style, health oriented, concurrently served, medium to low price Korean cuisine. The most significant factor to keep in mind in developing Korean dishes for foreign vegetarians was determined to be price. Furthermore, it was important to not simply reduce caloric intake but to use healthy ingredients and cooking methods.

Effects of Acanthopanax senticosus Polysaccharide Supplementation on Growth Performance, Immunity, Blood Parameters and Expression of Pro-inflammatory Cytokines Genes in Challenged Weaned Piglets

  • To investigate the effect of dietary Acanthopanax senticosus polysaccharide (ASPS) on growth performance, immunity, blood parameters and mRNA expression of pro-inflammatory cytokines in immunologically challenged piglets, an experiment employing $2{\times}2$ factorial arrangement concerning dietary ASPS treatment (0 or 800 mg/kg) and immunological challenge (lipopolysaccharide [LPS] or saline injection) was conducted with 64 crossbred piglets (weaned at 28 d of age, average initial body weight of $7.25{\pm}0.21kg$) assigned to two dietary ASPS treatments with 8 replicates of 4 pigs each. Half of the piglets of per dietary treatment were injected with LPS or saline on d 14. Blood samples were obtained at 3 h after immunological injection on d 14 and piglets were slaughtered to obtain spleen samples on d 21. Dietary ASPS did not affect average daily gain (ADG) (p = 0.634), average daily feed intake (ADFI) (p = 0.655), and gain:feed (p = 0.814) prior to LPS challenge. After LPS challenge, for LPS-challenged pigs those fed ASPS had higher ADG and ADFI than the non-supplemented group (p<0.05), and an interaction between $LPS{\times}ASPS$ was observed on the two indices (p<0.05). Dietary ASPS improved lymphocyte proliferation among saline-injected and LPS-injected pigs (p<0.05). Interaction between $LPS{\times}ASPS$ was also revealed on lymphocyte proliferation (p<0.05). Circulatory concentration of IgG was influenced neither by ASPS (p = 0.803) or LPS (p = 0.692), nor their interaction (p = 0.289). Plasma concentration and spleen mRNA expression of interleukin-1beta (IL-$1{\beta}$), interleukin-6 (IL-6), and tumor necrosis factor (TNF)-${\alpha}$ were induced to increase (p<0.05) by LPS challenge, in contrast, these indices were decreased by dietary ASPS (p<0.05), and interactions were found on these cytokines (p<0.05). For LPS-challenged pigs, dietary ASPS also reduced the circulating concentration and spleen mRNA expression of IL-$1{\beta}$, IL-6 as well as TNF-${\alpha}$ (p<0.05). The interaction between $LPS{\times}ASPS$ was also observed on the circulating concentration of insulin-like growth factor-I, ${\alpha}$-acid glycoprotein (${\alpha}$-AGP), nonesterified fatty acid, and glucose (p<0.05). The results of this study demonstrate that dietary ASPS can modulate the release of pro-inflammatory cytokines during immunological challenge, which might enable piglets to achieve better growth performance.

Effect of Dietary Lysine Restriction and Energy Density on Performance, Nutrient Digestibility and Meat Quality in Finishing Pigs

  • This experiment evaluated the effects of dietary lysine restriction and energy density on growth performance, nutrient digestibility and meat quality of finishing pigs. A $2{\times}2$ factorial arrangement of treatments was utilized in a randomized complete block (RCB) design, and factor 1 was lysine restriction and factor 2 was energy density. The control diet was formulated to contain 3.265 Mcal of ME/kg, 0.75% lysine in the early-finishing phase and 3.265 Mcal of ME/kg, 0.60% lysine in the late-finishing phase and other nutrients met or exceeded NRC (1998) standards. Compared to the control diet (CON), lysine levels of experimental diets were restricted to 15% (treatment EL, EEL) or 30% (treatment ELL, EELL), whereas energy level of experimental diets was increased by 0.100 or 0.200 Mcal of ME/kg. A total of 100 crossbred pigs ([Yorkshire${\times}$Landrace]${\times}$Duroc), with average initial body weight of $58.47{\pm}1.42\;kg$, were allotted to 5 dietary treatments based on sex and body weight. Each treatment had 5 replicates with 4 pigs (two barrows and two gilts) per pen. ADG, ADFI and feed efficiency were calculated in an 8-week growth trial. In the late finishing period (5-8 weeks), pigs fed ELL or EELL diets had decreased ADG and feed efficiency (p<0.01), however, when the EEL diet was provided, a similar growth performance was observed compared to those fed the CON diet during the whole experimental period (p>0.05). In a metabolic trial, 15 pigs were used to evaluate the effect of dietary lysine restriction and energy density on nutrient digestibility. The digestibility of dry matter, crude fat and crude ash was not improved by restricting dietary lysine or energy density. However, crude protein digestibility was decreased (p<0.05) as dietary lysine was restricted. When dietary lysine was restricted, fecal nitrogen was increased whereas nitrogen retention was decreased. BUN concentration was affected by dietary lysine restriction; treatments ELL and EELL had higher BUN values than other treatments (p<0.01). Carcass characteristics and meat quality were measured when average body weight of pigs reached $107.83{\pm}1.50\;kg$. Treatment ELL had higher last rib backfat depth (p<0.05) than treatment CON, but ELL and EEL did not differ significantly. The ELL and EEL treatments had higher (p<0.05) subjective marbling score than treatment CON. Treatment EEL showed higher longissimus fat content than treatment EL and CON (p<0.01). The results indicated that finishing pigs fed a diet with 15% lysine restriction and 3.465 Mcal of ME/kg energy density had no detrimental effects on growth performance and N utilization, and could achieve substantial increases in marbling and longissimus fat content of pork.

여대생의 골밀도와 식이 및 비식이 요인들 간의 상관성 (Dietary and Non-dietary Factors Related to Bone Mineral Density in Female College Students)

  • The purpose of this study was to investigate correlations between bone mineral density (BMD) and dietary and non-dietary factors in female college students. The BMD of the subjects (n = 38) was measured using DEXA (Dual Energy X-ray Absorptiometry) at lumbar spine and three femoral sites including femoral neck, ward's triangle, and femoral trochanter. Three-day 24-hour dietary recall data were collected from each subject to assess consumption levels of nutrients and food groups. The mean (${\pm}SD$) values of age, age of menarche, height, weight, body mass index (BMI), waist-to-hip ratio (WHR), fat mass, and % body fat of the subjects were 21.34 (${\pm}1.73$) years, 13.1 (${\pm}1.2$) years, 161.3 (${\pm}5.0$) cm, 53.7 (${\pm}7.2$) kg, 20.6 (${\pm}2.6$) $kg/m^2$, 0.80 (${\pm}0.04$), 15.4 (${\pm}4.4$) kg, and 28.2 (${\pm}4.7$), respectively. The BMD values of lumbar spine, femoral neck, ward's triangle, and femoral trochanter as T-value were $1.150{\pm}0.13\;g/cm^2$, $0.932{\pm}0.11\;g/cm^2$, $0.850{\pm}0.13\;g/cm^2$, and $0.721{\pm}0.10\;g/cm^2$, respectively. The daily mean energy intake of the subjects was 1660.6 kcal. The intake levels of carbohydrate, calcium, iron, vitamin C, and folic acid were lower than the KDRIs, while those of fat, phosphorus, sodium, vitamin A, and vitamin $B_6$ were higher than the KDRIs. Significantly negative correlation were detected between consumption of fat and oils and the BMD of all sites measured (p < 0.05). Potato and starch intake was negatively correlated to the BMD of femoral neck and word's triangle (p < 0.05). The intake of cereals was found to be negatively correlated to the BMD of ward's triangle (p v 0.05). There was also negative correlation of intake of soybeans and products with the BMD of lumbar spine (p < 0.05). Weight and muscle mass were positively correlated to the BMD of both lumbar spine and femurs (p < 0.01). Significantly positive correlations between BMI, and fat mass and the BMD of lumbar spine were observed (p < 0.001). Additionally fat mass was positively correlated to the BMD of femoral neck. WHR and % body fat were positively correlated to the BMD of lumbar spine (p < 0.05). Negative correlation was found between a serum calcium level and the BMD of femoral neck (p < 0.05). In summary non-dietary factors generally showed significant correlations with the BMD of lumbar spine, while several dietary factors showed significant correlations with the BMD of femurs.
