Within-and between-Individual Variation in Nutrient Intkes Assessed by Recall and Record Methods among College Women (회상법과 기록법으로 측정한 여대생의 영양소 섭취량에서의 개인내 변이와 개인간 변이)

  • This study examined within-and between-individual variation in nutrient intakes in order to estimate the degrees of precison in dietary assessment among 59 female volunteers aged 21-23 years. Self-recorded 7-day dietary recalls and records were collected by during a 3 month period. Between the recall and record methods, there were little difference of within-and between-individual variations. Within-to-between individual variation ratios were > 2.0 for most of the nutrients examined, and were higher for niacin, vitamin A and C (>2.5) in the recals and for calcium, iron, vitamin A and C(>3.0) in the records. With 7-day dietary data, observed nutrient intakes were estimated to within 26-107% of the subjects' true(usual) intakes, among those vitamin C and energy showed the highest and lowest values, respectively. Correlation coefficients between observed and true nutrient intakes were 0.73-0.81 for the recalls and 0.68-0.77 for the records. In order to estimate with 20% precision, 12-13 days of dietary study were required for energy, 46 for calcium, 71-72 for vitamin A, and 199-200 for vitamin C. Attenuation factor ranged 0.73-0.81 for the recalls and 0.68-0.77 for the records. This study implies that commonly used 1 or 3 day dietary studies may not be appropriate for assessing individuals' nutrient intakes. Further research focusing on the methodological issues in the assessment of Korean diet are needed for between understanding of the relationship between diet and health in Koreans.

Effect of Dietary Energy Levels for Egg-type Growing Puilets on Pullet Growth, Nutrient Consumption and Subsequent Laying Performance (난용계 육성기 사료의 에너지 수준이 육성계의 성장 및 영양소 섭취량과 산란능력에 미치는 영향)

  • Three dietary ME levels of 3,200, 2,900 and 2,600 kcal /kg in the same 13% single-stage low protein diet were compared to evaluate the effect of ME levels of grower diets on egg-type pullet growth and subsequent laying performance. As the ME levels of grower diets decreased, cumulative feed and protein consumptions increased(P<0.05), however, the ME intake and body weight at 18 wk of age decreased(P<0.05). Grower feed cost decreased as the dietary ME level was decreased, but no significant difference was found among dietary ME levels of grower diets. During the laying period, sexual maturity, hen-day egg production and average egg weight were not significantly affected by the ME levels of grower diet, however, daily feed intake and feed required per egg decreased as the dietary ME level of grower diet was reduced(P<0.05). Results of this study indicate that pullets can be reared on the low ME diet of 2,600 kcal /kg and it would he economical to utilize the low energy diet during the growing period when they are reared on a 13% single-stage low protein diet.

Effects of Lowering the Dietary Levels of Energy, Protein and Amino Acid (Methionine and Cysteine) on the Performance of Laying Hens

  • The purpose of our study was to determine the effects of varying levels of energy, protein, and amino acids on the performances of laying hens. A total of 240 Hy-Line Brown laying hens at 36 weeks of age were used in this 4-week feeding trial. The hens were randomly allocated to five treatment diets, with eight replications of six hens in each replicate cage. The treatment diets were as follows: A- basal diet + 18% crude protein, metabolizable energy 2,800 kcal, total (methionine + cysteine) 0.65%; B- basal diet + 17% crude protein, metabolizable energy 2,700 kcal, total (methionine + cysteine) 0.59%; C- basal diet + 16.5% crude protein, metabolizable energy 2,700 kcal, total (methionine + cysteine) 0.59%; D- basal diet + 16.5% crude protein, metabolizable energy 2,700 kcal, total (methionine + cysteine) 0.54%; and E- basal diet + 16% crude protein, metabolizable energy 2,680 kcal, total (methionine + cysteine) 0.54%. The study results revealed that the hen-day egg production of hens that were fed with low-energy diets (B, C, and D) was comparable with that of hens fed with high-energy diet A, whereas average daily feed intake in hens fed treatment diet D and E was significantly higher (P<0.05) than that in hens fed treatment diet A. Overall, the eggshell thickness was unaffected by any of the treatment diets. Egg weight was comparable among the treatment diets, except for treatment diet E. Haugh unit improved with decreasing levels of dietary energy, protein, and methionine + cysteine in the diet. We can summarize that laying hens fed with low dietary energy and low crude protein treatment diets B, C, and D had satisfactory performance compared with those fed with high-energy treatment diet A. This indicates that there is the potential to reduce feed costs by formulating diets with lower energy and low protein levels.

Effects of dietary onion (Allium cepa) extract supplementation on performance, apparent total tract retention of nutrients, blood profile and meat quality of broiler chicks

  • Objective: This study was conducted to investigate the effect of dietary onion (Allium cepa) extract (OE) supplementation on growth performance, apparent total tract retention (ATTR), blood profile, carcass characteristics and meat quality in broilers. Methods: Four hundred male broiler chicks (Ross 308, 3-d old) were randomly allocated to four dietary treatments for 28 d feeding trial. Each treatment has five replications with 20 birds each. Four dietary treatments were designated according to the OE supplementation levels (0 as control, 5, 7.5, and 10 g of OE per kg of basal diet respectively). On d 28, a total of 20 birds from each treatment were subjected for ATTR, serum biochemical assay, carcass characteristic and organ weight measurement. Results: Overall weight gain of OE 7.5 g/kg group was higher (p = 0.04) than control group. The ATTRs of dietary energy (p<0.01) and ether extract (p = 0.04) linearly increased with increasing levels of dietary OE. However, no difference in ATTR of dry matter and crude protein was evident. Furthermore, serum IgG concentration increased linearly (p<0.01) and quadratically (p = 0.03) with increasing OE supplementation. No differences in carcass dressing weight and amount of abdominal fat by treatments were observed. Also, the weight of organ including immune organ was not different among the treatments. The TBARS values of 10 d stored breast meat decreased linearly (p<0.01) and quadratically (p<0.01) with increasing dietary OE levels. The meat color was also affected, with lower (p<0.01) redness score in meats from OE supplemented groups. This study showed that dietary OE improved broiler weight gain presumably by increasing feed intake and ATTR of both energy and ether extract. The dietary OE increased serum IgG level and meat anti-oxidation capacity. Conclusion: This study implies that the recommended level of dietary OE supplementation could be beneficial for improving broiler performance and meat quality.

Assessment of the Dietary Adequacy of Non-Insulin Dependent Diabetes Mellitus in Daegu Area (대구지역 인슐린 비 의존형 당뇨병 환자의 영양섭취 적정도 평가)

  • To assess the dietary therapy compliance of non-insulin-dependent diabetes mellitus (NIDDM) patients living in Daegu, we evaluated diet adequacy levels by index of nutritional quality (INQ), nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and dietary variety score (DVS) with food exchange system and Korean recommended dietary allowances (KRDA). One day dietary intake was measured by 24 hour recall method for 229 subjects over 20 years of age. Average daily energy intake was 1444 kcal. The relative ratio of carbohydrate, protein and fat in terms of energy intake was 69.4:14.5:16.0. The nutrient adequacy ratio (NAR) for Vitamin A, B$_2$, calcium were lower than 0.5 and MAR was 0.65. It appeared that the consumption of each food group as compared to prescribed food exchange unit was insufficient, in the order of dairy group (10.2 $\pm$ 25.2%), fruits group (58.2 $\pm$ 71.2%) and oils & fats group (42.9 $\pm$ 42.0%). The dietary variety score (DVS) was evaluated as an useful tool for diabetes' meal management when we accept minimum intake as 0.3 of food exchange unit. We found significant correlation between food groups and anthropometric indices: cereals group and % total body fat (r = 0.251, p < 0.01), meat group and waist circumference (r = 0.241, p < 0.01), vegetables group and WHR(r = 0.139, p < 0.05), and oils poop and WHR(r = 0.165, p < 0.05). from these results, we concluded that overall status of dietary intake of NIDDM patients in Daegu area was insufficient not only in quality but also in quantity. It is suggested that nutrition education for NIDDM patients should stress on balanced food consumption to meet proscribed amount by six food group to improve the inadequacy of dietary status.

The effect of dietary intake and anthropometric parameters on the plasma lipid level (성인의 영양소 섭취상태 및 체위와 혈액내 지방수준과의 상관관계에 관한 연구)

  • This study was undertaken to examine the correlations between dietary intakes or anthropometric parameters and the plasma lipid level. measurements of dali nutrients intake, body weight, height, body bass index, skinfold thickness, blood pressure, plasma total lipid, triglyceride and cholesterol were made to each of 124 healthy adult(25-59yrs) : 56 males and 65 females. The mean energy and nutrients intake, anthropometric parameters and plasma lipid levels were all in normal range. In females, the fat and protein intake, the amount and percents to total energy intake, had positive association with the plasma total lipid, but the energy percent from carbohydrate intake was correlated negatively. And body mass index positively correlated with plasma total lipid level, in male and female, Therefore we could postulated the dietary fat intake and body mass index affected to plasma lipid levels in normal conditions of healthy adult.

Dietary Intake of High School Students in the Dormitories (전북지역 남여 고등학교 기숙사 학생들의 영양섭취 실태 조사)

  • A nutrition survey of 80 high school students in urban dormitories, 17-19 year old, in Jeonbuk province was undertaken in August of 1990, to investigate dietary intake. Total energy intake of male and female was 2,246.0 and 1,584.9 kcal respectively. Energy Intakes from breakfast, lunch and dinner were 553.5, 683.4 and 1,023.0 kcal in male, and 372.9, 391.8 and 820.2 local in female. Protein daily intake of male and female was 95.3 and 62.9g, and carbohydrate intake was 368.1g and 259.6g respectively. Total energy intake of male student was composed of carbohydrate 65%. protein 16.8% and fat 18.2% and that of female was carbohydrate 65.5%, protein 15.9% and fat 18.6% respectively.

Anthropomertic Correlates of Restrained Eating in Female College Students During Korean Thanksgiving Holidays (추석기간 중의 식품섭취 자제행동과 신체계측치와의 관련성)

  • This study was to investigate the eating behavior and the anthropometric and biochemical correlates of dietary restraint in femals university from 14 to 20 September 1997, including a Korean Thanksgiving day (16 September). The daily energy intakes and macronutrient compositions were analyzed by means of 7-day dietary records. The most important variable correlated with dietary restraint was hip girth. When dividing the subjects into restrained and unrestrained groups by the basis of a median spit on the hip girth, the restrained group had a about 400kcal less than the unrestrained group in 16 September. Differences were also found with respect to macronutrient composition. The restrained group showed a significant lower fat portion of the energy intake in 16 September and a higher fat portion in 20 September than the unrestrained group. It means that the restrained eaters reduced their fat intake in the Korean Thanksgiving day. However, they can't keep the cognitive control in the 4-day after the holiday.

A Survey on the Nutritional Status of Elementary School Children Attending City Type School Lunch Programs (목포지역 도시형 급식 초등학교 아동의 영양실태에 관한 연구)

  • This study was conducted to evaluate the nutritional status of elementary school lunch programs. The subjects of this study consisted of 170 elementary school students(male 51.8% : female 48.2%) in the 5th and 6th grades. The dietary intake of nutrients was assessed by the modified 24-hour recall method. The results are summarized as follows: the average body weight was 41.3$\pm$7.93kg for boys and 40.5$\pm$ 8.35kg for girls. The average height was 149.5$\pm$5.88cm for boys and 146.2$\pm$5.82cm for girls. The total daily energy and nutrient intake was below the RDA's except for the intake of niacin and ascorbic acid. School lunchs provided 31.5% of total energy intake ; 32.5% of carbohydrate intake, 31.9% of protein intake and 33.4% of fat intake. Therefore, school lunchs largely contributed to the nutritional balance of these children. The food habit score was poor for 40.6% of the subjects.

Factors Related to Dietary Fiber Intake Among Sixth Grade Elementary School Children in Daejon City

  • This study was conducted to investigate variables related to dietary fiber intake among sixth grade children in an elementary school in Daejon city. One hundred and forty-seven children completed a questionnaire for determining their socioeconomic background and their food habits. Anthropometric measurements were taken, and a 24-hour diet recall method was used to collect three-day food intakes. The socioeconomic status of the children's families belonged to the upper middle class; 53.0% of their fathers and 25.8% of their mothers had completed college or higher degrees. 27.9% of the mothers had jobs, including part-time jobs. Approximately 30% of the children skipped breakfast, 66.4% of the children preferred animal foods to plant foods, and 52.4% of the children preferred green vegetables to yellow or pale vegetables. Grilled meat dishes, such as Grilled beef rib with seasoning, Bulgogi, grilled pork belly and beef steaks, were the most popular types of food eaten outside home by the children. Daily dietary fiber intake was 14.5 g in boys and 14.5 g in girls, and these intakes are low compared to the standard guidelines. The average intakes of energy and protein of the children were 84.5% and 114.0% of the Korean Recommended Dietary Allowances (RDAs), respectively. Besides energy, riboflavin, iron and calcium intakes were below the RDAs, and especially calcium intake was only 50% of the RDAs. On the other hand, thiamin, niacin, ascorbic acid, protein and phosphorus intakes exceeded the Korean RDAs. Family income or the children's body mass index (BMI) was not directly related to dietary fiber intakes. However, higher dietary fiber intakes tended to be related to higher intakes of green vegetables and fruits. Children with higher dietary fiber intake tended to prefer plant foods to animal foods. Energy and most nutrients, except heme iron and retinol, showed positive relationships with dietary fiber intake. Especially potassium and plant origin protein and calcium were highly correlated with dietary fiber intakes(r>0.6). From these results, it is concluded that dietary fiber intakes of these sixth grade elementary school children were less than the standard reference and it is anticipated to decrease further in the future with increased incomes. Therefore, increased intakes of dietary fiber by elementary school children should be promoted through nutrition education, together with the development of cooking methods and recipes utilizing green vegetables and fruits.
