다양한 원료의 사료첨가제가 전복의 성장, 체조성 및 패각 색채에 미치는 영향 (Effect of the Various Sources of Dietary Additives on Growth, Body Composition and Shell Color of Abalone Haliotis discus hannai)

  • 카제인과 덱스트린 및 대두유와 어유의 혼합유를 주요 단백질과 탄수화물 및 지질원으로 구성한 전복용 배합사료에 다양한 microalgae (Haeatococccus, Isochrysis galbana, Shizochytrium)와 갑각류성 기원의 첨가제(krill meal, shrimp head meal, red crab meal) 및 녹차부산물을 각각 2% 첨가한 실험사료를 준비하여 16주간 전복에게 공급하여 주었다. 그리고 다시마를 공급한 실험구를 대조구로 두었다. 실험 종료시 전복의 생존율은 유의적인 차이가 없었으나, 사료 첨가제를 첨가한 모든 실험사료에서 전복의 체중증가량은 다시마를 공급한 실험구에 비하여 유의적으로 우수하였다. 전복의 체중 증가량은 Spirulina, Shizochytrium 및 Isochrysis의 순으로 우수하였다. 전복의 체장 및 체중에 대한 가식부의 중량 비는 유의적인 차이가 없었다. 그러나 체폭은 다시마를 공급한 실험구에 비하여 첨가제를 첨가한 모든 실험구에서 유의적으로 우수한 것으로 나타났다. 전복 패각의 색채 개선효과는 Spirulina 첨가구에서 가장 뚜렷하였다. 실험사료내 다양한 microalge와 갑각류성 기원의 사료첨가제는 전복의 성장을 효율적으로 개선시켰으며, 사료내 Spirulina의 첨가는 전복 패각 색채 개선에 가장 효과적이었다.

  • Purpose: In this study, we comparatively investigated the nutrition knowledge, dietary attitude, and dietary behavior related to salt according to the types of dietary life style for differences between the groups. Methods: The survey was conducted between May 1 to July 31, 2014 among 500 adults aged >19 years in Seoul, Gyeonggi-do and Chungcheong-do areas. Results: Factor analysis of the dietary life style, indicated 4 factors including food convenience factor, food information emphasis factor, behavior factor of pursing food taste, and food purchase standard factor, which were classified into 3 groups according to differentiated dietary life style types; group 1 emphasized convenience and diversity of food, and price sensitiveness. and included subjects who had low interest in health and nutrition and were less likely to take care of their health through regular exercise,; group 2 emphasized food ingredients, food additives, usage and food purchase standards. and included subjects who were more likely to take care of their health through exercise and showed lower intake of fast food and less cases of eating out.; and group 3 showed relatively higher tendency toward dietary life style factors than the other two groups. The level of nutrition knowledge in sodium intake differed according to dietary life styles, and showed a significant difference in the dietary practice of sodium intake. Conclusion: Nutrition education on the healthy dietary habit of reducing sodium intake be based on ge and gender. In addition, an effort is required to improve behavior, interest, and attitude according to the important tendencies of the dietary life style.

할미꽃(백두옹, Pulsatilla koreana) 첨가량에 따른 오미지의 미생물학적 특성 (Microbiological Properties of Oiji (Korean Pickled Cucumbers) by the Addition of Pulsatilla koreana)

  • This study was performed to analyze the microbiological properties of Oiji soaking solution and Oiji preserved with $7\%$ brine and the others preserved with Pulsatilla koreana additives of various concentration$(0,\;3,\;6,\;9\%)$ during fermentation(24 days) at room temperature$(20\pm2^{\circ}C)$. The results of this experiment are as follows: The total number of microbes showed radical increase up to 6th day of growth period and decreased afterwards. Growth of microbes was impeded in the beginning of fermentation in the case of adding $6\%$ Pulsatilla koreana. The number of lactic acid bacteria tended to increase progressively until 15th day and then decreased, and that in the group of $6\%$ Pulsatilla koreana was relatively lower than those of other groups. Antimicrobial activity against Staphylococcus aereus and Micrococcus luteus was shown weakly from 9th day of fermentation regardless of the concentration of Pulsatilla koreana additives, but inactivated after 21st day of fermentation.

영남 지역 대학생들의 식품 위해요인에 대한 위험 지각 특성 연구 (A Study on Risk Perception Characteristics for Food Risk Elements of University Students in Yeungnam Region)

  • The purpose of this study was to investigate the levels of risk perception characteristics for food risk elements using a psychometric paradigm from 298 university students in Yeungnam region, Korea, by a self-administered questionnaire. The respondents showed the highest level of risk concern about radioactive contaminated foods and the lowest level about GM (genetically modified) foods. In the risk perception characteristics for food risk elements, they perceived radioactive contaminated foods as a catastrophic, worried, new, and uncontrollable risk. In addition, they regarded food additives and foodborne illness as a chronic, controllable, old, and scientifically and individually known risk. According to the results of the factor analysis for risk perception characteristics, dread and unknown were categorized. In the risk perception map, mad cow disease, heavy metal contaminated foods, and radioactive contaminated foods were considered as a dreaded and unknown risk, whereas pesticide residues and GM foods were perceived as a less dreaded and unknown risk. Additionally, food additives and foodborne illness were regarded as a less dreaded and known risk and endocrine disruptors and avian influenza as a dreaded and known risk. These results imply that risk perception characteristics of consumers should be considered to establish strategies for risk communication in food science.

초가공식품 섭취가 건강에 미치는 영향 (The Impact of Ultra-Processed Food Consumption on Health)

  • Ultra-processed foods, falling under group 4 of the Nova classification system, are manufactured from processed food ingredients such as oils, fats, sugars, starch, and protein isolates, containing minimal to no whole food. They commonly incorporate flavorings, colorings, emulsifiers, and various cosmetic additives to enhance their palatability. Ultra-processed foods have become increasingly prevalent in contemporary society owing to their convenience, affordability, extended shelf life, and enhanced taste and aroma through additives. This surge in the consumption of ultra-processed foods has sparked discussions regarding its adverse health effects. Numerous studies have highlighted that an increased intake of ultra-processed foods elevates the risk of metabolic disorders, such as cardiovascular diseases, obesity, and diabetes, along with an increased risk of various cancers. Moreover, its association with an increased mortality risk underscores the importance of recognizing that opting for these foods based solely on taste and convenience is risky. Thus, by recognizing dietary habits as modifiable factors that can prevent health issues, maintaining a balanced diet with diverse nutrient intakes is crucial for overall health. Therefore, raising awareness and understanding of ultra-processed food consumption can significantly contribute to promoting healthy lifestyles.

Effects of Supplementary Threonine, Canola Oil or Enzyme on Nutrient Digestibility, Performance and Carcass Traits of Growing-finishing Pigs Fed Diets Containing Wheat Distillers Grains with Solubles

  • This trial was conducted to determine the effects of various feed additives on nutrient digestibility, performance and carcass traits of growing-finishing pigs fed diets containing wheat distiller' grains with solubles (WDGS). Seventy-two, individually fed pigs (19.7${\pm}$2.6 kg), were assigned to one of six dietary treatments in a 6${\times}$2 (treatment${\times}$sex) factorial design (N = 12). The control diet was based on wheat and soybean meal while the five experimental diets contained 20% WDGS during the growing period and 12% WDGS during the finishing period. One 20% WDGS diet was unsupplemented while the remaining diets were supplemented with either 0.1% threonine, 5% canola oil, 0.2% enzyme (0.1% Endofeed W containing 1,250 units/g of xylanase and 385 units/g of $\beta$-glucanase and 0.1% Vegpro containing 7,700 HUT/g protease and 75 CMC/g cellulase), or a combination of the three additives at the same levels as those fed separately. The digestibility of dry matter, crude protein and energy were all significantly higher in the control diet than the unsupplemented diet containing 20% WDGS. None of the feed additives improved nutrient digestibility. In addition, none of the additives had any significant effect on gain or feed intake during the growing (19.7 to 43.6) or finishing (43.6 to 114.3 kg) periods or overall (19.7 to 114.3 kg). During the growing period, feed conversion was significantly improved for pigs fed the combination of additives compared with the unsupplemented WDGS diet. During the finishing period and overall, feed conversion was significantly improved for pigs fed 5% canola oil alone or in combination with the other additives. None of the supplements had any effect on carcass traits. These results indicate that WDGS can be successfully used as a partial replacement for soybean meal in diets fed to growingfinishing pigs. However, due to its low energy content, there may be some merit in including high energy ingredients such as canola oil when diets containing WDGS are fed.

초등학생을 위한 인공식용색소 정보전달 교육매체 개발 (Development of a Risk Communication Material on Artificial Food Color Additives for Elementary School Students)

  • The purpose of this study was to develop a risk communication material on artificial food color additives for elementary school students. The development was based on a previous study on the perception and information needs of elementary school students on artificial food colors including that the students usually were interested in artificial food colors, but didn't know about those well, and they wanted to get information on the safety of their intake, function and necessity of food color additives. Based on the above results, a comic book on artificial food colors was developed as a risk communication material for the elementary school students by brainstorming and consultation with experts. The book was titled as 'Variegated artificial food colors! Understanding and Eating'. It contained basic information on food additives focused on artificial food colors including definition, function, calculation of ADI, usage of artificial food colors, quizzes and useful web sites, etc. The results of field evaluation for the developed material by 101 elementary school students were very positive in getting the correct information, understanding artificial food colors and having proper attitude for healthy dietary life. Therefore, the developed material could be used to help elementary school students have proper perception on artificial food colors and facilitate the risk communication on food additives.

Dietary Fiber Intake of Subjects with Non-Insulin-Dependent Diabetes Mellitus and Hyperlipidemia

  • The present study was conducted to evaluate the dietary fiber intake of 130 subjects, that included 49 subjects(29 form Wonju, 20 from Kangnung) with diabetes mellitus, 23 hyperlipidemia patients, and 58 normal subjects. After the type and amount of foods that a subject took for one day were investigated using the 24-h recall method, the intake of various nutrients and dietary fiber were calculated using a program that already contained the information on dietary fiber contents. The results showed that diabetics from Kangnung who did not undergo dietary therapy had more fat intake that those from Wonju, hyperlipidemia patients, and normal subjects thus, had more energy intake. Also, the crude fiber intake in male and female diabetics from Kangnung were 8.43${\pm}$3.47g and 3.35${\pm}$3.29g, respectively, showing significantly high amounts compared to those of male and female diabetics from Wonju, hyperlipidemia patients, and normal subjects; however, the intake of crude fiber per 1,000 kcal in males and females was not significantly different among the four groups. Also, the dietary fiber intake(14.8-19.8g/day) and the dietary fiber intake per energy unit(7.7-10.9g/1,000kcal) were not significantly different between the four groups. The dietary fiber intakes of diabetics and hyperlipidemia patients were not significantly different from those in normal subjects, and these amounts were significantly lower than recommended levels. Thus, the methods of increasing dietary fiber intake, such as developing low-calorie, high-dietary fiber foods or additives, needs to be researched.

사료내 택사, 겨우살이 및 산수유 생균제 첨가가 비육돈의 생산성 및 면역성에 미치는 영향 (Effects of dietary Alisma canaliculatum(Alismatis rhizoma), Viscum album (Mistletoe) and Cornus officinalis (Corni fructus) probiotics as feed additives on growth performance and immunity in growing pigs)

  • An investigation was conducted to evaluate the effects of supplementing Alisma canaliculatum, Viscum album and Cornus officinalis probiotics on the growth performance and immune response in growing pigs. This experiment was conducted using 120 pigs (crossing of Landrace${\times}$Yorkshire and castrated) which were assigned to 5 treatments in 3 replications with 8 pigs per replications. The dietary treatments were NC group (without antibiotics), PC group (basal+Oxytetracycline 50ppm), AC group (basal+A. canaliculatum 0.5%), VA group (basal+V. album 0.5%) and COP group (basal+C. officinalis probiotics 0.5%). The initial body weights of pigs were 35kg on average and the experiment lasted for 9 weeks. The experimental animals were kept in the pens following a completely randomized design. They were provided the diets adequate for grower stage as recommended by NRC (ME:3,265 kcal/kg and CP:16%). COP fed pigs showed lower weight gain up to 6 weeks of age compared to NC group and other groups without significant differences (P>0.05). The carcass weights of pigs fed VA and COP were significantly higher compared to NC group (P<0.05), Back fat thicknesses groups fed three different additives were higher than NC group and lower then PC group (P<0.05). Crude fat contents in loin meat were significantly lower in groups fed three different additives while moisture contents of those three groups were higher than other groups (P<0.05). The thiobarbituric acid reaction substance (TBARS) value measured at fresh and $2^{nd}$ weeks was lower in additives fed groups but no statistical differences were observed among the treatments (P>0.05). Significantly highest PUFA (16.42g/100g) and ${\omega}$-3 fatty acids (ALA, EPA and DHA) content of meat were observed in COP fed pigs compared to NC group (P>0.05), which might mean that three additives function to enhance serum IgG in pigs. In consequence, it can be suggested that AC, VA and COP may have a potential to replace antibiotics as growth promoter and immune enhancer in the diets for growing pigs.

  • The effects of dietary supplementing natural additives [yacon (YC), ginger (GG), and blueberry (BB)] on growth, feed utilization, and body composition of juvenile rockfish were compared to those of ethoxyquin (EQ), which is commonly used to prevent rancidity of fish feed. A total of 480 fish were distributed randomly into 12 50-L flow-through tanks (40 fish/tank). Four experimental diets were prepared: the control diet (Con) with 0.01% EQ, and the YC, GG and BB diets containing 1% YC, GG, and BB instead of wheat flour. Each diet was assigned randomly to triplicate tanks of fish, which were hand fed to satiation twice daily for 8 weeks. Weight gain of fish fed the YC diet was higher than that of fish fed all other diets. Feed efficiency (FE), protein efficiency ratio (PER), and protein retention (PR) in fish fed the YC diet were higher than those in fish fed the other diets. Whole-body chemical composition of the fish was affected by the additive sources. In conclusion, dietary supplementation with GG effectively improved weight gain and feed utilization (FE, PER, and PR) of juvenile rockfish.
