Effect of Dietary Herb Mix on the Physicochemical Quality of Cooked Chicken Egg during Refrigerated Storage (복합 한약재 급여가 냉장 저장 중 삶은 계란의 물리화학적 품질에 미치는 영향)

  • Three dietary herbs, Coptis japonica Makino (48.5%), Lonicera japonica Thunb (48.5%), and Morus alba L. (3%) were mixed and used as additives in hen's feed. One hundred-eight, 28-wk-old Lohmann Brown hens were assigned randomly with three diet treatments (0, 0.3, and 1% of herb mix). Hens were fed for 6 wks to investigate the effect of herb mix on the physicochemical quality of eggs during storage at $4^{\circ}C$ for 0, 3, 7, and 14 days. Proximate composition including the content of water, protein, fat, and ash had no difference among 3 diet treatments. Objective color of cooked whole egg from hens fed herb mix did not show any effect compared with control except for the color $a^*$- and $b^*$-values at day 3. However, color $a^*$- and $b^*$-values increased during storage regardless of treatment. From the texture analysis, eggs from hens fed with the herb mix were not different compared with control remove for springness at day 14. However, it was observed that springness and gumminess were decreased as storage period increased. Therefore, a dietary supplementation of herb mix to hen may not affect on proximate composition, color and texture of eggs.

Study on the Quality Characteristics of Sulgitteok Made with Various Amount of 'Goami 2' and Rice Powder (고아미 2호와 쌀가루 배합 비율을 달리한 설기떡의 품질 특성에 관한 연구)

  • The purpose of this study was to examine the possibility of making functional sulgitteok with Goami 2 rice, which is a rich that is high in dietary fiber. Sulgitteok was made by adding various amounts of Goami powder(25, 50, 75, and 100 %) to rice powder. Then, the sensory tests and other tests to measure color, texture and hardness were examined as a function of time and the moisture content in sulgitteok was measured to determine the quality and characteristics of different types of sulgitteok. The conclusions of these tests were as follows : In the sensory evaluation preference test of sulgitteok made with various amounts of Goami powder, the overall preference was the highest in sulgitteok made with 50% Goami powder (S2). In the difference test, the higher the amount of added Goami powder, the lower the grades were. The S4 group, which was made with Gomai powder, had a strongly unique odor compared with those made with rice powder, which smelled weaker. In terms of the color values of Gomai added sulgitteok, the higher the amount of added Gomai powder, the lower the lightness value of sulgitteok, where group S4 had the lowest value. In addition, the S4 group, which was made with Goami powder, had the hightest red and yellow color. The texture test indicated that sulgitteok containing a large amount of Goami powder were considerably harder compared with the control group. While every group containing Goami powder (S1, S2, S3 and S4) became harder during the first to the third day of the test, their hardness tended to drop after longer storage times. In the control group, the hardness continued to grow from the start up to the fifth day. After five days' there was a noticeable change in the moisture content in the different types of sulgitteok, with more water evaporating in the S3, S2, and S1 groups than in the S4 groups, which contained the highest amount of Goami powder. Group C, which contained no Goami powder, had the largest water evaporation. Sulgitteok that contained more Goami powder turned out to be more savory than baekseolgi made solely of rice powder. However, they were less preferable overall, since they were rated lower in terms of color, texture and other characteristics. Therefore, utilize Goami tteok as a functional ingredient in food for people with diabetes or obesity, further studies on additives that can provide a sticky texture and favorable color should be conducted. In addition, different types of ttoek such as pounded or boiled ones may be preferable to sulgitteok.

Risk Assessment of Lead and Cadmium through Mushrooms (버섯류 중 납, 카드뮴 위해성 평가)

  • The present study was carried out in order to assess the dietary exposure as well as the risk for lead (Pb) and cadmium (Cd) exposure through mushrooms among the Korean population. Various samples (n=536) covering 17 kinds of mushrooms were collected from retail outlets and markets in Korea. The contents of Pb were 0.005 (King oyster)-0.026 (Matsutake) mg/kg in raw mushrooms and 0.014 (Oyster)-16.411 (Manna lichen) mg/kg in dry mushrooms, respectively. The contents of Cd were 0.002 (Enoki)-0.205 (Hericium erinaciium) mg/kg in raw mushrooms and 0.021 (Vegetable worms)-2.650 (Agaricus blazei Muill) mg/kg in dry mushrooms, respectively. The mean dietary exposure of Pb for the general population was $0.053{\mu}g/day$, taking 0.03% of provisional tolerable weekly intake (PTWI). The mean dietary exposure of Cd for the general population was $0.168{\mu}g/day$, corresponding to 0.37% of provisional tolerable monthly intake (PTMI). Therefore, the level of the overall dietary exposure to heavy metals through mushroom for the Korean population was far below the recommended JECFA levels, indicating little possibility of concern.

An Educational Needs Analysis of Home Economics Teachers for Food Literacy Education in Secondary School Home Economics (중등 가정과 푸드리터러시 함양 식생활교육에 대한 가정과 교사의 교육 요구도 분석)

  • This study aimed at analyzing the educational needs of home economics teachers for food literacy cultivation education in secondary school home economics. A total of 192 home economics teachers were surveyed about their perceptions of importance and performance of food literacy education content categories and elements, and their priorities were identified. Among the 38 content elements presented, home economics teachers recognized that the current performance level was significantly lower than that of the importance over 34 content elements. Based on the Borich educational needs assessment and the Locus for Focus Model, we identified five content elements with 'very high' educational needs ('food security/food sovereignty', 'reducing food-related waste', 'food waste management and recycling', 'food-related waste recycling', and 'country of origin information'), and four content elements with 'high' educational needs ('genetically modified food', 'ethical food consumption', 'food additives', and 'eco-friendly agricultural products'). These results indicate that dietary education in secondary school home economics should emphasize both the production and disposal of food. The findings of this study suggest implications for the needs for a new dietary education in secondary school home economics that allows students to learn all stages of food system. These results can also be used as a basis for dietary education for cultivating food literacy in secondary school home economics education.

Effect of Dietary Fermented Earthworm Cast Additives on Odor Reduction of Poultry House and Egg Production (지렁이 분변토 발효 사료 첨가제가 계란 생산 및 악취 저감에 미치는 영향)

  • This study was carried out to investigate the effect of feeding fermented earthworm cast additives (FEC) on egg production, egg yolk fatty acids, blood lipid, cecal microorganism and fecal odor. The completely randomized experiment was applied, and the treatments were designed as 2 feeding regimens (control vs. FEC feeding), and FEC contained 3.5% top dressing to common diet. Egg production and egg weight of FEC group were significantly higher than that of control (p<0.05). Ratios of n-6/n-3 fatty acids in the egg yolk of FEC group were significantly higher than those in control group (p<0.05). Concentrations of HDL-C in FEC group was significantly higher than control group (p<0.05), but not triglyceride and total cholesterol. The caecal Lactobacillus of FEC group was significantly higher in FEC group than control group (p<0.05). $NH_3$ concentrations from poultry house were significantly lower in FEC group than control (p<0.05). In conclusion, these study results showed that the addition of FEC at 3.5% to the diet has reduced odor of poultry house and improved the n-6/n-3 fatty acid of egg yolk and egg production in laying hens.

Effects of probiotic, prebiotic, and synbiotic with and without feed restriction on performance, hematological indices and carcass characteristics of broiler chickens

  • Objective: This study was conducted to investigate the effects of probiotic, prebiotic and synbiotic with and without feed restriction on broilers performance, blood parameters, carcass characteristics, and feed cost of production from 1 to 56 days of age. Methods: Two hundred and forty unsexed one day-old chicks of Arbor Acres breed were used. Two trials, I and II, were conducted, with 120 birds in both. Each trial was divided into 4 equal groups. The birds in trial I were fed ad libitum throughout the experiment, while the chicks in trial II were fed ad libitum during the first week of age, then subjected to 5 hours/d of feed restriction from the beginning of the second week up to the end of the experiment. In both trials, the birds in group 1 were fed on a control diet while the other groups were given the same control diet supplemented either with a probiotic in group 2, prebiotic in group 3, or synbiotic in group 4. Results: It was found that chicks fed diets supplemented with probiotic, prebiotic and synbiotic (with and without feed restriction) exhibited higher body weight and feed efficiency than chicks fed the control diets. The feed additives in both trials did not affect hemoglobin, serum total protein, albumin, globulin, glucose, and total cholesterol, except the packed cell volume which was increased in the additive treatments with restriction at the end of the experiment. Moreover, the dietary treatments did not influence the carcass yield. However, the relative weights of liver, gizzard and proventriculus, small intestine and bursa of fabricius were found to be increased. The additives decreased the visible fat in the carcass, with more decreasing effect in the additive groups with restriction. The lowest feed cost per kg of weight gain was observed in the birds fed diets supplemented with synbiotic, probiotic and prebiotic. Feed restriction improved the feed conversion ratio, economic return, but decreased the feed intake, serum total cholesterol and visible fat in comparison with non-restricted groups. Conclusion: The biological feed additives could be routinely added to broiler diets, especially when a feed restriction program is followed. Finally, it can be recommended to restrict feed, and add probiotic or synbiotic to increase weight, improve feed conversion rate and reduce feed cost of production.

Effect of Dietary Astaxanthin Producing Bacteria (Xanthophyllomyces dendrohous) on the Growth Performance and the Meat Quality of Ducks (아스타잔틴 생성 균주(Xanthophyllomyces dendrohous)의 급여가 오리의 성장과 육질에 미치는 영향)

  • This study was carried out to investigated astaxanthin producing "Xanthophyllomyces dendrohous" on growth performances and meat quality in ducks. A total of 450 ducks (cheribery) were allotted into 3 groups. The three groups were control (commercial feed), treatment 1 (0.1% feed additives), and treatment 2 (0.2% feed additives). Each group had 3 replicates. Viable cell number of "Xanthophyllomyces dendrohous" is $1.0{\times}10^8$ cfu/g. Growth performance carried out during 39 days. Average weight gain was significantly higher (p<0.05) in treatment 2 than that of control. Feed conversion was significantly lower (p<0.05) in treatment 1 and 2 than that of control. The results of nutrients composition analysis of duck meat showed that treatment 1 and 2 had significantly lower (p<0.05) fat and cholesterol levels. Water holding capacity showed significantly higher (p<0.05) value than that of control. Both treatment groups showed lower (p<0.05) value than control in drip loss and shear force. Control showed higher unsaturated fatty acids(palmitic acid, stearic acid) content than treatment 1 and 2. Treatment 1 and 2 showed significantly lower (p<0.05) saturated fatty acids (oleic acid, linoleic acid) levels than control. These results suggested that the supplementation of feed additives containing "Xanthophyllomyces dendrohous" might be used effectively for inproving productivity and meat quality of ducks.

A Study on Preferences of Watermelon-Wine Manufactured with Different Kinds of Yeasts and Different Starting Sugar Contents (효모와 초기 당도를 달리하여 개발한 수박 양조주의 기호도에 관한 연구)

  • The principal objective of this study was to prepare watermelon wine with watermelon juice. For the manufacture of watermelon wine, we determined the contents of starting sugar content ($20^{\circ}Brix$, $25^{\circ}Brix$, $30^{\circ}Brix$, $35^{\circ}Brix$) and three different kinds of yeasts (EC-1118, K1-V1116, D-47). The main additives of the watermelon wine included $K_2S_2O_5$, $NH_4H_2PO_4$, bentonite, yeasts, sugar, mixed acid, and $C_6H_8O_2$. The watermelon wine was fermented at $15^{\circ}C$ until the remaining alcohol content was 5%. We assessed customers' preference regarding the manufactured watermelon wine via sensory evaluation. Three yeasts were shown to result in significantly different alcohol fermentation, among which K2-V1116 was selected for the preparation of the watermelon wine. In our sensory evaluation, the preference of the starting sugar contents was highest in the watermelon wine with $25^{\circ}Brix$ of sugar content. The preference of alcohol content was found to be higher in the watermelon wines prepared with sugar contents of 5% and 7%. The preference test between watermelon wines and purchased white wines demonstrated that the watermelon wine with an alcohol content of 5% was the most preferred wine, and the Chilean Late Harvest wine was the second most preferred.

Nutrition Knowledge and Need for a Dietary Education Program among Marriage Immigrant Women in Gyeongbuk Region (경북지역 결혼이주여성의 영양지식 및 식생활 교육 프로그램 요구도 조사)

  • The purpose of this study was to provide basic materials and assistance for developing a nutritional education program targeting marriage immigrant women, and it was carried out on 86 female marriage immigrants living in the Gyeongbuk region. An average age of the female marriage immigrants who participated in this survey were 28.6 years, and their home countries were the Philippines (32.6%), Vietnam (29.1%), and so on. Exactly 59.3% of subjects had been married for 1~5 years, and 40.7% of the subjects had an education status of less than middle school graduation. The majority of them (65.1%) had one more children, and 51.2% of subjects were a part of a nuclear-family, with the husband's age between 40~49 years old (58.1%). Concern for nutrition label was significantly different according to number of children (P<0.01), period of marriage (P<0.001), and education level (P<0.05). It was demonstrated that a higher level of education was associated with a higher need to learn about nutritional information. Understanding nutritional facts and knowledge was significantly higher among the women with two children than no child (P<0.05), period of marriage >10 years than <1 year (P<0.01), and education level of college & university graduation than less than middle school (P<0.05). Sixty percent of the women surveyed participated in the education program of 'Korean language' as they were in their country, and the most preferred education program was 'Korean dietary life and culture' (39.5%). Regarding participation and educational method, the majority of subjects responded that they wanted to learn nutritional education in a cooking academy or school (52.9%) and public health center (34.1%).

A Study on the Recognition for Health Food of Residents in Seoul Area (서울지역 거주자의 건강식품에 대한 인식 연구)

  • With the rapid expansion of the economy, consumers' interest in health has also grown and the consumption of health foods is also growing at a rapid rate. However, because of the lack of understanding and Information about health foods, there is growing discontentment societally and in relation to the consumers' individual health. This study was conducted to get consumers to use the health food soundly and provide useful information to consumer behavior researchers of health food by researching consumers' past consumption experience and recognition of health foods. 662 people over the age of 20 in the Seoul area were sampled for this study. Through the results of this study, it was revealed that 71.5% of the respondents said they consumed health foods in the past year. The people surveyed said they thought they were health on the whole(3.72) and were slightly concerned (3.30) with their health. Lastly. the results of the studying the recognition of health food, respondents believe that health foods help to maintenance of good health(3.63) recover from fatigue(3.59), prevent of disease(3.32). They also believe that it is not harmful to the body(2.85) but were concerned about additives(3.24) and side effects(3.24) The study also found consumers to think that health foods are expensive(4.03) but is not of the highest quality(2.84) and that the dosage is not exact(2.84). In addition. they believe the labeling to be accurate(2.89), the ads to be exaggerated(3.88). information about the products to be lacking(3.71) and finally refund or exchange to be difficult(3.85).
