Effects of three types of dietary fibres on blood glucose and liver glycogen were studied in male rats. The fibres were used as 10% of the diet supplemented from dietary sources, white beans, peas and carrots. The experiment continued for 5 weeks. At the end of the experiment, fasting blood glucose and liver glycogen were determined. The results showed that replacing carrot fibres and pea fibres by white bean fibres produced significant reduction of blood glucose by 28% and 43%, respectively, while exchanging pea fibres by carrot fibres produced no significant reduction of blood glucose gy 20%. Liver glycogen level (mg/100 g liver) was not affected by altering the fibre type in the diet.

This study was undertaken to dtermine whether dietary fibers had an effect on postprandial plasma lipoprotein and liver lipid composition in rats. Each experimental diet ocntained 10 % dietary fiber by weight. All animals were sacrificed in postprandial state. Sodium alginate-fed animals has significantly lower plasma cholesterol, VLDL-, LDL-cholesterol, TG, and protein levels than did the fiber-free control group. In addition, liver cholesterol and TG concentrations were the lowest in sodium alginate -fed animals. There was no significant change in HDL-cholesterol levels among experimental groups. Cellulose-fed animals also have lower plasma cholesterol and TG levels than fiber-free controls, but liver TG concentrations were not different from those in fiber-free controls. This study demonstrates that dietary fiber included in the diet of rats is able to alter postprandial lipoportein cholesterol and TG, and that sodium alginate, a soluble fiber, was the most effective in lowering plasma and liver cholesterol and TG.
Administration of dietary fibers has various health benefits, mainly by increasing numbers of beneficial bacteria and enhancing production of short-chain fatty acids in the colon. There has been growing interest in the addition of dietary fiber to human diet, due to its prebiotic effects. This study aimed to evaluate the prebiotic activity of inulin using an in vitro batch fermentation system with human fecal microbiota. Fermentation of inulin resulted in a significantly greater ratio of Lactobacillus or Bifidobacteria to Enterobacteria strains as an index of healthy human intestine and elevated butyrate concentration, which are related to improvement of gut health.

Makgeolli lees is a by-product of the makgeolli brew processing. Makgeolli lees contains high levels of fibers, which can be separated and used to develop foods rich in dietary fibers. The purpose of this study was to determine the effect of makgeolli fibers (0-4%) on proximate composition, caloric content, pH, color, cooking yield, textural profile, and sensory characteristics of chicken-emulsion sausages. The moisture content of 1, 2, and 3% makgeolli lees fiber-amended product was higher than the control, while that of the 4% product was not. Total calorie estimates of makgeolli lees fiber-amended sausages were lower than the control, except for in the case of the 4% treatment. Moreover, chicken sausages supplemented with makgeolli lees fiber had higher cooking yields and improved textural properties. Chicken emulsion sausages prepared with makgeolli lees fiber had improved overall acceptability, and the best results of sensory characteristics were obtained for the emulsion sausages containing 2% makgeolli lees fiber.
This study was undertaken in order to elucidate the elimination of fenitrothion residues during the dietary fiber and bioflavonoid preparations from mandarin orange peels. Dietary fibers were prepared from contaminated mandarin orange peels through homogenization, enzyme treatment, ethanol precipitation, acetone washing and air drying, at the yields of 17.4% total dietary fiber, 13.1% insoluble dietary fiber and 1.7% soluble dietary fiber. The removal rate of fenitrothion residues at 13 and 0.5 ppm levels in orange peels was 98.4% and 91.9% in total dietary fiber, 99.7% and 97.1% in insoluble dietary fiber, 100% and 99.6% in soluble dietary fiber, respectively. When bioflavonoid was prepared from contaminated mandarin orange peels through homogenization, soaking, ethanol precipitation, hexane and butanol extractions, the removal rate of fenitrothion residues was 92.7% in intermediate extract and 100% in final extract.
The gelatinization and retrogradation properties of rice starch added with dietary fibers from sikhe were investigated. The pasting temperature and setback of starch measured by using a rapid visco analyzer were increased by the addition of the fiber, whereas the peak viscosity, trough viscosity, end viscosity, breakdown and consistency were lowered. The onset temperature of starch measured by a DSC was increased, but the enthalpy of gelatinization of the starch was decreased as the addition of fiber increased. The melting peak temperature of the retrograded starch gels was 41∼46$\^{C}$ as measured by a DSC. The melting enthalpy of the control retrograded starch gel was increased while storing for 1, 3 and 7 days at 4$\^{C}$, but that of containing sikhe fiber showed no differences.

In vitro digestibility of filefish, protein was substantially decreased by fiber constituents in the follow-ing order : pectin (9.97%), gum karaya (7.03%), sodium alginate (6.12%),and cellulose (1.52%). The order of reduction by fibrous residues from vegetables ranked as follows : sea tangle (12.36%), Ro-maine lettuce (11.12%), perillar leaf (8.96%), and green pepper (5.15%). The inhibitory effect of the dietary fibers towards filefish protein digestion, expressed as soybean trypsin inhibitor equivalents, in-creased with added levels, but the inhibition differed with the sources of dietary fibers. Sea tangle and sodium alginate were most active in decreasing the concentration of essential amino acid from filefish protein hydrolysis. Sodium alginate exerted an inhibitory effect on the activity of trypsin, but the other fiber constituents did not have an inhibitory potency on trypsin and bacterial pretense (Streptomyces griceus). Results supported that dietary fiber components may reduce protein digestibility through the interaction of dietary fiber components with filefish protein.

This study investigated the effects of different types of dietary fats and fibers on the concentrations of serum and liver lipids and biochemical index in male Sprague-Dawley rats for 6 weeks. The experimental groups were divided into three groups; 5% corn oil +5% cellulose (CO group),10% corn oil +10% psyllium husk (CO +PH group) and 10% lard +10% psyllium husk (LA+ PH group). Body weight gain and FER (food efficiency ratio%) decreased significantly in the LA+PH group and decreased slightly in the CO+PH group compared with the CO group. Food intake and tissue weights were not significantly different among the dietary groups. Concentrations of serum total cholesterol decreased significantly in the CO + PH group compared with the CO group, but no significant different in the LA + PH group. Concentrations of serum triglyceride and phospholipid decreased significantly in the CO+PH and the LA+PH groups compared with the CO group. Liver cholesterol concentration was significantly decreased in the LA+PH group compared with the CO and the CO+PH groups. Glutamic pyruvic transaminase activity was significantly increased in the LA + PH group compared with the CO and the CO + PH groups. However, lactate dehydrogenase and blood urea nitrogen was significantly decreased in the LA+ PH group compared with the CO and the CO +PH groups. The others biochemical parameters, total protein, albumin, glucose, glutamic oxaloacetic transaminase, alkaline phosphatase were not significantly different among the dietary groups. These results showed that the lowering effect of dietary psyllium husk on serum lipid concentrations was more pronounced in the corn oil -feeding group than in the lard-feeding group as dietary fat source.
Tangerine peel is mostly discarded as waste in citrus processing. However, tangerine peel contains besides dietary fibers bioflavonoids such as naringin and hesperidin which act as antimicrobials and blood pressure depressants, respectively. A continuous membrane separation process was optimized for the production of bioflavonoids relative to feed flow rate, transmembrane pressure, temperature, and pH. The tangerine peel was blended with 7.5 times water volume and the extract was prefiltered through a prefiltration system. The prefiltered extract was ultrafiltered in a hollow fiber membrane system. The flux and feed flow rate didn't show any apparent correlation, but we could observe a mass-transfer controlled region of over 8 psi. When temperature increased from $9^{\circ}C\;to\;25^{\circ}C$, the flux increased about $10\;liters/m^2/min\;(LMH)$ but between $25^{\circ}C\;and\;33^{\circ}C$, the flux increased only 2 LMH. At every transmembrane pressure, the flux of pH 4.8 was the most highest and the flux at pH 3.0 was lower than that of pH 6.0, 7.0, or 9.0. Therefore, the optimum operating conditions were 49.3 L/hr. 10 psi, $25^{\circ}C$, and pH 4.8. Under the optimum conditions, the flux gradually decreased and finally reached a steady-state after 1 hr 50 min. The amount of dietary fibers in 1.0 g retentate in each separation step was analyzed and bioflavonoids concentration in each permeate was measured. The contents of total dietary fiber in the 170 mesh retentate and soluble dietary fiber in the prefiltered retentate were the highest. Naringin and hesperidin concentration in the permeate were $0.45{\sim}0.65\;mg/g\;and\;5.15{\sim}6.86\;mg/g$ respectively, being $15{\sim}22$ times and $79{\sim}93$ times higher than those in the tangerine peel. Therefore, it can be said that PM 10 hollow fiber membrane separation system may be a very effective method for the recovery of bioflavonoids from tangerine peel.
This study was performed to investigate the influence of dietary fibers on the serum lipid level and bowel function in aged rats. Fiber sources of experimental diets were made from mugwort(M), butterbur(B), apple(A), sea mustard(S) by drying and milling. Each of fiber sources was mixed into the diet at the level of 5, 15% of diet. Sprague-Dawley strain, 13 month old male rats were divided into 9 groups by randomized complete block design : C, M5, B5, A5, S5, M15, B15, A15, S15. The animals were fed ad libitum each of experimental diets for 4 weeks. Control group showed lower food intake compare to the other groups. There were no significant difference between 5% groups and 15% groups in food intake. Fecal weight, dry fecal weight and fecal water content of control group were significantly lower than those of experimental groups, and fecal water content was increased by increasing level of dietary fibber. Apple group showed the lowest values, sea mustard group showed the highest. The shorter transit time was observed in the group of higher intake of dietary fiber. At the same level of dietary fiber, transit time of sea mustard group was shorter than the other groups. With increasing age, serum triglycerides, total cholesterol were increased and HDL-cholesterol was decreased. Fiber fed groups showed lower serum TG, TC and higher HDL-c level compare to the control group. Absorption rates of calcium, magnesium and phosphorus was tend to be lower in the group fed dietary fiber sources than control group. Mucosa weight and maltase activity in the small intestine were decreased by increasing age. As intake of dietary fiber increaed, mucosa weight in the small intestine was not different but maltase activity was decreased.
