Association between diet quality and untreated dental caries: results from the Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: Few studies have provided evidence of the association between diet quality and dental caries. This study aimed to examine the association between diet quality and untreated dental caries in a Korean representative population. SUBJECTS/METHODS: The study population included a sample of 13,815 participants, aged ≥ 19 from the Korea National Health and Nutrition Examination Survey during 2013-2015. The explanatory variable was diet quality and the outcome variable was untreated dental caries. Untreated dental caries were defined by the number of decayed teeth recorded according to the criteria established by the World Health Organization. Diet quality was defined by using the Korean Healthy Eating Index (KHEI) through the 24-h recall methods. We assessed the association between diet quality and untreated dental caries while adjusting for age, sex, education, income, smoking status, dental visits, toothbrushing frequencies, obesity, and diabetes mellitus. RESULTS: The mean overall KHEI scores in the untreated dental caries group were significantly lower than those in the group without untreated dental caries. Significant differences were observed in the untreated dental caries group based on the KHEI quartiles (P < 0.001). After adjusting for potential confounders, the quartiles of KHEI scores showed an association with untreated dental caries, demonstrating a dose-effect trend (odds ratio [OR], 1.57; 95% confidence interval [CI], 1.35-1.84 for 1st quartile; OR, 1.38; 95% CI, 1.19-1.59 for 2nd quartile; OR, 1.32; 95% CI, 1.14-1.53 for 3rd quartile; reference quartile highest]). CONCLUSIONS: The findings indicated an inverse association between diet quality and untreated dental caries in Korean adults. Healthcare providers should take into account the significant role of diet quality in preventing and managing oral health.

식생활교육용 '어린이 푸드 아바타' 애플리케이션 개발 (Development of 'Children's Food Avatar' Application for Dietary Education)

  • An educational application (App) called 'Children's Food Avatar' was developed in this study by using a food DB of nutrition and functionality from Rural Development Administration (RDA) as a smart-learning mobile device for elementary school students. This App was designed for the development of children's desirable dietary habits through an on-line activity of food choices for a meal from food DB of RDA provided as Green Water Mill guide. A customized avatar system was introduced as an element of fun and interactive animation for children which provides nutritional evaluation of selected foods by changing its appearance, facial look, and speech balloon, and consequently providing chances of correcting their food choices for balanced diet. In addition, nutrition information menu was included in the App to help children understand various nutrients, their function and healthy dietary life. When the App was applied to 54 elementary school students for a week in November, 2012, significant increases in the levels of knowledge, attitude and behavior in their diet were observed compared with those of the control group (p < 0.05, 0.01). Both elementary students and teachers showed high levels of satisfaction ranging from 4.30 to 4.89 for the App, therefore, it could be widely used for the dietary education for elementary school students as a smart-learning device.

단체급식소 나트륨 섭취감소를 위한 영양교육 프로그램 개발 및 효과 평가 (Development and Evaluation of Nutrition Education Program for Sodium Reduction in Foodservice Operations)

  • The purpose of this study was to develop a nutrition education program for dietary salt reduction using various nutrition education materials. The effect of a 5-week nutrition education program on salty taste assessment, nutrition knowledge, salt attitude for a high-salt diet, salt content in food, and individual satisfaction with the salt concentration of meals during the education period was evaluated. Nutrition education materials included two animations, a pamphlet, panels, and a website, as well as other training resources. Subjects participating in this study were 335 employees (164 male, 171 female) at 15 foodservice operations in Daegu. Preference for higher levels of salty taste and food containing higher amounts of salt were lowered. Knowledge regarding the necessity for dietary salt reduction was higher (p < 0.001) than before nutrition education, and salt content in a meal was reduced. As the program progressed, average salt concentrations of soups were significantly lowered (p < 0.05), and there was greater satisfaction with the lower concentration (p < 0.001). This was a positive indication of the program's success. In addition, it was found that subjects who participated in the program several times have changed their preference to lower levels of salty taste and have increased their nutrition knowledge (p < 0.05, p < 0.001). Thus, the positive effect of this 5-week nutrition education program developed for, and applied to, foodservice employees, concerning dietary salt reduction was confirmed.

탈진적 운동과 마늘진액 섭취가 고지방식이로 비만이 유도된 흰쥐에 체중, 지방량, 혈중지질 및 산화적 스트레스에 미치는 영향 (Effects of Exhaustive Exercise and Aged Garlic Extract Supplementation on Weight, Adipose Tissue Mass, Lipid Profiles and Oxidative Stress in High Fat Diet Induced Obese Rats)

  • 본 연구는 고지방식이로 비만을 유도한 흰쥐에 4주간 마늘진액섭취와 treadmill running을 실시한 후 탈진적 운동을 실시하여 체중, 지방량, 혈중지질 및 산화적 스트레스에 미치는 영향에 미치는 영향을 조사하였다. 실험대상은 3주령 SD계 rats 30마리를 6주간 고지방식이로 비만을 유도한 후 정상식이군(N), 고지방식이군(HD), 운동군(E), 운동과 마늘섭취군(EA), 마늘섭취군(A)으로 구분하였고, 4주간 treadmill running과 운동 30분 전에 AGE를 섭취시킨 후 실험최종일 모든 그룹을 고강도 탈진적 운동을 실시하였다. 그 결과 6주간 고지방식이로 비만을 유도한 고지방식이군(HD)은 정상식이군(N)에 비해 체중과 체중 증가량이 유의하게 높게 나타났다(p<0.001). 그리고 4주간 treadmill running과 마늘섭취를 병행한 결과, 운동군(E)과 운동과 마늘섭취군(EA)에서 체중 증가량, 복부지방량과 부고환지방량이 다른 군에 비해 유의하게 높게 나타났으며(p<0.05), 비복근과 가자미근은 그룹 간 유의한 차이가 나타나지 않았다. 혈중지질의 변화에서 그룹 간 유의한 차이가 나타나지 않았고, 산화적 스트레스는 운동군(E)보다 마늘섭취(A)군이 유의하게 낮게 나타났다(p<0.05). 따라서 규칙적인 유산소 운동과 마늘진액섭취는 체중과 체지방량 감소에 유의한 효과를 나타내고, 마늘진액섭취가 규칙적인 유산소 운동보다 효과적으로 산화적 스트레스를 방어하는 것으로 사료된다.

중학생의 식습관, 영양지식 조사 및 기술.가정 교과의 식생활 교육 만족도에 관한 연구 (A Study on the Eating Behaviour and Nutrition Knowledge of Middle School Students and Satisfaction of Dietary life Instruction in Technology.Home Economics Subject)

  • 본 연구는 대구 경북의 6개 중학교에 재학 중인 1, 2, 3학년 남녀 493명을 대상으로 식생활 수업에 관한 내용, 영양지식, 식습관 및 식태도, 식생활의 실제적인 도움정도에 관한 내용을 설문조사를 통해 실시되었다. 기술 가정교과의 식생활영역 수업 만족도는 보통이 43.5%로 가장 많았고 수업에 만족하지 않는 이유로는 지루한 강의식 수업이어서가 10.1%로 가장 높았다. 가장 많이 원하는 수업형태는 실험 실습수업이었고(75.4%), 조리실습이 가장 관심이 많았으며(53.0%), 가정과의 식생활 교육이 실제 생활에 도움을 주는 정도는 3.30/5점(66/100점)으로 낮은 편이었다. 영양지식 총점은 7.29/12점(60.75/100점)이었으며, 여학생점수와 3학년의 점수가 유의적으로 높았다(p<0.01). 식습관 및 식태도의 점수는 3.55/5점(71/100점)으로 남학생보다 여학생의 점수가 높았고, 1학년의 식습관점수가 가장 높고, 3학년의 점수가 가장 낮았다. 열량과 비만에 관한 영양지식 점수와 식습관 및 식태도 영역에서 싱겁게 먹기, 규칙적인 식사, 정상체중 유지, 인스턴트 및 패스트푸드 자주 먹지 않기, 환경을 생각한 식생활 항목의 점수가 낮게 조사되었다. 따라서 식생활 교육은 중학생의 성장과 바람직한 식습관 형성을 유도하고, 기술 가정교과에 대한 흥미를 높이기 위해 강의식 중심의 수업진행보다는 실험과 실습을 중심으로 하여 건전한 식습관 및 인성을 형성시켜 줄 수 있는 교육이 되어야 할 것이다. 또한 가정과교육의 궁극적인 목표를 달성할 수 있도록 가정과의 다른 영역 및 타 교과와의 융합교육을 통해 실생활에 적용, 응용할 수 있는 능력과 창의적인 사고 문제해결 능력을 길러줄 수 있는 적극적인 교육이 되어야 할 것이다.

Diet and Nutrition among Asian Americans: Challenges and Opportunities

  • Asian Americans is a minority population contributing approximately 4% to the total population of the United States, however it is one of the fastest growing populations. Although Asian Americans as a group have socioeconomic profiles that are similar to white Americans, significant variations exists within and across Asian ethnic groups. The top ten leading causes of death for Asian Americans includes cancer, heart diseases, stroke, unintentional injuries, diabetes, influenza and pneumonia, chronic lower respiratory disease, suicide, nephritis, and septicemia. The prevalence of obesity is lower among Asian Americans, however this should be taken with considerations specific to Asians. High salt and low calcium consumption seem to be dietary risk factors for Asian Americans, although dietary patterns are changing with acculturation. Factors affecting dietary patterns are discussed in this paper. A proactive nutrition education approach for Asian Americans should be promoting maintaining 'healthy' aspects of ethnic diets and adopting 'healthy' American diets. Collaboration with nutrition educators in Asian countries would be helpful to overcome limited resources available for researching and developing nutrition education messages and materials for Asian Americans. 한국 병원 영양실의 환자 영양 교육 실행 현황에 관한 실태조사 (Assessment of the Dietary Consultation and Patient Education Practices in the Hospital Dietetics)

  • A total of 35 hospitals throughout Korea were surveyed for the assessment of the educational function of dietitians. The current situation and the depth of practices were diagnosed in such areas as: 1. The continuing education for the hospital dietitians 2. The characteristics of patient consultation performed by the hospital dietitians 3. Systems and methods of patient instruction practiced by the dietitians, and 4. Prospectives in establishing the nutrition education center for the in-and out-patients. The major findings are: 1. Approximately half of the hospital dietitians feel positive about the practicality of their college education for the job. Extremely small number of them are on any kind of continuing education program 2) The monthly average of only 20 patients at one hospital receive diet consultation or nutrition education service from dietitians. The 50% of the consultation cases is taken up by the patients with diabetes and various circulartory diseases followed by the tube feedings, liver and renal diseases with less frequencies 3) Not even a single hospital has an office for the diet consultation and nutrition education for the in-or out-patients. Very few hospital dietetics have educational aids and/or any feedback system to evaluate the effect of the consultation. Charting is not practiced by most dietitians leaving no record of their contributions to the patient care. 4) Although the necessity of the nutrition education center in the hospital is strong1y recognized among dietitians the progress has been blocked by such obstacles as the poor system in the hospital administration in general, short in funds, lack of preparation in the dietetics and the lack of recognition both by the hospital administration and by the dietitian themselves.

Fumigaclavine C attenuates adipogenesis in 3T3-L1 adipocytes and ameliorates lipid accumulation in high-fat diet-induced obese mice

  • Fumigaclavine C (FC), an active indole alkaloid, is obtained from endophytic Aspergillus terreus (strain No. FC118) by the root of Rhizophora stylosa (Rhizophoraceae). This study is designed to evaluate whether FC has anti-adipogenic effects in 3T3-L1 adipocytes and whether it ameliorates lipid accumulation in high-fat diet (HFD)-induced obese mice. FC notably increased the levels of glycerol in the culture supernatants and markedly reduced lipid accumulation in 3T3-L1 adipocytes. FC differentially inhibited the expressions of adipogenesis-related genes, including the peroxisome proliferator-activated receptor proteins, CCAAT/enhancer-binding proteins, and sterol regulatory element-binding proteins. FC markedly reduced the expressions of lipid synthesis-related genes, such as the fatty acid binding protein, lipoprotein lipase, and fatty acid synthase. Furthermore, FC significantly increased the expressions of lipolysis-related genes, such as the hormone-sensitive lipase, Aquaporin-7, and adipose triglyceride lipase. In HFD-induced obese mice, intraperitoneal injections of FC decreased both the body weight and visceral adipose tissue weight. FC administration significantly reduced lipid accumulation. Moreover, FC could dose-dependently and differentially regulate the expressions of lipid metabolism-related transcription factors. All these data indicated that FC exhibited anti-obesity effects through modulating adipogenesis and lipolysis.

Effect of calcium stearoyl-2 lactylate and lipase supplementation on growth performance, gut health, and nutrient digestibility of broiler chickens

  • Objective: To evaluate calcium stearoyl-2 lactylate (CSL) performance as an exogenous emulsifier together with lipase for broiler diets. Methods: In total, 252 one-day-old Ross 308 broiler chickens were allocated in a completely randomized design to give 6 replications per treatment with 7 birds in each cage. There were six dietary treatments representing a 2×3 factorial arrangement consisted of two energy levels (standard energy [positive control, PC] and -100 kcal/kg of the requirement level [negative control, NC]) and three dietary treatments (without additives [CON], CON+CSL [CSL], and CON+CSL+lipase [CSL-Lipase]). Corn and soybean meal-based experimental diets containing vegetable oil were formulated. Growth performance, blood parameters, visceral organ weights, ileal morphology, nutrient digestibility, and cytokine gene expression were measured. Results: Birds fed a diet including CSL increased (p<0.05) lipase level in blood compared to birds fed a diet including CSL-Lipase on day 21. Similarly, higher (p<0.05) liver weight was observed in birds fed a diet including either CSL or CSL-Lipase on day 21. Birds fed NC diet with CSL improved (p<0.05) nutrient digestibility compared to the NC diet on day 21. However, birds fed a diet supplemented with CSL or CSL-Lipase did not affect (p>0.05) the weight gain, feed efficiency, ileal morphology, and cytokine concentrations during the experiment period, regardless of dietary energy levels. Conclusion: Our results indicated that CSL has a role in improving nutrient digestibility in young birds when supplemented to a corn-soybean meal based broiler diet.

The Efficacy of Immediate Diet for Reducing Local Adverse Events of Inhaled Corticosteroid: A Pilot Study

  • Background: Local adverse events associated with inhaled corticosteroid use, including dysphonia, pharyngitis and oral candidiasis, can affect adherence for treatment. 'Mouth rinsing method' has been used for reducing local adverse events, but it cannot ensure complete prevention. The goal of this pilot study was to identify whether the 'immediate diet method' can reduce local adverse events in a limited number of patients. Methods: The study was conducted in a total of 98 patients, who had been prescribed a medium-dose fluticasone propionate for the first time, from January to October in 2010. One training nurse had performed the education on how to use the inhaler, including the mouth rinsing method. And with follow-ups at one month intervals, any patient who experienced such adverse events were educated on the immediate diet method, having a meal within 5 minutes after using an inhaler and they were checked on any incurrence of adverse events with one month intervals for 2 months. Results: The mean age of patients was 65.9 years old. The local adverse events had incurred from 18.4% of the study subjects. When performed the follow-up observation in 18 patients with local adverse events after education on the immediate diet method, 14 patients (77.8%) had shown symptomatic improvements. Three of 4 patients did not show any improvement, in spite of implementing the immediate diet method. The other 1 patient did not practice the immediate diet method properly. Conclusion: The immediate diet method may be useful in reducing the local adverse events, caused by the use of inhaled corticosteroid.
