  • In order to investigate the ramyeon intake patterns, food value recognition, and their effects on blood pressure and blood lipid levels, a total of 385 male students aged 13- 15 years living in rural area were sampled randomly, and they were surveyed using questionnaire. Blood pressure and fasting serum lipids levels of 123 subjects selected among the total were determined. Of the total subjects 80.3% either liked or liked very much ramyeon and 42.2% of them were eating ramyeon from 1 to 2 times a week,21.1% 5-6 times a week, while 11.7% more than once a day, and 13.1% less than once a month. They took ramyeon from one (56.8%) to two (25.4%) packs each time. Two-third of subjects consumed entire ramyeon soup or more than half of it. Mostly they added egg or onion to ramyeon and took along with kimchi, cooked rice, danmuji, or dried laver. The food value recognition score about ramyeon was 41.33 out of 100 full grade. Comparing to underweight or normal weight subjects, overweight students tended to take ramyeon more frequently when playing with friends and tended to consume less soup of ramyeon. There was a significant negative correlation between ramyeon intake frequencies and HDL-cholesterol levels (r = -.223 p < .05). Moreover, among the normal body weight students (n = 72) adjusted with relative weight, ramyeon intake frequencies showed not only a significant negative correlation with HDL-cholesterol level (r = -.244 p < .05), but also significant positive correlations with atherogenic index (r : .249 p < .05) and systolic blood pressure (r : .259 p < .05) . These results suggested that frequent intake of ramyeon with limited sidedishes as a whole meal might have negative influences on blood pressure and serum lipid levels. Nutrition education is needed to have correct food value recognition and proper consumption of ramyeon along with the balanced diet. (Korean J Community Nutrition 8(4) : 485-494, 2003)

  • Determining of Strategic Business Units in the organization is a major critical process for improving the organizational performance. On increasing the demands for extension in function of health center, many health centers are trying to provide the various services. But most health center determined the kind and level of service without scientific considerations. The purposes of this study are to develope the model for determination of strategic business units in health center and to test the availability of implementation for it. Our model is rooted from the McKinsey matrix analysis of Product Portfolio Analysis which used widely in marketing field. We modified the evaluation criteria of the McKinsey matrix analysis for health care field appropriately. Our evaluation criteria are categorized into two concepts; contribution of service, availability of service. At first, in terms of contribution of service, market size, market growth rate, needs and demands of regional people, existences of alternative services in that region, correspondence with health policy. The other component, availability of service are included the availability of manpower, financial availability, the level of knowhow on service, acceptance of health care manpower. In the result of analysis, we could conclude that antismoking and antialcoholics education programs, health screening program are important strategically in that aspects of contributions and availability of services. Also, vaccination program is important in that aspect of service availability and diet and exercise program, health library are meaningful in the aspect of service contribution. Therefore, we think that efforts to investigate the evaluation criteria for priority setting or determination of service area in health center are useful challenges.

  • Objective : To get a better understanding of obesity and etiological factors of obesity among school children. Methods : We have conducted a questionnaire survey of 4542 (2395male and 2147female) age from 7-15 in Shanghai School District to study their 24h nutrition intakes ; we have asked all our survey participating students to take a physical exam and body mass index measurement to determine the morbidity of obesity. Common statistic method was used in analyzing the data. Results : The result shows an over all morbidity (boys and girls) of $12.3\%$ among the students we have studied. Our research shows that boys have a higher rate of morbidity of obesity $17.1\%$ vs. $7.0\%$ for girls. The morbidity for boys starts under age 10, reaches the peak at age 10 ($24.3\%$), then declines after age 11 ; as for girls the morbidity starts at under age 9, reaches the peak at 9, and then declines after 10. Our study also indicates that the daily nutrition intake of protein, fat and carbohydrate by the students have satisfied Chinese Dietary Reference Intakes (DRIs), while the daily intakes of calcium, iron, zinc, and vitamin C are below the $80\%$ of the DRIs suggested value. For students who are obese, our study shows that their average daily intakes of calories and protein have reached $90\%$ of the suggested value by the RNI while the intakes of calcium, iron, and zinc are far below standards. Furthermore, our research shows that the obese students usually intake more calories, proteins and vitamin $B_1$, but less for iron and calcium compared to the normal students. Some other factors such as the education and occupation of the parents, especially the mother, the family history of obesity and the eating habits are important factors that should be closely watched. Conclusion : The morbidity of obesity among boys is higher than girls. Obesity is closely related to the family history, the diet habits and the life styles.

  • This study was carried to estimate the prevalence of obesity and to investigate the relationship between stress and obesity in children. The subjects were 508 children, who were randomly selected from the fifth and sixth grade at nine elementary schools in Kangnung. The height, body weight, waist and hip circumferences and body fat(%) were measured and the levels of stress were assessed by a questionnaire consisting of the following 3 domains ; 4 items for personal factors, 11 for home, and 18 for school. The prevalence of obesity in male and female children greatly varied by the indices from 2.5% and 1.7% when judged by BMI, 9.5% and 4.0% by obesity index, and 29.7% and 34.4% by body fat(%). The stress scores from personal(47.1%) and school (47.9%) factors were higher than the stress score from home(38.5%). The stress score from personal factors of female children is significantly higher than that of male children, but the stress score from home of female children is significantly lower than that of male children. The personal stress score and the total stress score of obese female children were significantly higher than those of non-obese female children. In male children, the obesity index(%) or body fat(%) have a significant positive correlation with the stress scores from over-expectation of parents, a lack of conversation with family, examinations, discontent about school, teacher's partiality to students, and sexual curiosity. The female children have a significantly positive correlation of obesity index (%) or body fat(%) with stress scores from appearance, quarrels of parents, and inferiority complex to brothers or sisters. These results suggested that counselling and education about not only balanced diet but also the strategies for actively coping with stress are needed to prevent and treat childhood obesity.

  • A survey was conducted on 222 students in two elementary schools in rural areas, one was a rural small city and the other was in the countryside. By measuring their skin-foldness in 4 spots by caliper, the body fatness of 5 grades(BFGr) of the subjects was resulted as follows ; 28.0% of boys and 6.7% of girls were classified as obese the and 34.1% of boys and 31.1% of girls as overweight. Comparing by region, children in the small city seemed to be fatter than the ones in the countryside(21.7% vs. 17.2% as obesity). Comparing by gender, boys were fatter than girls(28.0% vs. 6.7% as obesity). When recategorizing body fatness from 5 grades(BFGr) into 3 groups(BFGp) as overweight group(obesity+overweight), normal and underweight group(underweight+severe-underweight), we observed no significant difference in childrens dietary habits and food intake frequencies by BFGp. Overweight and underweight groups enjoyed snacking before dinner more frequently than the normal group(42.1-59.3% vs. 31.5%). The subjects showed poor nutrition knowledge score with relatively high attitude score about weight control and dietary behavior score was a little lower than the attitude score. Nutrition education programs, like camps, should stress on childrens nutrition knowledge. BFGp related to obesity attitude positive, a very low level and the latter related to diet, exercise and fasting attitudes at positive levels. Therefore overweight children seemed to be motivated easily. Also the higher the in exercise-value score, the more increased was shown in exercise attitude at positive, very low level. Emphasizing exercise-value in camp programs might make childrens exercise attitude more positive. As strategies for a rural obesity camp program are being developed by obese and non-obese children. The camp would be held over summer vacation for 3 days(2 nights) at the participants expence not exceeding 50,000 won. Contents of the program cover nutrition knowledge, and exercise-value as well as cooking lessons, exercise practice, and self-esteem enhencement.

  • This study was carried out to investigate the fast food consumption patterns classified by age in Busan. The survey was conducted from October 15 to November 15, 2006 by questionnaires and data analyzed by SPSS program. The results are summarized as follows: Forty one point five percent of the elementary group, 40.5% of the high school group, 24.1% of the 30's, 35.0% of the 40's and 18.1% of the 50's took fast foods over once a week. Seventy two point five percent of the elementary group, 61.5% of the high school group, 16.8% of the 30's group, 10.0% of the 40's, and 14.6% of the 50's preferred fast foods. There was a significant difference in the basis for selecting menus among the groups. The most important basis for selecting menus was 'price' in the elementary group and the high school group, but was 'preference' in the adult groups. As their age increased, they spend more money for fast food. Forty six percent of the elementary group and 49.5% of the high school group, 32.1% of the 30's, 36.5% of the 40's, 34.7% of the 50's thought that fast food can substitute for a meal. The age affected significantly the substitutability for the meal of the fast food (p < 0.001). In the high school group, the ratio of skipping breakfast is higher than in the other age groups. Dietary attitude has direct effects on the preference of the fast foods. Nutrition knowledge, degree of unbalanced diet and obesity rate have direct and indirect effects which were mediated by dietary attitude. Nutrition knowledge showed the greatest total causal effect in relation to the preference of the fast foods. Therefore, nutrition education for the subjects is needed to encourage them to choose more nutritious food and have healthier dietary pattern.

  • The purpose of this study was to assess the diet diversity, food habit and nutrient intake of obese adults who were visiting the health promotion center. This study was accomplished with the 138 obese adults (men = 103, women= 35) aged over 20 years old whose BMI were above $25 kg/m^2$. Nutrient adequacy ratio (NAR), the number of foods (Dietary Variety Score DVS), and food group consumed (Dietary Diversity Score, DDS) by using the data from the three days record were analyzed and the food habit and lifestyle were assessed by self reporting questionnaire. The average enemy intake of men was 2150.2 kcal which was significantly higher than that of women (p < 0.05). The intake ratio of carbohydrate, protein and fat over total energy was 54.8% : 19.3% : 25.8% in men, 59.5% : 17.8% : 22.6% in women respectively. Frequency of the breakfast in a week above 4, $2{\sim}3$ time and under one time was 75.7% 10.7% and 9.7% in men 77.1%, 5.7% and 14.3% in women respectively. frequency of eating between meals in a day under one time was 73.8% in men, 57.1% in women (p < 0.05). The average DDS and DVS was $3.63{\pm}0.07$ and $14.10 {\pm}3.45$, respectively which was significantly correlated with MAR (r=0.40 in DDS, r=0.64 in DVS, p < 0.01). The most frequent style of food pattern was DMGFV = 01101 in 35% of men, and DMGFV= 01111 in 37.1% of women. Our results show that dietary diversity and variety are useful parameters far evaluating nutrient intakes in obese adults. These findings suggest that nutritional education based on obese persons' eating behavior and eating diversity may be required to increase educational efficiency of weight control programs.

  • Purpose : To identify changes and relationships in the fat mass and obesity associated (FTO) gene polymorphism, body composition, and physical fitness from childhood to adolescence over a three-year period spanning elementary school to middle school (2015-2018) Methods : A total of 84 male student participants were divided into two groups based on FTO genotype: aa+at (group A) and tt (group T) and tracked down. Body composition, cardiovascular endurance, flexibility, muscle strength, power, and other characteristics were measured in the two groups in both 2015 and 2018, respectively, and the changes over the three-year period were analyzed and compared. Results : Increases in height and weight did not differ significantly between the two groups, but body mass index (BMI) was significantly higher in group A (p=.035). With regard to physical fitness, there was no significant difference in flexibility, but cardiovascular endurance, strength, and power were significantly higher in group T (p<.001, p=.063, and p=.040, respectively). Conclusion : Group A is more likely to become obese than group T because of their lower level of physical fitness and increased BMI relative to group T. This result supports previous studies showing that group A has a relatively low level of physical activity and a greater tendency to eat fatty foods as compared with group T. Therefore, we suggest that the FTO gene polymorphism should be identified early and that students educated on diet and physical activity to help prevent adult obesity.

  • Objectives: Self perceived body image among women is drawing a lot of attention in Korea due to their unhealthy weight control behaviors. To determine the relationship between self-perceived body image and dietary behaviors among Korean women, the discrepancy between actual body size and body image perception, weight control behaviors were assessed based on age groups using the 2010 KNHANES data. Methods: A total of 1,747 subjects were selected after eliminating those of likely changing their diet recently using the 2010 KNHANES data. The subjects were divided into 3 groups, self-underweight, self-normal, and self-obese according to their perception of body image. The BMI and weight control behaviors were assessed based on age groups according to the body image perception. Results: The younger, the higher ratio of underweight, women perceived their body size as normal or overweight. Exercise and reduced food intakes were dominant among various weight control methods but unhealthy methods were dominant among self perceived overweight group. Conclusions: Incorrect body image perception and unhealthy weight control behaviors can cause nutritional problems. Nutritional education should emphasize the importance of healthy weight and proper body image perception for Korean women.
