  • The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items. • The purpose of this study was to examine the effect of social support on compliance to dietary regimen in noninsulin-dependent diabetes mellitus. Two hundred eighty six adult non-insulin dependent diabetics from Seoul, Kyonggido, Kyongsangbukdo participated in the study. Researchers, dieticians, graduate students majoring in nutrition interviewed patients with a pre-structured questionnaire during June in 1998. The questionnaire included items about demographic factors, general characteristics about diabetes. social support, and compliance to dietary regimen. Descriptive statistics, t-test, ANOVA and Pearson's Correlation were used to analyze the data. The mean scores of support from family was 27.0(0∼44). support from relatives, friends, and colleagues was 14.7(0∼32). Mean score of intangible support from family was 19.9(0∼32) and 12.0(0∼24) from relatives, friends, and colleagues. Mean score of tangible support from family was 7.1 (0∼12) and 2.6(0∼8) from relatives, friends, and colleagues. The mean scores for compliance to dietary regimen was 31.6(0∼42). Regardless of type and source, there was significant(p<0.01) correlation between social support and dietary compliance. Therefore, inclusion of family members in nutrition education for diabetics is essential. It is necessary to find ways to increase social support from relatives, friends, and colleagues.

  • Purpose: The purpose of the present study was to identify prevalence of excessive daytime sleepiness(EDS) and its associations with sleep habits, sleep problems, depression, subjective health status and obesity in community dwelling adults. Method: Data was collected from adults aged 20-59 years by random sampling. Subjects completed a questionnaire which was composed of the Epworth Sleepiness Scale, Center for Epidemiologic Studies Depression Scale, and questions that included items about sleep habits, sleep problems, subjective health status and sociodemographic characteristics. Height and weight were measured for calculation of body mass index. The statistical analyses was based on 3,302 adults (51.5% males and 48.5% females). Descriptive statistics, univariate logistic regression and multiple logistic regression were used. Result: The prevalence of EDS was 17.1% Multiple logistic regression showed that the associated factors of EDS were depression, obesity, dissatisfaction with sleep time, irregular sleep, and habitual snoring. Depression was the most significant associated factor(adjusted odds ratio for severe depression=2.27, 95% Confidence Interval=1.73-2.96). Conclusion: EDS is a common symptom in adults. Our finding suggested that persons with a complaint of EDS should be completely assessed for depression and obesity as well as sleep problems.

  • Purpose: This study was conducted to characterize the influence of achievement motivation and the parent-child relationship on ego identity in Korean nursing students. Methods: The participants were 217 Korean nursing students in the first and fourth year of university. Data were collected through self-report questionnaires composed of items assessing ego identity, achievement motivation, the parent-child relationship, and demographic characteristics. The data were analyzed using descriptive statistics, one-way analysis of variance, the $x^2$ test, and multinomial logistic regression analysis. Results: Ego identity was related to achievement motivation; moreover, the achievement motivation of students with moratorium and achieved identity status was significantly higher than that of students with low-profile moratorium and diffused identity statuses. Ego identity was not related to the mother-child relationship, but the father-child relationship of students in foreclosure was significantly higher than that of students with diffused identity status. The factors influencing achieved identity compared to diffused identity were achievement motivation, year in school, satisfaction with school, and having religious beliefs. Conclusion: These findings indicate that nursing students' ego identity attainment was more influenced by achievement motivation than by the parent-child relationship. It emphasizes that highly motivated students can develop their own identities regardless of the parent-child relationship.

  • The purpose of this study was to develop a "Happiness Scale for School-aged Korean Children" (HSSKC). Participants consisted of 2,528 children who were chosen from six places, namely: Seoul, Gyeonggi, Chungnam, Jeonnam, Gyeongnam, and Gangwon. The province of Jeju-do was not included. The study assessed children's perception of happiness in six areas of life. For data analysis, the study employed the following methods: descriptive statistics, factor analysis, correlation, and Cronbach's $\alpha$. Initially, the study used an original scale composed of 32 items, but these were later reduced to 29 through exploratory factor analysis. The study identified six factors which influenced the happiness of school-aged children: (1) self-esteem, (2) parent-child relationship, (3) school life, (4) after-school activities, (5) general living environment, and (6) satisfaction of needs. Validity was determined through correlating the sub-factors. Using Cronbach' $\alpha$ to measure the reliability of factors, the result ranged from .60 to 81.
