Mediating Effects of Organizational Commitments on the Relationship between Human Capitals and Innovative Behaviors -Focused on the Hotel Firms- (인적자본과 혁신행동의 관계에서 조직몰입의 매개효과 -호텔기업을 중심으로-)

  • This study aimed to explore the relationships among human capitals, organizational commitments, innovative behaviors of employees in a deluxe hotel in Seoul. The results of this study are, human capitals have a direct impact on organizational commitments, and innovative behaviors. and organizational commitments directly influence to innovative behaviors.. And organizational commitments have a mediating effect partially between human capitals and innovative behaviors. These results suggest that the new direction of the importance of human resource managements on accumulating human capitals in organization and the importance of organizational commitments of employees on competing environments in the hotel industry for competitive advantage.

  • This paper is to investigate the correlation between leadership and organizational culture, and is to find out the influence of leadership and organizational culture on employee's job attitude in hotel industry based on the survey data from 274 hotel employees working in 13 deluxe hotels in Seoul. As a result of empirical analysis, all leadership attributes(charisma/inspiration, service/consideration, reward) were correlated with organization culture factors(group oriented, stratified oriented, innovative oriented, rational oriented). And reward, service/inspiration were significantly influenced on employee's job attitude. As a whole reward based on compensation was more important attribute than other leadership attributes on organizational culture factors, employee's job attitude. And group oriented, stratified oriented culture were positively influenced on employee's job attitude.

The Effect of Food Color on Hors d′oeuvre Choice Characters (색채조화가 전채요리의 음식선택속성에 미치는 영향)

  • This study had three major purpose: 1) to examine the relationship between coloring factor of Hors d'oeuvre and preference of dishes. 2) to examine the relationship between coloring factor of Hors d'oeuvre and selection of dishes. 3) to examine the relationship between coloring factor of Hors d'oeuvre and customer satisfaction. Questionnaires for the study were distributed 300 subjects in deluxe class hotels in Seoul. Among 300 questionnaires, 280 subjects were collected and utilized for analysis. In HY hotel, 35 subjects of customers, 24 subjects of cooks, and 32 subjects of service personnels were collected. In R hotel, 29 subjects of customers, 32 subjects of cooks, and 32 subjects of service personnels were collected. In H hotel, 29 subjects of customers, 34 subjects of cooks, and 33 subjects of service personnels were collected. Analysis ways used for this study were frequency analysis, factor analysis, reliability analysis, ANOVA, To accomplished the objective 1), ANOVA was utilized. To accomplished the objective 2) and 3), regression analysis was unitized. The findings from this study were as follows. First it was found that selection of dishes was affected by coloring factory of Hors d'oeuvre. Secondly, it was found that customer satisfaction was affected by coloring factor of Hors d'oeuvre. Consequently, development of Hors d'oeuvre by harmonizing of various colorings should be activated to raise level of preference of dishes. Also, in regard to level of satisfaction, harmony of various colorings should be required.

The Effects of Hotel Culinary Employee's Job Embeddedness on Job Satisfaction, Career Commitment and Turnover Intention (호텔 조리종사자의 직무착근도가 직무만족, 경력몰입 및 이직의사에 미치는 영향)

  • This study made frequency analysis, factor analysis, reliability analysis, correlation analysis, and regression analysis using SPSS 18.0 for 225 culinary employees working for super deluxe hotels in Busan and Ulsan areas in order to analyze the effects of job embeddedness on job satisfaction, career commitment and turnover intention. Results are as follows: first, as a result of testing the effects of hotel culinary employee's job embeddedness on job satisfaction, it was found that fitness, sacrifice, and links have positive (+) effects on job satisfaction. Second, it was found that fitness and sacrifice of a hotel culinary employee's job embeddedness have positive (+) effects on career commitment. Third, this study showed that fitness and sacrifice have negative (-) effects on turnover intention. Fourth, it was found that job satisfaction has a negative (-) effect on turnover intention. Fifth, it was found that career commitment has a negative (-) effect on turnover intention. These findings indicate that the higher hotel culinary employee's job embeddedness is, the less their intention to change jobs becomes by increasing job satisfaction and career commitment.

A Study on the Recognition and Satisfaction of Food Styling for Cooks in a Deluxe Hotel (특급호텔 조리사의 푸드 스타일링 인지 및 만족도에 관한 연구)

  • This study surveyed the recognition and satisfaction of food styling for cooks in a deluxe hotel. The most important item for cooks while cooking was 'taste' (57.7%) followed by 'sanitation' (25.9%). For food styling education in hotels, only 35.5% of the hotels surveyed had their own education program, and the media was the main source of food styling information (54.9%). Also, chefs studied food styling(49.6% of respondents) by themselves, for 'personal development'(73.8%). Average scale of recognition of food trends was $3.35{\pm}.83$, and that of the principles of food styling was $3.41{\pm}.84$. There were the significant differences in terms of the recognition of food styling in the age groups, cooking experience, and the positions. Moreover, cooks' overall satisfaction with food styling was found low with the average of $2.90{\pm}.89$. For the satisfaction with food styling based on the general characteristics, there was a significant difference in 'positions' (p<0.1) and 'education' (p<0.1), which suggested that the higher positions and education, the greater satisfaction with food styling.

  • The study aimed to research the impact of ethical leadership on the psychological ownership and organizational commitment of employees in deluxe hotels located in Seoul. It also tried to determine the mediating effect that the employees' psychological ownership has contributed to the relationship between ethical leadership and organizational commitment in hotel firms. For the purpose of empirical testing, 300 respondents from deluxe hotels were surveyed and the hypothesis was tested through regression analysis. The results of this study are, that ethical leadership affects organizational commitment and employees' psychological ownership has a mediating effect between ethical leadership and organizational commitment. The results of this study suggests building management systems that recognize the importance of ethical leadership and psychological ownership by employees for competitive advantages.

A Study on the Effect of Organizational Service Orientation on Job Satisfaction and Organization Performance - A Case of Buffet Restaurant Kitchen Employees in Deluxe Hotels - (조직의 서비스지향성이 종업원 직무만족과 조직성과에 미치는 영향: 특급호텔 뷔페레스토랑 주방을 중심으로)

  • This study attempts to effectively manage service orientation for deluxe hotel buffet restaurant workers in the kitchen organization. For this, the organization's service orientation in the relationship between employees' job satisfaction and organization performance was empirically tested. A survey was conducted to 300 restaurant employees working in the buffet kitchen of deluxe hotels in seoul. 276 copies of questionnaire were selected to take a regression analysis using Amos 16.0. The results of the test are as follows. First, the effect of service orientation on employee's job satisfaction showed that service leadership and service system of service orientation were significant factors about it. Second, hypothesis testing for the effect of service orientation on organization performance showed that human resource management of service orientation was a significant factor about it. The effect of employee's job satisfaction on organizational performance was significant as shown in previous studies. In conclusion, service leadership and service system should be a priority in order to improve service orientation and job satisfaction because employee's job satisfaction and organization performance have a direct relationship.

  • The purpose of this study is to show the optimal leadership model based on general manager management that is related to hotel employees, which may then be applied to ideal hotel management in Korea. The variables analyzed in this study are employee-management relations from the lowest ranking employee to the highest level of management, with communication and job understanding held common among the subjects. This study looks in detail at four main concepts. Firstly, the employees are encouraged to put forth their best efforts through the standardization of the requirements and regulations of the job and ensuring product suitability. Secondly, the cultivation of new hotel culture empowers the employees. The third point taken into account is the encouragement of employees to take pride in the work they do, which is done through a kind of reward system and salary. The final point considered is the empowerment of employees, which results in employee commitment to the job.

  • In the case of the hotel restaurant, the purpose of using the hotel affects largely to the type or the menu and nowadays it becomes essential to find out the characteristics of the hotels and make the strategy within them. Therefore, the purpose of this study is analyzing that even if the customers have the similar characteristics and preferences, they choose different menu because of the purpose of the visit, and the image of the hotel. And also this study gives basic data for the strategic menu management, the target of this research was the super deluxe Italian restaurant. Using the sales data of this restaurant, we analyzed the menu what people like most, and moreover, we analyzed the menu-choice behavior about each hotel. This study has a important role as a basic data that gives more profit to the restaurant, but also satisfaction to the customers.

Effects of Social Support on Job Stress and Job Burnout : Focus on Luxury Hotel in Seoul (호텔구성원의 사회적지지에 대한 인식이 직무스트레스와 직무소진에 미치는 영향)

  • It is very important to prevent and management negative sides in advance can occur in service transaction as an employee' attitude during service encounter has a decisive effect on customers' service evaluation. Work stress has become one of the most widely studied topics in research, mainly because of its importance to employees' psychological health, which in turn affects service quality and organizational effectiveness. This study aims to explore how social support that hotel employees perceive influence on job stress and job burnout. Data were collected from 355 hotel employees at Deluxe Hotel in Seoul, analyzed using structural equation modeling techniques. The findings are as follows Firstly, social support had a significant influence on job stress. Secondly, social support had a significant influence on job burnout. Thirdly, job stress had a significant influence on job burnout. To reduce job stress and job burnout recognition, self-esteem and motivation, the hotel need to deliver a stronger coaching program. In addition, for an organization to respond flexibly. Finally, the results were discussed in the context of providing the job burnout management for employee.
