신선식품 콜드체인 EPS 패키징 시스템의 택배 유통환경 계측 (Measurement of Delivery Service Environment for Cold Chain EPS Packaging System of Fresh Food)

  • The food cold chain refers to a technology and distribution supply chain applied to maintain a constant temperature suitable for the product from production (harvest) to delivery to consumers. In particular, in Korea, the insulation material used in the food cold chain is mostly EPS (Expanded Polystyrene), which is used as a transport container for various food cold chains. However, according to the government's eco-friendly policy, companies charge environmental contributions to the use of EPS, but due to its low price and convenience of handling, it is still used as a container for delivering food. In this study, in order to measure the domestic delivery environment of general refrigerated foods, changes in impact, temperature, and humidity during transport of the EPS packaging system containing foods and ice pack refrigerants were measured. As a result, there were 2?3 sections in which a high impact force of 40 G or more was generated during transport. This can cause damage to the product and EPS container. The difference in temperature and humidity changes by parcel transport routes is more than 30%, so it is necessary to present accurate standards for the domestic cold chain distribution environment. As a result of microbial experiments. the transportation period had a dominant effect on the increase in total viable count and E. coli count.

임신기 모체 혈청과 신생아 제대혈청의 철분함량 (Serum Iron Concentration of Maternal and Umbilical Cord Blood during Pregnancy)

  • Anemia diagnosed early in pregnancy is associated with increased risks of low birth weight and preform delivery. The purposes of this study were to assess the maternal iron status during pregnancy and to evaluate the relationships between the iron indices of maternal-umbilical cord serum iron and ferritin levels and pregnancy outcomes. Dietary intakes of the pregnant women were estimated by 24 hour-recall (3 times). Serum iron and ferritin levels in maternal blood and umbilical cord were measured at 1st-, 2nd-, 3rd- trimester and delivery, respectively. The mean of maternal se겨m iron levels of the trimester and delivery were $124.27\;{\mu}g/dl,\;97.03\;{\mu}g/dl,\;94.32\;{\mu}g/dl,\;and\;145.53\;{\mu}g/dl$. Those maternal levels were significantly lower than that of umbilical cord blood ($222.59\;{\mu}g/dl$). Serum ferritin levels of maternal trimester and delivery were 22.68 $22.68\;{\mu}g/l,\;11.09\;{\mu}g/l,\;14.18\;{\mu}g/l,\;and\;\;24.54\;{\mu}g/l$, which were significantly lower than those of umbilical cord blood ($184.35\;{\mu}g/l$) (p < 0.0001). This prevalence of anemia of total subjects was $30.3\%$ by WHO criteria (Hb < 11.0 g/dl, Hct < $33\%$). Iron levels of 2nd-trimester was significantly higher in the normal group than in the anemia group. And ferritin levels of 3rd-trimester and delivery was significantly higher in the normal group than in the anemia group. Therefore, we suggest for successful pregnancy outcome and delivery differential iron supplementation programs will be carried out with individual Pregnant women on the basis of pre-Pregnancy nutrition. 대학급식소의 운영형태에 따른 위생, 환경과 서비스에 대한 만족도 비교 (Comparison of Students' Satisfaction with Sanitary, Environment, and Service of College Food Service by Operating System)

  • The purpose of this study was to provide basic data to improve college food service satisfaction with sanitary, environment and service by comparing 2 contract-managed and 2 self-operated college food services in Daejeon and Chungnam area. According to the results, sanitation and environment satisfaction degrees of contract-managed college food services were higher than those of self-operated food services. The satisfaction degrees with service were also higher in contract-managed food services than self-operated food services except the category of quick food delivery. In all categories comprising the food service satisfaction, the satisfaction degrees were lower in female students than in male students. There were more negative self-perceived clinical symptoms in female students than male students. The higher the negative self-perceived clinical symptoms scores were, the lower the satisfaction degrees with food service were, which suggests that かe health state of students was one of the factors that influenced college food service satisfaction. There was no difference between contract-managed and self-operated food services in terms of satisfaction with overall food taste and overall satisfaction degree. The average satisfaction degree for the contractmanaged food services in terms of price relative to food quality was lower than that for self-operated food services. According to stepwise multiple regression analysis, 'overall food taste', 'price relative to quality', 'kindness of employees', 'coping with proposed opinions' and 'quicknless of food delivery' in decreasing order, were the most relatively important attributes for overall satisfaction. There should be further studies on important management factors to improve satisfaction with sanitary, environment and service by self-operated college food service.

1인가구와 다인가구의 배달·테이크아웃 식품소비행태 비교 분석 (An Analysis of Delivery and Take-out Food Consumption According to Household Type)

  • 본 연구는 최근의 1인 가구 증가와 식품의 비대면 구매 증가 현상 속에서 7차 식품소비행태조사(2019) 자료를 이용하여 1인가구와 다인가구의 식품소비행태가 어떤 차이를 보이는지, 그리고 차이가 나는 원인은 무엇인지를 실증적으로 분석하였다. 보다 구체적으로 1인가구의 인구 특성별 요인과 배달 및 테이크아웃 식품 이용 빈도가 배달·테이크아웃의 지출액 변화에 미치는 효과를 검정한 후 다인가구와 비교 기술하였다. 분석 결과, 첫째 1인가구와 다인가구 모두 소득이 증가할수록 배달 및 테이크아웃 지출비용이 증가하는 것으로 나타났고, 1인가구가 다인가구에 비해 지출액이 높았다. 둘째, 1인가구의 여성일수록 배달 및 테이크아웃 지출비용이 높았으며, 다인가구의 여성은 상대적으로 배달 및 테이크아웃 지출비용이 낮은 것으로 나타났다. 셋째, 연령에 따라 배달 및 테이크아웃 지출비용에 영향을 줄 것으로 기대했으나 특정 연령에 따른 지출비용 차이는 검증되지 않았다. 넷째, 1인가구와 다인가구 모두 배달 및 테이크아웃 이용 빈도가 증가할수록 지출비용이 증가하는 것으로 나타났으나, 1인 가구에서 주 4회 이상 배달 및 테이크아웃을 이용하는 소비자들은 지출비용이 줄어드는 것으로 분석되었다. 한편, 2020년 음식료 배달 시장은 코로나-19로 인해 전국 17개 시·도 중 12곳에서 전년대비 2배 이상 증가하며 보편적인 서비스산업으로 자리 잡았다고 볼 수 있다. 따라서 국내 식품산업이 식문화 트렌드 변화와 인구구조 변화에 부합하도록 정책적 지원과 관심이 필요한 시점이다.

여대생들의 소셜커머스를 통한 음식점과 식품 구매 속성이 만족도와 재구매 의도에 미치는 영향 (The Effects of Social Commerce Attributes on the Satisfaction and Repurchasing Intention for a College Women Student according to Restaurant and Food Choices)

  • Social commerce is becoming an increasingly popular shopping method among college women students. This study focuses on the influence of the satisfaction lavels and repurchasing intentions by consumers for restaurant and food choices according to social commerce attributes. In this survey, 351 valid surveys are being used to test the hypothesized (183 users and 168 non-usesr within 6 months), in order to ensure validity and reliability. As a result, factors such as perceived value, product diversity & information, delivery, ordering convenience, site character, price competitiveness, time pressure, and real time information are all being found. Factors of perceived value (p<0.001), price competitiveness (p<0.001), product diversity & information (p<0.05), delivery (p<0.05), and site character (p<0.05) significantly influence the customer satisfaction rates. Factors of perceived value (p<0.001), price competitiveness (p<0.001), time pressure (p<0.001), and site character (p<0.01) significantly influence the repurchasing intentions. In addition, it has been found that the customer satisfaction rates significantly influence repurchase intentions.

COVID-19로 인한 대학생의 건강행태 및 식생활 변화 (Changes in the Health Behaviors and Eating Habits of University Students Due to the COVID-19 Pandemic)

  • This study investigated alterations in the health behaviors and eating habits due to the coronavirus disease 2019 (COVID-19) pandemic. An online survey was administered to 270 university students from September 22, 2021 to October 26, 2021. While the frequency of eating at home had increased during the COVID-19 pandemic compared to before the pandemic, there was a decrease in the frequency of eating out, drinking, and eating vegetables. However, the frequency of eating delivery, takeout, and convenience foods and the utilization of online shopping and delivery apps had considerably increased. In addition, when selecting menus, considerations of health, hygiene, and convenience were more important during the COVID-19 pandemic than before the COVID-19 pandemic. Physical activity more than 3 days a week had decreased, whereas sedentary time showed a proportionate increase. The percentage of people who perceived their health status to be worsening was determined to have increased during the COVID-19 pandemic. To prepare for the era of infectious diseases, future research needs to identify health behaviors and dietary problems by administering surveys that include a large sample size and participants of various ages. Moreover, health promotion and nutrition management plans should be prepared accordingly.

학교급식에 공급되는 식재료의 유통단계별 미생물 평가 -채소류, 가공식품- (Microbiological Quality and Safety During Delivery of Food Ingredients Supplied to Elementary Schools : Vegetables and Processed Food)

  • 본 연구의 목적은 대구 경북지역 초등학교에 공급되는 전처리 채소와 가공식품의 유통단계를 분석하고, 유통과정에서의 미생물 변화와 학교급식에 이용되는 식재료의 미생물 품질을 평가하기 위하여 실시되었다. 유통 중 박피도라지에서 일반세균 $7.6{\times}10^5{\sim}6.7{\times}10^6$ CFU/g, 대장균군 $5.8{\times}10^4{\sim}5.2{\times}10^5$ CFU/g, E. coli < $10{\sim}2.0{\times}10$, S. aureus < $10{\sim}5.1{\times}10^2$ CFU/g, B. cereus < $10{\sim}4.1{\times}10^2$ CFU/g이 검출되었다. 전처리 양파에서는 일반세균 $1.4{\times}10^4$ CFU/g, 대장균군 $5.0{\times}10$ CFU/g이 검출되었고, 고사리 등의 데친나물에서 일반세균 $4.5{\times}10^3{\sim}2.1{\times}10^5$ CFU/g, 대장균군 $5.0{\times}10{\sim}3.1{\times}10^4$ CFU/g이 검출되었다. 콩나물에서는 일반세균 $9.6{\times}10^4{\sim}6.3{\times}10^7$ CFU/g, 대장균군 $1.1{\times}10^3{\sim}8.7{\times}10^6$ CFU/g, S. aureus < $10{\sim}4.5{\times}10^2$ CFU/g, B. cereus < $10{\sim}2.2{\times}10^2$ CFU/g, L. monocytogenes < $10{\sim}3.4{\times}10^2$ CFU/g이 검출되었다. 두부, 묵류에서는 일반세균 < $10{\sim}9.7{\times}10^5$ CFU/g, 대장균군 < $10{\sim}2.3{\times}10^5$ CFU/g이 검출되었고, 해조류에서는 $6.7{\times}10^2{\sim}9.5{\times}10^3$ CFU/g, 대장균군 < $10{\sim}2.2{\times}10^3$ CFU/g이 검출되었다. 학교급식 식재료는 냉동, 냉장, 상온보관 식재료가 혼재 되어 배송되고 있었고, 실제 유통단계에서 노상에 방치되거나 온도관리가 제대로 잘 되지 않는 경우도 있어 학교급식 식재료의 유통단계에서 철저한 위생관리가 이루어져야 할 것으로 조사되었다.

서울 일부지역의 조제유수유 영유아에서 조제유 및 이유보충식에 의한 영양소섭취 실태조사 (A Survey on Nutrient Intakes by Infant Formula and Supplemental Foods of Formula-Fed Infants in Seoul Area)

  • The aim of this study was to assess the nutrient intakes from infant formula and supplemental foods of 246 healthy infants fed infant formula, aged from 5 to 18 months. Subjects were devided into two groups depending on supplemental food type for weaning, Domestic supplemental foods (mainly home-made, n = 129) and Delivery supplemental foods (mainly commercially-delivered, n = 117). Four subgroups were assigned to 5-6 months, 7-8 months, 9-11 months, and 12-18 months by ages, respectively. Dietary assessment was carried out using 24-hour-recall method. Formula intakes in the delivery group tended to decrease accordingly with the ages. However, in the domestic group, formula intakes up to 8 months were similar and decreased after 9 month. Energy, protein, calcium and iron intakes from infant formula and supplemental foods were assessed. Energy intake at 12-18 months were lower than the RDA in both groups. Daily intake of protein and calcium at all ages were much higher than the RDA in both groups. Therefore, protein and calcium overnutrition were elucidated. Especially, protein intake at 5-6 months, calcium intake at all ages from infant formula was higher than the RDA in both groups. Iron intake at 5-6 months from infant formula were higher than the RDA. Consequently, as for infant formula, it was suggested that not only formula intakes but also nutrient content in formula should be reconsidered. On the other hand, nutrient intakes from supplemental foods in the domestic group tended to be higher than that of the delivery group. Especially at 9-11 months, significant differences between the two groups were observed. This may be due to high dependency on commercial powdered baby food in the domestic group. This study revealed that daily nutrient intakes of formula-fed infants are desirable but nutrient intakes from infant formula are too high. Conclusively, this study suggests that as the age of infants increases, formula intakes should be controlled and various supplemental foods besides commercially powdered baby food should be appropriately provided.

가구 형태별 성인 여성의 전자상거래 식품 구매 실태 (E-commerce Food Purchases by Adult Women according to their Household Types)

  • Objectives: The purpose of this study was to compare and analyze e-commerce food purchase behavior and the perceptions of adult women according to their household types. Methods: The e-commerce food purchases of 318 adult women were surveyed and analyzed according to their household types (one-person or couple household (OCH); a household with children (HC); a household with parents (HP)). Results: The total amount of food purchases over 6 months through e-commerce according to household types was in the descending order of OCH (60.3%), HC (57%), and HP (55.1%) thus showing a significant difference (P < 0.05) in behavior between household types. The reasons for purchasing food through e-commerce included: a lower price than offline (30.8%), convenient delivery and transportation (30.2%), and food diversity (21.1%). When purchasing food online, the most important factor was price and quality, followed by quick and accurate delivery for OCH, exact information given about the product for HC, and recommendation from other consumers for HP (P < 0.01). The main foods purchased through e-commerce were coffee, tea (42.1%), instant and frozen foods (39.9%), water, beverages, dairy products (37.7%), snacks, bread, rice cakes (31.5%), and functional foods (27.4%). The percentage of respondents who were very satisfied or satisfied with their e-commerce food purchases was HP (84.1%), OCH (69.9%), and HC (65.6%) in that order (P < 0.05), and 96.5% of all subjects stated that they would be willing to purchase food through e-commerce in the future. The advantages of purchasing food through e-commerce were seen to be the highest in order and payment convenience with 4.1 points out of 5, followed by low price (4.0), variety of products (3.9), and ease of food purchase (3.9). Among the disadvantages listed, concerns about product damage and deterioration during delivery and differences between the displayed product and the delivered product were the highest with 3.7 points. Conclusions: The characteristics and perceptions of female consumers according to household types are important factors in enhancing the reach of e-commerce, and in preparing guidelines for food selection through e-commerce.

식생활라이프스타일에 따른 배달음식의 소비성향 분석 (Analysis of the consumption pattern of delivery food according to food-related lifestyle)

  • 배달음식 소비시장을 세분화하여 고객 성향 맞춤형 제품과 서비스 개발을 위한 기초자료로 활용하고자 배달음식 이용 경험이 있는 성인남녀 총 636명을 대상으로 설문조사를 실시하였다. 조사대상자의 식생활라이프스타일 평가항목에 대한 요인분석 결과 안전지향, 편의지향, 맛지향, 경제지향 요인이 도출되었고 요인분석 결과를 토대로 군집분석을 실시한 결과 조사대상 고객을 식생활 저관심군, 편의·경제 추구군, 미식·경제 추구군으로 분류하였다. 군집에 따른 조사대상자의 일반 특성에 대한 차이분석 결과 연령 (p < 0.001), 결혼 여부 (p < 0.001), 가족 유형 (p < 0.01), 주거 형태 (p < 0.05) 에서 유의적인 차이가 있었다. 식생활 저관심군은 기혼 (67.1%), 가족과 함께 거주하는 비율 (85.4%), 아파트에 거주하는 비율 (74.2%)이 다른 군집에 비해 높았고 편의·경제 추구군은 1인 가구 비율 (28.9%)이, 미식·경제 추구군은 미혼의 비율 (62.0%)이 다른 군집에 비해 높았다. 조사대상자의 연령은 편의·경제 추구군(32.3세)과 미식·경제 추구군 (32.5세)에 비해 식생활 저관심군 (40.0세)이 유의적으로 높았다(p < 0.001). 식생활라이프스타일 군집에 따른 배달음식 소비 실태에 대한 차이 분석 결과 주문횟수 (p < 0.001), 주로 주문하는 요일 (p < 0.05), 배달음식의 정보 습득 경로 (p < 0.001), 주문 방법 (p < 0.001), 같이 섭취하는 사람 (p < 0.01)에서 군집 간에 유의적인 차이가 있었으며, 편의·경제 추구군은 배달음식 주문횟수 (p < 0.001)와 배달음식에 대한 전체적인 만족도 (p < 0.001)에서 식생활 저관심군과 미식·경제 추구군에 비해 유의적으로 높았다. 따라서 음식점 경영자와 배달 플랫폼 업체는 배달음식 고객의 만족도를 극대화하기 위해서 고객의 식생활 라이프스타일 특성을 고려한 제품과 서비스를 개발하고 배달음식의 품질 향상을 위해 지속적으로 노력해야 할 것이다.
