  • Objectives: This study was conducted to reveal the biological basis of dental plaque and preschool children's dental health status through repetitive and continuous toothbrushing instruction to preschool children, using quantitative criteria, and to emphasize the importance of the role of an oral health manager for the prevention of dental caries. Methods: After IRB approval, toothbrushing instruction and oral microbial specimen collection were conducted with children of preschool age at the Daycare Center attached to D. University, Busan. Specimens from 27 children were characterized by analysis with real-time multi-chain enzymatic polymerization reaction technique at an agency specializing in genetic analysis. Results: In a survey of the children's dental health behaviors, 48.1% responded that the toothbrushing time is 91 to 150 seconds; 66.7% responded that the frequency of toothbrushing is more than three times per day; 81.5% stated that they performed tongue brushing; and 81.5% brushed their teeth. Regarding levels of dental cariogenic bacteria, after children received continuous toothbrushing instruction, there were reductions in both Streptococcus mutans and Streptococcus sobrinus. Regarding toothbrushing time, the time increased in relation to the presence of instruction. Regarding Quigley Hein Index, the index decreased in the early and middle periods upon addition of instruction, then increased in the middle and later periods. Conclusions: Through persistent and repetitive toothbrushing instruction, healthy behavior can be positively established in children of preschool age; it is necessary to prepare institutional measures so opportunities for dental health education can be consistently provided and maintained. In the future, it will be necessary to conduct a follow-up study to verify the factors affecting toothbrushing time and volume of oral pathogens.

  • Objectives: This study was conducted to examine the status of foodservice management, with special interest on sanitary and nutritional food service in elderly day care centers. Methods: A total of 79 employees who managed foodservice facilities in elderly day care centers were included in the survey. The contents of the questionnaire consisted of general characteristics, importance and performance of sanitary and nutrition management, the reasons for poor performance, factors necessary for improvement, and the employee's demand for support. Data analysis was conducted using the SPSS v25.0. Results: Sanitary management showed an average importance score of 4.84 ± 0.40 and a performance score of 4.70 ± 0.61 (t-value: 8.260). The item with the lowest performance score was personal sanitary management (4.58 ± 0.71). In nutrition management, the average importance score was 4.52 ± 0.68, and the performance score was 4.20 ± 1.00 (t-value: 9.609). There were significant differences between the average score of importance and performance in both areas. As a result of an Importance-Performance Analysis, items that were recognized as important but had relatively low performance was "personal hygiene", "ventilation" and "food storage". Also in the nutritional management area, "menu planning for disease management" and "checking the saltiness in the soup" etc. had very low performance with low importance recognition. The items shown in the "low priority" quadrant were those that required professional management skills. In the areas that demanded support in foodservice management, education about sanitary and safe institutional food service had the highest score (4.42 ± 0.74), and all other items showed a demand of 4 points or more. Conclusions: Foodservice managers recognize the importance of foodservice facility management but performance is relatively low. Institutional support is, therefore, needed to improve performance. For items with low importance, it seems necessary to improve awareness of the necessity of these items and to provide education in this regard. To gradually improve foodservice management, continuous provision of education and training in these areas are of great importance.

A survey was conducted from March 15 through April 30, 2007, and SPSS WIN 11.5 program was employed to analyze their answer sheets. The findings of the study were as follows: 1. A group of mothers whose children brushed their teeth three times a day on the average made up 55.7 percent of those who were at the age of 35 and under. Among the mothers having three or more children, those mothers accounted for 59.1 percent. The daily mean toothbrushing frequency of children was higher among the better-educated mothers. 2. Concerning dietary and oral guidance, the mothers whose academic background was better curbed their children's excessive sugar intake more often, and the gap between them and the others was statistically significant(pE.05). As to the importance of oral health by the number of child and academic credential, those who had two children(36.0%) taught them the importance of oral health frequently(pE.01), and the better-educated mothers taught about it often(pE.05). The gap between the groups and the others was significant. 3. As for experience of visiting dental institutions, the working mothers visited dental institutions more often than the stay-at-home mothers, and the gap between them was statistically significant(pE.05). Regarding purpose of the visit, the largest group aimed to get treatment(64.6%), followed by having a dental checkup(14.6%) and receiving preventive treatment(13.5%). As to any inconveniences in using dental institutions, those who were working and who were in the upper income bracket found it more inconvenient to do that because of a long distance or time constraints. The gap between them and the others was significant. 4. In regard to concern for dental care, the mothers who were better educated(pE.001) and whose family income was 3 million won or more had their teeth scaled more often, and the gap between them and the others was statistically significant(pE.01). The rate of the regular visitors of dental institutions stood at 32.7 percent of the junior-college graduates, 31.0 percent of the mothers receiving college or higher education and 10.1 percent of the high-school graduates(pE.01). And those who earned larger income paid a visit to dental institutions more often and on a regular basis. The gap between them and the others was statistically significant(pE.05).

  • This study is intended to draw a scale for problem behaviors of young children. To achieve this, an empirical survey was carried out on experts from three groups of daycare center teachers, kindergarten teachers and early childhood education-majored professors. A total of 209 items were measured by the scale for young children's problem behaviors from the 1970s to now. The results showed that 96 of a total 209 items in 5 categories related to the scale for young children's problem behaviors were adopted as major items. Using these 96 major items in 5 categories, 17 out of 40 items in a peer relationship category, 13 out of 41 items in a development category, 20 out of 50 items in a fundamental habit category, 22 out of 38 items in a morality category, and 24 out of 40 items in an emotion category were adopted. Most items were adopted in the emotion category, whereas most items were rejected in the development category. Therefore, it is judged that their problem behaviors are caused mainly by anxiety, shrinking, unexpected behaviors, dependence on parents or teachers, and slow behaviors due to the latent negative emotions of young children at the developing stage.

  • The purpose of this study was to examine the comparison of growth development, bone mineral density and nutrient intakes between double income families' preschool children(DIFPC) and full-time housewives' preschool children(FHPC). Subjects were 111 preschool children. Anthropometric characteristics and bone mineral density in right forearm were measured. The questionnaire was composed of health status, life style, dietary behaviors, and dietary intakes and was completed by the children's mothers. The average age of the DIFPC(n=60) was 53.02 months and that of the FHPC(n=51) was 54.80 months. The birth height and weight of the subjects were 50.47㎝ and 3.27㎏ for DIFPC and 50.85㎝ and 3.36㎏ for FHPC, respectively. The average height, weight, % body fat, and obesity index were 108.50㎝, 18.35㎏, 15.35%, 96.71% in DIFPC and 111.46㎝, 19.64㎏, 16.80%, 97.31% in FHPC, respectively. The bone mineral density in forearm of two groups were 0.24g/㎠ in all. The infant feeding method was significantly different between DIFPC and FHPC; 58.9% of DIFPC was fed formula, while 44.4% of FHPC was fed breast milk(p<0.05). Proportions of children for their regular meal were 59.4%, 89.6%, and 61.0% for breakfast, lunch, and dinner, respectively. The major reasons for irregular meal were lack of time and poor appetite for breakfast and snacks for lunch and dinner. Most of the children answered they have snack over once a day, and 60.0% have unbalanced diet. The intakes of energy, calcium, iron, zinc, vitamin A, vitamin B1, niacin, and vitamin C did not meet the Korean RDAs. The intakes of K and vitamin A for DIFPC were significantly higher than those of FHPC(p<0.05, p<0.05). In conclusion, double income families' preschool children more have a low frequency of breast feeding and low intakes of micro nutrients, such as K and vitamin A than full-time housewives' ones.
