Objective: The aim of this study was to evaluate the effect of marinating turkey meat with buttermilk and acid whey on the technological traits and microbiological quality of the product. Methods: Slices of turkey meat muscles were marinated for 12 hours in buttermilk (n = 30), acid whey (n = 30) and comparatively, in lemon juice (n = 30). The control group (n = 30) consisted of unmarinated slices of turkey breast muscles. Physical parameters (pH, water holding capacity, colour L*a*b*, shear force, weight loss) were assessed and quantitative and qualitative microbiological evaluation of raw and roasted products was performed. The microbiological parameters were determined as the total viable counts of mesophilic aerobic bacteria, of the Enterobacteriaceae family, and Pseudomonas spp. Bacterial identification was performed by matrix-assisted laser desorption/ionization time-of-flight mass spectrometry. Results: Marinating turkey meat in buttermilk and whey compared to marinating in lemon juice and the control sample resulted in a higher (p<0.05) degree of yellow color saturation (b*) and a reduction (p<0.05) in the number of mesophilic aerobic bacteria, Pseudomonas spp. and Enterobacteriaceae family as well as the number of identified mesophilic aerobic bacteria in both raw and roasted samples. The lowest (p<0.05) shear force values were found in products marinated in whey. Conclusion: The use of buttermilk and acid whey as a marinade for meat increases the microbiological safety of the product compared to marinating in lemon juice, while maintaining good technological features of the product.
Volatile essential oils obtained by steam distillation from 55 plant parts of 42 species of representative aromatic plants newly collected in Korean peninsula have been evaluated for antimicrobial activity against 5 microorganisms. The essential oils derived from 15 plant parts and 9 plant parts were found to exhibit very strong antimicrobial activities by more than 95% inhibition at 100 ${\mu}g/ml$ against Staphylococcus aureus and Pseudomonas aeruginosa, respectively. Essential oil components such as l-limonene, ${\beta}-myrcene$, linalool, ${\gamma}-terpinene$, ${\alpha},{\beta}-phellandrene$, 1,8-cineole, l-borneol and bornylacetate, as a whole, have primarily contributed to the manifestation of the antimicrobial activity.
The base of Indian milk production is the millions of nondescript cows and buffaloes in rural areas, fed mainly on crop residues and agro-industrial wastes. The mainstay of the feeding system is straws and stovers. Therefore the approach to increase the fibrous residues utilisation for animal production was ideal and useful. The methods available for the above purpose were not found acceptable in rural areas owing to certain practical problems. The development of urea molasses block was, therefore aimed at solving the practical field problems. Urea Molasses Block has been developed as a feed supplement that can bring forth an effect of rumen manipulation thereby increase the conversion rate of feeds. The formula and process technology were thus developed. Before starting the mass production and popularisation the product was tested in controlled condition in farms and also in villages. Encouraged with the results the feed is now commercially manufactured under Indian Patent No. 156047.
The purpose of this research was to study the effects of kefir whey (kefir whey, peptides, lactic acid) on skin care properties including skin lightening effect and acne treatment. The final aim was to develop a new cosmetic product and enhance the value of dairy products. The results of skin lightening tests showed that all three kefir whey components (kefir whey, peptides and lactic acid) had inhibitory ability against melanin synthesis. Furthermore, copper chelating analysis demonstrated that both kefir whey and kefir whey peptides could chelate the copper in tyrosinase, which might explain the mechanism of inhibition. The ability for acne treatment indicated that lactic acid level higher than 60 mg/ml could inhibit the growth of Propionibacterium acne, whereas no inhibition was found with other components.
An agar medium(HY) was developed to detect the urease-producing lactic acid bacteria. HY medium was prepared with the addition of tryptone, glucose and tween 80 to the supernatant of autoclaved skim milk and yeast extract mixture. There was no difference in eumeration of lactic acid bacteria between the HY and commercial media, such as M17, MRS and BCP agar. The urease activity of Streptococcus salivarius subsp. thermophilus was detected on the HY agar medium contained urea by the color change of bromocresol purple as the pH indicator, but not on the commerical agar media. Furthermore, it was succeeded to screen the urease activity of bacteria in skim milk used as a raw material in dairy product manufacture. Therefore, HY medium was proved to be suitable for the screening of urease-producing lactic acid bacteria.
To evaluate the hypolipidemic effects of Cheonggukjang (CGJ), which is frequently used in Korea similar to Natto in Japan and Douchi in China like a dairy product, boiled soybeans were fermented with two Bacillus strains, B. subtilis and B. licheniforms, isolated from rice straw and their antihyperlipidemic effects of their products were investigated. Treatment with the CGJs significantly reduced blood triglyceride (TG) and total cholesterol (TC) levels and increased HDL cholesterol levels in Triton WR-1339-induced hyperlipidemic mice. The treatment of non-fermented soybeans alone also reduced blood TG and TC levels, but not significantly. Feeding the CGJs significantly lowered high blood TG and TC levels as well as body and epididymal mass weights in hyperlipidemic mice induced by the long-term feeding of a high-fat diet that increased blood HDL cholesterol levels. The B. subtilis-fermented CGJ products more potently reduced TG and TC levels, although the differences between the starters were not significant. These finding suggest that CGJ products may be effective as hypolipidemic foods by the synergistic interaction of soy and Bacillus strains.
For the establishment of more reliable and applicable methods for the diagnosis of tuberculosis in dairy cattle, avian- and mammalian PPD tuberculins were prepared according to the methods of Weybridge purified protein derivative tuberculins with minor modifications. PPD tuberculin was not only a very pure product from a chemical standpoint, but also one which, judged on the basis of laboratory results, was likely to be more potent and reliable than HCSM tuberculin.

Auricularia auricula (Heterobasidiae) called 'tree ear' or 'ear mushroom' was investigated to know its antidiabetic effect. Administration of dried powder of Auricularia auricula mycelia (AAM) (0.5 g/kg bw and 1.0 g/kg bw) caused a statistically significant reduction of plasma glucose (35% and 39%, respectively), total cholesterol (18% and 22%, respectively), triglyceride (12% and 13%, respectively), GOT (53% and 56%, respectively) GPT (26% and 37%, respectively), levels and the rate of liver weight against final total body weight (6% and 7%, respectively) compared with diabetic control group. These results support the antidiabetic effect of AAM.
The purpose of this study was to analyze consumer recognition, perceived importance, and satisfaction to create a new apple processed product and to promote its consumption. Data were collected from 527 men and women living throughout Korea through a self-administrated questionnaire. Frequencies, one-way analysis of variance, and Duncan's multiple range were conducted using SPSS v. 17.0 software. Recognition of juice and drinks, milk and dairy products, apple jam, and seasoning was high, while that of the other products was low. Consumer perceived importance of products was higher than consumer satisfaction of products. Quality preservation attributes were sanitation, taste, flavor, place of origin, and convenience of purchase. Attributes for improved consumer post-purchase satisfaction after purchasing were content of apple, quality of apple, price, and certificate of quality. The attributes of content of apple and certificate of quality were statistically different by consumer age.

The objective of the present study was to investigate the relationships between terpenes… intake and their presence in animal tissues (blood and milk) as well as in the final product (cheese). Eight dairy goats were divided in two balanced groups, representing control (C) and treatment (T) group. In T group oral administration of a mixture of terpenes (${\alpha}$-pinene, limonene and ${\beta}$-caryophyllene) was applied over a period of 18 d. Cheese was produced, from C and T groups separately, on three time points, twice during the period of terpenes… oral administration and once after the end of experiment. Terpenes were identified in blood by extraction using petroleum ether and in milk and cheese by the use of solid phase micro-extraction (SPME) method, followed by GC-MS analysis. Chemical properties of the milk and the produced cheeses were analyzed and found not differing between the two groups. Limonene and ${\alpha}$-pinene were found in all blood and milk samples of the T group after a lag-phase of 3 d, while ${\beta}$-caryophyllene was determined only in few milk samples. Moreover, none of the terpenes were traced in blood and milk of C animals. In cheese, terpenes' concentrations presented a more complicated pattern implying that terpenes may not be reliable feed tracers. We concluded that monoterpenes can be regarded as potential feed tracers for authentification of goat milk, but further research is required on factors affecting their transfer.
