The purpose of this study was to evaluate the quality properties of Meju prepared by inoculating two strains of Bacillus amyloliquefaciens HJ5-2, and Aspergillus oryzae PS03. The three soybean varieties that include Daewonkong, Daechan, and Saedanbaek were used in this experiment. The fermentation temperature during the Meju aging varied at 20℃, 30℃, and 40℃, respectively. The physicochemical analysis of the soybeans, showed that the cured protein and fat contents were 34.83~43.49% and 12.91~18.90%, respectively. The pH and total acidity were 6.47~6.93 and 0.11~1.22%, respectively. The change in appearance of the Meju was that the yellow-green mold was well formed on seven days at fermentation temperature of 20℃ and 30℃, but at 40℃, there was minimal mold formation and cracking of the surface. The amino nitrogen content was highest on the Daechan Meju at 621.83 mg% for seven days. The amylase increased as the fermentation period increased in all samples, and the protease increased rapidly until the first day of the fermentation, and then gradually increased thereafter. The total number of bacteria increased or decreased as the fermentation proceeded to 6.66~10.07 log CFU/g. The mold counts increased with increasing fermentation period in the range of 6.38~8.79 log CFU/g.
This study investigated the effect of soy protein hydrolysates (SPH) prepared by varying subcritical media on the physicochemical properties of pork patties. For resource of SPH, two different soybean species (Glycine max Merr.) of Daewonkong (DWK) and Saedanbaek (SDB) were selected. SPH was prepared by subcritical processing at 190℃ and 25 MPa under three different of media (water, 20% ethanol and 50% ethanol). Solubility and free amino group content revealed that water was better to yield larger amount of SPH than ethanol/water mixtures, regardless of species. Molecular weight (Mw) distribution of SPH was also similar between two species, while slightly different Mw distribution was obtained by subcritical media. For pork patty application, 50% ethanol treatment showed clear red color comparing to control after 14 d of storage. In addition, ethanol treatment had better oxidative stability than control and water treatment based on thiobarbituric acid-reactive substances (TBARS) analysis. For eating quality, although 20% ethanol treatment in SDB showed slightly higher cooking loss than control, generally addition of SPH did not affect the water-binding properties and hardness of pork patties. Consequently, the present study indicated that 50% ethanol was the best subcritical media to produce SPH possessing antioxidant activity, and the SPH produced from DWK exhibited better antioxidant activity than that produced SDB.
We isolated nine endophytic fungi from the roots of salt-stressed soybean cultivar Daewonkong and screened them for growth-promoting secondary metabolites. Of all fungal isolates, P-4-3 induced maximum growth promotion of waito-c rice and soybean. Analysis of the culture filtrate of P-4-3 showed the presence of physiologically active gibberellins $GA_1$, $GA_3$, $GA_4$, and $GA_7$, along with physiologically inactive $GA_{15}$ and $GA_{24}$. The plant growth promotion and gibberellin-producing capacity of P-4-3 was much higher than wild-type Gibberella fujikuroi, which was taken as the control during the present study. The fungal isolate P-4-3 was identified as a new strain of Scolecobasidium tshawytschae through the morphological characteristics and phylogenetic analysis of 18S rDNA sequence. Gibberellins production and plant growth promoting ability of genus Scolecobasidium was reported for the first time in the present study.

Owing to adverse weather conditions, there is a heightened focus on actively researching the regulation of the sowing date in field crop cultivation. Soybean, a prominent field crop with extensive acreage and production, is a photophilic and thermophilic crop characterized by short-day photoperiodism. Identifying the optimal sowing time is crucial for mitigating the effects of severe weather conditions on soybean yield. Precise control over the timing of soybean sowing is the key to minimizing yield reduction due to unfavorable weather conditions. Temperature, photoperiod, and their interplay are the most significant factors influencing soybean cultivation among various weather factors. We conducted an experiment using three Korean soybean cultivars with varied maturities (Hwangkeumol: early maturing and Daewonkong and Pungsannamulkong: late maturing) in 2013 and 2014. Our investigation covered aspects of soybean growth, development, yield components, isoflavones, and visual seed quality. Across all three varieties, isoflavone levels increased with later sowing dates, while other measured components exhibited significant variations based on the sowing date. This study also provides valuable insights for the selection of suitable cultivars that perform well in soybean cultivation at various durations of maturity.
This study was conducted to establish the environment-friendly cropping system of soybean in paddy field with different soil textures. When the soybean was cultivated in paddy fields, growth responses of testing cultivars varied depending on soil texture and cultivation method. Growth responses of soybean in sandy loam tended to be better than those in clay, however the effect of high ridged cultivation was distinguished in clay loam. Especially, formation of rhizome nodule was significantly different depending on soils ; more numerous rhizome nodules were formed in sandy loam compared to that in clay. Plant heights of Taekwangkong and Eunhakong were highest in clay and sandy loam, respectively, while the number of pods and branches of Eunhakong were most in both soils. In clay paddy field, growth responses of Eunhakong were best among the testing cultivars, however high ridged cultivation was more appropriate to the cultivar compared to level row cultivation regardless of soils. Taekwangkong showed the highest leaf area indexes during whole growth stages. Leaf development of Daewonkong was suppressed in clay at early growth stage, while it significantly increased as growth stages progressed. Most retard leaf development was observed in early maturity cultivar, Hwaseongputkong, since it seemed to be seriously damaged by excess-moisture injury in both soils. Comparing the dry weight of top plants and roots, plant growth was more affected by soil texture than cultivation methods at early vegetative growth stage, via verses at R2 or R5 stages. In yield characters and yields at R8 maturity stage, pods number of Eunhakong was significantly higher than those of Daewonkong and Taekwangkong estimating to 107 and 124 in clay and sandy loam, respectively. The ratio of ripened seeds was highest in sandy loam in combination with high ridged cultivation, while the lowest in clay with level row. The yields of Deawonkong and Eunhakong were higher compared to other testing cultivars ranged from $l82{\sim}286kg/ha$ depending on soils and cultivation methods. In results, growth responses and yields of testing cultivars tended to be higher in sandy loam in combination with high ridge compared to clay with level row.

This study compared RGB color images with canopy light interception (LI) and leaf area index (LAI) measurements for low cost and low labor. LAI and LI were measured from vertical gap fraction derived from top of digital image in soybean canopy cover (cv Daewonkong, Deapongkong and Pungsannamulkong). RGB color images, LAI, and LI were collected from V4.5 stage to R5stage. Image segmentation was based on excess green minus excess red index (ExG-ExR). There was a linear relationship between LAI measured with LI (r2=0.84). There was alinear relation ship between LI measured with canopy cover on image (CCI) (r2=0.94). There was a significant positive relationship(r2=0.74) between LAI and CCI at all grow ingseason. Therefore, it is expected that in the future, the RGB color image could be able to easily measure the LAI and the LI at low cost and low labor.

The seed yield of summer plants is affected by climate change due to high temperature. High temperature during the reproductive growth period decrease pod, seed weight in soybean. This study was conducted at National Institute of Crop Science (NICS) during the growing season. The objective of this study was to determine the effect of high temperature on growth and seed yield responses of soybean varieties using a temperature gradient chamber (TGC). In 2017, the Daewonkong (DWK), Pungsannamulkong (PSNK), and Deapungkong (DPK) were grown in three TGCs. Four temperature treatments, Ta (near ambient temperature), Ta+1 (ambient temperature+$1^{\circ}C$), $Ta+2^{\circ}C$ (ambient temperature+$2^{\circ}C$), $Ta+3^{\circ}C$ (ambient temperature+$3^{\circ}C$), $Ta+4^{\circ}C$ (ambient temperature+$4^{\circ}C$), were established by dividing the rows along which the temperature gradient was created. In all three cultivars, beginning bloom (R1) delayed at elevated temperature in $Ta+4^{\circ}C$. In addition, the days to beginning of seed fill and maturity were longer under higher temperature. The numbers of pod, 100 seed weight, and seed yield increased at elevated temperature in DWK. In contrast, seed yield components of PSNK and DPK were reduced in $Ta+4^{\circ}C$. The results suggest that 100 seed weight and seed size of soybean was low by increased temperature in $Ta+4^{\circ}C$ of PSNK and DPK.

The objective of this study was to investigate the physicochemical characteristics of soybeans cultivated in different regions and the accompanying soybean curd properties. To produce soybeans with regional competitiveness and demonstrate the distinctiveness of the soybean product, four regions(Paju, Andong, Muju, Hadong) and four varieties of soybean(Daewonkong, Daepungkong, Seonyukong, Cheogja 2) were selected for these experiments. There was a significant difference in the isoflavone content of soybeans and soybean curds(p<0.05). Soybeans from Andong had the highest content of genistein, daidzein and total isoflavone and soybeans from Hadong had the lowest content of these compound. Fatty acid composition of soybeans demonstrated a significant difference according to region(p<0.05). In particular, soybeans grown under adverse environmental conditions, such as high temperature and low latitude, contained the highest composition of oleic acid and the lowest composition of linoleic acid and linolenic acid. Although fatty acid content of soybean curd had a third of the fatty acid concentration of soybean, the same characteristic was observed in the fatty acid composition of soybean curd. In addition, both soybean and soybean curd had more than 80% unsaturated fatty acids and 50% of the unsaturated fatty acid content was linoleic acid. In conclusion, these results demonstrate the significant difference of soybean and soybean curd originating from different regions and showed the transition of nutritional constituents from soybean to soybean curd as a function of environmental factors. Therefore, we must consider these factors when manufacturing soy products.
In vitro digestibility and protein digestibility corrected amino acid scores (PDCAAS) were investigated to verify the availability of protein in various Rhizopus oligosporus fermented products of domestic soybean (Glycine max L.) cultivars. Danbaegkong (DBK), Daepung (DP), Daewonkong (DWK), Saedanbaek (SDB), Seonyu (SY), and Cheongja4ho (CJ4) were used as raw samples, which were fermented using commercially available Rhizopus oligosporus for 48 h. All cultivars showed increased crude protein content after fermentation. The crude protein content of DBK and SDB was significantly higher than that of the other samples (55.12% in DBK and 54.22% in SDB) (p<0.001). CJ4 had the highest alanine content of 28.88 mg/g (p<0.001), and no significant difference in cysteine content was detected among the cultivars. In most of the fermented samples, the in vitro digestibility was 0.9 or higher, indicating high protein in the fermented samples. However, it is considered that restrictions on digestion are low. In DWK, the amino acid content and PDCAAS, which together indicate protein quality, were 0.917 and 0.855, respectively, confirming that it was the best cultivar to provide the raw material for fermentation. In conclusion Rhizopus oligosporus fermented soybean products can be considered a prospective source of protein with high utility value.
Soybean, C.V. Daewonkong, was planted on 25 May and 25 June in 2011, and four temperature gradient, control (ambient temperature in field plot), control + $3^{\circ}C$, control + $4^{\circ}C$, and control + $5^{\circ}C$, were artificially created by controlling the green house system. The obtained results indicated that vegetative growth of soybean plant was beneficially facilitated by planting on May (PM) than planting on June (PJ). The 100-seed weight was significantly higher in PM, and positively affected by increasing temperature, whereas the weight was reduced in control + $5^{\circ}C$ plot. Isoflavone content and fatty acid composition were analyzed to determine the effects of plating date and growth temperature. Isoflavone content was higher in PJ plot ($1479.8{\mu}g/g$) than in PM plot ($1201.8{\mu}g/g$), however, the influence of growth temperature varied with planting date. The composition of oleic acid was positively affected by increasing temperature, whereas the proportions of linoleic and linolenic acid were reduced. The numbers of node was considered as a major variable in the regression equations estimated using forward stepwise regression analysis for isoflavone content and unsaturated fatty acid under different environmental conditions.
