조리사 인성형성에 미친 주방환경에 관한 연구 - 서울 시내 특1급 호텔 조리사를 중심으로 - (The Study of Personality Changes about Cooks that Would Possibly Result from Kitchen Environment)

  • The purpose of this study was to examine the personality change of rooks that would possibly result from kitchen environment. It's basically meant to determine the relationship of environment to personality, by investigating how cooks felt about their own personality before and after working as a cook and conducting a self-diagnostic personality test based on theories on kitchen environment and personality. The subjects in this study were the cooks who served af top-rated hotels in Seoul, and the survey was carried out from April 8 through 12, 2002. The collected data were encoded and analyzed with SPSS 10.0 program. To identify the characteristics of the subjects, frequency analysis was implemented, and reliability analysis, T-test and ANOVA were employee. To verify the reliability of the questionnaire items, Cronbach's Alpha that represented internal consistency was calculated, and factor analysis was fulfilled to minimize related variables about cuisine environment and eliminate irrelevant ones. The findings of this study were as below: Out of total 27 cuisine environment variables, 22 ones boiled down to six factors. Factor 1 was conflicts, and factor 2 was job performance. Factor 3 was work, and factor 4 was environment. Factor 5 was facilities, and factor 6 was social. To make better cuisine environment each and every part of kitchen environment that affects cook personality should be improved, and further, what causes employee turnover should be eliminated. In the future, there is a need for broader research effort that could cover more extensive region and a wider variety of subjects other than cooks at the top-rated hotels.

조리학 전공 대학생들의 인턴쉽 기대와 만족에 관한 연구 (Expectation and Satisfaction with Internship Program of Undergraduate Students Majoring in Culinary Studies)

  • This study investigated the degree of expectation and satisfaction with internship program of undergraduates majoring in culinary studies, and suggested improvements in satisfaction for training programs. Differences between expectation and satisfaction were significant in all 21 items including pay for internship program, rest spaces, and break time during working. Expectation questions were extracted to five factors. Factor 1 circumstances of kitchen Factor 2 staff's ability and attitude Factor 3 working environment Factor 4 working hours and pay and Factor 5 rotation, period, and placement of jobs. Five factors were also obtained from factor analysis of satisfaction. Factor 1 working hours and rest Factor 2 staff's attitude and pay Factor 3 facilities and sanitation Factor 4 circumstances of kitchen and Factor 5 period and placement of jobs. Overall satisfaction values showed significant differences depending on gender, school-year system, grade, age, and school. The working hours and rest factor had the most significant influence on the overall satisfaction with internship program of undergraduates majoring in culinary studies.

  • The purpose of this study was to get an information on hotel cook. So the food and beverage (F and B) enterprise is one of the most promising industry on post-industry society, and the cook is real agent to lead the F and B enterprise, we need to have a data, information and knowledge on cook to improve a culinary art training program and working environment. This study was surveyed by 216 cook to work for deluxe hotels at Pusan. The results were summarized as follows: 1. The almost cook worked with restaurant for $8{\sim}9$ hours/day, and a half of cook earned a million won in a month. A higher grade cook worked longer hours and earned more money than a lower grade one. 2. The most popular workplace of the cook was Western restaurant, the male cook working at a Western restaurant were more than female, the more female cook and novices worked at a Korean restaurant. 3. The most popular qualification that the cook take were a western culinary art one, and next were Korean one and Japanese one. The 77.8% cook worked at the place that fitted in with their culinary art qulification. 4. A half of cook insisted that they were a expert of western culinary art, and the next was the Korean, Japanese one in order. 5. The cook were unsatisfied with pay, work environment, human relation and promotion, and if they change their workplace, a lot of cook wished to manage their own restaurant. 6. The 63.4% of cook changed their workplace more than a time. The male cook got a more chance to change workplace than female one. The higher grade cook got a more chance to charge workplace. Almost cook got a no chance to study a culinary art at overseas. The most favorite place that the cook want to visit for studying was Europe, and next were Japan, America, Southeast Asia in order.

호텔조리사의 조직문화유형과 혁신행동 관계에 라포의 매개효과 (The Mediating Effect of Rapport on the Relationship between Organizational Culture Type and Innovative Behavior of Hotel Chefs)

  • The purpose of this study was to examine the mediating effects of rapport on the relationship between type of organizational culture and innovative behavior of hotel chefs. In order to accomplish the research purpose, data were collected from 202 chefs working at five-star hotels located in Gwangju and Jeonnam areas, and SPSS 22.0 Program was used to conduct frequency analysis, reliability analysis, exploratory factor analysis, regression analysis and mediation effect analysis. The results of the study were as follows. Firstly, it was found that innovative behaviors of hotel chefs are significantly affected by three types of organizational culture: rational culture, consensual culture, and developmental culture. Secondly, it was found that rational and consensual culture have significant effect on rapport. Thirdly, it was found that better-formed rapport in hotel chefs significantly remarkably influences their innovative behavior. Fourthly, the study results revealed that rapport has a mediating effect on the relationship between type of organizational culture and innovative behavior of hotel chefs. Thus, in order to induce voluntary innovative behaviors from building rapport in the hotel organization, it is necessary to develop and implement effective strategies which will form a work environment where chefs can freely engage in mutual exchanges and build trust with one another.

Predictors and Consequences of Brand Preference in Luxury Restaurants

  • This research proposes and empirically tests a model of the relationships among perceived food quality, perceived service quality, perceived environment quality, brand preference, trust, satisfaction and favorable recipient behavior within the context of luxury restaurant patronage. Hypotheses implied by the model are tested on a sample of 398 patrons of U.S. luxury restaurants. Findings revealed that perceived food quality, perceived service quality, and perceived environment quality positively effect on the brand preference, and the brand preference positively and directly influence on favorable recipient behaviors as well as trust and satisfaction. These findings are discussed in terms of both academic and practitioner implications.

학교급식 조리사의 직무 만족에 관한 연구 (A Study on the Job Satisfaction of Cooks of School Feeding)

  • This study examines the job satisfaction of cooks of school feeding. Sampling was taken among school feeding cooks except for those of Kangwon Province and Cheju Province. The factors affecting on the job satisfaction was investigated to find ways to raise the job satisfaction of cooks of school feeding. Four factors were extracted in all. It is found that these four factors have affected the job satisfaction of cooks of school feeding in order of working satisfaction factor(.493), co-worker communication factor(.463), job environment factor(.185), and advancement factor(.146). Accordingly, more opportunities for career advancement should be offered to raise the job satisfaction among them, and the establishment of better work environment and the optimum staff are urgently needed.

조리교육학원의 교육서비스와 환경이 교육소비자의 행동의도에 미치는 영향 (The Effect of the Educational Services and Environment of Cooking Education Institutes on Behavioral Intention of Educational Consumers - Focused on Busan Area -)

  • 본 연구는 조리교육학원에서 제공하는 교육서비스와 교육환경의 품질이 교육소비자의 행동의도에 미치는 영향을 파악하기 위해 특화된 조리분야에서 기능인력을 창출하기 위한 교육을 제공하는 교육기관의 교육서비스와 교육환경을 세부적으로 해석하여 효과적인 자료를 도출해내고자 한다. 첫째, 조리교육학원의 교육서비스 즉 교육컨텐츠, 강사서비스, 교육품질이 학원 재수강에 긍정적 영향을 미칠 것인지에 대해 현재 다니고 있는 학원의 인지도가 높거나 학원 등록 후 지속적인 관리가 잘 될수록 긍정적 영향을 미치는 것으로 나타났다. 또한 교육과 교재의 커리큘럼이 중요하게 작용하고 있었다. 강사의 서비스품질, 즉 친절도와 학생들과의 커뮤니케이션 능력 등 교육방식이 좋을수록 타인에게 긍정적인 추천의도에 영향을 미치는 것으로 나타났다. 둘째, 조리학원의 환경 즉, 교육시설과 교육환경이 재수강과 긍정적 구전의도에 미치는 영향에서 교육환경의 모든 요인들이 교육소비자에게 유의미한 영향을 미치는 것으로 조사되었다. 셋째, 교육서비스와 교육환경의 긍정적 요인들은 재수강과 구전의도에 정(+)의 영향을 미치고, 교육서비스 중 강사의 수준과 교육컨텐츠가 행동의도에 정(+)의 영향을 미쳤으며, 교육환경 중 교육시설보다는 환경이 행동의도에 정(+)의 영향을 미친 것으로 나타났다. 따라서 조리교육학원에서 제공된 교육서비스와 교육환경의 품질은 각각 차별화 된 전략을 통해 교육시장의 소비자에게 긍정적 행동의도를 미칠 수 있도록 마케팅 전략 및 경영전략 수립이 필요하다는 것을 알 수 있었다.

조리 실습 시설의 만족 수준과 사전 교육 경험에 따른 조리전공 대학생의 대학 생활 적응도 - 충청도에 위치한 대학을 중심으로 - (Culinary Art Students' Adaptation to College Life according to Their Satisfaction with a Culinary Laboratory and Their Educational Experience - Focus on the Universities in Chungcheong Province -)

  • 본 연구의 목적은 조리전공자의 조리 실습 시설에 대한 만족도와 입학 전 교육 경험에 따른 대학 생활 적응의 관계를 조사하고자 한다. 본 연구의 목적을 달성하고자 충청권에 위치한 대학교 3곳의 조리전공자를 대상으로 총 200명을 표본으로 수집하였으며, 이 중 191부를 분석하였다. 이에 대한 분석 결과는 다음과 같다. 첫째, 인구통계학적 특성 중 남학생과 고학년 전공자, 일반계 고등학교 졸업자의 대학 생활 적응도가 높은 것으로 나타났다. 둘째, 입학 전 교육 경험이 없는 집단이 교육 경험이 있는 집단에 비해 대학 생활 적응도가 부분적으로 더 높은 것으로 나타났다. 셋째, 조리 실습 시설의 만족 수준이 높은 집단이 만족 수준이 낮은 집단보다 대학 생활 적응도가 더 높은 것으로 나타났다. 넷째, 상호작용 효과의 분석결과는 조리 실습 시설 만족도가 높은 집단의 경우 사전 교육 경험이 없는 집단의 대학 애착 정도와 신체적 적응도가 더 높은 것으로 나타났으며, 사전 교육 경험이 있는 집단의 경우 정서적 적응 및 사회적 적응이 더 높은 것으로 나타났다. 조리 실습 시설 만족도가 낮은 집단의 경우, 사전 교육 경험이 없는 집단의 대학 애착 정도만이 더 높은 것으로 나타났으며, 사전 교육 경험이 있는 집단의 사회적 적응, 정서적 적응, 신체적 적응도가 더 높은 것으로 나타났다. 그러므로 미래 지향적 교수-학습이 원만하게 수행될 수 있도록 전공자의 만족도가 높고 그 기능을 충분히 다할 수 있는 새로운 조리 교육 환경이 계획되어야할 것이다.

특급 호텔의 고용환경 변화 요인이 조리사의 직무 불안정성과 경력 몰입 인식에 미치는 영향에 관한 연구 (The Effects of Environmental Change of Employment on Job Insecurity and Career Commitment Perception among Cooks in Deluxe Hotels)

  • 본 연구는 특급호텔의 정규직 조리사 집단의 고용불안정이 직무불안정성 및 경력몰입에 미치는 영향을 고찰하고자 하였다. 총 389명의 특급호텔 정규직 조리사들을 대상으로 설문조사를 실시하였고 구조 방정식 모형을 통해 2개의 가설을 검증하였다. 가설의 검증을 위해 구조방정식 모형을 사용하였고 분석결과, 고용환경 변화요인 중 정리해고 증가인식(${\beta}$=0.326), 조직구조 변화인식(${\beta}$=0.237), 비정규직 증가인식(${\beta}$=0.200) 순으로 직무 불안정성에 정(+)의 영향을 주었으며 직무 불안정성(${\beta}$=0.340)은 경력몰입에 유의한 정(+)의 영향을 주는 것으로 나타났다. 이를 통해 특급호텔의 고용환경 변화가 종사원에게 직무 불안정성을 느껴 결론적으로는 경력을 쌓으면서 조직에 머물기 위해 더욱 노력하는 것을 확인할 수 있었다. 그러므로 직무 불안정을 잘 관리할수록 종사원의 경력몰입을 늘릴 수 있기 때문에 기업에서는 종사원의 경력몰입을 위해 동기부여를 해야 한다.

음식문화거리조성 성공 요인에 관한 연구 (A Study on the Successful Factors in Building Food Culture Streets)

  • Food Culture is formed in a unique culture heritage in some areas harmonized with social factors mixed with geographical conditions, natural environment, culture and religion. The more the life skill develops highly, the more people focus on improvement of the life skill in order to realize a delightful and convenient life, and plan an increase of production. Recently food-service companies have changed very quickly with economic environment. Such change will be continued and its speed will be more faster than now. Many food-service companies will disappear for weak competition, if they don’t manage adequately in such a case. Therefore, food-service companies have to search for an efficient, unique and creative management strategy. In such a viewpoint, Kyunggi-do designated five local cities as a model of Food Culture Streets greeting Welcoming Year of Kyunggi-do in 2005. The purpose of this study is to serve the healthy food to visitors visiting the Food Culture Streets and to do public relations about the excellence of their traditional food. In addition, this study includes improving tastes and qualities of food through education about cooking skills, management strategies and the best service with unique and creative menu development. Accordingly, we need to analyze the factors continuously on the business of food culture streets, and intend to use them as a database for high quality education and activity of food service industry in the future.
