멸치, 어묵, 다시마 및 무 조리 후 국물의 영양성분 분석 (Analysis of Nutritional Composition in Boiled Broth using Anchovy, Fish Paste, Sea Tangle and Radish)

  • This study was undertaken to evaluate the change of major nutrient components in boiled broth of anchovy, fish paste, sea tangle, and radish subjected to the boiling processing. The crude protein, fat, ash, and carbohydrates in anchovy boiled broth were 0.1%, 0.04%, 0.1%, and 0% respectively as against 0.04%, 0.1%, 0.2%, and 0.4% in fish paste boiled broth. The protein content in the anchovy boiled broth, the fat and carbohydrate in the fish paste boiled broth, and the ash in the sea tangle boiled broth were high. Major components of the minerals were sodium plus potassium and the boiled broth in anchovy and fish paste had the contents of 19.41 plus 16.19 and 76.77 plus 10.41 mg, respectively. Especially, the potassium in boiled broth of the sea tangle was shown the highest content of 85.94 mg. The Vitamin B1 content in all broth samples were below 0.01 mg per 100 g edible portion. In the case of the B2 content, the anchovy boiled broth had 0.03 mg per 100 g edible portion. On the other hand, the niacin content of the boiled broth on a wet weight basis was detected at an average 0.1 mg. Vit. A, C, tocopherol, and cholesterol was not detected in the boiled broth of any of the subjects. As a result of applying the data of boiled broth in the fish paste soup instead of anchovy and sea tangle which are non-edible, the calcium, dietary fiber, and vitamin A were shown to have a difference of less than 50%.

Parboiling처리가 미숙보리곡립의 이화학적 특성에 미치는 영향 (Effect of parboiling on the physicochemical properties of immature barley kernels)

  • 벼의 수확 후 저장손실 또는 도정시 영양성분의 손실 방지수단으로서 인도를 중심으로 한 열대지방에서 널리 행하여지고 있는 parboiling기법을 성숙단계별로 보리곡립에 적용하여 그 효과를 검토하였다 성숙단계별 보리곡립의 parboiling시 호화도 측정결과 수분함량이 40% 이상인 출수 후 36일 이전의 보리인 경우에는 40% 이상의 호화도를 보여 parboiling처리시 전분의 호화를 위한 별도의 수침공정은 필요치 않은 것으로 나타났다. 또한 출수 후 31일 이후의 보리의 경우에는 parboiling처리에 의해 외관이 크게 변형되지 않는 것으로 나타났다. 보리의 유리당 중 환원성당은 parboiling처리에 의해 감소하였으나, 비환원성인 sucrose와 raffinose는 큰 변화가 없었고 maltose는 오히려 증가하였다. 유숙기의 보리로 조제한 parboiled 보리의 도정수율별 조단백질, 조지방, 조섬유 및 회분함량은 모두 정백수율이 낮아짐에 따라 점차 감소하였으며 P, K, Mg, Ca 등 무기원소에 있어서도 같은 경향이었다. 유리당의 경우에도 대부분이 다소 감소하는 경향이었으나 maltose의 경우에는 증가 후 다소 감소하였다. 비타민 $B_1$ 함량에 있어서는 도정하기전 보리에서는 건물량으로 $340\;{\mu}g/100\;g$ 정도이었고 정맥수율이 낮아짐에 따라 점차 감소하기는 하지만 도정수율 50%에서도 $260\;{\mu}g/100\;g$을 보여 parboiling 처리에 의해 비타민 $B_1$의 도정시 손실을 크게 억제할 수 있는 것으로 나타났다.

간척지에서 주요 겨울사료작물의 건물생산성 및 사료가치 비교 (Comparison of Dry Matter and Feed Value of Major Winter Forage Crops in the Reclaimed Tidal Land)

  • 본 시험은 충청남도 당진군에 소재한 대호 간척지내 시험포장에서 전작물로 벼 재배된 곳을 밭으로 전환하여 공시 초종으로 총체보리 2품종(올보리, 알보리), 호밀 2품종(올호밀, Koolgrazer) 그리고 이탈리안 라이그라스 2품종(화산 101호, Florida80)을 총체보리와 호밀은 10월 10일경, 이탈리안 라이그라스는 9월 30일경에 조파하여 각 작목 간에 따른 토양염류도 변화, 수량 및 사료가치를 비교 검토코자 2002년에서 2004년까지 2년간 수행되었다. 각 작물재배구의 계절별 토양염류도는 각 작물구 모두 파종 당시에 높았으며 월동 후 수확시까지 점진적으로 낮아졌다. 건물수량은 이탈리안 라이그라스가 가장 높았으며 총체보리 그리고 호밀 순으로 나타났다. 조단백질함량은 이탈리안 라이그라스가 가장 높았으며, 총체보리 그리고 호밀 순으로 나타났으며, 조섬유 함량은 호밀이 가장 높았으며, 이탈리안 라이그라스 그리고 총체보리 순으로 높았다. ADF 함량은 총체보리>이탈리안 라이그라스>호밀 순으로 낮았으며, 식물체 중나트륨(Na) 함량은 총체보리 >이탈리안 라이그라스 >호밀 순으로 높았다. 위의 결과로 볼 때 간척지에서 겨울 사료작물로 재배할 때 이탈리안 라이그라스가 가장 우수하였고 다음으로 총체보리가 가능하였다.

Influence of Dietary Addition of Dried Wormwood (Artemisia sp.) on the Performance and Carcass Characteristics of Hanwoo Steers and the Nutrient Digestibility of Sheep

  • Two experiments were conducted to study the performance and carcass characteristics of Hanwoo (Korean native beef cattle) steers (Experiment 1) and the nutrient digestibility of sheep (Experiment 2) when the animals fed diets containing four levels of dried wormwood (Artemisia sp.). For both experiments the animals were given a basal diet consisting of rice straw and concentrate mixed at 3:7 ratio (on DM basis). In Experiment 1, the treatments were designed as a completely randomized design with two feeding periods. Steers were allotted in one of four dietary treatments, which were designed to progressively substitute dried wormwood for 0, 3, 5 and 10% of the rice straw in the basal diet. Bodyweight gain and average daily gain (ADG) of Hanwoo steers fed diets containing the 5 and 10% wormwood inclusion were greater (p<0.05) than the 3% wormwood-feeding group. Total and daily intakes of roughage and concentrate were not altered by all levels of dried wormwood inclusion. However, the 10% dried wormwood inclusion led to increased total feed intake (p<0.05) compared with that of the 0 and 3% of dried wormwood inclusion. Carcass weight, carcass yield and backfat thickness were not altered by dried wormwood inclusion. The highest level of dried wormwood inclusion resulted in significantly increased (p<0.05) loin-eye area compared with the 0 and 5% levels of dried wormwood inclusion. Experiment 2 was designed by a $4{\times}4$ Latin square with four periods. Sheep were allocated in one of four dietary treatments as same as in Experiment 1. Digestibilities of DM and TDN were significantly increased (p<0.05) in sheep fed the diet containing all three levels of dried wormwood inclusion compared with the control treatment. Digestibilities of CP and crude fiber in the 5% dried wormwood inclusion highly increased (p<0.05) up to 8.2 and 5.5% respectively relative to the control treatment. The palatability was significantly improved (p<0.05) by the 5% dried wormwood inclusion compared with the control treatment. It is concluded that feeding diets containing dried wormwood substituted for equal weights of rice straw at 5 and 10% levels would be anticipated to provide better quality roughage for beef cattle production and higher income for beef cattle producers.

Nutritional Evaluation of Bamboo Shoot Shell and Its Effect as Supplementary Feed on Performance of Heifers Offered Ammoniated Rice Straw Diets

  • The present study was conducted to examine the feasibility of utilising bamboo (Bambusa arundinacea) shoot shell (BSS) in ruminants. Chemical composition, rumen degradability and some antinutritional compounds were determined for fresh and boiled BSSs to evaluate its feed value and safety. Thirty-two Holstein heifers were allocated to four groups and used to investigate the response in growth rate to supplementing ammoniated rice straw with fresh shell (phase 1) or silage of boiled BSS (phase 2). All animals were offered ammoniated straw ad libitum with 1kg of cotton seed meal (phase 1) or 0.5 kg of cotton seed meal and 0.5 kg of concentrate mixture (phase 2) per head per day. The BSS was supplemented at levels of 0, 3, 6 or 9 kg/d (phase 1) and 0, 5, 10 or 15 kg/d (phase 2) (as fed basis). The BSS was very high in moisture content, and its contents of crude protein and neutral detergent fiber were 13~16% DM and 65~76% DM, respectively; boiling resulting in higher moisture and protein. No hydrocyanic acid was detected in both BSSs and content of tannins was negligible. Rumen degradability of BSS was reasonably high, and with boiling the rapidly degradable fraction decreased, and potentially degradable component increased. Silage of the boiled BSS was slightly lower in both rapidly and slowly degraded fractions than the fresh BSS. Animals consumed all supplemented BSSs without any adverse health problems. Intake of ammoniated straw decreased with the increasing levels of BSS, but total intake was higher in almost all supplementary groups than in the non-BSS. Heifers had a higher growth rate in phase 1 with fresh BSS than in phase 2 with ensiled shell, and daily weight gains were 622, 629, 744 or 690 g in phase 1, and 578, 575, 677 or 635 g in phase 2 at four BSS levels, respectively. For both phases growth rate was significantly higher for the animals in groups 3 and 4 than those in groups 1 and 2 (p<0.01), with little difference between groups 1 and 2 (p>0.05) but significant difference between groups 3 and 4 (p<0.05). Supplementation with BSS also resulted in an improved feed conversion rate, with the least concentrate consumption in group 3 for both phases. It is concluded that the BSS has a high potential nutritional value as indicated by its medium protein content, reasonably high rumen degradability, and that inclusion of BSS in ammoniated rice straw diet is not only safe to animals, but also may improve growth rate of ruminants and feed conversion rate. It may be disadvantageous to use high amounts of BSS in ammoniated straw diets.

한국산 야생식용물의 혈당강하효과 (Hypoglycemic Effects of Korean Wild Vegetables)

  • 한국산 야생식용식물의 형당강화 효과를 보기위해서 일차적으로 5가지 식물(냉이, 닭의장풀, 메꽃, 며느리배꼽 및 참마)을 채집하였다. Strcpotozotocin(45mg/kg)을 미정맥으로 주사하여 당뇨병을 유발시킨 130~180g Sprague-Dawley계 흰쥐를 대조군과 실험군으로 나누어 이를 5가지 식물을 adlibitum으로 공급하였다. 식용식물섭취에 따른 각군의 체중변화는 제 3주까지는 점차 증가하다가 냉이군과 메꽃군을 제외하고는 제4주째에 증가추세가 둔화되었다. 식이이용효율은 닭의장풀군이 대조군에 비해 유의적으로 높게 나타났으며(p<0.05) 냉이군, 메꽃군, 참마군과 며느리배꼽군에서는 식이이용효율에 차이가 없었다. 닭의장풀군, 참마군과 며느리배꼽군은 대조군에 비해 혈당 감소 경향이 지속적으로 나타났고, 뇨당의 경우에서도 닭의장풀군과 참마군에서는 검출되지 않았으며 며느리배꼽군에서도 한마리를 제외하고는 뇨당이 검출되지 않아 당뇨유발쥐에서 혈당강하에 효과가 있는것으로 추정된다. 혈장 중의 cholesterol수준은 대조군에 비해 며느리배꼽군에서 약간 높은 경향을 보였으나 유의적인 차이는 없었다. 야생식용물의 건조시료 중 조섬유의 함량은 며느리배꼽이 24.4%로 가장 높았고, 가장 낮은 것은 참마로 2.5%였다. 생시료중 Vitamin C의 함량은 냉이가 193.73mg으로 가장 높았고 닭의장풀, 며느리배꼽, 메꽃슨이었고 참마가 24.6mg으로 가장 낮았다. Fe의 함량도 냉이가 14.86mg으로 높았고 참마가 가장 낮았다. Cr과 Zn의 함량도 냉이에서 높았고 참마에서 낮았다. 앞으로 야생식용산채류에 대한 성인병 예방 및 치료에 대하여 영양학적 연구가 더 많이 이루어져야 할 것이다.

경남지역 간호사의 영양지식, 식생활태도 및 영양소 섭취상태 평가 (Evaluation of Nutrition Knowledge, Dietary Attitudes and Nutrient Intakes of Nurses Working in Kyungnam Area)

  • This study was performed to investigate the dietary attitudes and nutrient intakes of nurses. A total of 291 nurses working at hospitals in the Kyungnam area participated in the study. The general characteristics and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes was examined using one-day 24-hour recall method. The results were as follows : 67.7 percent of the subjects were nurses, 32.3% were nursing assistants. Average age of the subjects was 26.9 years old, average nursing experience was 5.7 years, and 70.7% of the subjects graduated from junior college. The rates of shift work (45.4%) and non-shift work (54.6%) were similar, and 91.5% of subjects worked on a three-shift a day schedule. The average nutrition knowledge score was 14.3 $\pm$ 2.5 out of a possible 20 points. Most of the nurses had experienced dietary problems such as skipping meals and overeating. Sixty-eight point three percent of the nurses had breakfast less than 3 times a week, and the main reason for skipping meals was a lack of time. Most of the nurses (74.1%) didn't exercise regularly. The average score on dietary habits was 55.6 out of 100, and most of the subjects belonged to the‘fair’group in terms of dietary habits. Married nurses, and those over 31 years of age, scored significantly higher on dietary habits than unmarried nurses, and those under 25 years of age (p < 0.001), and the scores significantly increased with increasing age. Mean daily carbohydrate and fat intake was 231.5 $\pm$ 66.1 g, 41.1 $\pm$ 18.8 g, and cholesterol and crude fiber intake was 238.2 $\pm$ 184.6 mg, 5.2 $\pm$ 2.0 g. respectively. Compared with the recommended allowances, the energy (1560.0 $\pm$ 448.5 kcal), calcium (453.8 $\pm$ 222.3 mg) iron (10.6 $\pm$ 7.6 mg), vitamin A (658.5 $\pm$ 538.1 R.E) and vitamin B$_2$ (0.96 $\pm$ 0.5 mg) figures were below the Korean RDA, and the protein (65.9 $\pm$ 31.0 g), vitamin B, (1.14 $\pm$ 0.5 mg), vitamin C (143.2 $\pm$ 119.6 mg), niacin (14.4 $\pm$ 6.3 mg) and phosphorus (958.1 $\pm$ 352.1 mg) figures were above the Korean RDA. The average carbohydrate, protein, fat ratio of energy intake was 60:17:23. The intake ratio of Ca and P showed an unbalance of 1:2. The dietary habits had a positive correlation (p < 0.001) with nutrition intake except vitamin A and vitamin C. Therefore, In order to improve overall dietary behavior and nutritional status, systematic nutrition education programs should be developed.

The Concept of Standardized Ileal Amino Acid Digestibilities: Principles and Application in Feed Ingredients for Piglets

  • In this review, the terminology that is used to describe ileal amino acid (AA) digestibilities in piglet feed ingredients is defined. If one accepts that the determination of AA digestibilities should be based on the ileal analysis method, one should consider that ileal digesta contains variable amounts of endogenous crude protein (CP), which originates mainly from digestive secretions, sloughedoff epithelial cells and mucins. The ileal endogenous CP and AA losses are separated into basal ileal endogenous CP and AA losses ($IAAL_{B}$), which are not influenced by the feed ingredient composition, and specific ileal endogenous CP and AA losses ($IAAL_{S}$), which are induced by feed ingredient characteristics such as level and type of fiber and anti-nutritional factors (ANF). Depending how ileal endogenous CP and AA losses are considered in the measurement of CP and AA digestibilities, digestibility values are expressed as apparent (AID), standardized (SID), or true (TID) ileal digestibilities of CP and AA. The main concern associated with the use of AID values in diet formulation for pigs is that they are not additive in mixtures of feed ingredients. Consequently, the concept of standardized ileal CP and AA digestibilities was introduced by correcting AID values for basal ileal endogenous CP and AA losses ($IAAL_{B}$). The correction for both $IAAL_{B}$ and $IAAL_{S}$ yields TID values, however, routine procedures to measure $IAAL_{S}$ are not yet available. In principle, SID values should be preferred, because they represent the fundamental properties of the feed ingredient. There exist only few reports on SID of CP and AA in feedstuffs frequently used in piglet nutrition. These include soybeans (SB), soybean meal (SBM), soy proteins (SP), soy protein concentrate (SPC), soy protein isolate (SPI), corn gluten (CG), wheat gluten (WG), pea protein (PeaP), potato protein (PotP), fish meal (FM) and whey proteins (WP), but the results obtained are inconsistent. Differences in SID values within feed ingredients may, at least in part, be attributed to different processing conditions or inherent differences of the assay feed ingredients. Moreover, there is some evidence that the determination of SID values and $IAAL_{B}$ in piglets may be confounded by the dietary CP level of the assay diet, age and (or) body weight (BW), the level of feed intake or the methodological approach used to determine $IAAL_{B}$.

Net Portal Fluxes of Nitrogen Metabolites in Holstein Steers Fed Diets Containing Different Dietary Ratios of Whole-crop Corn Silage and Alfalfa Hay

  • The objectives of the present study were to investigate the effects of different dietary ratios of whole-crop corn silage and alfalfa hay on nitrogen (N) digestion, duodenal flow and metabolism across the portal-drained viscera (PDV) of growing beef steers, and to elucidate their relationships. Four steers (236${\pm}$7 kg BW) fitted with duodenal cannulae and chronic indwelling catheters into the portal and mesenteric veins and abdominal aorta were used in a 4${\times}$4 Latin square design. Animals were fed (at 12-h intervals) the 4 diets consisting of whole-crop corn silage (C) and alfalfa hay (A) in 80:20 (C8A2), 60:40 (C6A4), 40:60 (C4A6) and 20:80 (C2A8) ratios of which dietary crude protein (CP) was 10.5, 12.0, 13.5 and 15.0% of dry matter (DM), respectively. Feeding level was restricted to 95% of ad libitum intake to measure N digestion, blood flow and net flux of N across the PDV. Digestibility of DM and neutral detergent fiber and digestible energy intake linearly increased as the ratio of alfalfa hay increased. The N intake, duodenal flow and intestinal disappearance increased linearly with increasing alfalfa hay. Arterial and portal concentrations of ${\alpha}$-amino N showed a quadratic response to increasing levels of alfalfa hay and were the highest in steers fed the C6A4 diet. The net PDV release of ${\alpha}$-amino N and ammonia N increased linearly with increasing alfalfa hay, but urea N uptake by PDV did not differ among diets. As a percentage of apparently digested N in the total gut, net PDV release of ${\alpha}$-amino N linearly decreased from 66 to 48% with increasing alfalfa hay. Conversely, net PDV recovery of ${\alpha}$-amino N to intestinal N disappearance varied with increasing alfalfa hay accounting for 49, 50, 58 and 61% on C8A2, C6A4, C4A6 and C2A8 diets, respectively. Net PDV uptake of urea N, relative to apparently digested N, linearly decreased from 81 to 25% as alfalfa hay increased from 20 to 80% of DM intake. Considering PDV uptake of urea N, microbial efficiency and conversion of total tract digested N to PDV ${\alpha}$-amino N net supply, a diet consisting of 80% whole-crop corn silage and 20% alfalfa hay (10.5% CP) was the best, while considering the quantities of intestinal N disappearance and ${\alpha}$-amino N absorption, a diet of 20% whole-crop corn silage and 80% alfalfa hay (15% CP) would be preferred. The proportion of ${\alpha}$-amino N recovered by PDV relative to the intestinal N disappearance may vary with energy intake level of mixed forage diets.

Effects of Dietary Synbiotics from Anaerobic Microflora on Growth Performance, Noxious Gas Emission and Fecal Pathogenic Bacteria Population in Weaning Pigs

  • Synbiotics is the term used for a mixture of probiotics (live microbial feed additives that beneficially affects the host animal) and prebiotics (non-digestible food ingredients that beneficially affect the organism). This study investigated the effect of probiotics from anaerobic microflora with prebiotics on growth performance, nutrient digestibility, noxious gas emission and fecal microbial population in weaning pigs. 150 pigs with an initial BW of 6.80${\pm}$0.32 kg (20 d of age) were randomly assigned to 5 dietary treatments as follows: i) US, basal diet+0.15% antibiotics (0.05% oxytetracycline 200 and 0.10% tiamulin 38 g), ii) BS, basal diet+0.2% synbiotics (probiotics from bacteria), iii) YS, basal diet+0.2% synbiotics (probiotics from yeast), iv) MS, basal diet+0.2% synbiotics (probiotics from mold), v) CS, basal diet+0.2% synbiotics (from compounds of bacteria, yeast and mold). The probiotics were contained in $10^{9}$ cfu/ml, $10^{5}$ cfu/ml and $10^{3}$ tfu/ml of bacteria, yeast and molds, respectively. The same prebiotics (mannan oligosaccharide, lactose, sodium acetate and ammonium citrate) was used for all the synbiotics. Pigs were housed individually for a 16-day experimental period. Growth performance showed no significant difference between antibiotic treatments and synbiotics-added treatments. The BS treatment showed higher (p<0.05) dry matter (DM) and nitrogen digestibility while ether extract and crude fiber digestibility were not affected by the dietary treatment. Also, the BS treatment decreased (p<0.05) fecal ammonia and amine gas emissions. Hydrogen sulfide concentration was also decreased (p<0.05) in BS, YS and MS treatments compared to other treatments. Moreover, all the synbioticsadded treatments increased fecal acetic acid concentration while the CS treatment had lower propionic acid concentration than the US treatment (p<0.05) gas emissions but decreased in fecal propionate gas emissions. Total fecal bacteria and Escherichia coli populations did not differ significantly among the treatments, while the Shigella counts were decreased (p<0.05) in synbiotics-included treatment. Fecal bacteria population was higher in the YS treatment than other treatments (p<0.05). The BS treatment had higher yeast concentration than YS, MS and CS treatments, while US treatment had higher mold concentrations than MS treatment (p<0.05). Therefore, the results of the present study suggest that synbiotics are as effective as antibiotics on growth performance, nutrient digestibility and fecal microflora composition in weaning pigs. Additionally, synbiotics from anaerobic microflora can decrease fecal noxious gas emission and synbiotics can substitute for antibiotics in weaning pigs.
