Nanoemulsion application in meat product and its functionality: review

  • Nanotechnology in the food industry can increase the effectiveness of food ingredients. Nanotechnology can increase the bioavailability and absorption of bioactive compounds, enhance their stability, and improve the sensory quality of the product. Processed meat products are easily damaged due to bacterial activity. Advanced nanoemulsions as a meat preservative are nanoemulsions that can be used as preservative agents in meat products, particularly essential oil nanoemulsions, due to their antimicrobial and antioxidant properties. Its application is still limited to foods made from meat products. Therefore, this literature review examines nanoemulsion and its application in meat products and functionality improvement. Also, in the future, nanoemulsions in meat products must be made safe, and the government and businesses must work together to build consumer trust. It can be concluded that essential oil-based nanoemulsion has the potential to be used as an additive in meat products because it can kill bacteria, fight free radicals, improve flavor, and keep food fresh. Nanoemulsion is challenging in the meat industry because it can be toxic due to its tiny droplets (under 200 nm).

  • We proposed a B2B food distribution platform by transforming an established food distribution and management platform based on blockchain technology. Our proposed model introduced a method to bring innovation into the domestic B2B food distribution market and systematically manage and utilize massive data (country of origin, producer, transaction, distributor, final consumer) generated within the food distribution process.

Consumer Innovativeness and Consumption Behavior of New Sauce Products for the Japanese Consumer (일본 소비자의 혁신성과 신제품 소스에 대한 소비 행동 분석)

  • Objectives: This study analyzed Japanese consumers on their sauce consumption, and assessed the relationship between consumer innovativeness and consumption behavior for new sauce products. Methods: The survey was completed by local consumers visiting Korean restaurants in Osaka, Japan, in September 2018. The demographic characteristics, consumption of sauce, consumer innovativeness, and factors of theory of planned behavior were evaluated. Totally, 150 collected data were analyzed using the IBM SPSS Statistics 25.0 Program (IBM SPSS INC, Armonk, NY, USA). Results: Results of the survey indicate that Japanese consumers purchase a sauce by considering the taste and food utilization. Sauce purchases were maximum at mega markets and supermarkets. The consumer innovativeness for Japanese consumers was based on 3 factors: 'Purchasing adventurous products (3.51 ± 0.96)', 'Active information seeking (4.36 ± 1.11)', and 'Interactive information seeking (4.33 ± 1.02)', where the tendency of 'Active information seeking' was the highest innovativeness factor. Furthermore, higher values of perceived behavior control (4.68 ± 1.21), attitude (4.66 ± 1.41) and subjective norm (4.39 ± 1.28) were revealed, when assessing for theory of planned behavior factors. Correlating the variables of consumer innovation and factors of planning behavior theory, 'Active information seeking' is a positive attribute for attitude (p<0.016), subjective norm (p<0.001), and perceived behavior control (p<0.002). These 3 factors also had significantly positive effects on purchase intention for new sauce product (p<0.000, p<0.000, and p<0.002, respectively). Attitude was determined to be another very influential variable for purchase intention of a new sauce product (B=0.484, t=6.881). Conclusions: The results of this study determine the consumption patterns of sauce for the Japanese consumer, and the relationship between consumer innovativeness and consumption behavior for Korean traditional sauces. We believe the data generated from this study will help determine a marketing strategy to enter the Japanese market.

An Explorative Study of R&D Priority based on Needs Attributes Model: Case of SMART TV (니즈속성의 중요성과 시급성에 의한 R&D 우선순위 결정에 관한 탐색 연구: SMART TV를 중심으로)

  • Products elicit the consumer's purchasing behavior by satisfying their needs and are cognized as the combination of various needs attributes. Also R&D is referred as a series of technical development activities to meet the consumer's needs attributes. In particular, in the market-oriented R&D era, it could obtain the legitimacy by developing the R&D based on the needs attributes. In this study, we aimed to investigate the priority setting in R&D field, considering consumer's needs attributes. To be concrete, we tried to present the evolutional direction of desirable phased R&D according to 'the importance degree for consumers on the attributes (functions) of the certain products' and 'the urgency degree of technical quality to fulfill its needs'. To achieve this, we targeted SMART TV, the convergence product, which contains the uncertainty in terms of marketability and technological aspect, and analyzed the priority of the R&D in SMART TV field. Based on the result of the analysis, 4-steps product concept (ultra high definition TV, interactive TV, 3D/immersive TV, personalized TV) is derived by analyzing the evolutional direction of R&D in SMART TV field. This finding implies that the success possibilities of product could be enhanced during the process of the evolution of products that have multiple needs attributes, by pursuing the R&D which fulfills the needs attribute first required in the market. In addition, it provides a useful framework to design the R&D roadmap in an aspect of R&D strategy.

The Effect of Privacy Concerns on Using Mobile Payment Services: Moderating Effect of Multidimensional Consumer Innovativeness (프라이버시 우려가 모바일 간편결제 서비스 이용에 미치는 영향: 소비자 혁신성의 다차원적 조절효과를 중심으로)

  • The purpose of this study is to investigate the effects of privacy concerns on the use of mobile payment services. In particular, paying attention to the multidimensionality of consumer innovation, we analyzed the effects of hierarchical logistic regression by gender. The results show that there is a positive (+) relationship for hedonic innovativeness regardless of gender, and that there is a negative (-) relationship for functional innovativeness overall and in the female group. In all groups regardless of gender, a positive (+) relationship was found for the hedonic innovativeness, and one negative (-) relationship was found in the functional innovativeness overall group and the female group. Second, in the male group, there is a moderating effect of privacy concerns and functional innovativeness. This suggests that the relationship between privacy concerns and the usage of mobile payment services may vary depending on functional innovativeness. This study is useful in that it can explain and predict consumers' patterns of use of new technology-based services in various and balanced ways by taking privacy concerns and multidimensional consumer innovation into consideration. In addition, it suggests that mobile payment companies should make efforts to ensure that their services are secure, useful, and fun to use so that consumers can feel confident using the services in various situations.

Influence of Perceived Social Distance of SNS Visual Information on Consumers' Fashion Style Preferences (SNS에서 제공되는 시각적 정보의 사회적 거리가 패션 스타일 선호에 미치는 영향)

  • This study analyzed the influence of social distance and visual information on consumers' fashion style preferences in terms of information characteristics and providers. Data were collected from 521 females in their twenties and thirties who had experience using SNS. The empirical study results were as follows. First, with other factors of exposure under control, the social distance of information characteristics and providers showed a significant impact on fashion style preferences only when social distances were close. Second, the impact of social distance varied depending on the consumer's characteristics. This proved that innovation had significant negative influences, while conformity and informational sensitivity to others showed positive influences on the effects of social distance in terms of information characteristics. Innovation and fashion leadership also showed a negative influence on the social distance effect in terms of information providers. Third, conformity, informational sensitivity to others, and fashion leadership, proved to have a significant impact on the acceptance of eWOM in fashion styles, but innovativeness and normative sensitivity to others did not have a significant influence. This study can be used as baseline data in SNS marketing strategies for vitalizing information spread through eWOM.

A comparative study on iPhone 6 Plus and Samsung Galaxy Note 4 from Vietnamese consumer perception

  • The objective of this research is to analyze the product innovation aspect in two comparable smartphones and partly illustrate perception and preference of Vietnamese consumers of two smartphone lines of Apple - iPhone 6 Plus and Samsung - Samsung Galaxy Note 4. The research tries to clarify which innovative features in two smartphones are more preferable to a group of consumer in Vietnam. The reason why the research studies iPhone 6 Plus and Samsung Galaxy Note 4 when iPhone 7 and Samsung Galaxy Note 7 have just released is that passing more than one year is enough time for consumers to totally experience both 2 smartphone lines to give the most precise and truthful evaluation for their preferences. Moreover, iPhone 6 Plus launch signed one of the most historical memorable landmark in the development process of iPhone products when it introduced larger-screen iPhone model for the first time. It is such an important change of iPhone which could open a new continuing successful era for Apple and iPhone. The first phase of this study involves analyzing strengths and weaknesses existed considering the opportunities and threats from the competitive market, then a competitive advantage analysis is implemented for each product. The second phase conducts a survey with Vietnamese participants from different backgrounds, by which a Mann-Whitney U test will be executed to check the significant difference in opinions in different respondent groups by age and by gender to several features of two smartphones. By conducting the survey, some interesting facts revealed with the winner seemingly falling into iPhone 6 Plus. However, it still reveals some significant difference among respondent groups by age and by gender to both iPhone 6 Plus and Samsung Galaxy Note 4 in several comparing features.

Influential Factors on the Adoption of Performance Infants' Wear -Focusing on Product Attributes, Consumer Traits, and Communication Characteristics- (혁신제품으로서의 기능성 소재 유아복의 채택 단계에 미치는 영향 요인 -제품 특성, 소비자 특성, 커뮤니케이션 특성을 중심으로-)

  • The purpose of this study is to investigate the factors that influence consumers' adoption of performance infants' wear made of functional textiles. Based on Innovation Diffusion Model, product attributes, consumer traits, and communication characteristics were considered. A survey was carried out with a convenience sample of 241 housewives who have infants under 4 year-old, living in the Seoul metropolitan area. To analyze the data, SPSS 10.0 was used employing ANOVA, Duncan's post-hoc comparison, $X^2$, and f-test. The participants were classified into 4 groups based on their levels of adoption of performance infants' wear: No-Cognition, Negative Attitude, Positive Attitude, and Purchasing groups. There were significant differences among the four groups in terms of their perception of product attributes, communication characteristics, and personal traits. In terms of product attributes, the Positive Attitude group and Purchasing group showed higher perception of relative advantage, compatibility, trialability and observability than other groups. These groups were also high in terms of their tendency of actively seeking for additional product information, and particularly relied on the information from experts on TV or the Internet, personal experience posted on the Internet, or their own experience. Those who were in professional, well-educated and high income brackets were more likely to be Purchasing group than Positive Attitude group, which means once the positive attitude was formed they are likely to purchase the product.

  • The purpose of this study is to provide policy implications for vitalizing u-health services. We carried out survey of 500 consumers and indepth interview with various experts. Both experts and consumers believe that u-health services will become prevalent in the longrun, although there exist obstacles against vitalization of u-health services. To vitalize u-health service, the Korean government should raise reliability and recognition of u-health service for consumers. Furthermore, law and institution regarding u-health services should be improved to give enough incentives for u-health suppliers and consumers.

  • Home networks consist of two or more home appliances or communication devices enabling the mutual data communication between appliances such as personal computers, refrigerators, phones, television sets, personal digital assistants(PDA), etc. There are three factors that create demand for the home network services. The first factor is development of technology. Second, on the demand side, consumer demand for the home appliances having access to the Internet is in the increase. Finally, producers need a strategy to deal with the problem of market saturation. Home networks are emerging markets. They are unique in that they unite information technologies with home appliances that provide new services. in this paper we study the main attributes of home network services and analyze consumers' preferences for them. However, it is not quite possible to use the revealed preference approach since the home network market is still at an incipient stage. We therefore use the conjoint analysis method using stated preference data. conjoint analysis has been widely use in the area of marketing for evaluating consumer preferences for new products and services. it presents a hypothetical product to the respondents along with the product's attributes and their levels. The respondents are asked to either rank each alternative or choose between several hypothetical products. By estimating consumers' willingness to pay for the attributes of the home network services and analyzing consumers' preferences, we predict the pattern of the development of the home network services and related technologies along various quality dimensions. Based on the estimation results, we draw policy implications for the national- and company-level strategy.
