A Study on Lunch Meal Practice of the College Students in Seoul Area (서울지역 대학생의 점심식사 실태에 관한 연구)

  • This study was conducted for the purpose of practice of nutrition education and dietary intake for college students. This survey was carried out through a variety of questionnaires by the subjects which consist of 249 male and 208 female college students in Seoul area. The results obtained were summarized as follows; 1. 75% of the subjects lived in their own houses; the monthly personal expenses were $110{\sim}200$ thousand wons. The appetite of the students who answered was normal in general. The pattern of dietary life shows that they take richer food at dinner than lunch and breakfast. 2. At school, 75% of students ate at the school cafeteria. Among several main dishes, rice was the most favorite food. Most of the subjects ate their lunch between 12 and 1 o'clock, and they spend approximately 11 to 15 minutes. Most of the students did not have lunch on time. The students ate lunch irregularly, because of the class schedule and poor appetite. 3. On weekends and vacations, 56% of the students ate lunch prepared by their mother at home. The two main reasons for skipping lunch during weekends and vacations were late breakfast and poor appetite. The frequency of eating out were $3{\sim}4$ times per week, because of social life and convenience of meal. 4. The majority of college students asked for the improvement of meal quality and the choice of menu in school cafeteria.

A Study on Nutrition Education and Behavior of college students (대학생의 영양교육과 식행동에 관한 연구)

  • This survey was carried out through questionnaries and the subjects were 498 male and 151 female students at Inha University. The results are summarized as follows ; 1) The female students had more opportunity to get nutrition education than the male students. Most students ranked education facilities as their primary sources of nutrition knowledge, but 30% of the male students ranked mass media. Nutrition knowledge score of female students was higher than that of male students. 2) 63.6% of male students drank alcohol and smoked cigarette. 33.2% of them drank only alcohol and 1.1% of them smoked only cigarette. Most of female students drank only alcohol. More than 30% of the subjects drank alcohol 1 day a week. 3) Most students ate out more than once a day and chose the menu considering taste of food. About 30% of the subjects were eating at school cafeteria, the next percentage korean restaurant, Noodle-snack cafeteria. 4) Most students have had dietary problems such as vigorous eating, skipping meal, indulging in hot and spicy food, prejudice for special food. More than 50% of the subjects are skipping breakfast. The main reason of skipping meal is lack of time.

Comparison of Students' Satisfaction with a Meal of College Foodservice by Operating System (대학급식소의 운영형태에 따른 음식만족도 비교분석)

  • College foodservice (FS) demands highly-developed operation technique which can provide adequate nutrients to their students, as well as to guide better eating habits and to meet students' various desires. The purpose of this study was to provide basic data to improve college FS satisfaction with food items by comparing 2 contract-managed and 2 self-operated college FS in Daejeon and Chungnam area. According to the results, $\59.1%$ of students frequently (over 3 times per week) took meals at college cafeteria and the main reason for using college cafeteria was the low-price of meal, although the students' Satisfaction degree with price of meal was lower in contract-managed FS than in self-operated FS. There were no differences in the food satisfaction degrees with overall appraisal of food items between 2 operating systems of college FS, but the satisfaction degrees with all food items were high in male as compared with female. The higher the negative self-perceived clinical symptoms scores, the lower the satisfaction with foods, which suggests that the health state of students was one of the factors that influenced college FS satisfaction. According to stepwise multiple regression analysis,'taste of boiled rice', 'overall appraisal of boiled rice', 'overall appraisal of soup', and 'variety of side dish', in decreasing order, were the most relatively important attributes for overall customer satis-faction with food taste of college FS. Finally, there should be further studies on important management factors to improve college FS satisfaction according to 2 operating system.

Ecological Correlates of Cardiovascular Disease Risk in Korean Blue-collar Workers: A Multi-level Study (다수준 분석을 이용한 한국 생산직 근로자의 심혈관질환 위험에 대한 생태학적 요인)

  • Purpose: The purpose of this study was to investigate individual and organizational level of cardiovascular disease (CVD) risk factors associated with CVD risk in Korean blue-collar workers working in small sized companies. Methods: Self-report questionnaires and blood sampling for lipid and glucose were collected from 492 workers in 31 small sized companies in Korea. Multilevel modeling was conducted to estimate effects of related factors at the individual and organizational level. Results: Multilevel regression analysis showed that workers in the workplace having a cafeteria had 1.81 times higher CVD risk after adjusting for factors at the individual level (p =.022). The explanatory power of variables related to organizational level variances in CVD risk was 17.1%. Conclusion: The results of this study indicate that differences in the CVD risk were related to organizational factors. It is necessary to consider not only individual factors but also organizational factors when planning a CVD risk reduction program. The factors caused by having cafeteria in the workplace can be reduced by improvement in the CVD-related risk environment, therefore an organizational-level intervention approach should be available to reduce CVD risk of workers in small sized companies in Korea.

Milk and Beverage Preference of College Students (대학생들에 대한 우유와 음료수의 기호성)

  • The purpose of this study was to determine relationship among the observed frequencies of 12 beverages selected by college men and women according to sex, age, race and academic classification and to estimate consumption of milk according to sex, age, race and academic classification. The instrument consisted of a check list and four questions. The sample of 282 subjects, 149 college men and 133 college women, was made by the accidental choice method. Observations occurred in the university center cafeteria at the dinner meal. The significant relationship s were sex and race in association with beverage selections by all subjects. The proportion of men in the distribution who selected regular , carbonated soft drinks and the proportion of white students who selected any of the carobnated soft drinks were the influencies. The result of the study indicated that carbonated soft drinks were the most preferred items followed by milk, water, iced tea, fruit juices, coffee, cocoa, and tea.

A Study on Brand Awareness of Contract Foodservice Management Company in Incheon Area (위탁급식 전문업체의 브랜드 운영 전략을 위한 브랜드 인지도 분석 - 인천 지역 일부 대학생을 대상으로 -)

  • The purpose of this study was to investigate the college and university student's perception on the brand awareness of contract foodservice management company in Incheon area. The developed questionnaires were distributed to the college and university students in Incheon area from September 20 to September 24 in 2004. Total 198 questionnaires were used for the final data analysis with response rate of 82.5%. The results showed that 85 % of the students has known that the foodservice operation was managed by contracted management company, only 56.5% of them have known the exact name of contract foodservice management company managing their cafeteria. It was recommended therefore that contract foodservice management company need more efforts for widening public activities for their company's name.

A Study on the Ant's Selection of the Diaspores of Four Corydalis Species (현호색속 식물 4종에 대한 개미의 전파체 선택에 관한 연구)

  • To search for myrmecochorous plant species, related ant species and diaspore selecting behaviour, collecting fruits and diaspores of four Corydalis species, cafeteria experiments, and the related ant species were studied from May 2013 to July 2014. Four Corydalis species recording in Korea were proved myrmecochorous (seed attached elaiosome) plants newly. Elaiosome shape of these species is spatulate-shaped, but their size is varied considerably in length and width. Significant differences is proved between four plant species in weight of diaspores, seeds and elaiosomes, and elaiosome ratios. Mean values of diaspores weight showed 4.08 mg, 2.56 mg, 2.49 mg and 2.06 mg in Corydalis grandicalyx, C. remota, C. turtschaninovii for. pectinata and C. turtschaninovii var. linearis, respectively. Mean values of seed weights showed 3.68 mg, 2.03 mg, 1.90 mg and 1.67 mg in Corydalis grandicalyx, C. remota, C. turtschaninovii for. pectinata and C. turtschaninovii var. linearis, respectively. Elaiosome ratio of C. turtschaninovii var. linearis was the highest, followed by C. remota, C. turtschaninovii for. pectinata and C. grandicalyx. Ant's preference for the diaspores is ordered as same as elaiosome ratio's order. Major ant species transporting the diaspores of Corydalis species are Formica japonica, Lasius alienus, Lasius japonicus and Tetramorium tsushimae. Formica japonica transports the diaspores most frequently. Ant's preference for the diaspores among plant species or individuals might be influenced on the survival rates of concerned species. Further studies on the myrmecochorous plant and related ant species, cafeteria experiments should be needed.

A Study on Spatial Analysis and User's Satisfaction in Cafeterias at a University - Focused on Satisfaction in Cafeterias at D University - (대학학생식당의 공간분석과 이용자만족에 관한 연구 - D대학 학생식당의 만족도를 중심으로 -)

  • The study analyzed behaviors of users in cafeterias and spatial environmental images as well to understand what factors would affect the users' satisfaction in the cafeterias. The study also looked into how interior space factors would influence the users, what the users actually want from the cafeterias when they use them and lastly, what kinds of behaviors the users would do while in the cafeteria. Through those researches, the study proposed solutions to improve the users' satisfaction in cafeterias. As a field survey research, the study observed actual conditions of cafeterias at a university as conducting spatial environmental analysis to present ways to improve students' satisfaction in cafeterias at their university. In order to achieve the research goal, the study carried out a literature analysis and a survey and visited the cafeterias to understand both actual conditions and environments of cafeterias at a university. The study also had in-depth interviews with the students. The subject of the study was those college students who have been using four cafeterias at three campuses of D university. Data was collected via surveys, observations and interviews. With the students as the research subject, the study investigated and analyzed current status of the students' using of the cafeterias, actual utilization, spatial factors and satisfaction factors. The study was mainly developed with a survey conducted and by distributing basically 200 copies of the survey each to the campuses, the study gave out 200 copies each to Suseong Campus in Daegu and Oseong Campus in Gyeongsan but 400 copies at a time to Samsung Campus in Gyeongsan because it was the main campus and had two cafeterias. To sum up, each department was instructed to answer 20~40 copies of the survey in the end. Out of 800 copies in total, 188 copies from Oseong Campus, 153 copies from Suseong Campus and 386 copies from Samsung Campus which would add up to 727 were observed to be faithful enough to be used as statistics for the study.

A Study on the Myrmecochorous Plant Species and Their Diaspore Characteristics in Middle Part of the Korean Peninsula (개미가 종자를 산포하는 식물종과 그들의 Diaspore 특성에 대한 연구)

  • To search for myrmecochorous plant species in Korea and their diaspore characteristics, the flowering and fruiting of herb species, collectiong their fruits and diaspores, and the related ant species were studied from April to September 2011. Twenty-four herb species growing in Korea prove myrmecochorous (seed attached elaiosome) plants. Elaiosomes of 24 herb species vary considerably in shape and size. Major ant species transporting the diaspore of myrmecochorous plants are Formica japonica, Lasius alienus, Tetramorium tsushimae, Temnothorax koreanus, Lasius japonicus, but Camponotus japonicus and Paratrechina sakurae do not transport the diaspores. This study found out that mutualism between myrmecochorous plants and ants is carried out in Korea. Further study on the myrmecochorous plant and related ant species, cafeteria experiments should be needed.

Epidemiological Investigation on an Outbreak of Norovirus Infection at a High School in Gyeongju City, 2009 (2009년 경주시 일개 고등학교에서 집단 발생한 노로바이러스 역학조사*)

  • Objectives: An outbreak of norovirus occurred at a high school in Gyeongju city in 2009. An epidemiological investigation was carried out to examine the infection source and the transmission route of norovirus, and to prevent a recurrence. Methods: A questionnaire survey was conducted for 520 male students and 8 food handlers. Rectal swabs were examined in 21 symptomatic students and the 8 food handlers by Gyeongsangbukdo Government Public Institute of Health & Environment, and an environmental investigation was performed. A case-control study was used to evaluate the association between risk factors and disease. Results: The attack rate was 21.3% (111/520) between January 29 and February 10, and norovirus GII was isolated from 12 of 21 students. Food handlers had no symptoms and their stool samples were negative. The case-control study revealed that seasoned soy bean sprouts {odds ratio (OR): 2.542, 95% CI=1.315-4.915} and drinking water from the purifiers in the cafeteria (OR: 2.854, 95% CI=1.107-7.358) supplied on February 3 were significant risk factors for the outbreak. Water pipes and waste pipes were located in the same place where was filled with some water and trace of high water level was detected. Conclusions: The major risk factors for this norovirus outbreak were presumed to be the contaminated seasoned soy bean sprouts and drinking water from the purifiers in the cafeteria. More strict personal and environmental hygiene need to be enforced to prevent such outbreaks.
