The purpose of this study is to develop the cold chain system by developing optimal phase change materials (PCM). There are some benefits from developing this system such as keeping freshness of agriculture products, saving energy, etc. The major results are as follows. To decide a latent heat material, the characteristics of water, sodium, polyacrylate, ethanol and N-tetradecane are analysed. Also, an insulating material is made by mixing water, nucleating agent and latent heat material, using cementing method. In addition, the sensitivity analysis for developed latent heat material($K_l,\;K_2,\;K_3$) is conducted. For $K_l,\;K_2,\;K_3$ which cans keep latent heat temperature, ranging from $0\;to\;5^{\circ}C,\;5\;to\;10^{\circ}C,\;10\;to\;15^{\circ}C$. it can keeps latent heat temperature at radiant heat (5, 12, $17^{\circ}C$) and transportation latent heat container both melting temperature and amount of latent heat of Kl are $-1.6{\pm}1.0^{\circ}C$, 326.51 J/g, respectively and freezing temperature and latent heat are $-7.98{\pm}1.5^{\circ}C$ and 174.18 J/g. and $K_2$ are $7.41{\pm}1.5^{\circ}C$, 89.80 J/g, respectively and freezing temperature and latent heat are $-2.14{\pm}1.5^{\circ}C$ and 83.90 J/g. and $K_3$ are $9.54{\pm}1.0^{\circ}C$, 145.42 J/g, respectively and freezing temperature and latent heat are $0.21{\pm}1.0^{\circ}C$ and 152.48 J/g.
Quality changes of satsuma mandarin (Citrus unshiu Marc. var. miyagawa) during storage by storage warehouse were investigated. Citrus were treated with 2000-folds diluted iminoctadime-triacetate solution and 1.5% chitosan with 0.5% CaCl$_2$ solution, and were at 30$\^{C}$ for 24 hr before storage. The citrus of about 12kg/26L plastic container were stored at room temperature, and at 4$\^{C}$ with 87% relative humidity. Decay ratio of citrus with precise temperature and humidity control were lower than the others during storage. Penicillium italicum Monilia candida Alternara citri, Mucor hiemalis, Phomopsis citri Botrytis cinerea, Phoma citricarpa Clomererella cingulata, Penicillium digitatum were identified as putrefactive microorganisms in citrus storage. Weight loss, moisture content of peel and flesh were decreased slowly during storage. 24% of original acid content were decreased at room temperature on 120 days storage, compared to 15∼18% loss on cold storage. Total sugar of citrus was decreased rapidly after 90 days, and vitamin C content were also decreased rapidly after 60 days during storage.
This study was designed to investigate development points for automatic ice maker which met consumer's demand. Basic data about using ices in Korean's dietary life, were collected from Seoul and Kyunggi-do residences and analyzed by SPSS program. The results were as follows; 93.7% of respondents had 3 major domestic brands' refrigerator and 41.4% of them had medium-large capacity(400-519L). 65% of respondents had a refrigerator that was purchased less than five years. 15.5% of respondents had one more refrigerator. Among of them, major refrigerator was located in kitchen(67.7%) and minor was in kitchen(29.8%) and in veranda or multi-purpose room(26.3%). 66.2% of respondents always prepared ices in ice container, and 85% of them used ice only in summer. Boiling water with barley or corn was used as drinking water (45.6%) and boiled or purified tap water was used to make ice (38.6%) commonly. In cooking, ice was used especially in cold soup with cucumber and seaweed(89.9%), ice-tea or ice-coffee(81%), and fruit punch(64%). The next commonly using ice was adding in alcoholic beverage such as whiskey(57.4%), in Koreans traditional drink(Misugaru) (45.2%) and juice. The purpose of using ice was to cool in soft drink (58.6%), to cool in cooking food(19.9%), to eat ice itself(14.0%), and to enjoy more fantastic taste and mood(3.8%). In whiskey, the purpose of using ices was to control alcoholic content (52.9%). There was no significant difference between sex in the purpose of using ice, but there was significant differences between age(p<0.05). Seasonal variations in using ice, there were significant differences according to sex, age, roles in family, amount of preparation of ice, socio-economic level and brand and capacity of refrigerator in respondent's home.
To evaluate bacteriological water quality, samples were taken from drinking water dispensers placed at S company (S-C) and U highschool (U-H) in Ulsan. The medians of heterotrophic plate counts (HPCs) were 53 CFU/ml for the 74 water samples of S-C and 80 CFU/ml for the 36 cold water samples of U-H, and 38% of the S-C and 42% of the U-H samples showed HPC bacterial concentrations higher than 100 CFU/ml. Coliform bacteria were detected from one sample of S-C. To determine the major source of bacterial contamination, water samples were taken daily for $6\sim8$ days from the bottled water containers as well as the faucets of an experimental water dispenser. While the average HPCs in the bottled water containers were 33 CFU/ml for the first and 132 CFU/ml for the 2nd analysis, the HPC concentration in the cold water samples was 1,022 CFU/ml for the 2nd analysis. These results suggest that the majority of bacteria detected in the cold water samples were originated from the biofilms on the surface of water passages within the water dispensers. There was no significant increase in HPC bacterial concentrations within the bottled water container after installation on the water dispenser. We could isolate and tentatively identify 3 genera 6 species of Gram-positive and 7 genera 7 species of Gram-negative bacteria from the plate count agar plates of U-H samples. Among the isolates, 72% were observed as Gram-positive, and Micrococcus spp. was the most abundant with 54% of the total, followed by Sphingomonas paucimobilis with 16%. It appears that most of the HPC bacteria detected in water dispensers originate from indoor airborne bacteria, which may play important roles in the formation of biofilms on the surface of water passages within the water dispensers.
Cold plasma (CP) was applied to examine microbial safety and physicochemical properties of rough rice. CP was generated in a square-shaped plastic container (250 W, 15 kHz, ambient air) and dielectric barrier discharge plasma treatment was applied for periods of 0, 10, and 20 min during 2 weeks at 4 and $25^{\circ}C$. As a result of observing changes in growth of microorganisms, 3.46-3.86 log CFU/g of total aerobic bacteria and 2.27-2.86 log CFU/g of mold were detected in the early stage of storage. The growth of total aerobic bacteria and mold was increased depending on the storage temperature and period, but there was no big difference between cultivars. Microbial analysis after storage showed that microorganisms of plasma-treated group were less grown approximately 1.50 log CFU/g. Moisture content of rough rice was decreased by storage temperature and periods. As for the amylose content, changes in the content by plasma were not observed in Samkwang, Cheongpum and Misomi, whereas Palbangmi showed a tendency to increase. The results of this study indicated that CP treatment improved the microbial quality of rough rice, but further studies should be conducted to reduce the deterioration of sensory quality induced by CP.

Preservation stability of the extract from dried green tea produced in Jeju, extracted at $55^{\circ}C$ for 15 min and bottled in PET container after filtration and then settled at $4^{\circ}C$, indoor at room temperature and outdoor, respectively, was estimated. Color L-value was almost constant but color of the extract became darkened during storage, especially in indoor storage. Main catechins of green tea extract were (-)-epigallocatechin, (-)-epigallocatechin gallate, epicatechin, (+)-catechin, epicatechin gallate in order, and the content of epigallocatechin was 53.8%. Nevertheless total catechin content was not changed in cold storage, and $4.7\sim10%$ of total catechins were reduced in outdoor or indoor storage after 14 weeks. Caffeine content were increased but total polyphenols were not changed largely during storage. Election donating abilities (EDA) showed more than 60% without influence of storage conditions and periods. Nitrite scavenging abilities (NSA) showed more than 90% at pH 1.2, but those were decreased gradually as pH increased, and then disappeared at pH 6.0. Color, polyphenols, antioxidant activities of extract were not so changed for more than 3 months. Microbial growth was not shown during same periods, due to heat treatment of the extracts at $95^{\circ}C$ for 10 min.

Paprika fruits should be stored and distributed at above $7^{\circ}C$ to prevent chilling injury but the small amount of paprika that transports with other horticultural products in refrigerated container by ship usually stored less than $5^{\circ}C$ for other products. In this case, paprika fruits cannot help exposing chilling temperature, so that the paprika must be lost marketable value during a long period of transfer. This study was conducted to compare the alleviated effects of high $CO_2$ treatment (passive MAP), heat (hot water dipping), and UVc treatment on chilling injury of paprika fruits due to low temperature storage, and also to decide if these treatments can be used for transporting under $5^{\circ}C$. After each treatment the paprika were put in the low temperature storage ($4^{\circ}C$) for 20 days and afterwards change the in room temperature ($20^{\circ}C$) for 5 days. The fresh weight loss of all the treatments except the high $CO_2$ treatment showed around 7~12% after 25 days of storage and the ethylene concentration showed periodical increases and decreases as around 3 ${\mu}l/l$. The $CO_2$ concentration was rapidly increased 33% carbon dioxide in high $CO_2$ treatment during room temperature storage after cold storage for 20 days. The firmness which is key quality characteristics during storage and is decreasing caused by chilling injury was not significantly different among all treatments. However, the firmness of stored paprika was maintained highest in the treated with hot water dipping. Therefore, HWD and UVc treatment that showed 60% of electrolyte leakage in the $4^{\circ}C$ control (chilling injury control) and similar level with the $7^{\circ}C$ control (non-chilling injury control) would be effective to alleviate chilling injury in the stored paprika.
The aim of this study was investigated long distance export condition of paprika from Korea to Canada, and evaluated the effect of non-perforated breathable films on the storability of paprika during MA storage in the simulated long distance export condition. The long distance export condition of paprika from Korea to Canada was $7{\pm}1^{\circ}C$ and RH 90% during shipping for 20 days, and then the temperature of that was increased to $13^{\circ}C$ for 3 hours during transferring from refrigerated container to storage room in Canada, and decreased $3{\sim}4^{\circ}C$ for 3 days before distributing to local markets. The temperature and relative humidity of local markets was $16^{\circ}C$ and 60%, respectively. The packing material treatments were non-packing, as control, perforated film (6 mm diameter hole, $18holes/m^2$), and 3 kind of laser treated non-perforated films (oxygen transmission rate was 5,000, 20,000 and 100,000 $cc/m^2{\cdot}day{\cdot}atm$). Under the simulated long distance export condition; $7^{\circ}C$ and RH 90% for 15 days and then $20^{\circ}C$ and RH 55% for 7 days, the fresh weight loss of paprika was less than 1% in 3 kind of laser treated non-perforated film treatments but was more than 4% in control and perforated film treatment that showed severe deterioration of visual quality after 20 days of storage. The atmosphere of paprika packages was changed 5% oxygen and 15% carbon dioxide in 5,000 $cc/m^2{\cdot}day{\cdot}atm$ treatment, and 16% oxygen and 4~5% carbon dioxide in 20,000 $cc/m^2{\cdot}day{\cdot}atm$ treatment during room temperature storage after cold storage for 15 days. A carbon dioxide concentration of these 2 treatments was exceeded the optimal MA and CA condition. There was no significant difference in ethylene concentration among 3 kind of laser treated non-perforated film treatments. A paprika packed with 100,000 $cc/m^2{\cdot}day{\cdot}atm$ non-perforated film showed the highest visual quality under the simulated long distance export condition. However, the firmness and soluble solids did not show any significant difference among 3 kind of laser treated non-perforated film treatments. Therefore, we may suggest that 100,000 $cc/m^2{\cdot}day{\cdot}atm$ laser treated non-perforated film was the proper film for MAP of paprika under long distance export condition that was $7{\pm}1^{\circ}C$ and RH 90% for 15 days, and then $20^{\circ}C$ and RH 55% for 7 days.
