A total of 629 Duroc${\times}$Landrace${\times}$Large White crossbred pigs were utilized in three experiments (Exp. 1, 222 pigs weighing $25.6{\pm}2.0\;kg$ BW; Exp. 2, 216 pigs weighing 5$6.2{\pm}4.3\;kg$ BW; Exp. 3, 191 pigs weighing $86.4{\pm}4.6\;kg$ BW) conducted to determine the effects of fermented potato pulp on performance, nutrient digestibility, carcass traits and plasma parameters in growingfinishing pigs. Each experiment lasted 28 d. The pigs were assigned to one of two corn-soybean meal-based diets containing 0 or 5% fermented potato pulp. The inclusion of fermented potato pulp increased weight gain (p<0.05) in experiments 1 and 2 and increased feed intake (p<0.05) in experiment 2. Feed conversion was improved (p<0.05) in experiment 2 and showed a tendency to improve (p<0.10) in experiments 1 and 3 when pigs were fed fermented potato pulp. Fermented potato pulp increased (p<0.05) dry matter digestibility in experiments 1 and 3 and energy digestibility in experiment 2. Feeding fermented potato pulp decreased plasma urea nitrogen (p<0.05) and alanine aminotransferase (p<0.05) in experiments 1 and 2, while plasma aspartate aminotransferase was decreased (p<0.05) in experiment 3. Dietary fermented potato pulp did not affect the carcass characteristics of finishing pigs. Feeding fermented potato pulp reduced (p<0.05) fecal ammonia concentration in all three experiments. In conclusion, feeding growing-finishing pigs diets containing 5% fermented potato pulp improved weight gain and feed conversion without any detrimental effects on carcass traits. The improvements in pig performance appeared to be mediated by improvements in nutrient digestibility.
This study was performed to investigate the effect of the water-extract from non-fermented or fermented Chaga mushrooms (Inonotus obliquus) on the proliferation and apoptosis of the NIH3T3 mouse normal fibroblast cells and various human cancer cell lines including HCT-15 human colon carcinoma, AGS human gastric carcinoma, MCF-7 human breast adenocarcinoma, Hep3B human hepatocellular carcinoma and HeLa human cervical carcinoma using MTT(3-[4,5-dimethylthiazol-2-yl] -2,5-diphenyl tetrazolium bromide) assay and DNA fragmentation. In an anti-cancer test using various human cancer cells, fermented Chaga mushroom extract showed higher antiproliferating effect than that of non-fermented Chaga mushroom extract. Mouse normal NIH3T3 cells were exhibited 80% above survival under fermented or non-fermented Chngn mushroom extract of various concentrations(0, 0.5 and 1 mg/ml). Fermented Chaga mushroom extract significantly inhibited cell growth on HCT-15 cells in a dose-dependent manner. HCT-15 cells treated with non-fermented or fermented Chaga mushrooms extract produced a distinct oligonucleosomal ladder with different sizes of DNA fragments, a typical characteristic of cells undergoing apoptosis. These results suggest that fermented Chaga mushroom extract suppresses growth of HCT-15 human colon carcinoma cells through apoptosis.

In this study, the antioxidant activities, cellular protective effects, and inhibitory effects on elastase of non-fermented and fermented extracts of Parthenocissus tricuspidata (P. tricuspidata) stem using Lactobacillus pentosus were investigated. The free radical scavenging activities ($FSC_{50}$) of non-fermented and fermented extracts were 42.3 and $34.5{\mu}g/mL$, respectively, in which the activity after fermentation was approximately 18.4% higher. Reactive oxygen species (ROS) scavenging activities ($OSC_{50}$) in $Fe^{3+}-EDTA/H_2O_2$ system of non-fermented and fermented extracts were 2.6 and $2.5{\mu}g/mL$, respectively. The activity after fermentation was approximately 4.2% higher. In the $^1O_2$-induced cellular damage of erythrocytes, the cellular protective effects (${\tau}_{50}$) of non-fermented and fermented extracts were 126.4 and 173.0 min at $50{\mu}g/mL$, respectively. The activity after fermentation was approximately 34.0% higher. The effect of fermented extract was 3.9 times higher than $(+)-{\alpha}$-tocopherol (${\tau}_{50}=43.4min$), known as a lipophilic antioxidant at $50{\mu}g/mL$. The inhibitory effect of elastase was investigated to predict the anti-wrinkle efficacy using Hs68 human fibroblasts cells. The elastase inhibitory activities ($IC_{50}$) of non-fermented and fermented extracts were 873.6 and $687.8{\mu}g/mL$, respectively, and the activity after fermentation was approximately 21.3% higher. These results indicated that fermented extract of P. tricuspidata stem has potentials as natural cosmetic ingredients with antioxidant and anti-wrinkle effect.
As probiotics play an important role in maintaining a healthy gut flora environment through antitoxin activity and inhibition of pathogen colonization, they have been of interest to the medical research community for quite some time now. Probiotic bacteria such as Lactobacillus plantarum, which can be found in fermented food, are of particular interest given their easy accessibility. We performed whole-genome sequencing and genomic analysis on a GB-LP1 strain of L. plantarum isolated from Korean traditional fermented food; this strain is well known for its functions in immune response, suppression of pathogen growth, and antitoxin effects. The complete genome sequence of GB-LP1 is a single chromosome of 3,040,388 bp with 2,899 predicted open reading frames. Genomic analysis of GB-LP1 revealed two CRISPR regions and genes showing accelerated evolution, which may have antibiotic and antitoxin functions. The aim of the present study was to predict strain specific-genomic characteristics and assess the potential of this new strain as lactic acid bacteria at the genomic level using in silico analysis. These results provide insight into the L. plantarum species as well as confirm the possibility of its utility as a candidate probiotic.
Hyperglycemia or high glucose (HG), is the hallmark of diabetes, known to induce oxidative stress, release of chemokines, and cytokines, which confer endothelial cell damage. On the other hand, microbial transformation of organic materials often leads to certain changes in their product structures which could enhance their biological activities. The aim of this study was to investigate the beneficial effects of fermented Gastrodia elata (FGE) in HG induced human umbilical vein endothelial cells (HUVECs) dysfunction. GE, fermented by Saccharomyces cerevisiae, which has an extensive history of safe use, exhibited higher phenolic compounds content than those of Gastrodia elata (GE). The HG-induced production of nitric oxide (NO) and interleukin-8 (IL-8) were significantly attenuated by FGE pretreatment to the cells, in a concentration dependent manner. In addition, FGE showed marked activity in free radical scavenging. These results suggest that FGE possesses beneficial effects in protecting against the oxidative stress, and inflammatory conditions in endothelial cells, caused by HG.
Panax ginseng CA Meyer, a herb from the Araliaceae, has traditionally been used as a medicinal plant in Asian countries. Ginseng extract fermented by ginsenoside-${\beta}$-glucosidase treatment is enriched in ginsenosides such as Rh2 and Rg3. Here we show that a fermented ginseng extract, BST204, has anti-proliferative and anti-invasive effects on HT-29 human colon cancer cells. Treatment of HT-29 cells with BST204 induced cell cycle arrest at $G_1$ phase without progression to apoptosis. This cell cycle arrest was accompanied by up-regulation of tumor suppressor proteins, p53 and p21$^{WAF1/Cip1}$, down-regulation of the cyclin-dependent kinase/cyclins, Cdk2, cyclin E, and cyclin D1 involved in $G_1$ or $G_1/S$ transition, and decrease in the phosphorylated form of retinoblastoma protein. In addition, BST204 suppressed the migration of HT-29 cells induced by 12-O-tetradecanoylphorbol-13-acetate, which correlated with the inhibition of metalloproteinase-9 activity and extracellular signal-regulated kinase activity. The effects of BST204 on the proliferation and the invasiveness of HT-29 cells were similar to those of Rh2. Taken together, the results suggest that fermentation of ginseng extract with ginsenoside-${\beta}$-glucosidase enhanced the anti-proliferative and the anti-invasive activity against human colon cancer cells and these anti-tumor effects of BST204 might be mediated in part by enriched Rh2.

For development of premium sauce, fermented sauces containing ferment (with wheat flour and soybean) and extract(s) of Styela clava (Korean name: miduduk) tunic and/or mulberry leaves and/or onion were prepared, and their angiotensin converting enzyme (ACE) inhibitory and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activities were evaluated. All sauces containing extract(s) showed increased ACE inhibitory and DPPH radical scavenging activities. Especially, sauces containing extracts of mulberry leaves and onion showed superior activities, with 26.92% and 40.66% relatively increased ACE inhibitory and DPPH radical scavenging activities, respectively, compared to control (no extract was added). These results suggest that extracts of mulberry leaves and onion could improve antihypertensive and antioxidant activities of fermented sauce.
This study was conducted to collect basic marketing and management data from businesses run by farmers producing traditional Kanjang and Doenjang, fermented soybean products. The actual conditions of the fermentation processing sites at farmhouses participating in the production of soybean fermentation products were investigated. The subjects of this survey were 130 small size farmhouse Kanjang and Doenjang processing sites nationwide. The frequency, percentage, t-value, chi-square, and ANOVA were used for statistical analysis. The farmhouse business surveyed were generally operated by rural women for non-farming business income. The percentage of co-worked sites was 71.2 while the percentage of sites operating with permits was 39.2. Generally, the the facilities, size, number of working people, and output were very small. The areas in which the products were sold, site-located regions and region metropolises, were equally weighted. Sales volumes in region metropolises for sites with permits were a little higher than sites without permits. Without regard to operation type, the percentage of sales was highest in cases of direct sale by customer order. Co-worked sites have been found to have more experience in publicity than individually operated sites. As for methods of publicity, co-worked sites use mass media such as newspapers and broadcasting. Individually operated sites usually use social organizations and acquaintances. It was found that the average sales of each site totaled 25 million Won. The average income of each site was 12 million Won, and average income per participant was 3 million Won. Total sales income for sites with permits was significantly higher than sites without permits. But personal income was much higher at individually operated sites without regard to whether the site had a permit or not. This kind of business was found to contribute to an individual's time management skills as well as instill a sense of pride.
Marine organisms are sources of many bioactive compounds, such as essential fatty acids, essential amino acids, vitamins, and minerals, making them useful candidates for the production of safe bioactive substances. They also synthesize glutamic acid, which can be used to produce γ-aminobutyric acid (GABA), the major inhibitory neurotransmitter in the central nervous system (CNS), via fermentation with Lactobacillus brevis BJ-20. This study investigated the degree to which fermented sea tangle (FST) inhibits enzymes such as acetylcholine esterase (AChE) and prolyl endopeptidase (PEP) and affects memory of normal mice using the T-maze test. FST inhibited more than 90% of AChE at 1 mg/mL and 50% of PEP at 8 mg/mL. Oral FST (100 mg/kg) significantly improved performance of normal mice on the T-maze. Therefore, sea tangle fermented with L. brevis BJ20 effectively contributes to memory improvement and might be a useful functional food ingredient.

In this study, we developed a fermented TMR producing system which could a continuous operation of baling and wrapping the mixed TMR. The baling part has fixed chamber of dia. 900 mm and width 900 mm. And the the turn-table type wrapping part is very compact compared to conventional one in market. The test result were: The absorbed power of the prototype in working was 9.0~15.7 kW. The combined baling and wrapping performance was over 20 bales/hr. The leakage in the process was around 1.9 kg for making a 350 kg TMR bale. The diameter of wrapped TMR bale was 900~950 mm, and its weight was 350 kg in average. Therefore the density was $718kg/m^3$, and it was very high density to the inputted TMR. The pH of the fermented TMR was 5.0~5.6 which was similar to the fermented haylage, also the TMR had no butyric acid's odor.
