제주산 궁천조생의 특성과 젤리화 식품의 제조 (Physicochemical Properties of Citrus miyakawa wase Produced in Cheju, and Citrus Jam-making)

  • Soluble solids and total carbohydrates of Citrus miyakawa wase harvested middle of November 1993 Topyung-Dong, Seogwipo-si, and Cheju were 10.7 and 8.57%, and carbohydrate was consisted of about 1/2 sucrose, 1/4 glucose and 1/4 fructose, respectively. Acid content of citrus Juice was 1.04%, and citric acid was 74.27% of total organic acids. Fruit weight, peel thickness, soluble solids, pH, hardness and edible part ratio had a good correlation in linear function with increasing fruit size. Total carbohydrate, reducing sugar and vitamin C of citrus jam made on optimum conditions were 65.33%, 27.98%, and 51.40mg/100g , respectively. Microbial growth on the products were not recognized at 3$0^{\circ}C$ for a month. Compared with other related citrus jellying products, the test sample was excellent in appear ance, taste and total preference degree on sensory evaluation.

노지감귤 단기 저장가능성에 대한 경제적 효과 검토 (An Economic Review on the Short-run Storability of Field Citrus in Jeju)

  • 제주지역에서 대부분 생산되는 감귤류는 재배방식에 따라 노지에서 재배되는 온주감귤, 시설하우스에서 재배되는 온주감귤, 노지이지만 비가림 시설을 해서 재배되는 온주감귤 그리고 노지 온주감귤 보다 재배 시기가 늦고 품종도 다른 한라봉, 천혜향, 진지향 등 만감류로 구분된다. 만감류는 온주감귤 보다 맛 등 품질이 좋아 소비량이 꾸준히 증대되어 '90년 이후 최근까지 재배면적과 생산량이 지속해서 늘어나고 있고, 비가림 감귤 재배도 정부의 정책적 지원과 더불어 당도개선 등 품질향상 효과가 있어 지속해서 늘어나고 있다. 그러나 이에 반해 2010년 이후 노지 감귤의 재배면적은 지속해서 감소하고 있다. 이 연구는 감귤류 중 생산비중이 높지만 지속해서 재배면적이 줄고 있는 노지 감귤을 연구의 대상으로 삼고, 특히 수급 안정에 핵심적인 역할을 할 수 있을 것으로 파악되는 저장부문의 수급안정 기여 가능성을 탐색하는데 초점을 두고 있다. 노지감귤 중장기 수급모형 추정 및 전망을 위해 노지감귤 개별 품목에 대한 부분균형모형을 구축하고 품목별 모형내 개별방정식은 계량경제학 방법을 이용하여 추정하였다. 생산량 저장 시나리오 분석 결과, 재배면적은 2027년 기준 감귤 생산량을 5% 저장했을 때 14.49ha, 10%인 경우 14.97ha, 15%인 경우 15.50ha에 이를 것으로 분석된다. 이 연구는 현재 산지에서 저장에 초점을 두고 있지 않은 상황에서 저장가능성에 대한 종합적인 기술적 및 경제적인 검토를 하고 있다는 데 선행연구들과 차별성이 있다.

당유자 유래 Flavonoids 농축액이 첨가된 감귤 음료의 쥐 비만 및 혈중 지질에 미치는 영향 (Effect of Concentrated Dangyooja-derived Flavonoids Extract Added to Citrus Beverage on Obesity and Blood Lipids in Rats)

  • 본 연구에서는 제주산 청과즙과 제주 재래귤인 당유자 과즙 내의 기능성 성분을 대량 추출하여 새로운 타입의 고기능성 감귤 음료를 개발코자 기능성 연구를 실시하였다. 관능 검사를 통해 청과 착즙액 30%에 KILO Prep을 이용하여 얻은 당유자 유래 플라보노이드 농축액 15%를 포함하는 Citrus-F 음료를 제조하였다. 새롭게 제조된 Citrus-F를 경구 투여하여 쥐 체중의 변화를 관찰한 결과 HF diet(고지방사료)와 Citrus-F를 병행하여 급이한 군의 경우 급이 7주차부터 HF diet만 단독으로 급이한 군에 비하여 뚜렷하게 체중이 감소되어 그 효과는 실험이 끝나는 9주째까지 지속되었다. 또한 Citrus-F가 혈중지질에 미치는 영향을 알아보기 위해 경구 투여한 쥐를 대상으로 한 혈청검사에서 혈중 지방 함량은 Citrus-F 처리군에서 감소하는 경향을 보였다. 특히 급이 시점을 초기부터 시작한 경우에는 triglycerid의 수치는 감소하였지만 total cholesterol과 HDL-cholesterol의 수치에는 별다른 영행을 미치지 못했다. 그러나 5주 후부터 0.1% Citrus-F를 급이한 처리군에서 triglyceride, total cholesterol과 HDL-cholesterol의 수치가 모두 감소함을 확인할 수 있었다. 본 연구 결과 당유자 유래 플라보노이드 농축액을 15% 포함하는 고기능성 Citrus-F 음료는 비만 및 각종 혈중 지질 관련 질병의 예방에 효과가 있을 것으로 사료된다.

감귤 추출물의 미백효능 및 항산화 효능에 관한 연구 (The Study on the Whitening Effects and Antioxidant Activity of Various Citrus Fruits)

  • 본 연구에서는 제주도 자생 감귤 17종에 대하여 탈색소효과(depigment effect)를 연구하였다. B16 멜라닌 생성세포(B16 melanoma cell)를 이용하여 tyrosinase 및 멜라닌 생성억제 효과를 연구한 결과 대조군 대비하여 농도 의존적으로 감소하는 3종의 미성숙 온주밀감(immature Citrus unshue), 팔삭(Citrus hassaku), 진지향(Citrus sinensis ${\times}$ reticulata)을 도출하였다. 또한, 이와 같이 도출된 감귤 추출물을 이용하여 멜라닌 세포 생성(melanogenesis)에 영향을 미치는 tyrosinase, DOPAchrome tautomerase (TRP-2)와 DHICA oxidase (TRP-1) 단백질 발현을 실험한 결과 tyrosinase, TRP-1, TRP-2 단백질 발현이 감소함을 나타내었다. 특히 이들 중 미성숙 온주밀감은 tyrosinase와 TRP-1 단백질 발현에서 유의적으로 감소하는 결과를 보였다. 본 연구 결과로써 미성숙 온주밀감은 모든 실험에서 우수한 효과를 나타내어 UV에 의해서 야기되는 피부 색소 침착을 방지할 수 있는 물질로서 기대할 수 있다.

감귤박을 첨가한 기능성 한지제조 기술개발(제1보) - 한국산 감귤박 첨가 한지 - (Development of Functional Hanji Added Citrus Peel(I) - Hanji added Korean citrus peel -)

  • This study was carried out to develop a new application field and obtain the basic data of citrus peel as waste in Jeju island and traditional Hanji for producing functional Hanji. The results measuring physical and optical properties, water vapor permeance and antibacterial activity are as follows. It was revealed that apparent density go as down but bulk raise up in the structural view of Hanji with increasing of the addition various Korean citrus peel (citrus unshiu, cheonggyun and hanrabong peel, and citrus unshiu peel powder) percentages, and that the density of Hanji added citrus unshiu peel was higher, but bulk was lower in compared with Hanji added other kinds of peel. Those Hanji added citrus unshiu peel, cheonggyun peel, hanrabong peel and citrus unshiu powder were very great not only in the strength (breaking length, burst index, tear index and folding endurance) but also in water vapor permeant rate in comparison with Hanji. The pHs of Hanji were neutrality (7 to 8). The brightness of the Hanji added various citrus peel percentages was low in compared to Hanji, and the 40% addition of hanrabong peel was the lowest. When 40% hanrabong peel was added to Hanji, it was very yellow in the color degree. When cheonggyun peel was added to Hanji manufacture, water vapor permeant rate was highly effective. It is known that vacant space of intrafiber was reduced by image analysis of Hanji and the additions of peel of citrus unshiu, cheonggyun and hanrabong were distributed equally in the interior of Hanji. The antibacterial activity of Hanji added citrus unshiu peel is more than 98%. After all, it would be able to increase utilization of Hanji, extensively. Namely, production of high quality Hanji added functional materials is expected for new valuable industry of citrus peel and Hanji.

First Report of Citrus Scab on Trifoliate Orange (Poncirus trifoliata)

  • Citrus scab symptoms were observed on leaves of trifoliate orange (Poncirus trifoliata) in open field of Citrus Research Institute, National Institute of Horticultural and Herbal Science. Typical scab pustules were formed and they were elevated protuberances form and light brown to grey. The pathogens were isolated from the symptomatic leaves and then were identified to Elsinoë fawcettii by morphological characteristics, pathogenicity and PCR assay. The morphological characteristics of colonies formed very slow-growing, pulvinate, or raised and deeply fissured, gummy to mucoid or tomentose colonies on potato dextrose agar medium. The pathogens were pathogenic to leaves of Satsuma mandarin, lemon, sour orange and grapefruit with typical scab symptoms. In PCR assay, specific amplified of products of 717 bp with Efaw-1 and 384 bp with Efaw-2 were observed from trifoliate isolates and E. fawcettii as reference but not from E. australis. This is first report of trifoliate orange being positive for citrus scab disease.

귤홍의 함유성분 분석과 항산화 활성 (Component Analysis and Antioxidant Activity of Citrus Peel)

  • This study examined the components and physicochemical properties of citrus peel as a natural health food source by measuring the general and antioxidative contents of citrus peel. Total contents of carbohydrates, crude protein, crude lipid, and ash were 72.1%, 6.6%, 1.3%, and 3.7% respectively. Caloric content of citrus peel was 334.5 kcal, while total dietary fiber was 32.1%. Regarding mineral contents, Ca was the most abundant mineral, followed by K, Mg, and P. Total phenol contents of the 70% ethanolic extracts of citrus peel was $66.4{\pm}8.74mg\;GAE/g$. Total flavonoid contents of the 70% ethanolic extracts were $14.4{\pm}3.28mg\;RE/g$. The antioxidative activities of citrus peel were significantly increasing in a dose dependent manner on DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging, ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) radical scavenging, FRAP(ferric reducing antioxidant power) activity and reducing power. Therefore, the general nutrients and other antioxidant bioactive materials in citrus peel proved that citrus peel possesses a high potential materials as a nutritious food.

동결건조 감귤 분말을 첨가한 양갱의 품질특성 (Quality Characteristics of Yanggaeng Supplemented with Freeze-dried Citrus Mandarin Powder)

  • This study assessed the quality characteristics of Yanggaeng prepared with different ratios of Citrus mandarin powder: 0, 2, 4, and 6%. The moisture content was lowest in the controls, while there were no significant differences among the groups supplemented with Citrus mandarin powder. The pH significantly decreased as the amount of Citrus mandarin powder increased. The lightness (L), redness (a), and yellowness (b) were lower in control groups compared to Citrus mandarin powder groups. Texture profile analysis showed that the hardness of the Citrus mandarin powder groups were lower than the control (which was the highest). The total polyphenol and flavonoid content and DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity increased as the amount of Citrus mandarin powder increased. The result of a sensory evaluation test revealed no significant differences between the controls and groups with 2% Citrus mandarin powder added in color, smell, taste, texture, and overall acceptability.
