This study was conducted to evaluate quality characteristics of noodles when different concentrations of chlorella extract powder were added to the wheat flour. The characteristics of noodle including cooking properties, color, mechanical texture properties, and sensory properties were determined. The noodles containing chlorella extract powder exhibited higher values in cooked weight, volume, moisture absorption, and cooking loss. When the amount of chlorella extract powder increased, the Hunter L(lightness) value, a(redness) value of cooked noodles decreased but b(yellowness) value increased. From the textural properties measured by texture analyzer, the noodles with chlorella extract powder were significantly lower in hardness, cohesiveness, springiness, gumminess, and chewiness than those of 100% wheat noodle. The results of sensory evaluation of cooked noodles containing chlorella extract powder indicated that the cooked noodle with 1.5% chlorella extract powder showed the highest value. Based on cooking properties and sensory evaluation, chlorella extract powder up to 1.5% could be substituted for wheat flour to improve the noodle quality.
Two experiments were conducted to investigate the dietary effect of chlorella vulgaris on egg production and lutein incorporation into chicken eggs. In Exp. 1, a total of three hundred, 70 wk-old Hy-Line brown layers were divided into six groups with five replicates and fed each experimental diet (corn-SBM based control diet and diets with 0.1, 0.3 or 0.5% chlorella powder and with 0.8 or 2.4% chlorella cultured media) for 6 wk, respectively. The egg production in the groups fed diets containing the chlorella powder and chlorella cultured media were higher than that of the control group (p<0.001). As dietary chlorella levels increased, the yolk color linearly increased. However, there were no significant differences in egg-shell qualities. The layers fed diet with 2.4% chlorella cultured media showed the highest Haugh unit value. In Exp. 2, a total of one hundred-eight 80 wk-old Hy-Line brown layers were assigned into four groups with three replicates per group (9 birds per replicate). The birds were fed one of four experimental diets (0, 0.5, 1.0 or 2.0% chlorella powder) for 4 wk, followed by a 14 d feeding of a withdrawal diet devoid of chlorella powder. At 2 wk, the lutein greatly increased with increasing levels of chlorella powder in birds fed diets containing more than 1%. The maximum incorporation of lutein into eggs was reached after 2 or 3 wk of feeding diets with chlorella powder. After a 7 d withdrawal, the lutein contents of egg yolks in the groups fed diets with more than 1% chlorella powder were still higher than that of control group (p<0.05). No significant differences in the lutein levels were found among groups after a 14 d withdrawal period. These results indicated that the use of chlorella in layer diets was effective in improving egg production and egg quality and for the production of lutein fortified eggs.
Yoghurt base was prepared from skim milk added with 0.25∼2.0%(w/v) of chlorella extract powder and fermented with lactic acid bacteria(Streptococcus thermophilus : Lactobacillus casei = 1:1) at 37$^{\circ}C$ for 24 hours. Quality characteristics of the yoghurts were evaluated in terms of acid production, number of viable cell, color, texture property, and sensory property during lactic acid fermentation. The addition of 0.25% chlorella extract powder stimulated the growth of lactic acid bacteria which showed the highest number of viable cell counts(l.46${\times}$10$\^$8/ CFU/mL) after 12 hours incubation, and also enhanced the acid production which was pH 4.33 after 12 hours incubation. The L values(brightness) of the yoghurts containing chlorella extract powder were lower than control group, whereas the b values(yellowness) were higher. The hardness and gumminess of the yoghurt added with 0.25% chlorella extract powder were higher than others. Sensory scores of the yoghurt added with 0.25% chlorella extract powder were significantly higher than other groups in color, chlorella odor, sweet taste, chlorella taste, mouth feel, aftertaste and overall acceptability.
Chlorella is an attractive potential food source because it is high in protein and other essential nutrients; when dried, it is about 45% protein, 20% fat, 20% carbohydrate, 5% fibre, and 10% minerals and vitamins. It has been widely used as a well-being food. We investigated the quality characteristics of cookies prepared after addition of various concentrations of chlorella powder (0%, 1%, 3%, and 5%, all w/w) as a substitute for flour. In this study, as chlorella powder concentration rose, decreases in the moisture content, pH, L, a and b value became evident. The spread factor and hardness of the cookies slightly increased after the addition of chlorella powder. Sensory evaluation scores in terms of color, flavor, and texture were statistically very similar, but taste and overall acceptability scores were lower than those of the control. The result of this study showed that the quality of the cookies with the addition of 1% chlorella powder was the best in terms of its taste, flavor, texture, and sensory properties.
The current study was conducted to identify the differences in the rheological properties of Chlorella sp. powder cultured in a fermentor and in a pond-like environment. Cells. cultured in the same media were harvested and spray dried. The biomass yield from the fermentor culture was 4.7% (dry basis), while that from the pond was 4.3% (dry basis). Measurements of the loose bulk density, tapping test, Hausner's ratio, and compressibility test all revealed differences between the rheological properties of the Chlorella sp. from the two cultivation systems. Although both the fermentor and pond cultured Chlorella sp. showed the same angle of repose, the mean size of the cells was 2.26 $\mu\textrm{m}$ and 2.89 $\mu\textrm{m}$, respectively. The weight of the Chlorella sp. tablets cultured in the fermentor and pond was 0.663 g/tablet and 0.593 g/tablet, respectively, while the friability of the tablets was 21% and 41%, respectively. Observation by Transmission Electron Microscope (TEM) showed that the cell wall of the Chlorella sp. cultured in the fermentor was thinner and more spherical than that cultured in the pond, thereby providing the main characteristic rheological properties of the powder.

Effects of fructooligosaccharide (1%, w/w) and chlorella powder (0.01% and 0.02%, w/w) on kimchi fermentation were studied. The values of pH and total acidity of kimchi containing fructooligosaccharide or chlorella powder were changed slowly compared to those for the kimchi sample containing 1% sugar during fermentation at 4$^{\circ}C$. Growth of lactic acid bacteria was also inhibited by addition of fructooligosaccharide or chlorella powder. Futhermore, addition of 1% fructooligosaccharide and 0.02% chlorella powder showed synergic inhibitory effects against decrease of pH, increase of acidity and lactic acid bacteria growth. Color values of L, a and b were higher in kimhi with fructooligosaccharide at early stage of fermentation. In sensory evaluation including color, sour taste, crispness and overall quality, kimchi containing both 1% fructooligosaccharide and 0.02% chlorella powder.

The quality characteristics of sulgidduk, a steamed rice cake, with chlorellaa sulgidduk) were evaluated. Chlorella sulgidduk was prepared in the different ratio of chlorella powder (0, 0.2, 0.5 or 1%, w/w) and water content (15 or 20%, w/w). In mechanical texture characteristics, hardness, gumminess and brittleness were higher in 15% water content chlorella sulgidduk and lower in 20% water content chlorella sulgidduk than in the absence of chlorella (the control sulgidduk), wherease 20% water content chlorella sulgidduk and a significantly higher adhesiveness and cohesiveness values (p<0.05) compared with control 24 hours storage at $25^{\circ}C$, the good texture characteristics were maintained in 20% water content chlorella sulgidduk. In sensory evaluation, the most favorite quality characteristics were shown in the sulgidduk with 0.2 and 0.5% chlorella powder.
Mul-kimchi was prepared with addition of 0.025, 0.05, and 0.1% (w/v) chlorella powder and fermented at $10^{\circ}C$ for 6 days. Quality characteristics of the Mul-kimchi were evaluated in terms of acid production (pH and titratable acidity) and lactic acid bacterial counts during fermentation. The addition of chlorella powder stimulated the growth of lactic acid bacteria and significantly enhanced the acid production. After 3 days fermentation, titratable acidity of chlorella Mul-kimchi was 0.12-0.14% and was higher than that (0.11%) of Mul-kimchi made without chlorella. The acid production and the number of viable lactic acid bacterial cell increased with increasing the concentration of added chlorella powder. The sensory score of Mul-kimchi added with 0.05% chlorella powder showed the highest values in taste and overall acceptability among the tested Mul-kimchi preparations. When chlorella Mul-kimchi preparations incubated for 3 days were kept at $4^{\circ}C$ for 19 days, their quality characteristics were well maintained through storage period. According to sensory score and storage ability, the optimum concentration of chlorella powder was around 0.05%.
Yogurt base was prepared from skim milk added with $0.2{\sim}1.0%\;(w/v)$ chlorella powder and fermented with lactic acid bacteria (the mixed strain of Lactobacillus acidophilus, Bifidobacterium longum and Streptococcus thermophilus) at $40^{\circ}C$ for $12{\sim}18\;h$. Quality characteristics of the yogurt were evaluated in terms of acid production (pH and titratable acidity), number of viable cells, viscosity and sensory properties. The addition of chlorella powder stimulated the growth of lactic acid bacteria and remarkably enhanced the acid production. After 12 h incubation, titratable acidity of chlorella yogurt was $1.16{\sim}1.33%$ and was higher than that (1.02%) of yogurt made with only skim milk. However, the viscosity of yogurt was decreased by the addition of chlorella powder. The sensory score of yogurt added with 0.2% chlorella powder was similar to ordinary yogurt in taste and overall acceptability. When chlorella yogurt was kept at $4^{\circ}C$ for 15 days, its quality-keeping properties except for number of viable cells were relatively good. According to sensory score and storage ability, the optimum concentration of chlorella powder was around 0.2%.
This study was performed to investigate the effect of chlorella on cadmium (Cd) toxicity in Cd-administered rats. Sixty male Sprague-Dawley rats (14 week-old) were blocked into 6 groups. Cadmium chloride was given at levels of 0 or 325 mg (Cd: 0, 160 ppm), and chlorella powder at levels of 0, 3 and 5%. Cadmium was accumulated in blood and tissues (liver, kidney and small intestine) in the Cd-exposed groups, while the accumulation of Cd was decreased in the Cd-exposed chlorella groups. Fecal and urinary Cd excretions were remarkably increased in Cd-exposed chlorella groups. Thus, cadmium retention ratio and absorption rate were decreased in the Cd exposed chlorella groups. Urinary and serum creatinine, and creatinine clearance were not changed in experimental animals. In addition, metallothionein (MT) synthesis in tissues was increased by Cd administration. The Cd-exposed chlorella groups indicated lower MT concentration compared to the Cd-exposed groups. Moreover, glomerular filtration rate (GFR) was not changed by dietary chI orella and Cd administration. According to the results above, this study could suggest that Cd toxicity can be alleviated by increasing Cd excretion through feces. Therefore, when exposed to Cd, chlorella is an appropriate source which counteracts heavy metal poisoning, to decrease the damage of tissues by decreasing cadmium absorption.
