Effect of Chinese Chives Addition on Retrogradation Rate and Storage Stability of Frozen Noodle (부추 첨가가 냉동면의 노화 및 저장 안정성에 미치는 효과)

  • Effects of addition of Chinese chives into frozen noodle on retrogradation of the cooked frozen noodle were examined by enzymatic evaluation during the storage 3 days at $4^{\circ}C$. The retrogradation rate during storage was significantly reduced by addition Chinese chives. Thus we hypothesized that retarogardation and textural changes of frozen noodle might be linked to thermostable amylase in Chinese chives. The amylase isolated from Chinese chives was affected by temperature and pH of buffer used. The enzyme was mainly extracted 20 mM potassium phosphate buffer(pH 7.0). The enzyme was extremly stable at wide temerature and pH. Amylase activity was maximal at $50^{\circ}C$ and pH 7.5. The enzyme was not inactivated by heat treatment at $70^{\circ}C$, $80^{\circ}C$ for 30 min. We suggest the enzyme was stable at high temperature. To investigate the effect of different storage packge on texture properties, color, sensory evaluation, parent-packged and unparent packaged frozen noodle was compared with control. As the storage passed, the frozen noodle packaged with parent showed a rapid decrease in the color. The hardness was gradually decreased during storage. It was found that unparent packged must be nessasry in the Chinese chives frozen noodle. In changes of sensory properties by traind panel, Chinese chives frozen noodle with 2% blanched Chinese chives got the highest score in overall acceptability, therefore we tried acceptance test by consumers with 2% blanched frozen Chinese chives noodle.

Effects of Packing Materials on the Keeping Freshness of Chinese Chives(Allium Tubersum Rottler) at Low Temperature Storage (부추 저온저장시 선도유지에 미치는 포장재료의 효과)

  • During the storage period of chives(Allium Tubersum fouler) at low temperature(4-5$^{\circ}C$), weight loss in chives by the packages of LDPE, p.p and HDPE film was decreased less than 1%, however that of chives unpacked was remarkably increased as time went by. Soluble solids of unpacked chives was decreased from 6.0 to 4.6 $^{\circ}$Brix after 2 weeks storage and that of LDPE film sealed was lessened to 4.9-5.9 $^{\circ}$Brix, the treatment of deaeration showed a tendency to decrease a lot to 4.5-4.7 $^{\circ}$Brix. The vitamin C content of chives unpacked was 37.1mg% at before storage, but after one week decreased very much to 15.2mg%, and that in chives packed by the different methods was visibly lessened after 2 weeks storage. the Vitamin C content in chives processed by deaeration sealing method was lessened compared to that at chives processed by sealing only. In the bag of chives packed by HDPE film had low CO$_2$ and C$_2$H$_4$ concentration and the gas concentration in the bag of chives processed by P.P. film was increased as storage period went by. Conclusively the freshness of chives packaged by LDPE and HDPE film maintained for 3 weeks, at P.P film for 2 weeks, but the marketability of chives unpacked was degraded in 3-4 days.

Effect of Companion Planting with Aromatic Plants on the Growth and Pest Control of Lettuce(Lactuca sativa) in Rooftop Urban Agriculture (옥상 도시농업에서 방향식물과의 공영식재에 따른 상추의 생육 및 해충방제 효과)

  • The objective of this study were to assess rooftop urban agriculture and analyze the differences in soil, growth, physiology, and productivity to elucidate the effect of companion planting with various plants, including lettuce (Lactuca sativa), rosemary (Salvia rosmarinus), marigold (Tagetes patula), Korean perilla (Perilla frutescens), and garlic chives (Allium senescens). Measurements were taken every other week from May to August 2023, totaling eight measurement. Regarding the characteristics of the soil planted with lettuce and aromatic plants, the combined planting of lettuce and garlic chives created a favorable soil environment for plant growth. Consequently, the best growth was observed when lettuce and garlic chives were companion planted. Companion planting of lettuce and garlic chives appears to be the most efficient concerning growth and physiology. The productivity of companion planting lettuce and aromatic plants also showed high-quality lettuce when lettuces and garlic chives were companion planted. Therefore, companion planting of lettuces and garlic chives in rooftop urban agriculture is suitable for growth, physiology, and productivity.

Effect of Biostimulator Chlorella fusca on Improving Growth and Qualities of Chinese Chives and Spinach in Organic Farm

  • This study was conducted to investigate the efficacy of freshwater alga, Chlorella fusca on the improvement of growth and qualities in organic spinach and Chinese chives farm. The average height of Chinese chives treated with the chlorella was 3.7 cm smaller than that of the untreated. The leaf width and fresh weight of Chinese chives treated with the chlorella was 0.5 mm wider and 30.3 g heavier than that of the untreated. The commercialization and yield of Chinese chives treated with the chlorella was 11.9% and 18.3%, respectively higher than that of the untreated. Also, the disease severity of gray mold disease of Chinese chives treated with the chlorella was reduced by more than 24.2% when compared with the untreated. The thickness and number of spinach leaves treated with chlorella was 27.9% and 41.8%, respectively higher than that of the untreated. The fresh weight and yield of the spinach treated with the chlorella was 63.6% and 31.5%, respectively higher than that of the untreated. Moreover, the mineral content of K, Ca, Mg, P, Fe, and Mn were recorded higher in the spinach treated with chlorella compared with that of untreated. The results indicated that the freshwater alga, Chlorella fusca is efficient and economical biostimulant in improving plant growth and quality of Chinese chives and spinach in organic farm.

Inhibition Effect of Alcohol Production in Gochujang by Garlic and Chives Extract (마늘과 부추 추출물에 의한 고추장의 알코올 생성 억제 효과)

  • Saccharomyces cerevisiae and Zygosaccharomyces rouxii are known to produce alcohol in gochujang. To reduce alcohol production, garlic and chives were applied to gochujang solution to find their inhibitory effect on S. cerevisiae and Z. rouxii. The 70% ethanol extract of garlic and chives showed significant inhibition activity against S. cerevisiae and Z. rouxii, showing growth inhibition zone of 14.00±0.00~25.33±0.58 mm by disc diffusion method. In addition, the addition of 70% ethanol extract of garlic and chives in 10% gochujang solution spiked with S. cerevisiae and Z. rouxii reduced the numbers of total aerobic bacteria (below 7 Log CFU/g) and yeast (below 4 Log CFU/g), alcohol content (below 0.30%), respectively. In conclusion, the addition of garlic ethanol (70%) extract or chives ethanol (70%) extract to gochujang inhibited the growth of S. cerevisiae and Z. rouxii, resulting in reduced alcohol content in gochujang. For further study, it is necessary to conduct food application experiments by using real gochujang paste.

Application of Practical Immobilizing Agents for Declining Heavy Metal (loid)s Accumulation by Agricultural Crop (Allium wakegi Araki)

  • In order to reduce the accumulation of toxic metals (As, Cd and Pb) in the chives, various immobilizing agents such as a soil pH change-inducing immobilizing agent (lime), sorption agent (compost, spent mushroom compost), soil pH change and sorption agent (biochar) and, dissolved organic carbon (DOC) coagulator (gypsum) and uncontaminated soil were applied to the contaminated soils in isolation and in combination. Then chives were grown and determined for As, Cd and Pb concentrations accumulated in the edible part at harvest. The Cd and Pb concentrations of the chive plant grown in the contaminated soil (no treatment) exceeded the legislated Korean guideline values (Cd: $0.05mg\;kg^{-1}$, Pb $0.1mg\;kg^{-1}$) and As concentration ($21mg\;kg^{-1}$) was 1,000 times higher than chives plant grown in uncontaminated environment in Korea. Application of lime and gypsum significantly reduced As, Cd and Pb concentrations in all chives examined, due to the increased soil pH and decreased soil DOC. Also, application of combination treatments involving DOC coagulator such as gypsum together with lime decreased As, Cd and Pb concentrations from 21, 1.3 and $9.7mg\;kg^{-1}$ to 2.1, 0.1 and $1.1mg\;kg^{-1}$, respectively. Consequently, it was concluded that pH change-inducing immobilizing agent (lime) which was already well known and DOC coagulator such as gypsum could be used as a promising immobilizing agent for safer chives plant production.

Study on Residual Properties and Risk Assessment of α-Cypermethrin and Deltamethrin in the Chives (Allium tuberosum R.) and Spring onion (Allium wakegi Araki) (시설재배 부추(Allium tuberosum R.)와 쪽파(Allium wakegi Araki) 중 α-Cypermethrin과 Deltamethrin의 잔류특성 및 안전성 평가)

  • BACKGROUND: This study was conducted to evaluate the residual characteristics and safety assessment of αcypermethrin and deltamethrin in minor crops, chives and spring onion cultivated in greenhouse. METHODS AND RESULTS: The insecticides α-cypermethrin 2% EC and deltamethrin 1% EC used in the experiment were diluted 1,000 times and then sprayed on chives and spring onion twice with 1-week intervals at 0, 7, 14, and 21 days before harvest. The residual insecticides were extracted from the minor crops using QuEchERS method and analyzed by GC-MS/MS. The average initial residues of α-cypermethrin and deltamethrin in chives after 21 days decreased from 2.74 to 0.82 mg/kg and 1.12 to 0.16 mg/kg, respectively. Similarly, in spring onion the residues after the same periods decreased from 0.26 to <0.01 mg/kg for α-cypermethrin and from 0.07 to <0.01 mg/kg for deltamethrin. CONCLUSION(S): The PHIs (pre-harvest intervals) for α-cypermethrin and deltamethrin in chives are recommended as 14 days before harvest with twice applications of the pesticides, whereas for α-cypermethrin in spring onion PHI of 7 days before harvest is recommended with 3 times of applications and PHI of 21 days for deltamethrin. The theoretical maximum daily intakes of cypermethrin and deltamethrin were 68.8% and 64.2%, respectively, indicating that residues of both compounds did not pose considerable health risks to consumers.

  • The Korean Chinese Chives(Allium tuberosum Rottler) are a perennial herb and have been used from ancient as food and medical purpose in Korea. They are known to posses diuresis, sthemia activities and used for the treatment or anemia, haematemesis, and eczema. Recently the Korean Chinese Chives have been studied on the morphologic property, the classification of origin and chemical constituent. However there has not been studied on kg) (or 6 days and observed the hematological effects in dogs. The results are as follows, 1. The red blood cell count was significantly (P < 0.05) decreased on day 2. 2. The reduced glutathion(GSH) concentration was significantly (P< 0.05) increased on day 4 and Met-hemoglobin concentration was significantly (P< 0.05) increased on 3 hrs after administration. 3. Packed cell volume(PCV) and hemoglobin concentration were not showed significant difference during experimental periods. 4. The mean corpuscular volume(MCV) was significantly(P < 0.05) increased on 3 hours after administration.

Economic Analysis of Chives for Packaging (쪽파 포장을 위한 경제성 고찰)

  • Economic feasibility was analyzed for packaging of chives, which are currently distributed without packaging. The additional revenue from packaging of chives was estimated to be 3,471 million won in summer season (May to September in Korea) and 3,083 million won in winter season (October to April). But, the additional cost due to packaging was estimated to be 1,926 million won in summer season and 1,254 million won in Winter season. Thus, net profits were estimated to be 1,545 million won and 1,829 million won respectively. In terms of unit (1.4 kg), the net profit with packaged distribution estimated to be 247.9 won/unit in summer season and 226.5 won/unit in winter season, respectively. therefore, total profit through packaging was estimated to be 2,799 million won per year.

The effects of the Korea chinese chives ethyl acetate on hematological changes in dog (부추의 에텔아세테이트추출액의 투여가 개의 혈액학적 변화에 미치는 영향)

  • The Korea chinese chives are a major edible vegetable and they are traditionally been used as a folk medicine. However recently studies on the Allium tuberosum are mainly on the morphological property and the chemical constituent. There are no reports concerning hematological changes in dogs administrated ethyl acetate extracts of Korea chinese chive. This experiment was conducted to investigate the hematological changes in dogs administrated ethyl acetate extracts of the Korea chinese chives($5m{\ell}/mg$) for 6 days. During administration blood samples were collected at 3h, 6h, 12h and then on daily basis until day 6. Blood samples were analyzed red blood cell(RBC), packed cell volume(PCV), hemoglobin concentration(Hb), mean corpuscular volume(MCV), mean corpuscularl hemoglobin concentration(MCHC), reduced glutathion(GSH), and met-hemoglobin concentration. The RBC count was significantly(p<0.01, p<0.05) decreased during experimental periods. Packed cell volume, hemoglobin concentration were not showed significantly difference during experimental periods. The MCV was significantly(p<0.01, p<0.05) increased from 3 hours after administration to day 4. The MCHC was significantly(p<0.05)decreased on day 6. GSH concentration was not showed significant difference during experimental periods and the met-hemoglobin concentration was significantly(p<0.05) increased on day 3.
