The objective of this study was to estimate economic weights of Hanwoo carcass traits that can be used to build economic selection indexes for selection of seedstocks. Data from carcass measures for determining beef yield and quality grades were collected and provided by the Korean Institute for Animal Products Quality Evaluation (KAPE). Out of 1,556,971 records, 476,430 records collected from 13 abattoirs from 2008 to 2010 after deletion of outlying observations were used to estimate relative economic weights of bid price per kg carcass weight on cold carcass weight (CW), eye muscle area (EMA), backfat thickness (BF) and marbling score (MS) and the phenotypic relationships among component traits. Price of carcass tended to increase linearly as yield grades or quality grades, in marginal or in combination, increased. Partial regression coefficients for MS, EMA, BF, and for CW in original scales were +948.5 won/score, +27.3 $won/cm^2$, -95.2 won/mm and +7.3 won/kg when all three sex categories were taken into account. Among four grade determining traits, relative economic weight of MS was the greatest. Variations in partial regression coefficients by sex categories were great but the trends in relative weights for each carcass measures were similar. Relative economic weights of four traits in integer values when standardized measures were fit into covariance model were +4:+1:-1:+1 for MS:EMA:BF:CW. Further research is required to account for the cost of production per unit carcass weight or per unit production under different economic situations.
The aim of this study was to identify the polymorphism on fatty acid binding protein (FABP4) gene promoter region and its association with carcass traits in Hanwoo. We performed PCR-direct sequencing of FABP4 promoter region to identify single nucleotide polymorphism (SNPs) using unrelated 24 Hanwoo bulls. Four SNPs (-298A>G, -472A>G, -887A>G, -862A>G) were detected in the promoter region and genotyped on 583 Hanwoo steers. A linear mixed model revealed an association of three SNPs (-298A>G, -472A>G and -862A>G) with carcass weight and marbling score in dominance model (P<0.05). The animals with AA genotypes for the three SNPs were heavier carcass weight (5 kg) than animals with GG genotypes in the statistical analysis. For the marbling score, the AA genotype was lower effect of marbling score (0.21) than GG genotypes. In conclusion, this study indicates an important role for three SNPs detected in promoter region of FABP4 in determining carcass weight and marbling score in Hanwoo.
Pigs from four sire lines were allocated to a series of low energy (LE, 3.15 to 3.21 Mcal ME/kg) corn-soybean meal-based diets with 16% wheat midds or high energy diets (HE, 3.41 to 3.45 Mcal ME/kg) with 4.5 to 4.95% choice white grease. All diets contained 6% DDGS. The HE and LE diets of each of the four phases were formulated to have equal lysine:Mcal ME ratios. Barrows (N = 2,178) and gilts (N = 2,274) were fed either high energy (HE) or low energy (LE) diets from 27 kg BW to target BWs of 118, 127, 131.5 and 140.6 kg. Carcass primal and subprimal cut weights were collected. The cut weights and carcass measurements were fitted to allometric functions (Y = A $CW^B$) of carcass weight. The significance of diet, sex or sire line with A and B was evaluated by linearizing the equations by log to log transformation. The effect of diet on A and B did not interact with sex or sire line. Thus, the final model was cut weight = (1+$b_D$(Diet)) A($CW^B$) where Diet = -0.5 for the LE and 0.5 for HE diets and A and B are sire line-sex specific parameters. Diet had no affect on loin, Boston butt, picnic, baby back rib, or sparerib weights (p>0.10, $b_D$ = -0.003, -0.0029, 0.0002, 0.0047, -0.0025, respectively). Diet affected ham weight (bD = -0.0046, p = 0.01), belly weight (bD = 0.0188, p = 0.001) three-muscle ham weight ($b_D$ = -0.014, p = 0.001), boneless loin weight (bD = -0.010, p = 0.001), tenderloin weight ($b_D$ = -0.023, p = 0.001), sirloin weight ($b_D$ = -0.009, p = 0.034), and fat-free lean mass ($b_D$ = -0.0145, p = 0.001). Overall, feeding the LE diets had little impact on primal cut weight except to decrease belly weight. Feeding LE diets increased the weight of lean trimmed cuts by 1 to 2 percent at the same carcass weight.
The purpose of the current study was to examine the influence of different maternal nutrition treatments during pregnancy on body weight, muscle fiber number, carcass traits, and pork quality traits of offspring. A total of 18 crossbred sows (Landrace${\times}$Yorkshire${\times}$Duroc) were randomly assigned to one of three nutritional treatment groups; control, high energy, and high protein. The control group was fed a standard diet, the high energy group was fed a diet that contained 30% increased metabolizable energy, and the high protein group was fed a diet that contained 30% increased limiting amino acids compared to the control. The sows in each group were fed equal quantities of each diet (1.9 kg/d) for the entire gestational period. A total of 36 piglets from each sow were used to evaluate changes in body weight, muscle fiber number in the longissimus dorsi muscle at birth, carcass traits, and pork quality traits. Birth weight of offspring born to sows in the high energy diet group was significantly higher compared to the high protein diet group (p<0.05). However, body weight of offspring after birth was not significantly different between the groups. Muscle fiber number for the longissimus dorsi muscle at birth was not significantly different between the groups. In addition, there were no significant differences in carcass traits or pork quality traits between offspring born to sows in the control group and those born to sows that received high energy or high protein diets during pregnancy. Based on these results, it appears that maternal nutrition treatment during pregnancy, regardless of whether it is with high energy or high protein diets, does not have a significant effect on body weight, muscle fiber number at birth, carcass traits, or pork quality traits.

Breed differences in adult animals are determined during fetal development. If interventions are to be developed that influence growth of muscle and fat, it is important to know at which time during gestation breed differences appear and are fixed. The objective of this study was to characterize fetal development in cattle of different breeds. Pregnant cows of 4 cattle breeds with different growth impetus and muscularity were slaughtered under normal processing conditions and the fetuses were removed. German Angus, a typical beef cattle; Galloway, a smaller, environmentally resistant beef type; Holstein Friesian, a dairy type; and Belgian Blue, an extreme type for muscle growth were used. Fetuses of each breed were investigated at 3, 6, and 9 mo of gestation. Fetuses were weighed and dissected into carcass, organs, and muscles. Body fat weight was obtained using the Soxhlet extraction method. Fetal weight increased most rapidly in the third trimester of gestation mainly due to the accelerated muscle and fat deposition. The organ weight to body weight (BW) ratios decreased and the muscle and fat weight to BW ratios increased. At 3 mo of gestation, Galloway fetuses had the significantly smallest BW, half-carcass weight, leg weight, organ weight, muscle weight and shortest leg length. In contrast, Holstein fetuses had the significantly greatest BW, liver, kidney, and lung weights and significantly longest leg length among the 4 breeds, but no differences between Holstein Friesian and Belgian Blue were detected in half-carcass and leg weight. Indeed, Belgian Blue fetuses had the significantly greatest half-carcass weight, leg weight, and muscle weight at 9 mo of gestation, and Galloway had a significantly greater body fat to BW ratio than Holstein Friesian and Belgian Blue. These differences were not evident at 3 and 6 mo of gestation. These data show that the profound increase of tissue and organ weights occurred in later gestation in cattle fetuses even though breed differences were evident as early as 3 mo of gestation. Depending on the tissue of interest, impacting fetal growth likely needs to occur early in gestation before the appearance of breed-specific differences.
Objective: This study aimed to estimate the genetic parameters and genetic correlations for related feed efficiency, growth, and carcass traits in Hanwoo cattle. Methods: Phenotypic data from 15,279 animals born between 1989 and 2015 were considered. The related feed efficiency traits considered were Kleiber ratio (KR) and relative growth rate (RGR). Carcass traits analyzed were backfat thickness (BT), carcass weight, eye muscle area, and marbling score. Growth traits were assessed by the average daily gain (ADG), metabolic body weight (MBW) at mid-test age from 6 to 24 months, and yearling weight (YW). Variance and covariance components were estimated using restricted maximum likelihood using nine multi-trait animal models. Results: The heritability estimates for related feed efficiency (0.28±0.04 for KR and RGR) and growth traits (0.26±0.02 to 0.33±0.04) were moderate, but the carcass traits tended to be higher (0.38±0.04 to 0.61±0.06). The related feed efficiency traits were positively genetically correlated with all the carcass traits (0.37±0.09 to 0.47±0.07 for KR, and 0.14±0.09 to 0.37±0.09 for RGR), except for BT, which showed null to weak correlation. Conversely, the genetic correlations of RGR with MBW (-0.36±0.08) and YW (-0.30±0.08) were negative, and those of KR with MBW and YW were close to zero, whereas the genetic correlations of ADG with RGR (0.40±0.08) and KR (0.70±0.05) were positive and relatively moderate to high. The genetic (0.92±0.02) correlations between KR and RGR were very high. Conclusion: Sufficient genetic variability and heritability were observed for traits of interest. Moreover, the inclusion of KR and/or RGR in Hanwoo cattle breeding programs could improve the feed efficiency without producing any unfavorable effects on the carcass traits.
The aim of this study was to analyze the contribution of carcass traits (backfat thickness, eye muscle area, carcass weight and marbling score) and the season at slaughter to the price (auction and market) using squared semi-partial correlation. The season at slaughter (summer expressed as season_2, autumn as season_3, and winter as season_4) were added into the estimation as dummy variables, and spring was set as a default variable. In this study, the carcass grades of 22,298 Hanwoo steers slaughtered from 2012 to 2017 were used to performmultiple regression analysis. The rankings of the contribution of the carcass traits and the seasons at slaughter to the auction prices were in the order of marbling score (68.63%), season_4 (11.88%), backfat thickness (10.45%), eye muscle area (6.11%), season_3 (2.19%), season_2 (0.45%) and carcass weight (0.28%). (R-square of the regression = 0.4101). The rankings of the contribution to the total prices were in the order of carcass weight (51.74%), marbling score (32.12%), season_4 (6.04%), backfat thickness (5.54%), eye muscle area (3.22%), season_3 (1.14%), and season_2 (0.19%). (R-Square of the regression = 0.6486). As a result, season_3 and season_4 had a negative effect on the auction price and total price. Because of seasonal event such as Korean Thanksgiving Day and Korean New Year's Day on season_3 and season_4, much supply was needed to meet the high demand. Thus, the seasonal effect at slaughter could be another factor to be cosideredin when considering of slaughter or breeding.
Objective: This experiment was conducted to investigate the effects of fungal treated oil palm fronds (FTOPF) on performance, carcass traits, meat quality, and muscle chemical composition. Methods: Eighteen growing crossbred male goats (Thai Native${\times}$Anglo Nubian) with $18.7{\pm}2.0kg$ of initial body weight (BW) were stratified and blocked by BW in a randomized complete block design. Three diets containing 30% of oil palm fronds (OPF) either untreated (UOPF) or treated with Lentinussajor-caju (FTOPF) with or without urea (FTOPFU) were used as roughage sources in total mixed rations (TMRs). The diets were offered ad libitum and weight gain was determined. At the end of the experimental period, the harvest data and carcass characteristics of the goats were recorded, and muscular longissimus dorsi composition was determined. Results: No significant effect of fungal treated (FT) inclusion was observed in any of the feed intake, growth performance, and carcass characteristics. Likewise, no apparent effects on carcass composition and muscle chemical composition were detected in this study, except for hind leg and chump were affected (p<0.05) by FT inclusion. Conclusion: In conclusion, feeding of fungal (Lentinussajor-caju) treated oil palm frond in TMR diet did not affect performance and carcass characteristics in finishing goats.
This experiment was conducted to determine and compare some characteristics of the meat and carcass of rabbits aged 11 weeks according to sex. In the experiment thirty male and thirty female New Zealand White rabbits were slaughtered. The weights and percentages of cold carcasses, skin with head and limbs, liver, kidney, heart, lung, fore legs, hind legs, breast and ribs, loin and abdominal wall were recorded. The values for carcass length, lumbar circumference, pH in the muscles of Biceps femoris and Longissimus dorsi, meat to bone ratio and cooking loss were also determined. The mean values for cold carcass weight and cold dressing percentage were 832 g and 48.77% in male and 849 g and 48.69% in female, respectively. In this study no significant differences were shown between male and female rabbits in the characteristics of carcass and meat except the value of pH of Longissimus dorsi muscle which was markedly higher in males than that in females meat. Slaughter weight was positively correlated with the weights of carcass, skin with head and limbs, lung, liver, kidney, heart and weights of joints (p<0.01) and dressing percentage (p<0.05).
Five hundred and forty crossbred (Korean native black pig${\times}$Landrace) F2 were selected at a commercial pig farm and then divided into six different coat color groups: (A: Black, B: White, C: Red, D: White spot in black, E: Black spot in white, F: Black spot in red). Birth weight, 21st d weight, 140th d weight and carcass weight varied among the different coat color groups. D group (white spot in black coat) showed a significantly higher body weight at each weigh (birth weight, 140th d weight and carcass weight) than did the other groups, whereas the C group (red coat color) showed a significantly lower body weight at finishing stage (140th d weight and carcass weight) compared to other groups. Meat quality characteristics, shear force, cooking loss and meat color were not significantly different among the different coat color groups, whereas drip loss was significantly higher in F than in other groups. Most blood characteristics were not significantly different among the different groups, except for the red blood cells.
