Effects of Calcium Powder Mixtures and Binding Ingredients as Substitutes for Synthetic Phosphate on the Quality Properties of Ground Pork Products

  • This study aimed to investigate the combined effect of using natural calcium mixtures and various binding ingredients as replacers for synthetic phosphate in ground pork products. We performed seven treatments: control (0.3% phosphate blend), treatment 1 (0.5% natural calcium mixtures [NCM, which comprised 0.2% oyster shell calcium and 0.3% egg shell calcium powder] and 0.25% egg white powder), treatment 2 (0.5% NCM and 0.25% whey protein concentrate), treatment 3 (0.5% NCM and 0.25% concentrated soybean protein), treatment 4 (0.5% NCM and 0.25% isolated soybean protein), treatment 5 (0.5% NCM and 0.25% carrageenan), and treatment 6 (0.5% NCM and 0.25% collagen powder). All the treatment mixtures had higher pH and lower cooking loss than the control, which was treated with phosphate. We found that NCM and binding ingredients had no negative effects on the moisture content, lightness, and yellowness of the cooked ground pork products. Treatments 3 and 4 showed significantly lower CIE $a^*$ values than the control. Treatments 2 and 6 improved the textural properties of the products. In conclusion, the combination of NCM with whey protein concentrate or collagen powder could be suitable for producing phosphate-free meat products.

Production of Vaterite Type Calcium Carbonate by using Oyster Shell Waste with Lysine (라이신 첨가에 의한 폐 굴껍질 이용 vaterite형 탄산칼슘 제조)

  • The experiments to produce the vaterite type calcium carbonate were conducted for using the waste oyster shell as the recycling resources. Firstly, the oyster shell were calcinated at 800 ℃ for 24 h. Calcinated oyster shell were reacted with the nitric acid solution, and were diluted to 0.1 M Ca(NO3)2 solution. This solution was mixed with 0.1 M Na2CO3 contained 0.1 mol lysine/1 mol CaO at 20 ℃ and 600 rpm mixing condition for 1 h. The reaction products were identified to vaterite type calcium carbonate (84.5% vaterite, 15.5% calcite) by XRD and SEM analysis. Mean particle diameter was 6.87 ㎛, and the lysine content in calcium carbonate was analyzed to 0.1%.

Prevention of Tissue Softening of Retorted Onion by Long Time, Low Temperature Blanching in Calcium Solution (칼슘용액에서의 저온 장시간 예비 열처리 방법을 이용한 레토르트 양파 조직의 연화방지)

  • In order to enhance the firmness of retorted onion, long time, low temperature blanching(LTLT) in calcium solution was conducted. Pre-heating onion in calcium solution significantly improved its texture after high temperature sterilization as compared to conventional blanching alone. The improvement of the firmness by the LTLT blanching is related to the formation of strongly cross-linkages between carboxyl groups and divalent cations($Ca^{2+}$) by the action of pectin methy-lesterase(PME) in onion. A maximum firmness of retorted onion was obtained at the condition of pre-heating at $70^{\circ}C$ for 120min in 0.5%calcium solution. This result supports that the activity of PME and the content of bonded calcium in onion were highest at $70^{\circ}C$. Additionally, the reaction of alkali calcium with various divalent cations such as $Mg^{2+}$ provided a function to hydrolyze pectin molecules, resulting in firmer retorted onion in various calcium agents. Further investigation should be carried out to determine the optimal condition for prevention of tissue softening of various retorted vegetables.

Calcium Absorption Accelerating Effect of Chitosnn Oligosaccharides prepared by Ultrafiltration Membrane Enzymatic Reactor (한외여과막 효소반응기를 이용하여 제조한 키토산 올리고당의 칼슘흡수 촉진효과)

  • In spite of various bio-functionalities of chitosan, the effects in vivo were still ambiguous because of its low absorption on organism. Therefore, chitosan oligosaccharides (COSs) are necessary to elucidate for an efficient utilization in vivo. COSs were prepared from chitosan using ultrafiltration membrane enzymatic reactor system with MWCO (molecular weight cut-off) 3,000 Da of membrane. Calcium absorption accelerating effect using COSs was examined by two methods, in vitro and in vivo. In vitro experiment, calcium absorption by the addition of COSs in a mixture solution of calcium and phosphate was higher approximately $50\%$ than that by control. In vivo using rats, group taken the diet contained $1\%$ COSs anil calcium chloride decreased about $75\%$ of calcium content excreted from feces, and then, showed about $15\%$ increase in breaking force of femur. These results demonstrated that COSs definitely involved in calcium metabolism in vivo.

  • More addition of calcium carbonate in printing paper allows savings of the wood fibers and the drying energy. Pre-flocculation of GCC (ground calcium carbonate) using functional polymers was known as the best available technology to make high loaded paper until now, and it allowed less reduction of the paper essential properties such as tensile strength and smoothness at higher GCC content. However, pre-flocculated GCC became unstable in size under the continued agitation in the mill. Therefore, pre-flocculation method was modified in such a way that the in-situ calcium carbonate was formed between the GCC particles of the pre-flocculated GCC, and the resultant became more stable in size, which we named as HCC (hybrid calcium carbonate). HCC turned out to make high tensile strength and smoothness as much as the pre-flocculated GCC and gave much better size stability against stirring. Furthermore, HCC gave high bulk that pre-flocculation could not make.

Effect of Application Level of Calcium Hydroxide on Brown-Leaf Symptom and Root Yield of Panax ginseng Cultivated in Paddy Soil (인삼 논재배에서 석회 시용에 따른 갈반형 황증 발생 억제 효과)

  • Physiological disorders such as symptoms in leaf colored with brown spots are so many occurred in ginseng garden cultivated with paddy soil. This study was carried out to inhibit the symptoms of brown-colored leaf in 3-year-old ginseng by fertilizing calcium hydroxide [$Ca(OH)_2$] of 100 ~ 400 kg per 10a on paddy soil before transplant of seedling. Soil pH was rapidly increased, while Fe was decreased in soil by the increase of application level of calcium hydroxide. Soil pH was increased from 4.53 to 6.18 when calcium hydroxide was fertilized at level of 100kg per 10a. The content of Fe in ginseng leaf was decreased more than the control by fertilizing calcium hydroxide in soil. Ratio of brown-colored leaf and plant height and leaf area were decreased by the increase of calcium hydroxide. Ratio of survived root and yield of root showed the peak at the application level of 100 kg per 10a, and both of them were gradually decreased by the increase of calcium hydroxide. The decrease of missing plant rate above the application level of 200 kg per 10a had a negative effect on the decrease of yield of root.

  • Biocementation due to the microbially induced calcium carbonate precipitation (MICP) process is a potential technique that can be used for soil improvement. However, the effect of biocementation may be affected by many factors, including nutrient concentration, bacterial strains, injection strategy, temperature, pH, and soil type. This study investigates mainly the effect of chemical concentration on the formation of calcium carbonate (e.g., quantity, size, and crystalline structure) and unconfined compressive strength (UCS) using different treatment time and chemical concentration in the biotreatment. Two chemical concentrations (0.5 and 1.0 M) and three different treatment times (2, 4, and 8 cycles) were studied. The effect of chemical concentrations on the treatment was also examined by making the total amount of chemicals injected to be the same, but using different times of treatment and chemical concentrations (8 cycles for 0.50 M and 4 cycles for 1.00 M). The UCS and CCC were measured and scanning electron microscopy (SEM) analysis was carried out. The SEM images revealed that the sizes of calcium carbonate crystals increased with an increase in chemical concentrations. The UCS values resulting from the treatments using low concentration were slightly greater than those from the treatments using high concentration, given the CCC to be more or less the same. This trend can be attributed to the size of the precipitated crystals, in which the cementation efficiency increases as the crystal size decreases, for a given CCC. Furthermore, in the high concentration treatment, two mineral types of calcium carbonate were precipitated, namely, calcite and amorphous calcium carbonate (ACC). As the crystal shape and morphology of ACC differ from those of calcite, the bonding provided by ACC can be weaker than that provided by calcite. As a result, the conditions of calcium carbonate were affected by test key factors and eventually, contributed to the UCS values.

Effect of Dietary Protein Level on Ca Efficiency in Bone Mineral Density in Growing Rats (식이단백질량이 성장기 흰쥐가 골밀도에 대한 칼슘효율에 미치는 영향)

  • This study was performed to evaluate the effect of dietary protein level on Ca efficiency in bone mineral density in growing male rats. Twenty male rate were divided into two groups. The rats in one group were fed on casein 20% diet as control group and the others were fed on casein 40% diet as protein group. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks. The total body, spine and femur bone mineral density and bone mineral content were measured using dual energy-x ray absorptiometry. Urinary calcium, phosphate, pyridinoline and creatinine, serum calcium, phosphate, total protein, albumin, alkaline phosphatase(ALP) and osteocalcin were measured. Urinary Ca excretion, pyridinoline and crosslinks value and serum ALP content seem to be increased in high protein group. It appears that the growing rats in high protein group had a higher bone resprption and bone formation than those in control group. Animal fad a high protein diet had a siginficantly higher Ca efficiency in BMD, BMC of total body, spine and femur. The results of this show that increasing of dietary protein level (40%) is beneficial of improvement of Ca efficiency during growing period.

  • In this study, the nutritional composition of colostrum milk obtained from 22 mothers delivering perterm infants and 17 mothers delivering term infants was analyzed. The energy content of colostrum was yielded based on nitrogen, lactose, and lipid data. Preterm milk is more close the nutritional needs of the preterm infant than dose other breast milk. The results are as follows : 1) Protein concentration was significantly higher, but carbohydrate and lipid concentration were lower in preterm milk than fullterm milk. Energy content yielded from total nitrogen, lactose and lipid concentration was higher in the fullterm milk than preterm milk. 2) Calcium was higher in the preterm milk than fullterm colostrum. Phosphate was lower in fullterm milk than pretem milk. Calcium/Phosphate ratio were 2.61/1 in the preterm and 2.06/1 in the fullterm milk. Magnesium was higher in the preterm milk than fullterm milk. Zinc, Copper and Manganese concentrations were tended to lower in the preterm milk than fullterm milk.

Development of mix design method for geopolymer concrete

  • This study proposes a mix design method for geopolymer concrete (GPC) using low calcium fly ash and alccofine, with the focus on achieving the required compressive strength and workability at heat and ambient curing. Key factors identified and nine mixes with varied fly ash content (350, 375 and $400kg/m^3$) and different molarity (8, 12 and 16M) of NaOH solutions were prepared. The cubes prepared were cured at different temperatures ($27^{\circ}C$, $60^{\circ}C$ and $90^{\circ}C$) and tested for its compressive strength after 3, 7 and 28 days of curing. Fly ash content has been considered as the direct measure of workability and strength. The suggested mix design approach has been verified with the help of the example and targets well the requirements of fresh and hardened concrete.
