최소 가공 수박의 가공과 유통 중 품질 열화에 있어 가장 중요한 문제는 과육의 조직연화이다. 따라서 본 연구에서는 세포 분리를 제한하고 과실 조직의 경도를 유지시키는데 효과가 있는 것으로 알려져 있는 칼슘제제 중 calcium chloride, calcium lactate, CaO를 처리하여, 최소 가공 수박에서 조직연화로 발생되는 품질저하 억제에 가장 효과적인 칼슘제제를 알아보고자 하였다. 수박의 과육부위를 2cm의 정육면체 형태로 절단한 후, 0.5% calcium chloride, 0.5% calcium lactate, 0.05% CaO용액에 3분 동안 침지시켰다. 그리고 fan을 이용하여 상온에서 30분 동안 draining한 다음 PP tray에 담아 PP film로 sealing하고 $10^{\circ}C$에서 일주일간 저장하며 품질변화를 살펴보았다. 호흡특성은 0.05% CaO 및 0.5% calcium chloride용액을 처리한 구가 호흡률이 가장 낮게 나타났다. 가용성고형분은 처리 직후 처리구의 함량이 무처리구에 비해 다소 낮아지는 경향을 보였으나, 저장기간 중 0.5% calcium chloride 용액처리구는 다른 처리구에 비하여 큰 함량 변화 없이 당도가 일정 수준으로 유지되었다. pH 변화는 0.5% calcium chloride용액 처리구에서 변화가 가장 작았으며, 경도변화 역시 저장 초기값과 비교하였을 때보다 감소가 적게 일어나 다른 처리구에 비하여 연화 저해에 효과가 있는 것으로 확인되었다. 따라서 최소가공 수박에 대해 칼슘제제 중 calcium chloride용액 처리가 품질유지에 가장 효과적임을 알 수 있었다.
PURPOSE. The newest technologies for digital implant impression (DII) taking are developing rapidly and showing acceptable clinical results. However, scientific literature is lacking data from clinical studies about the accuracy of DII. The aim of this study was to compare digital and conventional dental implant impressions (CII) in a clinical environment. MATERIALS AND METHODS. Twenty-four fixed zirconia restorations supported by 2 implants were fabricated using conventional open-tray impression technique with splinted transfers (CII group) and scan with Trios 3 IOS (3Shape) (DII group). After multiple verification procedures, master models were scanned using laboratory scanner D800 (3Shape). 3D models from conventional and digital workflow were imported to reverse engineering software and superimposed with high resolution 3D CAD models of scan bodies. Distance between center points, angulation, rotation, vertical shift, and surface mismatch of the scan bodies were measured and compared between conventional and digital impressions. RESULTS. Statistically significant differences were found for: a) inter-implant distance, b) rotation, c) vertical shift, and d) surface mismatch differences, comparing DII and CII groups for mesial and distal implant scan bodies ($P{\leq}.05$). CONCLUSION. Recorded linear differences between digital and conventional impressions were of limited clinical significance with two implant-supported restorations.
Kimchi packed in polypropylene(PP) tray was stored at different temperatures (0, 10, $20^{\circ}C$) to investigate the relationships between fermentative gas pressure and quality changes. The quality of Kimchi during storage was evaluated in terms of pH, titratable acidity, color, and sensory properties. The fermentative gas pressure changes due to $CO_2$ evolution showed typical sigmoidal curves at each temperature. Accordingly, inflation of Kimchi packages caused by increasing gas pressure occurred in 40 hours, 5 and 30 days at 20, 10, $0^{\circ}C$ , respectively, at which gas pressure inside the packages ranged $1.2{\sim}1.4\;psig$. Following inflation, Kimchi packages stored at 20 and $10^{\circ}C$ were burst out on 3 and 8 days, but those at $0^{\circ}C$ were not. As the fermentative gas pressure increased, pH decreased (r > 0.968) and titratable acidity increased (r > 0.973) proportionally. Regarding to the color change of crushed Kimchi juice, L and b values were decreased exponentially, but a value remained constant during storage. Among sensory properties, the sourness and texture scores showed good accordance with pH changes. In conclusion, although Kimchi kept optimal tastes during storage, the inflation of package restricted shelf-life of Kimchi.
The objectives of the present study were to find out 1)the differences in growth of radish under foggy and non-foggy condition, 2)the weed competition between radish and major upland weeds including Echinochloa crus-galli, 3)difference in response of radish to herbicide and weed, and finally 4)the fundamental data for the establishment of radish weed control system under locational foggy regions. The research was carried out by tray in greenhouse equipped with Auto Foggy System(SAE KI RIN Co.) and results were summarized as follows. 1. Plant height and shoot fresh weight of radish cultivars(long skirt, delicious altari, green mascot) were not different at the early growth(8 to 38 days after seeding), but increased at 55 days after seeding under foggy condition. Root fresh weight increased only in green mascot cultivar tinder foggy condition. Chlorophyll contents were higher in all the cultivars of radish under foggy condition. 2. Plant height and shoot fresh weight increased at 0 and 20 days of weed competition under foggy condition. Root fresh weight increased at 0, 20 and 35 days of competition under foggy condition. Above 50 days-competition, there was no difference between foggy and non-foggy condition. 3. Napropamide, alachlor and linuron did not show any differences in plant height and shoot fresh weight between foggy and non-foggy condition. Molinate reduced the root fresh weight at 65 days after seeding tinder foggy condition. 4. No difference in weeding efficacy by any herbicides tested was found tinder foggy condition. Weeding efficacy of Aeschynomene indica was reduced under foggy condition.
This study investigated that anti-browning effects of Atractylodis Rhizoma Alba extract and L-cysteine combination. Mushrooms were dipped in solutions (0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine) for 3 min. The dipped mushrooms were packaged in a polystyrene (PS) tray and wrapped with a polyvinyl chloride (PVC) film, and stored for 14 days at $10^{\circ}C$. The browning inhibition activity (Hunter L, a, b color scale and tyrosinase inhibition activity) and quality changes (weight loss rate, gas composition, firmness and sensory evaluation) were analyzed during storage period. After 14 days, the Hunter L and ${\Delta}E$ value of mushrooms treated in 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine were 87.24 and 5.56, respectively. The mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine also showed higher firmness (13.31 N) and smaller weight loss rate (2.87%) than the untreated mushroom (11.42 N, 3.04%) on storage day 14. During storage period, the sensory evaluation showed that overall acceptability of mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine were higher than those of the untreated mushrooms, except those that were stored for five days. Overall, the mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine had a higher tyrosinase inhibition activity than the untreated mushrooms during storage period. This study suggests that the browning of the mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine solution were inhibited, and the that their shelf life was extended.
Commercial tofu was cut and re-packed in a vacuum container, an airtight container and an open tofu tray in an effort to assess the effects of vacuum containers on the shelf life of leftover tofu. The re-packed tofu were stored at $5^{\circ}C$ and $25^{\circ}C$ for the enumeration of total bacteria and coliforms. We also measured changes in color, pH, and opacity. The vacuum retarded the bacterial growth under $10^5$ CFU/mL for up to 12 days at $5^{\circ}C$. The color of the tofu was unaffected by the container type at both storage temperatures, whereas the pH and opacity of the immersion solution were altered less profoundly by storage in the vacuum container at $5^{\circ}C$. However, we noted no significant differences in bacterial growths, pH, and opacity among container types at $25^{\circ}C$. The results of this study showed that the usage of vacuum containers may be a favorable method for the preservation of tofu under refrigerated conditions.
The effects of plastic container vent ratio on fruit quality during strawberry precooling and storage were analyzed. Plastic containers ($520mm{\times}355mm{\times}182mm$) were manufactured with bottom and side vents at areal ratios of 5%, 10%, 15% and 20%. Fruit was loaded at a volume ratio of 80% prior to pressure cooling and storage at $5^{\circ}C$. The internal fruit temperature was $18^{\circ}C$ and the times taken to attain $2^{\circ}C$ after precooling were 1 hour 9 minutes, 1 hour 13 minutes, 2 hours 2 minutes, and 2 hours 51 minutes at vent ratios of 20%, 15%, 10%, and 5%, respectively. To mimic the current distribution system, precooled strawberries were packaged in tray wrapping and stored at $5^{\circ}C$. Changes in weight, bruising, extent of decay, and firmness, were measured. Weight loss, bruising, and decay were highest at a vent ratio of 20%, lowest at a vent ratio of 15%, and moderate at vent ratios of 5% and 10%. No significant among-treatment difference in fruit firmness was evident.
In mass production of seed-potato plantlets, the processes for in vitro propagation and ex vitro acclimatization with a high cost should be improved by a culture system with environmental control using scaled-up culture vessels. The experiment was conducted to design a hydroponic culture system for enhancement of growth and development of seed-potato (Solanum tuberosum) plantlets cultured under photoautotrophic (without sugar in culture medium) conditions with controlled light intensity and ventilation rate. The culture system was consisted of scaled-up culture vessels, ventilation pipes, a multi-cell tray and an environmental control system (ECS) for optimum controlling in temperature, light intensity, ventilation rate, and culture-medium supply. Growth and development of the plantlets was significantly increased under the ECS compared with a conventional culture system (CCS) of photomixotrophic culture (with sugar in culture medium) using small scale vessels. For 21 days, leaf area of the plantlets was expanded more than 2 times, and number of internodes also approximately 4 times greate. under the ECS. In addition, the photoautotrophic growth in sweetpotato (Ipomoea batatas) and chrysanthemum (Chrysanthemum morifolium) plantlets was greater more than 2 times compared with the CCS.
Kimchi packed in PP tray was stored at $10^{\circ}C$ to investigate the effect of filling ratio on the quality changes. The quality of Kimchi studied were gas composition in the package, pH, titratable acidity, color, growth of lactic acid bacteria and sensory properties. As the filling ratio increased, there was more $O_{2}$ consumption and $CO_{2}$ evolution measured. Titratable acidity and pH were not significantly affected by the filling ratio. Color change of crushed Kimchi juice was also little affected by the filling ratio. During the storage, L and b values were decreased exponentially, but a value s remained constant. The growth of lactic acid bacteria and sensory scores showed no significant difference according to the filling ratio. Therefore, the filling ratio in packaging of Kimchi seemed to have little influence on the quality changes of Kimchi.
In this study, the changes in microbial communities of lamb meat packaged in the air (plastic tray, PT) and in a vacuum pouch (VAC) were assessed by polymerase chain reaction-denaturing gradient gel electrophoresis (PCR-DGGE) during the storage at $4^{\circ}C$. For the PT lamb, the total viable count (TVC) was $10^7CFU/g$ on Day 5, and the dominated bacteria were Pseudomonas fragi, P. fluorescens, and Acinetobacter spp. For the VAC lamb, the TVC was $10^7CFU/g$ on Day 9, and the dominated bacteria were lactic acid bacteria, including Carnobacterium divergens, C. maltaromaticum, and Lactococcus piscium. One strain of Pseudomonas spp. also appeared in VAC lamb. The relative abundance of Enterobacteriaceae in VAC lamb was higher than that PT lamb, indicating a more important role of Enterobacteriaceae in spoilage for VAC lamb than that of PT lamb. The microbial compositions changed faster in the lamb stored in a PT than that stored in a VAC, and microbial community compositions of the late storage period were largely different from those of the early storage period for both the conditions. The findings of this study may guide improve the lamb hygiene and prolong the shelf life of the lamb.
