Investigating Fatty Acid Content Change in Broiler Breast Meat Produced by Supplementing Feed with Tenebrio molitor L Powder (갈색거저리(Tenebrio molitor L) 분말을 활용한 닭가슴살 지방산 변화에 대한 조사)

  • This study was conducted to investigate the effects of adding Tenebrio molitor L Powder to broiler feed on fatty acid profiles in broiler breast meat. In total, 180 broiler chicks (1-day old Arbor Acres) were included. The birds were randomly divided into control and treatment groups, with 3 replicate subgroups each(30 birds per subgroup), and fed a diet for 35 days without (control) or with 1% Tenebrio molitor L powder (treatment). Among individual fatty acids, addition of Tenebrio molitor L. powder resulted in slightly higher C18:1n-9, C20:3n-3 and C20:3n-6 contents, and lower C18:2n-6 content compared withcontrols (p<0.05). No remarkable differences in total SFA and total USFA contents were found between groups. In conclusion, inclusion of Tenebrio molitor L. in broiler diets did not improve overall fatty acid profiles.

  • This study investigated the characteristics of Korean Native Fowl (KW) to standarize the feeding regime and compared with those of broiler. The characteristics of KNF studied were meat productivities and carcass traits. The data were collected for 14 weeks from March to June, 1992, by recording from 200 birds(50 birds per each sex and 2 breed) were as follows : 1. Average body weight at 14 weeks of age of Korean Native Fowl(KW) and broiler were 868.7g and 3,526.6g, respectively and were 26.6 times and 72.9 times of day old chicks weight averages, respectively. 2. The carcass yields during 9∼14 wks were 74.1∼78.5% for KNF male, 73.g∼77.5% for KW female, 72.2∼76.9% for broiler male and 71.7∼76.4% for female. It was shown that carcass yields of KNF was 2% higher than that of broiler. 3. In edible portion, the yields of wings weight to carcass weight were 11.5∼12.4% for KNF male, 11.5∼13.1% for KNF female, 10.7∼11.9% for broiler male and 10.7∼12.2% for broiler female, it was shown that wings weight of KW was higher than that of broiler and wings weight of KNF during 9∼14 wks. 4. The portions of back and breast weight were higher than those of KNF during 9∼14 wks. The back portions in carcass weight were 15.4∼17.0% for KW male 15.4∼16.8% for KNF female, 17.2∼19.0% for broiler male, and 17.2∼19.0% for broiler female. The breast portions in carcass weight were 19.6∼22.0% for KNF male, 20.2∼22.7% for KNF female 23.S∼24.5% for broiler male, and 25.1∼27.7% for broiler female. 5. The portion of thigh and drumsticks weight in carcass weight of KNF was similar to that of broiler. They were 26.8∼28.0% for KNF male, 25.5∼27.1% for KNF female, 27.7% for broiler male, and 26.9% for broiler female, respectively. 6. For the weight of inedible portion during 9∼14 wks, feather weight of KNF was 5.3∼6.8% of live weight and 3.8 ∼4.4% in those of broiler. This result indicated that KNF has more rooms for improvement than broiler. 7. Abdominal fat weight was 2.42∼3.88g for KNF male and 1.84∼3.08g for KNF female, which was 0.5% of carcass weight. But broiler has more abdominal fat than KNF as 39.4∼56.3 g for male, 33.3∼67.8 g for female which was 2.5 ∼3.0% of carcass weight.

Immune Response of Broiler Chickens Fed Diets Supplemented with Different Level of Chromium Methionine under Heat Stress Conditions

  • The objectives of this study were to investigate the immune responses of broiler chickens fed diets supplemented with different level of chromium methionine (CrMet) in heat stress (HS) condition. Two hundred and eighty eight male broiler chickens (Ross 308) were allocated to four treatment groups (supplementation with 0, 200, 400 or 800 ppb Cr in the form of CrMet) in a completely randomized design. The experiment was conducted at heat stressed condition and all birds were kept under temperature of $33{\pm}2^{\circ}C$. Antibody titers against Newcastle disease virus (NDV) and infectious bronchitis virus (IBV), heterophil to lymphocyte ratios (H/L), and concentration of plasma cortisol (CPC) were measured at 21 and 42 d. At 42 days of age two birds were chosen randomly from each replicate, slaughtered, spleen and bursa of Fabricius were collected, weighed and expressed as a percentage of live body weight. Antibody titers against NDV and IBV at 21 and 42 days of age in broiler fed supplemental CrMet were higher than in broiler chickens fed control diet (p<0.05). CPC level in broiler chickens fed CrMet were significantly (p<0.05) decreased. Increases in lymphocyte counts and consequently a decrease in heterophil to lymphocyte ratios in broiler chickens fed 800 ppb Cr were observed at 21 and 42 d. Supplementation with CrMet had no significant effect on lymphoid organs of broilers. The results suggest that dietary CrMet supplementation at a level of 800 ppb can improve some immune responses of broiler chickens under heat stress conditions.

New Approach to Chuncheon Dakgalbi Processing by Various Chicken Materials, Seasoning and Cooking Methods

  • This research was conducted to develop a new approach to Chuncheon Dakgalbi processing by various chicken materials, seasoning (conventional sauce/CS and new approach of seasoning by adding the curing mixture/CSA), and cooking methods. Three chicken breeds (broiler, old broiler and spent laying hen) were divided into five experimental groups: broiler-CS, old broiler-CS, old broiler-CSA, spent laying hen-CS, and spent laying hen-CSA. All samples were stored at $5^{\circ}C$ for 12 d. For sensory evaluation, all samples were cooked with conventional cooking (pan grilling) or high temperature and pressure cooking (at $121^{\circ}C$ with pressure 1.5 $Kg_f/cm^2$ for 30 min). The chicken material analysis showed that the moisture and crude protein content, cooking loss and shear-force of the old broiler and spent laying hen were higher (p<0.05) than those of the current broiler, but the crude ash, crude lipid and WHC were lower (p<0.05). The addition of CSA increased the pH value and reduced the lipid oxidation at the end of storage regardless of chicken breeds (p<0.05). The high temperature and pressure cooking method seemed to increase the taste, smell and overall-acceptability scores of the old broiler and spent laying hen Chuncheon Dakgalbi regardless of the implementation of new approach of seasoning (CSA). In conclusion, an old broiler and spent laying hen can be used as material of Chuncheon Dakgalbi by the application of a new approach of seasoning and cooking method.

Analysis of Heating Load of a Naturally Ventilated Broiler House using BES Simulation (BES 기법을 이용한 자연환기식 육계사의 난방에너지 분석)

  • Most of the broiler houses in Korea have experienced problems on controlling the environmental conditions such as suitability, stability and uniformity of rearing condition inside the broiler house. It is very critical which if not properly controlled, would cause serious stress on the chickens. It is therefore urgent to develop optimum designs of naturally ventilated broiler house which is appropriate to the four seasons of Korea. Field experiment for this matter is very difficult to conduct due to the unpredictable and uncontrollable weather condition. In this study, the heating load of a naturally ventilated broiler house was calculated using TRANSYS 15 BES program while internal climate and thermal condition were computed using Fluent 6.2. The computed resulted of the conventional ventilation system (A) and upgraded ventilation system (B) (Seo et al, 2007) were compared with each other for cold season. The results of the Building Energy Simulation(BES) indicated that the system B, the upgraded ventilation system made 8% lower total heating load and 47% lower at only the broiler zone compared to the conventional broiler house. Considering the entire broiler house, the existence of middle ceiling made the heating energy 11% lower required than without middle ceiling. Accordingly, the system B with middle ceiling was found to save heating energy by 20% in average. This study showed that the BES program can be a very powerful to effectively compute the energy loads of agricultural building while the energy load is very close related to ventilation efficiency.

Algae-based antioxidant containing selenium yeast (Economase®) enhanced the growth performance, oxidative stability, and meat quality of broiler chickens

  • Objective: An experiment was conducted to determine the effect of algae-based antioxidant containing Se yeast (EconomasE®) on the growth performance, visceral organ weight, meat quality, and oxidative stability of broiler chickens. Methods: Nine hundred sixty, day-old male broiler chickens (Cobb, 43.97±0.55 g) were divided into three dietary treatments and allocated into 12 deep litter pens in a completely randomized design giving 4 replicate cages for each treatment. Three dietary treatments were: i) control (CON, basal diet with sufficient nutrient), ii) vitamin E (VitE, basal diet supplemented with 100 IU VitE), and iii) Algae-based antioxidant containing Se yeast (EcoE, basal diet supplemented with 0.2% algae-based antioxidant containing Se yeast: EconomasE®). Maize soybean meal based basal diets were formulated to meet or exceed the nutrition requirement for broiler chickens. Chickens were fed ad-libitum experimental diets during the 42 days experiment period. On days 21 and 42, body weight and feed intake were measured to calculate the feed conversion ratio of the chickens. Intestine and visceral organs were measured together with meat quality and oxidative stability on days 14 and 42. Results: Chickens fed with EcoE showed improved (p<0.05) growth performance, meat quality, and higher (p<0.05) oxidative stability compared to the chicken fed on CON. Moreover, broiler chickens fed with EcoE showed similar (p<0.05) growth performance with better (p<0.05) meat quality and higher oxidative stability compared to the broiler chickens fed VitE (p<0.05). Conclusion: The algae-based antioxidant containing Se yeast can be supplemented into commercial broiler diets as a substitution of VitE while maintaining growth performance with enhancing meat quality and oxidative stability of the broiler chickens.

Exogenous emulsifiers and multi-enzyme combination improves growth performance of the young broiler chickens fed low energy diets containing vegetable oil

  • Objective: The present study examined the effects of exogenous emulsifiers and multi-enzyme supplementation into a low energy density diet on growth performance, visceral organ parameters, blood metabolites, ileal morphology, and nutrient digestibility in broiler chickens from hatch to 21 days. Methods: One hundred and sixty-eight one-day-old Ross 308 broiler chickens were allocated in a completely randomized design to 24 pens and each pen was assigned to one of four dietary treatments to give six replications with seven chickens in a cage. Dietary treatments were: i) positive control with standard energy level (PC); ii) negative control with 100 kcal/kg lower energy of the standard level (NC); iii) NC diet supplemented 0.05% calcium stearoyl-2 lactylate as an emulsifier (NC+E); and iv) NC diet supplemented with both 0.05% calcium stearoyl-2 lactylate and 0.05% multi-enzyme (NC+E+M). Corn and soybean meal-based control diets containing vegetable oil were formulated to meet the Ross 308 nutrition specification. Chickens were fed ad-libitum with the treatment diets and sampling was conducted on day 21. Results: Our results revealed that emulsifier and multi-enzyme supplementation into NC diets improved (p<0.05) feed efficiency of the broiler chickens compared to the broiler chickens fed NC diets from hatch to 21 days. Supplementation of emulsifier and multi-enzyme into NC diet improved (p<0.05) nutrient digestibility of the broiler chickens. However, emulsifier and multi-enzyme supplementation into diet did not influence (p>0.05) visceral organ weight, blood metabolites, and intestinal morphology in broiler chickens fed NC diets. Conclusion: Supplementation of emulsifier and multi-enzyme in the NC diet would support improving growth performance in young broiler chickens with improved feed efficiency and increased nutrient digestibility thereby curtailing the negative impact of energy reduction in the diets.

  • Effect of dietary salmonella lysate in broiler chicks inoculated with Salmonella typhimurium on the antioxidant system(freshness) of broiler meats during 4$^{\circ}$C refrigeration was investigated. In Pectoral and leg muscle, regardless experimental diets, as the refrigeration day passed, CuZnSOD activity decreased gradually, while at 7d MnSOD activity and peroxide level raised and then lowered at 14d. MnSOD and peroxidase activity, however, had differed according to experimental diets. The results indicated that antioxidant system of broiler meats will be changed according to experimental diets(nutrients). As the CuZnSOD, MnSOD and peroxidase activity are responsible for proteolysis of muscle protein, it was concluded that change of antioxidant system during 4$^{\circ}$C storage explain the biological activity(freshness) of broiler meats.

utrient Requirements and Feeding System of Broiler Breeder Hens (육용종계 산란기의 영양소 요구량과 사료급여 체계)

  • Results of experiments on the nutrient requirements and feeding system of broiler breeder hens were reviewed, and daily requirements of energy and protein were calculated using the prediction equations reported by Scott(1977) and NRC(1981). The experimental reports on daily ME needs of broiler breeder hens were ranged from 400 to 450 kcal, however, the ME needs of caged hens were 92~93% to those of floor-housed hens due to the difference of ME need for activity. The ME needs of broiler breeders decreased with increasing environmental temperature corresponding to a drop of 25 kcal per day for each 5˚C rise. About 80~90% of the daily ME needs were used for body rnaintenance and activity of hens. Experimental results on daily protein needs of broiler breeder hens were ranged from 18 to 22 g, however, calculated protein needs decreased as the BW gain and eggmass output decreased after peak production, and about 60~65% of the daily protein needs were used for egg production. In the current practice, broiler breeder hens are restricted in feed, and consume their daily allowance in the first 2 to 6 h after dawn. The results suggest that eggshell quality can be significantly improved in hens fed during the afternoon when shell calcification is initiated, with no adverse effect on laying rate and fertility of eggs.

Effect of Reproductive Ability on Weeks and Body Weights of Male Broiler Breders (육계 수탉의 주령 및 체중이 번식능력에 미치는 영향)

  • This experiment was carried out to investigate the effect of reproductive ability on weeks and body weights of broiler breeder males. From 26 to 36 week, volume of semen and body weight were increased. Total concentration was highest at 36 week(P〈0.05), being 21.14$\times$10(sup)8 cells. Mean of total concentration was 14.66$\times$10(sup)8 cells and 11.59$\times$10(sup)8 cells in young(26∼55 weeks) and old(60∼89 weeks) broiler breeder males, respectively. Percentage of fertile eggs, viability and hatchability on weeks were 96.33, 89.55, 86.25% in the young broiler breeder males, 94.84, 91.73 and 86.97% the old broiler breeder males, respectively. The values were not significantly different between the young and old broiler breeder males. While the body weight of cocks was less than 3.5kg, it was not possible to collect semen. Semen collection rate was the best in 4.5∼5.0kg of males, total concentration was highest in 5.0∼5.5kg, volume of semen was highest in 5.5∼6.0kg body weight. More than 80% of the males were in the range of 4∼6kg body weight. Sperm motility was acceptable for breeding.
