Research for Changes in Food Consumption Patterns of Urban Resides and Future Perspective of Dietary Life (도시 주부의 식품 소비 구조 변화와 미래의 식생활 향상을 위한 연구)

  • In the study, the dietary survey was conducted in Seoul, Dae-jeon, Gwangju, Pusan, from march to April in 1988. A Questionnaire was prepared and distributed to 1583 house wives in order to find out their attitude of meal management and their way of thinking in dietary life. The results were summarized as follows: 1) 34.4% of the subjects prepared daily menu. In planning menu, the major consideration shifted from husband to all family members and the most emphasizes meal changed from breakfast to supper. 2) Most of the subjects were making use of substitute food. They were satisfied with the convenience and taste of the convenience foods. Improvements in nutrition, sanitation and price of convenience food made increase of its consumption. 3) The survey has shown that the main purpose of eating is to satisfy nutrition. and in the choice of food, most subjects regarded its taste as the most important factor.

Eating Behavior of University Students by Economic Environment (남녀 대학생의 식행동에 관한 연구(II) -경제적 환경을 중심으로-)

  • The purposes of this study were to determine what kinds of food university students had, how often they were eating out and how much they consumed. A questionnaire survey was conducted on 597 university students (male $40.9\%$, female : $51.9\%$). The students who spent under 200 thousand won per month had regular meals at breakfast, lunch and dinner. The students with personal monthly spending over 300 thousand won, both male and female, ate out more than others. The female students had more protein foods than the male students. Consumption of milk and milk products increased with rising monthly spending for female students. Regardless of monthly spending, the male students ate seaweeds low in 1-2 time per a week. Consumption of rice decreased with rising monthly spending for male and female students.

Association of delivered food consumption with dietary behaviors and obesity among young adults in Jeju (제주지역 젊은 성인의 배달음식 섭취실태와 식생활 및 비만과의 연관성)

  • Purpose: The use of food delivery services is increasing continuously in Korea, which may lead to nutritional problems and obesity. Despite this, the research on the association between delivered food consumption and obesity has been insufficient. This study examined the relationship between delivered food consumption and dietary behaviors and obesity among young adults in Jeju. Methods: An online survey was conducted from March 15 to April 5, 2023; 312 participants aged 19-39 years were included in the final analysis. The frequency, types, and time of delivered food consumption were measured using a questionnaire. The dietary behaviors included the following: eating out, breakfast consumption, recognition of nutrition labels, and eating salty foods, vegetables, and fruit. Obesity was defined using the body mass index based on self-reported body weight and height. Results: Approximately 59.3% of the participants ordered delivery foods more than one time/week. The frequency of delivered food consumption was higher in people who consumed breakfast < 5 times/week than those who consumed ≥ 5 times/week (p = 0.0088). People who usually eat salty foods tended to consume delivered food more frequently than those who did not (p = 0.0377). On the other hand, people who consumed fruits ≥ 1 time/day had a higher frequency of delivered food consumption than those who consumed fruits < 1 time/day (p = 0.0110). After adjusting for the confounding variables, the group who consumed delivered foods more than three times/week had an increased odds ratio (OR) of obesity compared to those who consumed less one time/week (OR, 2.38; 95% confidence intervals, 1.12-5.06). Conclusion: Young adults in Jeju who frequently consume delivered foods tended to have poor dietary habits including skipping breakfast and eating salty, and they had an increased odds of obesity. The overall dietary patterns can be improved by providing nutrition education and developing policies to promote or support healthy food choices when ordering delivered foods or eating out.

A study on the trend analysis regarding the rice consumption of Korean adults using Korean National Health and Nutrition Examination Survey data from 1998, 2001 and 2005

  • The objective of this study was to provide information regarding trends of rice consumption of Korean adults based on different meal types. Respondent reports 24-hour recall data from the Korean National Health and Nutrition Examination Survey were used to assess daily rice consumption and intake ratios of rice for different meal types and places of preparation. Rice intake had gradually decreased from 224.6 g in 1998 to 190 g in 2001 and to 179.4 g in 2005. The rice consumption of Korean adults decreased every year in all ages for all places of meal preparation in 2001 and 2005 compare to 1998. Analysis for each meal type showed that rice intake at breakfast had not considerably changed, but rice intake had decreased at lunch and dinner. While the rice consumption ratio at lunch and dinner decreased, it also decreased or did not change at snack times except for the 19-29 age groups. All the age groups revealed comparable change in the analysis for meal types. There was some diversity between all age divisions in daily rice intake depending on place of meal preparation. The rice consumption by place of meal preparation was generally highest at home, lowest at other places, but it decreased in all places. The rice consumption at home was highest in the over 50 age group, lowest in the 20-30 age group. These changes seem to be related to food intake patterns of rice and substitutional foods in the diets and development regarding socio-economic status. So the need for further study on differences in rice intake based on socioeconomic levels and age group are indicated.

The Effects of Regular Breakfast and Health-related Lifestyle on Blood Pressure, $\gamma$-GPT, Blood Glucose and HDL-Cholesterol in the Iksan Area (익산 지역 50세 이상 노인 남녀의 아침식사와 생활 습관이 혈압, $\gamma$-GPT, 혈당 및 HDL-C에 미치는 영향)

  • The principal objective of this study was to assess the effects of eating habits and health-related lifestyle on blood pressure, $\gamma$-Glutamic acid Peptide Transferase ($\gamma$-GPT), glucose and HDL-Cholesterol (HDL-C). All subjects (261 male, 252 female) were from the Iksan area of Korea, and were at least 50 years of age. The mean systolic blood pressure (SBP), diastolic blood pressure (DBP) and HDL-C for all the subjects was 131.3 mmHg, 78.5 mmHg, and 43.1 mg/dl, respectively. The HDL-C of the $50{\sim}64$ year-old group was higher than that of the over-75-year-old group. The "regular breakfast" group evidenced a lower SBP, $\gamma$-GPT, and higher HDL-C than the "seldom breakfast" group (p<0.001, p<0.001, p<0.01). SBP in the "snacking everyday" group was higher than that of the "seldom snacking" group (p<0.001). As for the frequency of using alcohol, SBP and $\gamma$-GPT for the group using alcohol everyday were higher than those of the non-drinking group (p<0.001, p<0.001), SBP and DBP were higher and $\gamma$-GPT was lower in the group that regularly drank more than 4 glasses of Soju than in the non-drinking group (p<0.001, p<0.05, p<0.001). SBP, DBP, and $\gamma$-GPT for the "heavy smoker" group were higher than those of the non-smoker group (p<0.01, p<0.01, p<0.05). The HDL-C was lower in the "heavy smoker" group than in the "non-smoker" group (p<0.05). The SBP with exercise was as follows: Group 1 ($0.022{\sim}0.073\;kcal/min/kg$) was lower than that of Group 3 ($0.144{\sim}0.161\;kcal/min/kg$) and Group 4 (0.161 kcal/min/kg) (p<0.001). To conclude: advancing age, snacking, and frequent alcohol consumption increased blood pressure; the lowest blood pressure was detected in the group that ate breakfast everyday and in the group that engaged in more frequent exercise; Moreover, $\gamma$-GPT was higher and HDL-C was lower in the smokers' group than in the non-smokers' group. Considering the results of this study, there appears to be an urgent need to instruct aging adults about eating breakfast everyday, reducing smoking, using less or no alcohol, and getting proper and regular exercise.

A Study on Health-related Habits, dietary Behaviors and health Status of the Middle Aged and the Elderly Living in Chonju Area (전주지역 중,노년층의 생활습관과 건강상태 조사)

  • The health-related habits, dietary behaviors and health status as well as the relationships between the health-related habits and dietary behaviors and the health status were investigated in the subjects of the middle aged(20 male and 50 female with the average age of 56.4$\pm$6.1) and the elderly(15 male and 15 female with the average of 68.4$\pm$3.6) living in Chonju. The survey included the personal interview using questionnaires, anthropometric measurement and biochemical tests in December, 1998. The breakfast irregularity was shown in 5.7% of male and 10.8% of female. The consumption of generally lightly salted foods was practiced in half of the subjects. The prevalence of smoking and alcohol drinking were shown in 20% and 31.4% of male group respectively. As judged by their body mass indices(BMI), none of the subjects was belong to the obesity group. However, the considerable degree of overweight was found in female subjects. The upper-body obesity was more prevalent in female compared to male group. The percentages of the anemic subjects as judged by WHO hemoglobin level were found to be relatively high specially for female(26.2%). The blood pressure, serum total cholesterol and LDL-cholesterol determination showed that the middle aged males and the elderly females tend to have higher levels compared to the different age bracket subjects from two-way ANOVA. Therefore, it can be assumed that the middle aged males and the elderly females are under the greater risk than the other groups. The analysis of the relationships between health-related habits and dietary behavior, and the health status showed that the regularity of breakfast, the consumption of lightly salted foods, the frequency of exercise and the alcohol drinking pattern influenced the city dwellers and the risk-related health habits as well as dietary behavior.

The Study on Dietary Habits , Dietary Behaviors and Nutrition Knowledge of Middle School Students in the Small City (소도시지역 중학생의 식습관 , 식생활 행동 및 영양지식)

  • This study was to obtain information about the dietary habits, the dietary attitudes, nutrition knowledge, and the food consumption of middle school students and to assess relationships between the dietary habits, the dietary attitudes, and nutrition knowledge of middle school students. Data were collected from 390 middle school students in Kimcheon. In the dietary habits, the regularity of breakfast showed the highest point and the snack consumption showed the lowest point. Female students were lower in the regularity of breakfast, and male students were higher in overeating of dinner and night. In the dietary attitudes and the perceived importance of nutrition, male students showed more favorable attitudes and perceived more importance of nutrition. In the nutrition knowledge, the responses to items 'Cola or cider doesn't have calories' and 'An egg contains lots of cholesterol' were the lowest point. Female students had higher knowledge than male students. In the food intake, grains, milk.yogurt.cheese, and fruits were always eaten or frequently eaten. While fast food, spicy and salty food, seaweeds, carbonated drinks, and yellow or green vegetables were eaten in lower frequency than other foods. Male students consumed more meat.ham.egg.fish, fried.stir-fried food, fast food, carbonated drinks, and spicy and salty food than female students. The correlation between dietary attitudes and dietary habits was statistically significant. The correlation between dietary attitudes and the perceived importance of nutrition was statistically significant. But the correlation between dietary attitudes and nutrition knowledge was statistically significant for female students, not significant for male students. Nutrition knowledge was related to the perceived importance of nutrition. It might be suggested that effective nutrition education program might be developed and implemented to ensure the good eating behaviors of middle school students.

Analysis of Dietary Behaviors, Food Consumption Frequency and Blood Clinical Indices by Residence Types of Female College Students in Seoul (서울지역 일부 여대생의 거주형태에 따른 식행동 및 식품섭취실태와 혈액 임상지표 비교 연구)

  • Objectives: College is an important time for students to establish their identity as an independent subjects and develop a foundation to maintain a healthy adulthood. However, after female students become college students, their eating habits are likely to become more irregular and they may experience various health problems because of excessive weight control. Therefore, this study was conducted to investigate the dietary behaviors and blood clinical indices of female college students by residence types. Methods: A total of 374 subjects were classified as home group, self-boarding group or boarding group according to residence type. Dietary habits, frequency of food intake, and eating attitudes were examined through questionnaires and anthropometric measurements and blood clinical indices were analyzed. Results: The meal most frequently skipped by female college students was breakfast, and the frequency of skipping breakfast was significantly lower in the home group than other groups. Most college students recognized that their eating habits had worsened since becoming college students, with the self-boarding group in particular feeling that their eating habits changed negatively. The consumption frequencies of protein foods, fruits, dairy products, seaweed, and fatty meats were significantly lower in the self-boarding group than other groups. The home group ate food cut into smaller pieces, while the self-boarding group tried new and rich foods. Residence types did not affect blood clinical indices. Conclusions: The self-boarding group had inadequate dietary habits compared to the home group. Although residence type did not affect the blood clinical indices, the students still had poor dietary habits. Therefore, proper nutrition education is needed to improve the nutritional status of college students, especially those that self-board.

A Survey on the Number of Meals Skipped and the Types of Main Meals in Miryang and Daegu (결식과 주식의 종류에 관한 조사 연구 -대구와 밀양지역을 중심으로-)

  • This study was conducted to find the number of meals skipped and the types of main meals consumed by people in Miryang and Daegu. The subjects consisted of elementary school students(ES), middle school students(MS), high school students(HS), college students(CS) and adults, divided into below the age of 40(AU) and above the age of 40(AA). Data were collected through a 7-day dietary record from 941 subjects. The definition of rice-based meal(RM) and wheat-based meal(WM) depends on the type of grain eaten in the main dish, rice or wheat flour, respectively, regardless of the menu. Out of all the meals consumed by the subjects during 7 days before the survey, 71.5% of the meals consumed were RM, 13.1 % of the meals consumed was WM and 12.5% of the meals was skipped. Of the meals skipped, breakfast-skipping was the highest with 27.1%. There's no difference by region and sex. But there were several differences by age. The rates of skipped meal were high for CS, AU, HS, and MS in order. Especially the breakfast-skipping for CS was highest as 47.9%. In the types of main meal, the rates of RM was highest at breakfast and lowest at lunch. The rates of RM was higher in Miryang than Daegu, and there was no difference by sex. The rates of RM was high for AA, HS, ES and AU in order. ES and HS, who had highest rates of WM, had the highest WM consumption at lunch. It is because of school food service at lunch. Since the younger population consumed more RM compared to the older population, it can be speculated that more WM will be consumed in the future. Also efforts need to be made to discourage skipping meals.

Changes in Dietary Behavior and Lifestyle of Korean Adolescents by COVID-19 (COVID-19에 의한 한국 청소년의 식생활 행태와 라이프스타일의 변화)

  • The aim of this study analyzed changes in dietary habits and lifestyles before and after COVID-19 targeting adolescents, using the food consumption behavior survey (2019 vs 2021). In the change in health-related factors, height decreased overall, and a significant difference was especially evident in males. Awareness that functional foods and eco-friendly foods contribute to health has increased. Among the results of dietary behavior, the frequency of skipping breakfast showed that the rate of not skipping breakfast and the rate of skipping breakfast more than 5 times increased at the same time(p=0.019). The rate of eating out decreased significantly after COVID-19, and it was analyzed that schools and school cafeteria, as well as Street carts or restaurants and academy, all increased significantly as places where snacks were not consumed. In order to analyze changes in food-related lifestyle, it was grouped into convenience-seeking, quality/safety-seeking, taste-seeking, and health/safety-seeking. 'Small packaged or pre-processed products' decreased. On the other hand, items such as 'Safety rather than price when choosing food' and 'Don't eat food that could go bad' improved. 'Tend to eat regularly' was higher than 2021 compared to 2019. Also 'Tend to purchase HACCP and GAP-certified products' are increased. Because of COVID-19 changes in lifestyle have affected the diet of adolescents. The results of this study suggest that it can be used as a guideline establishment and nutrition counseling material for the formation of correct eating habits for adolescents in the future pandemic era.
