This study was carried out to evaluate changes in the characteristics of the fermented pork using a Korean traditional seasonings. Biceps femoris were cut to cube(7 ${\times}$ 12 ${\times}$ 2 em) and three Korean traditional seasonings such as soybean paste(Tl), garlic paste(T2), red pepper paste(T3), were seasoned by the proportions of meat to each seasonings(l: 1), respectively. The seasoned samples were fermented at 0 $\pm$ 1 $^{\circ}C$ for 10 days. Sensory evaluation did not significantly differ between all treatments. The highest pH among treatments were shown in T2, wheres T3 showed the lowest value. The highest saccarinity was shown in T2, followed by T3. Salinity was shown to be higher in all treatments. Shear force value was the highest in T2 and T3. VBN and TBARS increased during storage. The total bacterial counts was highest of storage 21 days. E. coli. was higher in the order of T2 > T3 > TI. Lactobacilli spp. was higher in the order of T2 > T1 > T3.
PURPOSE: This study was conducted to investigate the influence of hip abduction angle on the muscle activity of the Gluteus Maximus (GM), Biceps Femoris (BF) and Tensor Fascia Lata (TFL) during Knee Flexed Prone Hip Extension exercise. METHODS: The subjects of this study were 42 healthy individuals. All participant consented to participate in this study. Subjects performed exercise, using the Knee Flexed Prone Hip Extension exercise in three hip abduction position $0^{\circ}$, $15^{\circ}$ and $30^{\circ}$. Subjects rested two minutes, between changing hip abduction position. Data were analyzed using a Noraxon MR-XP 1.08 Master Edition EMG to determine average amplitude, for each angle and muscle. All data were processed by Multivariate analysis of variance (MANOVA). There were a total of three groups. the GM muscle, BF muscle, TFL muscle. RESULTS: GM muscle activity was greatest in the $30^{\circ}$ hip abduction position (p<.05), followed by $0^{\circ}$. Between $0^{\circ}$ and $30^{\circ}$ has significant difference in muscle activity. However, the BF and TFL amplitude were greatest at $0^{\circ}$ hip abduction position followed by $30^{\circ}$. Moreover, the TFL differed significantly between $0^{\circ}$ and $30^{\circ}$, but, BF did not (p<.05). CONCLUSION: Hip abduction at $30^{\circ}$ was found to be the most appropriate position for GM muscle activity.
Purpose : The purpose of this study was to examine if there is any correlation between pelvic tilt angle and trunk motion and trunk extensor during trunk forward flexion and to measure trunk motion, onset time of trunk motion, and onset time of trunk extensor activation. Methods : The subjects of this study were 42 healthy adults. The subjects had no back pain due to neurological disease and no experience of back surgery. After pelvic tilt angle was measured, each trunk forward flexion was performed three times. Trunk motion and onset time of trunk motion were measured using Myomotion. Four sensors were used, with one located at the upper thoracic (below $C_7$), the lower thoracic ($T_{12}-L_1$), the sacrum ($S_1$), and at the center of the anterior femur. Onset time of trunk extensors (spinalis, longissimus, gluteus medius, gluteus maximus, biceps femoris, and gastrocnemius) activation was measured using a wireless surface EMG. The EMG amplitude was normalized by using the reference voluntary contraction (RVC). The statistical significance of the results were evaluated using Pearson's correlation test. Results : The correlation between pelvic tilt angle and lumbar motion, onset time of pelvis motion, and onset time of gluteus medius activation was statistically significant in a positive direction (p<.05). The correlation between pelvic tilt angle with pelvis motion, onset time of lumbar motion, and onset time of longissimus activation showed a statistically significant negative correlation (p<.05). Conclusion : The study results provide a significant contribution to our understanding of the lumbar load at the initial stage of trunk flexion. Therefore, it may be possible to provide basic data for evaluation and treatment, such as orthodontic treatment for alignment of the spine and back pain. In addition, it is necessary to focus on normal exercise pattern reeducation as well as pelvic correction during exercise in daily life or in industrial fields.
Objective: This study was conducted to investigate the potential effects of prolonged photoperiod on the serum lipids, carcass traits, and meat quality of Jinjiang cattle during winter. Methods: Thirty-four Jinjiang bulls aged between 14 and 16 months were randomly assigned to two groups that were alternatively subjected to either natural daylight +4 h supplemental light (long photoperiod, LP) or natural daylight (natural photoperiod, NP) for 96 days. The potential effects on the levels of serum lipids, carcass traits, meat quality, and genes regulating lipid metabolism in the intramuscular fat (IMF) of the cattle were evaluated. Results: Jinjiang cattle kept under LP showed significant increase in both dry matter intake and backfat thickness. the serum glucose and the plasma leptin levels were significantly reduced, while that of melatonin and insulin were observed to be increased. The crude fat contents of biceps femoris muscle and longissimus dorsi muscle were higher in LP than in NP group. In longissimus dorsi muscle, the proportions of C17:0 and C18:0 were significantly higher but that of the C16:1 was found to be significantly lower in LP group. The relative mRNA expressions in IMF of longissimus dorsi muscle, the lipid synthesis genes (proliferator-activated receptor gamma, fatty acid-binding protein) and the fatty acid synthesis genes (acetyl-coa carboxylase, fatty acid synthetase, 1-acylglycerol-3-phosphate acyltransferase) were significantly up-regulated in LP group (p<0.05); whereas the hormone-sensitive lipase and stearoyl-CoA desaturase 1 were significantly down-regulated in LP than in NP group. Conclusion: Prolonged photoperiod significantly altered the growth performance, hormonal levels, gene expression and fat deposition in Jinjiang cattle. It suggested that the LP improved the fat deposition by regulating the levels of different hormones and genes related to lipid metabolism, thereby improving the fattening of Jinjiang cattle during winter.
PURPOSE: This study is examined the effects of vestibular stimulation through eye movement on balance and muscle activity. METHODS: In 42 healthy adults, no eye exercise was applied to both feet and one foot. The speed of smooth pursuit eye movement (.2 Hz, .3 Hz, and .5 Hz) and saccadic eye movement (.5 Hz and 1.1 Hz) were randomized. The measurements were taken three times for 30 seconds while standing on two feet and measured three times for 10 seconds while standing on one foot. The muscle activity measurement equipment was used to measure the electromyogram signals of the tibialis anterior, peroneus longus, gastrocnemius medialis, vastus medialis, vastus lateralis, biceps femoris, abdominal internal oblique, and erector spinae muscle. RESULTS: As a result of this study, when applying smooth pursuit eye movement on one leg, the pressure center movement increased, the muscle activity of the lower extremity increased, in the saccadic eye movement, and the center of pressure decreased. CONCLUSION: Accordingly, the smooth pursuit of eye movement, the intervention of this study, affects balance. Through this, the balance can be improved by applying eye movement to the target who needs to improve the balance ability.
Purpose : The hamstring is a group of three muscles, biceps femoris, semitendinosus, and semimembranosus, placed behind the thigh. The hamstring is one of the most commonly injured muscles and usually occurs during high-speed, high-intensity exercise. The purpose of this study was to investigate the effect of static stretching and eccentric exercise of hamstrings on flexibility, strength, and functional performance. Methods : This study was conducted on 28 healthy adults. Subjects were divided into a static stretching group (n=15) and an eccentric exercise group (n=13). Subjects measured hamstring flexibility (active knee extension test), hamstring strength (concentric and eccentric peak torque), and functional performance (triple hop for distance and modified 20 m sprint). The intervention was conducted three times a week for six weeks. To compare the difference between values before and after the intervention, paired t-test was used, and an independent t-test was used to compare between groups. Results : In both groups, the active knee extension test, concentric peak torque, triple hop test, and 20 m sprint significantly increased after the intervention compared to before the intervention (p<.05). However, no significant difference was found in eccentric peak torque after intervention in both groups (p>.05). No significant difference was found between the two groups in the effect on the variables (p>.05). Conclusion : Both interventions were found to be effective for flexibility, concentric strength, and functional performance. Eccentric exercise and static stretching are recommended to improve the flexibility and functional performance of the hamstring. This study's results will be considered essential data on the effectiveness of static stretching and eccentric exercise.
PURPOSE: This study sought to evaluate muscle activity and foot pressure during gait, and balance in female college students with genu valgum. METHOD: Participants were assigned based on their Q-angle to genu valgum group greater than 20° (GVG, n = 12), unilateral genu valgum group greater than 20° (UVG, n = 11), and control group (CON, n = 13). All subjects were evaluated for balance (Trace length, C90 area, C90 angle, and the Romberg test), muscle activity (gluteus medius; GM, tensor fasciae latae; TFL, vastus medialis; VM, vastus lateralis; VL, biceps femoris; BF, gastrocnemius; GCM and tibialis anterior; TA) and foot pressure (F/F ratio, R/F ratio, Hallux, 2~5 toe, 1st MT, 2~4 MT, 5th MT, Midfoot, M/heel, and L/heel) during gait. RESULTS: Romberg test showed significantly increased loss of balance in the UVG group compared with the CON. In the forward position, the imbalance was significantly increased in the UVG and GVG groups compared to the CON. Muscle activity of VL, GCM, and TA significantly increased in the GVG group compared with the CON. Static foot pressure, 1st MT significantly increased in the GVG compared to the CON group. The 5th MT significantly decreased in the CON compared with the GVG group. The R/F ratio significantly decreased in the GVG compared to the CON group. In dynamic foot pressure, the 2~5 toe significantly increased in the GVG compared with the UVG group. The left 5th MT significantly decreased in the UVG compared with the CON and GVG groups. CONCLUSION: These results indicate that genu valgum has a negative effect on balance, muscle activity, and foot pressure during gait in female college students.

Objective: The objective of this study was to investigate the effects of sheep slaughter age on myogenic characteristics in skeletal muscle satellite cells (SMSCs). Methods: Primary SMSCs were isolated from hind leg biceps femoris muscles of Wurank lambs (slaughtered at three months, Mth-3) and adults (slaughtered at fifteen months, Mth-15). SMSCs were selected by morphological observation and fluorescence staining. Myogenic regulatory factors (MRF) and myosin heavy chain (MyHC) expressions of SMSCs were analyzed on days 1, 3, 4, and 5. Results: The expressions of myogenic factor 5 (Myf5), myogenic differentiation (MyoD), Myf6, and myogenin (MyoG) in Mth-15 were significantly higher in Mth-15 than in Mth-3 on days 1, 3, and 4 (p<0.05). However, MyoG expression in Mth-15 was significantly lower than in Mth-3 on day 5 (p<0.05). The expressions of MyHC I, MyHC IIa, and MyHC IIx in Mth-15 were significantly higher than in Mth-3 on days 1 and 3 (p<0.05), and MyHC IIb were significantly lower than in Mth-3 on days 3 and 4 (p<0.05). In contrast, the expression of MyHC IIx in Mth-15 was significantly lower and MyHC IIb was significantly higher than in Mth-3 on days 5 (p<0.05). Conclusion: The slaughter age altered the expression of MRFs and MyHCs in SMSCs while differentiation, which caused the variation of myogenic characteristics, and thus may affect the meat quality of Wurank sheep.

Purpose: This study aimed to compare the lasting effects of the flossing band technique, dynamic and static stretching on hamstring on range of motion (ROM), muscle activity, and proprioception to identify the most effective pre-exercise method for preventing injuries. Methods: Thirty participants were randomly assigned to the flossing band (FB), dynamic stretching (DS), and static stretching (SS) groups, with 10 subjects in each. Measurements included muscle activity of the biceps femoris vis surface electromyography, knee ROM and proprioception during active knee extension and flexion using a smart joint goniometer. Assessments were conducted before, immediately after, 15, and 30 minutes after each intervention. Results: Proprioception showed no significant differences among groups at any time point. Significant differences in knee ROM were observed in the FB group (except between 15 and 30 minutes after), DS group (except between immediately after and 15 minutes after, and between 15 and 30 minutes after), and SS group (except between before and 15 minutes after, and between before and 30 minutes after). Muscle activity in the FB (except between before and 30 minutes after, and between 15 and 30 minutes after) and SS (between before and immediately after, between immediately after and 30 minutes after, and between 15 and 30 minutes after) groups showed significant differences, while the DS group exhibited no significant changes. Conclusion: Although direct comparisons did not establish superiority, within-group analyses indicated that the flossing band technique exhibited longer-lasting effects than dynamic and static stretching, providing valuable insights for injury prevention program design.
목적 정상 대퇴 근육의 탄성도를 정량적으로 측정함에 있어 자기 공명 탄성 검사의 실현 가능성을 확인하고 정상 대퇴 근육의 탄성도를 측정한다. 대상과 방법 이 전향적 연구는 일상적인 보행에 지장이 없는 자원자를 대상으로 대퇴부의 T2 강조 축상 영상과 대퇴 근육의 자기 공명 탄성 검사를 시행하였고 최종적으로 10명의 피실험자가 포함되었다[평균 연령, 32.5세, (범위, 23~45세)]. 탄성 특성은 휴식 상태에서 각 대퇴 근육에서의 전단 탄성 계수를 정량적으로 다음 4개의 대퇴 근육에 대해 측정하였다; 내측넓은근, 외측넓은근, 대내전근, 대퇴이두근. 결과 대퇴 근육의 평균 전단 탄성 계수는 각각 두 명의 판독자에서 내측넓은근은 0.98 ± 0.32 kPa, 1.00 ± 0.33 kPa, 외측넓은근은 1.10 ± 0.46 kPa, 1.07 ± 0.43 kPa, 대내전근은 0.91 ± 0.41 kPa, 0.93 ± 0.47 kPa, 대퇴이두근은 0.99 ± 0.37 kPa, 0.94 ± 0.32 kPa으로 측정되었다. 성별에 따른 전단 탄성 계수의 차이는 유의미하지 않게 나타났다(p < 0.05). 내측넓은근(판독자 1; p = 0.194; 판독자 2; p = 0.355)을 제외한 나머지 대퇴 근육에서 연령은 각 근육의 전단 탄성 계수와 유의미하게 일관된 음의 상관관계를 보였다. 결론 자기 공명 탄성 검사는 개별적인 근육의 탄성 특성을 정량적으로 측정할 수 있는 유용한 검사이다. 내측넓은근을 제외한 대퇴 근육에서 나이는 근육의 전단 탄성계수와 통계학적으로 유의미한 일관된 음의 상관관계를 보였다.
