Effects of Beef Bone Extracts on Quality of Baeck Kimchi (사골 국물이 백김치의 품질에 미치는 영향)

  • This study was conducted to investigate the effect of beef bone extracts on the organoleptic quality and fermentation of Baeck Kimchi. For this study, the organoleptic characteristics of Baeck Kimchi, with addition beef bone extracts were tested, and the changes in the fermentation factors, such as pH, acidity, reducing sugar and total microbial count, were observed during fermentation at 10$^{\circ}C$ and 20$^{\circ}C$. Greater amounts of lipids and soluble nitrogen were extracted to increasing the boiling time for the preparation of the beef bone extracts. However, 1% of the mixed beef bone extracts, prepared by boiling for 5, 7 and 9 hours, was the most acceptable for the Baeck Kimchi fermentation, as assessed from the results of sensory consumer tests. The beef bone extracts enhanced the umami taste of the unfermented Baeck Kimchi. The carbonated taste, sourness and fresh flavor of the fermented Baeck Kimchi were also enhanced. The fermentation rate was increased by the addition of beef bone extracts to Baeck Kimchi.

  • Angiotensin converting enzyme (ACE) inhibitor was isolated from beef bone extract hydrolysate. After hydrolysis of beef bone extract with a commercial protease, ACE inhibitory peptide was purified by using ultrafiltration, gel permeation chromatography, and reverse-phase high pressure liquid chromatography. The purified ACE inhibitor was a pentapeptide, Gly-Pro-X-Gly-Pro.

The Effect on the Nutritional Value of Beef Leg and Rib Bone Soup by Boiling Time (가열시간이 소 사골과 갈비뼈의 영양성분 용출에 미치는 영향)

  • This study was examined the contents of solid, calcium, phosphorous, magnesium, protein, amino acid and collagen in beef leg and rib bone soup by various boiling time(1, 2, 4, 8, 12 hours). The results were as follows; as the boiling time increased, contents of solid, calcium, phosphorous, magnesium, protein, amino acid and collagen were increased. However, the boiling time increased, cloudiness (T%) was decreased. When we compared beef bone leg with the rib bone soup, rib bone soup was much nutritional contents than leg bone soup. In sensory evaluation of the soup boiled for 12 hours, added with 0.8% salt, rib bone stew was highly evaluated than leg bone soup.

A Comparative Study on Quality and Physicochemical Characteristics of Segmental Bone Korean Beef Broth (한우 뼈 부위별 국물의 품질 특성 및 이화학적 특성 비교연구)

  • The purpose of this study was to perform a functional component analysis to optimize the recipes for Korean beef main bone area. To optimize the recipes for beef leg bone broth, beef feet broth and tail broth, the quality and physiochemical properties of the dishes were comparatived and investigated. Crude protein, crude fat and moisture showed significant differences among the beef leg bone broth, Beef feet broth and tail broth (p<0.001). All free amino acids showed significant differences, with the exception of cystine and tryptophan (p<0.05). All minerals showed significant differences (p<0.01). Na content was highest in the beef leg bone broth (211.77 mg/kg), followed by beef feet broth (254.40 mg/kg), and tail broth (134.93 mg/kg). Collagen was significantly different each dish (p<0.001), but chondroitin sulfate was not. And all nucleic acids showed significant differences.

Nutritional characteristics of horsemeat in comparison with those of beef and pork

  • This study was conducted to determine the nutritional characteristics of horsemeat and bone meal in comparison with those of beef and pork presented by Dietary Reference Intakes For Koreans. Longissimus muscle and large metacarpal bone samples were collected from 20 fattened Jeju horses. Muscle samples were subjected to proximate analysis, assays for fatty acid profile and minerals, and bone samples to mineral assays. Horsemeal had similar levels of protein (21.1 vs 21.0 or 21.1%) and lower levels of fat (6.0 vs 14.1 or 16.1%) compared with beef or pork, respectively. Horsemeat had much higher levels of palmitoleic (8.2 vs 4.4 or 3.3%) and $\alpha-linolenic$ (1.4 vs 0.1 or 0.6%) acids than beef or pork, respectively. Linoleic acid was much higher in horsemeat (11.1%) and pork (10.1%) than in beef (1.6%). PUFA:SFA and n-6:n-3 ratios in horsemeat were 0.29 and 10.2, respectively. There were no big differences in mineral contents between horsemeat, beef and pork. For daily recommended mineral intakes of male adults (Dietary Reference Intakes For Koreans), phosphorus, sodium, potassium, iron, zinc and copper can be provided up to 24, 2.5, 6.7, 21, 26 and 40%, respectively, by 100 g raw horsemeat, but calcium and manganese levels are negligible. Horse cannon bone had much higher mineral contents especially in calcium (10,193 mg/100 g), phosphorus (5,874 mg/100 g) and copper (0.79 mg/100 g). Thiamin, riboflavin, niacin and retinol contents were 0.20, 0.21, 1.65 mg/100 g and $30{\mu}g/100g$, respectively. But ascorbic acid and beta-carotene were not detected. Our data demonstrated that higher levels of palmitoleic and $\alpha-linolenic$ acid in horsemeat than in beef and pork may be beneficial for human health. Horsemeat and bone meal are a good source of some minerals and vitamins.

  • Analysis of major nutritional components and Sensory evaluation in two kinds of beef bone stocks (White & Brown) have been Carried out in this study, these stocks were prepared with four different parts of beef bone (Knee bone, Rumpbone, Legbone, Backbone). White bone stocks were made of each beef bone boiling in water & hours, while brown bone stocks were prepared with roasted beef bone in the oven at $230^{\circ}C$ for half an hour and boiled 8 hours with water. Fatty acids were determined by GLC (Gas Lipids Chromatogram), the minerals were analysed by Automic spectrometer. The results of these analysis were obtained as followes; 1. Neutral lipids was gradually becreased, and glycolipids phospholipids were increased in quantity in Brown stocks for 8 hours. Unsaturated fatty accid of Brown stocks was highly decreased due to roasting of bores in the oven at 23$0^{\circ}C$ for half an hour. But they appeared in large quantity in white stocks. 2. The minerals also contained of high percentage in almost Brown stock except backbone Stock 3. Four materials (Kneebone, Rumpbone, Legbone, and backbone) were used for this study and the paired comparison of flavor test presented the recognition of different flavor at 5% level of Least Significant Difference (LSD) on brown stocks (Kneebone, and Legbone). Ranking preference test showed that white Kneebone stock and brown legbone stock had good taste.

  • The purpose of this study was to investigate the sensory and physicochemical properties of brown sauce made with different kind of bone(beef bone, pork bone). For this purpose, the various methods and recipe of brown sauce appeared in the literatures were evaluated to select the most preferable brown sauce. Brown sauces made with pork bone, beef and pork bone showed negative value in the "a" value (redness). Viscosity of brown sauce made with pork bone was the highest as well as the brown stock. The sensory tests of brown sauce showed no significant difference between each groups except flavor at p<0.001.

There were 21 kinds foods and preservation of beef and the number of dishes were 346 in the literatures written before 1943. 2.Soup(羹) was appeared first, and followed by dried beef(肉脯), steamed(蒸), sliced of boiled beef(熟肉과 片肉), preservation(貯臟), pan broiled beef(濕熱炒), salted beef(肉醬), raw beef(膾), shish kebab(算炙), roasted with seasoning(炙), beef with vegetables cooked in pan(煎鐵), calf`s-hoof jelly(gelatin)(足片), jaban(佐飯), hardboiled beef(boiled in soy sauce), ravioli (饅頭), beef juice(肉汁), thick broth(heavy soup, 助致), grilled beef (煎油魚), mix with the season(muchim), sun(膳) and gruel(粥). 3.The total of 14 different names of soup were found in the literatures which are Yang tang(stomach soup), Dunggol tang(marrow soup), Dogol tang(medulla soup), Sungi kuk(ox-blood soup), Sogogi kuk(beef soup), Gom kuk(bone attached beef and organs soup), Jap tang(bone attached beef, organs and tough beef soup), Yukgaejang(fresh beef, organs and green onion soup), Joujeo tang(foot starched soup), Jok tang(foot soup), Kori tang(ox-tail soup), Kalbi tang(rib soup), Malgun jangkuk(clear soup), Wan ja tang(beef ball soup). 4.The number of staple ingredient were Tripe and fresh meat among 26 kinds of major ingredient, radish, wheat flour, egg among 21 kinds of miner ingredient black pepper, soy sauce and seasame among 22 kinds of seasonings, and Thin layer-fried egg among 9 kinds of decorating ingredient were used commonly in cooking for soup.

The Effect on Nutrition Constituent from Beef leg Bone by Acid Condiment (산성조미료의 첨가가 사골뼈로부터 영양성분에 미치는 영향)

  • Grain vinegar and citric acid were added while stewing beef leg bone for 12 hrs, and the extraction of calcium, phosphorous, magnesium, amino acid and collagen out of beef leg bone was measured. As the concentration of grain vinegar and citric acid (0, 0.5, 1.0, 2.0%) increased, the amount of calcium, phosphorous and amino acid dissolved out of the leg bone increased compared with the control. Citric acid extracted more calcium, phosphorous, magnesium, amino acid than grain vinegar at the same concentration. But, grain vinegar extracted more collagen than citric acid at 1% concentration. In sensory evaluation, the leg bone stew boiled for 12 hrs with 2% grain vinegar and control were favored greatly compared with the one with citric acid.

The Effects of Dietary Lipids and Ovariectomy on Bone Mass in Rats (식이지방과 종류와 난소절제가 흰쥐가 골질량에 미치는 양향)

  • This study examined the effect of dietary lipids and ovariectomy(OVX) on bone mass in rats. The experimental animals were divided into sham operation(S) or OVX(O) groups and then each group was divided into soybean oil(SS, OS), beef tallow(SB, OB), and fish oil(SF, OF) diet group. Experimental diets were fed for 16 weeks. Weight gain tended to be higher in OVX groups than in sham groups. Weigth gain was the highest in beef tallow group (SB) and the lowest in fish oil group(SF). There were no difference in weight, length, breaking force, strength and circumference of femur mong groups. However, volume of femur tended to be higher in OVX groups than in sham groups. Ash content of femur was significantly lower in OVX than sham groups but there were no difference between SB and OB group. Ca content in the soybean oil and beef tallow group were not influenced by OVX but Ca content in fish oil group was significantly higher in OF than SF group. The SB group showed the hyighest Ca content and the SF group showed the lowest Ca content. P content of femur was significantly lower in OVX groups than in sham groups but there were no difference between SB and OB group. The SS group showed the highest P content and the OS and OF group showed lower P content compare to other groups. From this result, it suggested that beef tallow positively influenced maintenance of bone mass by means of accumulation of body fat in ovariectomy.
