γ -Aminobutyric Acid (GABA) Content of Selected Uncooked Foods

  • We analyzed the ${\gamma}$-aminobutyric acid (GABA) content of a selection of uncooked foods. Foods with GABA concentrations in excess of 100 nmole per g dry weight included: brown rice germ, brown rice sprouts, barley sprouts, bean sprouts, beans, corn, barley, brown rice, spinach, potatoes, sweet potatoes, yams, kale and chestnuts. Cereals included: brown rice germ, brown rice sprouts, barley sprouts, bean sprouts, beans, corn, barley, and brown rice and had GABA concentrations of 718, 389, 326, 302, 250, 199, 190, and 123 nmole per g dry weight (DW), respectively. The vegetables: spinach, potatoes, sweet potatoes, yams and kale contained 414, 166, 137, 129, 122 nmole GABA per g DW, respectively. The GABA concentration of chestnut was 188 nmole per g DW. However, oatmeal, adlay, broccoli, squash, carrots, onion, apples, lentinus edodes, green laver, and lactobacillus had GABA concentrations of less than 100 nmole per g DW. These results show that brown rice germ, sprouted cereals and spinach are good sources of plant-derived GABA. These data will be useful in selecting foods for the manufacturing of uncooked foods containing a relatively high concentrations of GABA.

새싹보리 에탄올 농도별 추출물의 산화방지 활성 (Antioxidant activities of ethanol extracts from barley sprouts)

  • 본 연구에서는 최근 소비자에 대한 관심이 높아져 재배량 및 생산량이 증가하고 있는 새싹보리를 물 및 25, 50, 75% 에탄올 농도별로 추출물을 제조하여 기능성분 분석 및 산화방지 활성을 측정하였다. 추출수율은 추출용매의 극성도가 낮을수록 높아졌는데, 75% 에탄올 추출물의 수율이 가장 높게 나타났다. 또한 총 폴리페놀 및 총 플라보노이드 함량도 75% 에탄올 추출물에서 가장 높게 나타났는데, 특히 총 플라보노이드 함량은 다른 추출물 보다 약 2.5배 이상 차이를 보이는 것으로 나타났다. 새싹보리 에탄올 농도별 추출물의 페놀성 화합물을 분석한 결과 추출용매의 에탄올 농도와 상관없이 새싹보리의 주된 페놀성 화합물은 rutin, gallic acid, ferulic acid 및 ${\rho}$-coumaric acid로 나타났다. 또한 새싹보리 에탄올 농도별 추출물의 catechins 분석 결과 catechin, epicatechin, epigalloactechin, epicatechingallate 및 epigallocatechingallate가 분석되었다. 새싹보리 에탄올 농도별 추출물의 산화방지활성을 측정하기 위하여 DPPH 및 ABTS 라디칼 소거활성, 환원력 및 FRAP를 측정한 결과 총 폴리페놀 및 총 플라보노이드 함량이 높았던 75% 에탄올 추출물이 DPPH 및 ABTS 라디칼 소거능, 환원력 및 FRAP 모두 가장 높은 활성을 보였다. 결과적으로 새싹보리에 존재하는 기능성 물질들은 비극성 화합물의 함량이 높은 것으로 나타나 새싹보리를 에탄올을 용매로 추출물을 제조할 때 에탄올 농도가 높은 용매로 추출하는 것이 산화방지 활성에 효과가 좋을 것으로 판단된다.

Comparison of the contents of total polyphenol, total flavonoid, and flavonoid derivatives in unfermented and fermented barley sprouts

  • Barley (Hordeum vulgare) belongs to the Poaceae family. This study compared the polyphenol and flavonoid levels of unfermented and fermented barley sprouts using spectrophotometric assays. The findings indicated that fermentation greatly boosted the flavonoid content but caused only a slight increase in the polyphenol content. However, this does not imply that fermentation has no effects whatsoever on the polyphenol content of barley sprouts. This was due to the fact that some flavonoids cannot be detected by the wavelength used to calculate the overall polyphenol concentration. Both samples were subjected to high-performance liquid chromatography analysis and detected the flavonoids lutonarin, saponarin, isoorientin, isovitexin, and tricin-all of which have bioactive properties-most notably known for their antioxidant activity. These results augment the ongoing phytochemical profiling research and can possibly valorize the already thriving barley industry.

양액 처리에 따른 수경재배 새싹보리 수량과 폴리페놀 및 무기질 함량 비교분석 (Comparative analysis of hydroponically cultivated barley sprouts yield, polyphenol and mineral content by nutrient solution treatment)

  • 본 연구는 생육 기간에 따른 새싹보리 식물체의 길이, 무게 및 클로로필 함량 분석과 수확량을 통해 양액 처리에 따른 재배 효율성을 평가하고, 생산된 새싹보리의 무기성분 분석과 용매별 추출물의 총 폴리페놀 및 총플라보노이드 함량과 HPLC를 이용한 기능성 물질 분석을 통해 새싹보리의 산업적 이용 가능성을 높이고자 하였다. 새싹보리의 생육에서 무처리구보다 양액 처리구에서 생육속도가 빨랐으며 특히 지상부 길이가 크게 신장하였다. 지상부 길이가 더 증가한 만큼 생체중 또한 증가하였지만 수분 흡수량의 차이보다는 건물중의 증가로 이어졌다. 이는 수확량의 차이로 나타났다. 무처리구와 비교하였을 때 양액 처리구에서 생산량이 유의적으로 증가하였다. 클로로필 함량 분석을 통해 생육 9일차에서 광합성을 통한 독립영양 과정을 확인하였고, 생육 3일차와 6일차에서 양액 처리를 통한 무기성분 투입이 초기 생장에 보조적인 효과가 있다고 판단된다. 새싹보리의 폴리페놀 함량 분석 결과 총 폴리페놀 함량은 무처리구에서 높았지만 총플라보노이드 함량과 luteolin 함량은 양액 처리에 의해 증가하였다. 또한 추출 용매를 물로 사용하였을 때 폴리페놀 추출에 효과적이었다. 따라서 새싹보리 수경재배에서 양액의 투입이 높은 폴리페놀을 가진 새싹보리를 생산하고 생산량 증대에도 효과가 있음을 시사한다.

  • 본 연구에서는 건조조건과 분쇄조건을 달리하거나 추출한 식물류의 영양성분 함량과 영양성분의 보존율을 비교분석하였다. 동결분쇄한 식물류는 일반분쇄 하거나 추출한 식물류에 비하여 영양성분의 보존율이 높은 것으로 나타났다. 인공생체막에서 영양성분의 투과도를 분석한 결과 동결분쇄한 식물류의 영양성분이 잘 투과하였다. 분쇄과정에서 열발생을 최소화하고 입도를 작게 하는 동결분쇄 기술이 식물류 원료를 우수한 식물소재로 가공할 수 있는 기술임을 확인하였다.

Enhancement of Health Functional Compounds in the Sprouts of Barley (Hordeum vulgare L.) Cultivars by UV-B and Salicylic Acid Treatments

  • Barley (Hordeum vulgare L.) sprouts are a vegetable commonly used as a functional food material due to its high vitamin C concentration and antioxidant activity. In this experiment, we measured the changes in the antioxidant activity of several barley cultivars as well as in the concentrations of related compounds such as ascorbate and glutathione upon treatment with UV-B or salicylic acid (SA). The six barely cultivars were grown in a plant growth chamber (25/$18^{\circ}C$, 14/10 h, 200 ${\mu}mol{\cdot}m^{-1}{\cdot}s^{-1}$, 70% relative humidity) for 10 days. All barely cultivars showed different 1, 1-diphenyl-2-picryl-hydrazyl (DPPH) scavenging activities, which were increased by UV-B treatment and not by SA treatment. The changes in ascorbate concentrations were correlated with DPPH scavenging activity in both the treatments, suggesting that the antioxidant activity in barley sprouts was mainly dependent on ascorbate concentration. Furthermore, changes in ascorbate concentration showed similar tendencies to changes in free sugar concentration, especially glucose and sucrose, in both treatments. On the other hand, the concentrations of glutathione and cysteine highly increased by SA treatment, representing different tendencies compared to the DPPH scavenging activity and ascorbate concentration. 'Donghanchal' cultivar showed comparatively higher antioxidant activity, both constitutively and inducingly by UV-B treatment, with its higher concentrations of ascorbate and glutathione. These results suggest that barley sprouts could be used as a health-functional vegetable, contributing to the overall supply of antioxidant and sulfur-containing organic compounds.

Effect of Charcoal on Germination and Early Growth of Barley Sprouts

  • The aim of this study was to evaluate the effect of charcoal on germination and early growth of barley sprouts. Five treatments were employed based on different amount and treatment method along with control. Barley seeds were soaked in water for 8 hours. Two types of topping treatment were applied such as, charcoal: 100 g (designated as T1) and charcoal: 200 g (T2). Three kinds of mixing treatment were as follows: barley seeds were mixed with 100g of charcoal (designated as M1), with 200g of charcoal (M2), and with 300g of charcoal(M3). The control did not have any charcoal. In our finding, germination rates were observed 53.3% (control), 26.3%(T1), 36.3%(T2), 67.3%(M1), 81.7%(M2), and 79.7%(M3) at three days after inoculation (DAI). Length of radicle was found at 0.90 cm (control), 0.88 cm (T1), 0.99 cm (T2), 1.03cm (M1), 1.66 cm (M2), and 0.70 cm (M3) in 3 DAI. In addition, sprout length was found 4.5 cm (control), 10.4 cm (T1), 11.9 cm (T2), 5.7 cm (M1), 6.3 cm (M2), and 2.1 cm (M3) in 14 DAI. Fresh weight of sprouts were 0.78g (control), 1.03g (T1), 1.07g (T2), 0.96g (M1), 1.07g (M2), and 0.95g (M3). Among the treatment, topping of seeds on 200g of charcoal (T2) showed longest sprout length and fresh weight. Mixing treatments showed higher germination rates and sprout fresh weight. The results may be attributed to difference in micro-climate conditions (mostly temperature and humidity) in the growth boxes in different treatments.

새싹보리 재배기간 중 수분스트레스 처리가 사포나린 함량에 미치는 영향 (Influence of Drought Stress Treatment on Saponarin Content during the Growing Period of Barley Sprouts)

  • BACKGROUND: Barley sprouts contain a large number of secondary metabolites such as polyphenols, saponarin, and policosanols. The synthesis of such secondary metabolites occurs as a defense mechanism against external environmental stresses. In particular, it has been widely known that drought stress (DS) increases the content of flavonoids in plants. The objective of this study was to investigate the effects of drought stress treatment on the saponarin content in barley sprouts during the growing period. METHODS AND RESULTS: In this study, changes in saponarin content with different DS exposure periods and times were evaluated under the hydroponic system. For establishing different DS treatment periods, water supply was stopped for 1, 2, and 3 days, once leaf length was at 10 cm. To control different DS treatment times, water supply was stopped for 2 days, once leaf lengths were 5, 10, and 15 cm. As a result, the water potential of barley sprouts decreased from -0.8 MPa (before DS treatment) to -1.2, -2.4, and -3.2 MPa (after DS treatment), and reversely recovered to -0.8 MPa after re-irrigation. When 10 cm leaves were subjected to DS for 1 and 2 days, the saponarin content increased by 12 and 10%, respectively, while it increased by 19% when DS was applied to the 5 cm leaves. CONCLUSION(S): The results of this study suggest that drought stress at the early stage of growth (5 cm) is most helpful to increase the saponarin content of barley sprouts.

건조방법에 따른 새싹보리 설기떡의 품질특성 (Quality Characteristics of Sulgidduk added with Barley Sprout using Different Drying Methods)

  • The purposes of this study were: (1) to examine the quality characteristics of the Sulgidducks added with barley sprouts by blanching (CON), freeze-drying (FBP), hot-air drying(HBP); (2) to examine the quality characteristics of Sulgidduck such as the moisture content, the color value, the textural properties and the sensory evaluation; (3) to find the optimal ratio of barley sprouts, which were made by the three different drying methods. As a result, the Sulgidduks containing barley sprouts by CON showed a lot of significance and high correlation depending on the amounts of the barley sprout(p<0.05). As the amounts of CON, FBP and HBP increased, the L and the a values of Sulgidducks significantly decreased, whereas the b values of them increased. For the textual properties of the Sulgidducks, on the first day, the concentration in CON up to 6% showed no significant differences in the hardness, cohesiveness, springiness, and chewiness. In case of FBP, the increase in the additives caused decrease in the hardness, adhesiveness, springiness, and chewiness of the Sulgidducks on storage 0 day(p<0.05). As the amounts of HBP increased, the hardness, springiness of the Sulgidducks on the first day decreased(p<0.05). Conclusionally, 6% blanched barley sprout added group, 2% FBP and HBP were highly rated in color, flavor, bitterness, chewiness, overall acceptability and all sensory quality characteristics.

인공조명이 수경재배 새싹보리(Hordeum vulgare L.)의 생장과 품질에 미치는 영향 (The effect of artificial lights on the growth and quality of hydroponic cultivated barley (Hordeum vulgare L.) sprouts)

  • 본 연구는 물만을 공급하는 수경방식에서 인공광원에 따른 새싹보리의 생장과 품질에 미치는 영향을 분석하였다. 생육기간이 지나면서 초장이 길어지는 것을 관찰할 수 있었으며 지상부의 경우 형광등 처리구가 가장 높았으며 다음으로 LED 처리구, 자연광 처리구 순이었다. 또 에탄올 소독 처리구보다 무소독 처리구의 생장이 더 빠른 것을 관찰할 수 있었다. 종자 파종량이 많을수록 수확된 새싹보리의 수확량은 증가하였는데, 자연광 처리구가 가장 적었으며 형광등 처리구가 가장 높았다. 새싹보리 추출물의 총페놀 및 총플라보노이드 함량은 자연광 처리구가 가장 높았으나 TEAC와 FRAP은 모두 형광등 처리구에서 가장 높게 나타났다. 필수아미노산 함량은 41.64 ~ 45.93 mg/g의 범위로 자연광 처리구가 다른 두처리구에 비해 상대적으로 높은 함량을 나타내었으며, 비필수아미노산 함량은 45.51 ~ 53.69 mg/g의 범위로 LED 처리구에서 가장 높았다. 총아미노산 함량은 LED 처리구에서 97.47 ± 6.30 mg/g으로 가장 높았으며, 필수아미노산(46.83%)보다 비필수아미노산(53.17%)이 더 많이 분포하였다.
