The Korean Americans’ Knowledge on Korean Traditional Foods (I) -Actual State of Utilization and Improvement Measures- (미국 거주 한인들의 전통음식에 관한 인식조사(I);이용실태와 개선방안을 중심으로)

  • This study was conducted to investigate the actual state of utilization of Korean traditional foods by Korean Americans residing in L.A. area and to provide come policies, to improve their attitudes for Korean traditional foods. The proper period preparing traditional foods was the occasion of family events(47.0% )and Korean festivals(40.8%). Festival foods were prepared in Sulnal( =New Year's Day), Chusok( =the Korean Thanksgiving Day), Daeborum( =the 15th of January by the lunar calendar), Dongji( =the winter solstice) and Tano( =the 5th day of the 5th by lunar month), respectively. Sixty five percent of all the respondents expressed their wish to hand down the cooking methods of traditional foods. However, only28.6% of the respondents at their twenties replied positively on this matter. To maintain and develop traditional foods abroad, it is necessary that older generations sometimes offer opportunities to meet with them to the coming korean generations to taste traditional foods and that Korean food companies establish special selling agencies abroad and export standardized traditional foods. And furthermore, if tourism corporations and cooking schools hold a food exhibition and or a food-tasting party, occasionally, in conjunction with the embassies and legations abroad, the utilization of traditional foods will increase.

Community Health Worker Hepatitis B Education for Cambodian American Men and Women

  • Background: Cambodian Americans have high rates of chronic hepatitis B virus (HBV) infection and liver cancer. There is very limited information about the utility of community health worker (CHW) approaches to cancer education for Asian American men. We have previously reported our positive findings from a trial of CHW education about HBV for Cambodian Americans who had never been tested for HBV. This report describes similarities and differences between the outcomes of our CHW HBV educational intervention among Cambodian American men and women. Methods: The study group for this analysis included 87 individuals (39 men and 48 women) who were randomized to the experimental (HBV education) arm of our trial, participated in the CHW educational intervention, and provided follow-up data six months post-intervention. We examined HBV testing rates at follow-up, changes in HBV-related knowledge between baseline and follow-up, and barriers to HBV testing (that were reported to CHWs) by gender. Results: At follow-up, 15% of men and 31% of women reported they had received a HBV test (p=0.09). HBV-related knowledge levels increased significantly among both men and women. With respect to HBV testing barriers, women were more likely than men to cite knowledge deficits, and men were more likely than women to cite logistic issues. Discussion: Our study findings indicate that CHW interventions can positively impact knowledge among Cambodian American men, as well as women. They also suggest CHW interventions may be less effective in promoting the use of preventive procedures by Cambodian American men than women. Future CHW research initiatives should consider contextual factors that may differ by gender and, therefore, potentially influence the relative effectiveness of CHW interventions for men versus women.

  • Recently, a lot of consumers in the United States are trying to find out the diverse Asian foods due to the raw material used,sauce,flavor,taste, and cooking philosophy. Asian fare has boomed up in the past decades at restaurants and retail food markets. These phenomena are considered to continue since many Americans become more cautious for health since they believe the traditional Asian foods are better for health than European, Latin, and traditional American diets. The increase of Asian population in America also induce the increased consumption of Asian foods, and those who traveled and tasted Asian foods during their journey want to take Asian foods after back home. Several sauces including gochujang, ramen, and seaweed snack are examples of Asian foods consumed in a large quantity. Many Asian food and material suppliers are trying to pioneer and penetrate American food market with exotic multifaceted Asian cuisine.

  • The relationship between an adolescent and his/her parents is one of the most important relationships that can have a significant effect on adolescents' well-being and functioning. While there has been an increase in research on Asian American families in recent years, still much less is known about adolescent-parent relationships in these families. Asian American adolescents face some of the challenges that mainstream European American adolescents face, but their experiences are complicated by the cultural and immigration-related factors that have unique contribution to their relationships with their parents. As such, there is urgent need for research that identifies and provides a comprehensive understanding of factors that contribute to the experiences of Asian American immigrant families. The current paper provides a systematic look at adolescent-parent relationships in Asian American immigrant families using the Bronfenbrenner's ecological model. More specifically, this paper provides a succinct review of the literature on developmental issues, immigration, and culture-related factors that affect Asian American adolescent-parent relationships, and guided by Bronfenbrenner's ecological theory, an ecological framework of Asian American adolescent-parent relationships is proposed.

Motivating Underserved Vietnamese Americans to Obtain Colorectal Cancer Screening: Evaluation of a Culturally Tailored DVD Intervention

  • Background: Colorectal cancer (CRC) is a leading cause of cancer death among Vietnamese Americans, yet screening remains underutilized. We investigated the effectiveness of a culturally tailored DVD intervention in promoting CRC screening among unscreened Vietnamese Americans age 50 and over. Materials and Methods: Using a community-based participatory research approach, we conducted a trial comparing twenty-eight subjects who received a mailed DVD in Vietnamese, with twenty-eight subjects who received a mailed brochure in Vietnamese. Subjects completed telephone surveys at baseline, One-month, and one-year. The primary outcome was receipt of screening. Secondary measures were participants' knowledge, attitudes, and beliefs about CRC screening. Two focus groups explored the intervention's acceptability and effectiveness. Results: At one year, CRC screening rates of 57.1% and 42.9% were observed in experimental and control group respectively (p=0.42), Subjects in both groups showed increased knowledge about CRC after one month. Focus group findings revealed that the DVD was an effective method of communicating information and would help promote screening. Conclusions: The findings suggest that culturally tailored, linguistically appropriate content is more important than the type of media used. This relatively low intensity, low cost intervention utilizing a DVD can be another useful method for outreach to the often hard-to-reach unscreened population.

  • Multicultural literature serves as a device for mutual understanding of different cultural. racial, and ethnic groups. This sort of literature is like a window through which a reader can see what other value systems are. It also helps minority children discover their own cultural past and develop a sense of belonging. The purpose of this study is to investigate the general characteristics of East Asian American characters in English language children's fiction and to highlight the differences among three groups : Chinese Americans, Japanese Americans, and Korean Americans.

The Effect of Foreigner's Ethnic Food Attitudes on Purchasing Intentions of Korean Foods (외국인의 에스닉 푸드에 대한 태도가 한식 구매 의도에 미치는 영향)

  • In order to globalize Korean foods successfully, it is necessary to understand foreigners' attitudes about ethnic foods and how foreigners perceive Korean foods. It would be valuable to survey the degree of interest from foreigners when purchasing Korean foods. Thus, a survey was performed on the most common tourists in Korea, the Japanese, Chinese and Americans. 313 respondents completed the survey on ethnic foods (16 questions), purchasing intention of Korean foods (3 questions), and socio-demographic conditions (9 questions). Factor analysis and reliability analysis were conducted to identify the indicators of attitudes toward ethnic foods. Correlation analysis was conducted to confirm the relation between attitudes toward ethnic foods and Korean food purchasing intention. From the results of factor analysis, 5 factors emerged from the 13 out of 16 questions; and were labeled new food seekers, ethnic food seekers, familiarity seekers, new taste seekers and challenge seekers. Items were analyzed to determine the differences according to nationality by using the ANOVA, and it showed that Americans have the highest Korean food purchasing intentions. The regression analysis indicated that attitude factors on ethnic foods, new foods and new taste seekers are strongly related to Korean food purchase intentions.

Relationship of Acculturation to Demographics and Dietary Habits Among Korean Americans (재미 한인의 문화 적응도에 미치는 인구통계학적 요인과 식생활 습관과의 관련성)

  • This study investigated how acculturation varies with demographic variables and is related to dietary habits among Korean Americans. The respondents were 162 Korea Americans aged at least 18 years old residing in the Greater New York metropolitan area. The level of acculturation was measured using a modified Suinn-Lew Asian Self-Identity Acculturation(SL-ASIA) scale. Acculturation was operationally defined to be composed of 6 factors, which are language, media use, friendship, food, pride, and ethnic self-identity. Each factor in the level of acculturation was identified by how it is related to demographics and dietary habits in the method of correlation coefficients and stepwise multiple regressions analyses. The reliability of the modified SL-ASIA scale was high as measured by Cronbach alpha of .92. The level of acculturation was related to place of birth, age, length of residence in the U.S., and education. The younger, the longer they had lived in the U.S., and the more they were educated, the more acculturated. Acculturation could be predictable for 52% of its variance with all demographic variables. Among the 6 factors in the level of acculturation, five of them, language, media use friendship, food, and ethnic self-identity were correlated with dietary habit changes after immigration and type of meals. All 6 acculturation factors could predict 21% of change in dietary habits. the information from this study can be used to describe usual describe usual dietary habits according to various aspects of acculturation to better understand the dynamics among acculturation, demographics, and dietary habits.

Advance Care Planning: Preliminary Report of Differences and Similarities between Korean and Korean American

  • Purpose: This study was conducted to do preliminary report of differences and similarities between Koreans residing in Korea and Korean Americans residing in America regarding their awareness of end-of-life care, attitudes toward advance care planning, truth telling, and preferred decision-making model. Methods: Two participating groups were selected: a) Koreans residing in Korea, and b) Koreans Americans who had resided in the United States for at least 20 years. 25 Koreans and 23 Korean Americans who were older than 65 years old participated in this study. They were asked via a self-administered questionnaire that contained demographic questions and questions about end-of-life decision making regarding awareness of end-of-life care, attitudes toward advance care planning, truth telling, and preferred decision-making model. A Chi-square was used to measure differences between Koreans' and Korean Americans planning. A P value of less than 0.5 was considered significant. Data analysis was performed using SPSS 18.0. Results: In some aspects of awareness of end of life care, attitudes toward advance care planning, and truth telling, both groups had similar opinions. However, there were significant differences between groups in the necessity of end of life documentation, preferential informing the truth, and preferred decision making model. Conclusion: There were similarities and differences regarding some end of life issues between the Koreans and the Korean Americans.

Perceived Fitting Problems of Ready-to-Wear Garments with Asian Women in U. S. A. - Focusing on the residents of Twin Cities in Minnesota - (미국내 아시아 여성들의 기성복에 대한 맞음새 인지도 연구 - 미네소타주 트윈시티 거주자를 중심으로 -)

  • Recently, the population of Asian people has increased constantly in the United States., but appearances, culture and thoughts of Asian people are different with Americans in various ways, especially body shapes. Despite the recent developments in apparel size ranges in U. S. A., few changes have been made in sizing for Asian Women. Size ranges designed for Asian Women are not available on the mass market in U. S. A. They have many difficulties in finding clothing that fits well. Especially they do experience such as clothing problems in varying degrees. Therefore this research was designed to investigate the specific clothing problems of Asian Women in relation with size and fit, Asian Women's present means of resolving their clothing problems in U. S. A. 60 Asian Women in Twin cities, Minnesota were interviewed during the period of October, 1991. Data were analyzed by descriptive statistics for demographic information on the selected sample and the chi-square test for relationships between the independent variables and clothing problems. The results indicated that most respondents had shopped in a department store and 38.3% of the respondents answered rarely-fit of suit. Also 40% of the respondents answered that pants length was too long. There were significant relationships between the demographic variables i.e. age, marital status, occupation, height and clothing problems of Asian women.
