  • The characteristic aroma of Gardenia Absolute Oil made from Gardenia Jasminoides Ellis was investigated by GC and GC-MSD and by sensory evaluation The method of GC Analysis was used Double Column System by Carbowax 20M /SPB-1 of Pola/nonPola columns. And the result data of analysis was checked automatic Relent ion Indexs Match System by GC Workstation. A total of 51 compounds were identified in Gardenia Absolute Oil, including t entatively erstimated 9 compounds. The major components were Linalool, Farnesene of various form, Jasmin Lactone, Gamma undecalactone and Cis-3-hexone derivatives.

Impact of substrate composition on the growth, flavor, and volatile compounds of Pleurotus ostreatus (느타리 병재배 배지조성이 자실체 생육, 맛과 향의 성분에 미치는 영향)

  • This study analyzed the effects of different nitrogen sources in substrate composition on the growth of Pleurotus ostreatus, as well as the subsequent changes in flavor and antioxidant activity. The T2, composed of poplar sawdust, beet pulp, cotton seed dregs, and cotton seed coat in a ratio of 40:20:20:20, exhibited the highest yield at 156.6 g. The total polyphenol content and ABTS and DPPH radical scavenging activities were 8.25 mg GAE/g, 70%, and 49%, respectively, showing higher radical scavenging activity compared to the Control and T1. Additionally, varying nitrogen content resulted in distinct aroma patterns and is presumed to influence taste profiles such as sourness, umami, and saltiness.

  • Crossbred pigs (female, 198 days old, $102{\sim}118kg$, Tamra Marketing Farm) were fed a diet supplemented with tangerine peel fer an extended period to study its effect on the physicochemical properties and palatability of the pork. The samples for this study consisted of the pork from pigs fed a diet without tangerine peel (T0), and the pork from pigs fed a diet containing 8% tangerine peel during the entire breeding period, from early pregnancy through the finishing period (T1). The pH Hunter's $L^*$ value, water holding capacity, freezing loss, thawing loss, cooking loss, hardness, springiness, cohesiveness, sensory raw meat color and cooked meat palatability of loin and belly were not significantly different between T0 and T1 pork (p>0.05). However, the Hunter's $a^*\;and\;b^*$ value, gumminess, shear force value (SFV) and smell were significantly higher in meat from loin of T1 than T0 pigs (p<0.05). Thus T1 pork exhibited an improved SFV, DPPH reduction and aroma of cooked belly meat (p<0.05).

Effects of Addition of Green Tea Extracts on Physicochemical Properties of Seasoned Chicken with Soy Sauce during Cold Storage (녹차 추출물의 첨가가 간장 양념계육의 냉장 저장 중 이화학적 특성에 미치는 영향)

  • The objective of this study was to investigate the effects of addition of green tea extracts on physicochemical properties and shelf-life of seasoned chicken with soy sauce during cold storage. Treatments (C, T1 and T2) containing various levels (0, 1 and 2%, respectively) of green tea extracts were manufactured, and we investigated pH, meat color ($L^*,a^*,b^*$), volatile basic nitrogen (VBN), thiobarbituric acid reactive substances (TBARS), total plate counts, fatty acid composition and sensory scores during cold storage for 16 days. T1 and T2 have more dark color than control during storage time. VBN, TBARS and total plate count of control were significantly higher than those of T1 and T2 at the latter storage time (p<0.05). Also, VBN, TBARS and total plate count of all treatments was increased with storage time. Linoleic acid was the highest value in control which had the highest value of TBARS in day 16 (p<0.05). Aroma value of control was significantly higher in storage time except day 16 than those of T1 and T2 (p<0.05). Acceptability value of control was significantly higher than those of T1 and T2 in day 4, 8 and 12 (p<0.05).

Effects of Dietary Fermented Persimmon Diet on the Meat Quality of Fattening Pigs

  • The purpose of this study was to explore the effect of fermented persimmon diet on the meat quality of fattening pigs. Pigs (75 kg) were grouped and housed as 15 animals per pen and 3 replications per treatment. The basal diet (C) was substituted with 3% (T1), 5% (T2) and 10% (T3) of fermented diet. The 180 pigs were fed experimental diet for 42 d and 10 longissimus dorsi (LD) per treatment were collected when each swine reached 105.6 kg of body weight. The crude fat concentration of LD was lower (p<0.05) in treatments, but the pH value of T3 and the shear force values of T2 and T3 were higher (p<0.05) than those of C. The CIE $L^*$ value (lightness) was significantly (p<0.05) higher in T2 and T3 than C, but the CIE $b^*$ (yellowness) of T2 and T3 was significantly (p<0.05) lower than C. The composition of myristic acid and oleic acid was significantly (p<0.05) higher in treatments than in C, while the composition of palmitic acid and stearic acid of treatments were significantly (p<0.05) lower than C in LD. Sensory evaluation of cooked meat as scores of aroma, taste, juiciness and overall acceptability showed higher (p<0.05) in treatments than in C. In conclusion, the dietary of fermented persimmon diet decreased the crude fat concentration, improved the fatty acids composition (increased composition of unsaturated fatty acid and decreased composition of saturated fatty acid) and improved the sensory evaluation of pork meat from fattening pigs.

  • Certain parts of 190 kinds of medicinal herbs and 171 kinds of original materials of food were extracted by methanol. The extracts were tested their microbial inhibition activities against several food spoilage microorganisms, Micrococcus luteus, Bacillus subtilis, Bacillus cereus, Listeria monocytogenes, Pseudomonas aeruginosa, Salmonella typhimurium, Escherichia coli, Saccharomyces cerevisiae, Candida albicans, Penicillium citrinum, Aspergillus flavus and Aspergillus niger. The methanol extracts of Cornus officinalis, Evodia officinalis, Glycyrrhiza glabra, Salvia miltiorrhiza. Schizandrae fructus, Coptidis rhizoma, aroma hop and bitter hop were shown inhibitory effect on certain species of gram(+) bacteria. Aroma hop and bitter hop were shown inhibitory effect on certain species of gram(-) bacteria. The methanol extract of Salvia miltiorrhiza exhibited a strong antibacterial activities. It was purified by solvent fractionation, silicagel column chromatography, prep. TLC, prep. HPLC. The purified active substance was identified as cryptotanshinone by EIMS, $1^H-NMR,\;{13}^C-NMR$ and DEPT. Cryptotanshinone showed a strong antibacterial activity against gram positive bacteria $(MIC\;:\;3.91{\sim}62.50\;{\mu}g/mL)$. Especially, this compound was the most strong activity against Bacillus subtilis $(MIC\;:\;3.91\;{\mu}g/mL)$.

Changes in Taste Compounds of Seasoned Pork with Korean Traditional Sauces during Aging (전통 장류로 제조한 양념육의 숙성 중 맛성분 변화)

  • This study was carried out to evaluate changes in taste compounds of seasoned pork with Korean traditional sauces. The samples, pork loins were cut by the shape of cube($5{\time}15{\time}5$cm) and seasoned pork with Korean traditional sauces such as soy sauce base(T1), red pepper sauce base(T2), and soybean sauce base(T3) in the same proportion of meat seasonings, respectively. The seasoned samples were stored, at $1{\pm}1^{\circ}C$ during 28 days. Citric acid and fumaric acid were higher after 14 days of storage for the treatments, seasoned pork with red pepper sauce had higher compared to other treatments. While propionic acid and lactic acid were higher in seasoned pork with soybean sauce compared to other treatments. Free amino acids was higher in seasoned pork with soybean and red pepper sauce compared to seasoned pork with soy sauce. In all treatments, free amino acids was slightly increased with aging periods. 5'-inosine monophosphate(IMP) was decreased, whereas inosine was increased with increase of aging time. Inosine was higher in seasoned pork with soybean and red pepper sauce compared to seasoned pork with soy sauce. In sensory evaluation, aroma, flavor, tenderness and juiciness were increased with aging period increased in all treatments.

The Fermentation Analysis of Mungyeong Green Apple (문경 풋사과를 활용한 발효 연구)

  • In this study, Green apple from Mungyeong area was used as material in the fermentation process. In apple fruit growing process, to produce a high quality apple fruit, some Green apple should be removed. Since the removed Green apple fruit is inedible, it doesn't have any economical value. To solve this problem, this paper proposed fermentation process to increase the economical value of raw apple as a fermentation product. This research conducted seven days, and the pH and brix value analysis was done every 12 hours during fermentation process. The experimental results show that the fermentation product under blender treatment is better than cutting treatment and without cutting treatment. Initial brix 25% is the best treatment for fermentation because produce fermentation product with a good taste and aroma than other treatment.

  • Purpose: The purpose of this study was to examine the effects of aromatherapy on blood pressure, pulse, fatigue and sleep for patients with allergic rhinitis admitted at a hospital specialized in an oriental medicine. Methods: This research was a single-group pretest-posttest design. Data were collected at admission and discharge from May to December, 2009. The patients selected were received an aroma inhalation therapy via nebulizer with a 2% diluted oil mixture of eucalyptus and peppermint with 10 cc of saline solution in the ratio of 1:1 ones a day for 15 min in the period of 2 weeks. The data were analyzed for the descriptive statistics and paired t-test. Results: There was a statistically significant improvement on physical and psychological symptoms of fatigue and sleep with a increase in systolic blood pressure. Conclusion: Eucalyptus and peppermint blended oil aromatherapy as a sleep induction modality is an effective nursing and therapeutic intervention in conjunction with acupuncture and herbal medicine for symptoms of nasal congestion. However, further well designed research is required in evaluating the effectiveness of the types of clinically available essential oil.

Effects of Hand Massage with Aroma Oil on Stress Responses and Serum Immunity of Registered Nurse during the Night Duty (아로마 손 마사지가 밤 근무 간호사의 스트레스 반응 및 IgA에 미치는 효과)

  • Purpose: The purpose of this study was to verify the effect of aromatherapy hand massage on stress responses and serum Immunity of RN's before the night duty. Method: The data were collected during the period from Oct. 10 to Nov. 15, 2005 at S-Hospital in Seoul. There were forty-eight subjects, 24 for the experimental and 24 for the control group. A Pre & post test were conducted to measure pulse rate, perceived stress(level and score) and a blood sample for cortisol and IgA. In the experimental group, lavender and geranium were used. Data were analyzed by descriptive statistics, $x^2$-test and t-test with SPSS program. Result: The pulse rate was reduced but there were no significant differences between the two groups. Scores of subjective stress(VAS) decreased significantly after aromatherapy hand massage and the level of serum Cortisol was reduced significantly. The level of serum IgA was elevated significantly. Conclusion: Aromatherapy hand massage could be a useful intervention to reduce stress and elevate the immunity of nurses during the night duty.
