학교급식 및 외식업체에서의 신선편이 농산물 사용실태 및 요구도 평가 (Assessment of Demand and Use of Fresh-Cut Produce in School Foodservice and Restaurant Industries)

  • 본 연구는 전 지역의 학교급식 영양사와 외식업체 종사자를 대상으로 학교급식 및 외식업체에서의 전처리 농산물 식재료의 사용실태와 농산물 이용의 효율을 높이기 위한 요구도에 관하여 설문조사를 실시하였다. 조사대상자의 업종형태에서는 학교급식이 181명(29.8%)이었고, 외식산업은 64명(26.1%)이었다. 학교급식의 운영형태는 148개교(81.8%)가 직영급식으로, 33개교(18.2%)가 위탁급식으로 운영되었으며, 외식업체는 프랜차이즈 레스토랑(45.3%)이 가장 많았다. 식재료 공급업체 선정 시 중요하게 고려하는 요소로는 학교급식 및 외식업체 모두에서 식재료의 품질이 가장 중요한 것으로 나타났고, 2순위로 중요하게 고려하는 요소로는 학교급식의 경우 공급업체의 위생시설(HACCP인증 여부)이 외식산업의 경우 식재료의 가격으로 조사되었다. 학교급식 및 외식업체에서의 전처리 농산물 식재료 구매 시 어려운 점으로는 식재료의 품질 및 신선도 저하가, 검수 시 어려운점으로는 식재료의 품질여부를 육안으로 구분하기 어려움이 전처리 농산물 식재료 사용에 있어서는 식재료의 품질에 가장 큰 비중을 두었다. 또한 전처리 농산물 식재료 조리시 가장 큰 문제점은 학교급식에서는 재세척의 필요성이, 외식업체에서는 일정하지 않은 크기인 것으로 나타났다. 학교급식에서 운영형태에 따른 계약기간으로 직영에서는 1개월이 39.2%로 가장 많은 반면 위탁에서는 1년 이상이 81.8%로 가장 많아 운영형태에 따른 계약기간에서 유의적 차이를 보였다(p<0.05). 전처리 농산물 식재료의 사용 확대 가능성에 대해 급식 및 외식에서 각각 44.4%와 58.1%가 앞으로 계속 사용이 증가할 것이며 전처리 농산물 식재료의 크기 규격화도 과반수 이상이 필요하다고 답하였다. 전처리 농산물 식재료의 위생 상태에 대한 불신으로 학교급식의 96.0%, 외식산업의 78.3%가 개봉 후 다시 세척을 하고 있었으며 위생 상태에 대한 불신이 전처리 농산물 식재료의 가장 중요한 문제점으로 지적되었다. 주로 이용하고 있는 전처리 농산물 식재료의 형태에서는 학교급식과 외식산업 모두 일반농산물을 많이 사용하고 있었고, 전처리 농산물 식재료를 사용하는 주된 용도로는 학교급식과 외식업체 모두 볶음과 무침으로 나타났다. 전처리 식재료의 유통기간 연장을 위해 저온유통과 포장방법에 대한 연구가 요구되어졌으며 또한 향후 식재료의 이용효율을 높이기 위해 학교급식 및 외식업체 모두 포장 개봉 후 갈변 예방법이 필요하다고 하였다. 한편 전처리 농산물 식재료의 처리단계 요구도 조사결과에 따르면 학교급식의 경우 엽채류는 흙먼지제거 단계(36.4%)까지, 외식산업의 경우 다듬기 단계(36.8%)까지 원하였고, 나물류는 학교급식의 경우 40.4%가 데치기 단계까지 원한 반면, 외식업체의 경우 33.3%가 다듬기 단계까지를 원해 업종간 유의적 차이를 보였다(p<0.05). 이상의 결과를 볼 때 학교급식과 외식업체에서는 전처리 농산물 식재료 사용에 대한 요구도는 크지만 공급업체에 대한 불신, 식재료 안전성에 대한 불안감이 사용률을 저하시키고 있었다. 따라서 이러한 문제점들을 개선시키기 위한 대책으로 정부는 대다수의 식재료 공급업체가 중소기업으로 자체적으로 고품질의 안전한 식재료를 생산할 수 있는 인프라가 매우 부족한 점을 감안하여 안전한 식재료를 생산하기 위한 시설 및 공정별 HACCP 모델 개발 등과 같은 연구지원을 강화하여야 할 것이다. 또한 표준화된 식재료가 생산될 수 있도록 전처리 농산물 식재료의 표준규격 및 기준을 제정하고 안전한 식재료 생산을 위한 공정개선 및 소독제의 효과, 유통기한연장, 품질보존 등 다양한 연구가 앞으로 지속적으로 이루어져야 할 것으로 사료되어진다.

The Current Status and Prospect of Sericultural Byproduct Industry in China

  • Sericulture is a traditional agro-industry, which involves mulberry cultivation and silkworm rearing, has made great contributes to the human civilization. With the development of national economy and modem technology, mulberry and silkworm are being used to develop products with functionality besides the traditional cocoon production in China. In this paper, we brief the current developing situation of sericultural byproducts with functionality in the following aspects. (1) Functional products from silkworm larvae: silkworm powder, white muscardine silkworm, isolation and purification of anti-bacterial proteins from the larvae and production of medically valuable substances by Bombyx mori nuclear polyhedrosis virus (BmNPV) vector. (2) Utilization of silkworm feces: for pillow and for isolation of chlorophyll etc. (3) Production of valuable Chinese traditional medicine like Cordyceps sinensis with pupae, functional utilization of pupa protein and chitin. (4) Silk as additives to cosmetics, silk food and medical materials. (5) Functional utilization of mulberry: cultivation of edible fungus on mulberry shoots as medium, mulberry fruit drinks, mulberry tea, etc. The prospect of sericultural byproduct industry in China is also discussed.

Development of a Simultaneous Analytical Method for Diquat, Paraquat and Chlormequat in Animal Products Using UPLC-MS/MS

  • BACKGROUND: The residual analysis of polar pesticides has remained a challenge. It is even more difficult to simultaneously analyze multiple polar pesticides. Diquat, paraquat, and chlormequat are typical examples of highly polar pesticides. The existing methods for the analysis of diquat, paraquat and chlormequat are complex and time consuming. Therefore, a simple, quick and effective method was developed in the represent study for simultaneous analysis of diquat, paraquat and chlormequat in animal products, meat and fat using UPLC-MS/MS. METHODS AND RESULTS: Sample extraction was carried out using acidified acetonitrile and water and re- extracted with acidified acetonitrile and combine the extracts followed by centrifugation. The extract was then cleaned up with a HLB cartridge after reconstitution with acidic acetonitrile and water. The method was validated in quintuplicate at three different concentrations. The limits of detection (LOD) and quantification (LOQ) were 0.0015 and 0.005 mg/L, respectively. Matrix suppression effect was observed for all of the analytes. A seven point matrix matched calibration curve was constructed for each of the compound resulted excellent linearity with determination coefficients (R2) ≥ 0.991. Accuracy and precision of the method was calculated from the recovery and repeatability and ranged from 62.4 to 119.7% with relative standard deviation less than 18.8%. CONCLUSION: The recovery and repeatability of the developed method were in the acceptable range according to the Codex Alimentarius guideline. The developed method can be applied for the routine monitoring of diquat, paraquat, and chlormequat in animal products, meat and fat.

  • This study was conducted to investigate the effects of environmental sound rice farming method on the productivity of rice industry which may result in impacts on the staple food securities. Recently fanners have been concerned about adopting new rice cultivation method such as organic and low input farming system in which fertilizer and pesticide can be substantially reduced so as to alleviate the burden of agro-ecosystem. However, It has been argued about whether or not there are negative impacts on the self sufficiency rate of food, income of farm household and technological adaptability. Therefore this study examined the productivity trend of environmental rice farming system and predicted the long term rice self-sufficiency rate when environmental rice farming system are adopted by assuming various scenarios. It was estimated that rice self-sufficiency rate can be decreased up to 52.2% by 2010. Based on the analysis of results, policy recommendations for environmentally sound rice farming were suggested as follows: 1) gradual adopting and transferring of environmental rice cultivation method, 2) increasing profitability of rice growing fanners 3) developing the farm level technology specific to Korean farming condition, 4) institutionalization of direct payments for encouraging environmental rice fanning.

True Digestibility of Phosphorus in Different Resources of Feed Ingredients in Growing Pigs

  • To determine the true digestible phosphorus (TDP) requirement of growing pigs, two experiments were designed with the experimental diets containing five true digestible P levels (0.16%, 0.20%, 0.23%, 0.26% and 0.39%) and the ratio of total calcium to true digestible P (TDP) kept at 2:1. In Experiment 1, five barrows (Duroc${\times}$Landrace${\times}$Yorkshire) with an average initial body weight of 27.9 kg were used in a $5{\times}5$ Latin-square design to evaluate the effect of different dietary P levels on the digestibility and output of P and nitrogen. In Experiment 2, sixty healthy growing pigs (Duroc${\times}$Landrace${\times}$Yorkshire) with an average body weight (BW) of 21.4 kg were assigned randomly to one of the five dietary treatments (12 pigs/diet), and were used to determine the true digestible phosphorus (TDP) requirement of growing pigs on the basis of growth performance and serum biochemical indices. The results indicated that the true digestibility of P increased (p<0.05) linearly with increasing dietary TDP level below 0.26%. The true P digestibility was highest (56.6%) when dietary TDP was 0.34%. Expressed as g/kg dry matter intake (DMI), fecal P output increased (p<0.05) linearly with increasing P input. On the basis of g/kg fecal dry matter (DM), fecal P output was lowest for Diet 4 and highest (p<0.05) for Diet 5. The apparent digestibility of crude protein (CP) did not differ (p>0.05) among the five diets, with the average nitrogen output of 12.14 g/d and nitrogen retention of 66% to 74% (p>0.05), which suggested that there was no interaction between dietary P and CP protein levels. During the 28-d experimental period of Experiment 2, the average daily gain (ADG) of pigs was affected by dietary TDP levels as described by Eq. (1): $y=-809,532x^4+788,079x^3-276,250x^2+42,114x-1,759$; ($R^2=0.99$; p<0.01; y = ADG, g/d; x = dietary TDP, %), F/G for pigs by Eq. (2): $y=3,651.1x^4-3,480.4x^3+1,183.8x^2-172.5x+10.9$ ($R^2=0.99$; p<0.01; y = F/G; x = dietary TDP, %), and Total P concentrations in serum by Eq. (3): $y=-3,311.7x^4+3,342.7x^3-1,224.6x^2+195.6x-8.7$ (R2 = 0.99; p<0.01; y = total serum P concentration and x = dietary TDP, %). The highest ADG (782 g/d), the lowest F/G (1.07) and the highest total serum P concentration (3.1 mmol/L) were obtained when dietary TDP level was 0.34%. Collectively, these results indicate that the optimal TDP requirement of growing pigs is 0.34% of the diet at a total Ca to TDP ratio of 2:1.

상황버섯균 접종 황기의 배양 중 이화학적 성분변화 (Changes in physicochemical components of Astragalus membranaceus fermented with Phellinus linteus)

  • 본 연구에서는 상황버섯 균사체를 황기에 배양하여 이용성 및 기능성을 증진시킨 식품 및 소재를 개발하기 위한 연구의 일환으로 기초연구를 실시하였다. 수분함량, pH, 산도 및 환원당을 측정함으로서 균사체 배양 황기의 변화를 관찰한 결과 수분함량 및 pH는 균사체 배양기간이 지남에 따라 유의적으로 증가하는 경향을 보인 반면 산도는 시간이 지남에 따라 오히려 대체적으로 감소하는 경향을 나타냈다. 환원당 함량 측정결과 배양 30일차 황기가 대조구에 비해 약 2배 증가한 0.61 g/100 g으로 가장 높은 함량을 나타냈고, 배양 10, 20일차는 각각 0.36, 0.42 g/100 g 으로 대조구보다 다소 증가한 함량을 나타냈다. 추출용매에 따른 균사체 배양 황기의 추출수율 결과 열수추출물이 40.18~41.99% 범위로 80% 에탄올 추출물의 28.70~33.18%보다 높게 나타났다. 유리당 함량 분석결과 80% 에탄올 추출물 및 열수추출물의 모든 실험구에서 배양기간이 지남에 따라 fructose 및 sucrose의 함량이 감소하는 경향을 나타내었다. 유리아미노산은 필수아미노산 8종을 포함해서 총 17종이 검출되었으며 상황버섯균 배양 황기의 주요 아미노산은 arginine, alanine, aspartic acid 및 valine 으로 확인되었다. 아미노산의 총 함량은 배양기간이 지남에 따라 20일차까지 소폭 증가 한 뒤 30일차 감소하였으며, 그 중 배양 20일차가 121.47 mg%으로 배양일 중 가장 증가한 함량을 보였다. 상황버섯균 배양 황기의 성분 함량을 분석한 결과 열수 추출물의 배양 30일차에서 calycosin-7-o-${\beta}$-d-glucoside은 3.30 mg/100 g, ononin은 2.85 mg/100 g으로 대조구에 비해 각각 5배, 5.1배 감소하였으며, calycosin 및 formononetin 함량은 3.91 mg/100 g, 1.38 mg/100 g으로 대조구에 비해 각각 8.7배와 7.7배 증가한 함량으로 다른 배양일 보다 유의적으로 높은 함량을 나타내었다. 이는 황기에 존재하는 배당체인 calycosin-7-o-${\beta}$-d-glucoside 및 ononin (Formononetin-7-O-${\beta}$-d-glucoside) 성분이 aglycon 형태로 전환이 된 것으로 사료된다. 이러한 분석결과는 상황버섯 균사체 배양을 통한 황기의 이화학적특성 변화를 초래하여 기능성을 증대 시킬 수 있음을 확인하였고, 추후 긍정적 영향을 미칠 수 있는 천연소재로서 산업적 활용이 가능할 것이라 생각된다.

Statistical Optimization of Medium Components for Milk-Clotting Enzyme Production by Bacillus amyloliquefaciens D4 Using Wheat Bran-an Agro-Industry Waste

  • In this paper, two statistical methods were applied to optimize medium components to improve the production of the milk-clotting enzyme by Bacillus amyloliquefaciens D4. First, wheat bran juice, skim milk powder, and $Na_2HPO_4$ were shown to have significant effects on D4 enzyme production using the Plackett-Burman experimental design. Subsequently, an optimal medium was obtained using the Box-Behnken method, which consisted of 3.31 g/l of skim milk powder, 5.0 g/l of sucrose, 0.1 g/l of $FeSO_4{\cdot}7H_2O$, 0.1 g/l of $MgSO_4{\cdot}7H_2O$, 0.1 g/l of $MnSO_4{\cdot}2H_2O$, 0.1 g/l of $ZnSO_4{\cdot}7H_2O$, 1.52 g/l of $Na_2HPO_4$, and 172.45 g/l of wheat bran juice. With this optimal medium, the milk-clotting enzyme production was remarkably enhanced. The milk-clotting enzyme activity reached 3,326.7 SU/ml after incubation of 48 h, which was 1.76-fold higher than that of the basic medium, showing that the Plackett-Burman design and Box-Behnken response surface method are effective to optimize medium components, and B. amyloliquefaciens D4 possessed a high rennet-producing capacity in the optimal medium.

The Impact of Oil Palm Farming on Household Income and Expenditure in Indonesia

  • Indonesia is the largest exporter of palm oil in the world. The province of West Sulawesi is the second-largest palm oil producer in Indonesia. This study examines the contributions of oil palm farming to total household income and the factors affecting the household expenditure of oil palm smallholders in West Sulawesi, Indonesia. This study also identifies the problems related to oil palm production in the province. Primary data were collected from 174 oil palm smallholders using a standardized questionnaire in the Lariang sub-district, Pasangkayu, West Sulawesi, Indonesia. Several statistical tools were employed to analyze the data. The study estimated the average household income of the smallholders at IDR 30,417,441 per year, out of which 85,8% comes from oil palm farming, followed by non-oil palm farming (8%) and off farming (6.2%). On the other hand, the average household expenditure was found to be IDR 23,476,069 per year which 66% goes for food consumption and 34% for non-food consumption. The findings revealed that household expenditure of the oil palm smallholders is strongly and positively affected by a number of factors such as household income, education level, family size, earning members in the family, number of children attending school, and amount of credit taken by the household.

Lactic Acid Bacteria from Gamecock and Goat Originating from Phitsanulok, Thailand: Isolation, Identification, Technological Properties and Probiotic Potential

  • From independent swab samples of the cloaca of indigenous gamecocks (CIG), anus of healthy baby goats (AHG), and vagina of goats (VG) originating from Phitsanulok, Thailand, a total of 263 isolates of lactic acid bacteria (LAB) were collected. Only three isolates, designated C707, G502, and V202, isolated from CIG, AHG, and VG, respectively, exhibited an excellent inhibitory zone diameter against foodborne pathogenic bacteria when evaluated by agar spot test. Isolates C707 and G502 were identified as Enterococcus faecium, whereas V202 was identified as Pediococcus acidilactici, based on 16S rRNA sequence analysis. When foodborne pathogenic bacteria were co-cultured with chosen LAB in mixed BHI-MRS broth at 39℃, their growth was suppressed. These LAB were found to be capable of surviving in simulated stomach conditions. Only the isolate G502 was able to survive in the conditions of simulated intestinal juice. This research suggests that selected LAB could be used as a food/feed supplement to reduce foodborne pathogenic bacteria and improve the safety of animal-based food or feed.

Comparative Study on the Nutritional Value of Pidan and Salted Duck Egg

  • Pidan and salted duck eggs are of nutritional rich alternative duck egg products which are predominantly consumed in China, Thailand, South Korea and other Chinese migrated countries. Both eggs are rich in proteins, lipids, unsaturated fatty acids and minerals. A Pidan whole egg contains 13.1% of protein, 10.7% of fat, 2.25% of carbohydrate and 2.3% of ash, whereas the salted duck egg contains 14% of protein, 16.6% of fat, 4.1% of carbohydrate and 7.5% of ash. The fresh duck egg contains a range of 9.30-11.80% of protein, 11.40-13.52% of fat, 1.50-1.74% of sugar and 1.10-1.17% of ash. Proteins, lipids, and ash contents are found to be greatly enhanced during the pickling and salting process of pidan and salted duck eggs. However, the alkaline induced aggregation of pidan leads to degradation and subsequent generation of free peptides and amino acids. Very few amino acids are found to be lost during the pickling and storage. However, no such losses of amino acids are reported in salted duck eggs during the salting process of 14 d. Phospholipids and cholesterol contents are lower in pidan oil and salted duck egg yolk oil. Thus, the pidan and salted duck eggs are nutritionally rich alternatives of duck egg products which will benefit the human health during consumption.
