밤(Castanea pubinervis schneid) 가공(加工)에 관(關)한 연구(硏究) 제1보 밤의 가공(加工) 적성(適性) 및 유색(有色) 가공품(加工品) 개발(開發)을 중심(中心)으로 (Studies on the Processing of Chestnut (Castanea pubinervis Schneid) Part 1. Trials on the Raw Material Adaptability for Processing and Colored Products Development)

  • 밤가공품(加工品)의 개발(開發) 및 이의 공업화(工業化) 가능성(可能性)을 연구(硏究)하기 위(爲)하여 밤의 품종(品種) "단택", "축파"를 포함(包含)한 14개종(個種)과 장기저장(長期貯藏)밤에 대(對)한 가공적성(加工適性)을 검토(檢討)하는 한편 실용적(實用的)인 유색가공품(有色加工品)의 가공방법(加工方法)에 대(對)한 일련(一連)의 시험(試驗)을 실시(實施)한 바 그 결과(結果)는 다음과 같다. 가) 원료(原料)밤의 개체종(個體種)의 범위(範圍)는 $11{\sim}18g$로서 일본(日本)밤의 $15{\sim}37g$에 비(比)하면 적은 편이며 밤의 크기가 $25{\sim}30g$가 좋은 것으로 되어있는 Marronglaces의 제조(製造)에는 적합(適合)치 못하였다. 과육변색(果肉變色)의 주요소(主要素)인 tannin에 의(依)한 발색현상(發色現象)은 품종별(品種別)로 다르며 "축파", "유마" 등(等)이 가장 심(甚)하고 "다압B"같은 품종(品種)은 거의 발색(發色)치 않아 감로자(甘露煮) 등(等)의 가공(加工)에 적합(適合)할 것으로 기대(期待)된다. 나) 밤전분(澱粉)의 성상(性狀)도 품종별(品種別)로 약간씩의 차이(差異)가 있으며 감자전분(澱粉)에 비(比)하면 입자(粒子)의 크기가 $1/4{\sim}1/9$정도(程度)이고 호화온도(糊化溫度)는 감자전분(澱粉) $67^{\circ}C$에 비(比)하여 밤전분(澱粉)은 $73^{\circ}C$로서 높은 편(便)이었다. 밤과육(果肉)의 외곽(外郭)에는 무전분층(無澱粉層)이 있으며 이것이 가공도중(加工途中) 층리현상(層離現象)을 가져와 외관(外觀)을 손상(損傷)케 하고 설탕 syrup통조림의 경우 즙액(汁液)을 혼탁(混濁)케 할 우려(憂慮)가 있다. 한편 장기저장(長期貯藏)밤은 무전분층(無澱粉層)이 중앙(中央)에 형성(形成)되고 외곽(外郭)은 비교적(比較的) 균일(均一)하게 분포(分布)되어 있으며 전술(前述)한 층리현상(層離現象)은 심(甚)하지 않았다. 다) 유색제품(有色製品)을 위(爲)한 박피방법(剝皮方法)으로서는 열(熱)에 의(依)한 배초방식(焙焦方式)을 시험(試驗)한 결과(結果) 1 batch 처리(處理)에 소요(所要)되는 시간(時間)은 밤의 크기에 따라 다르며 밤의 개체종(個體種) 평균(平均) 11.7g 및 23.3g의 것으로 시험(試驗)한 결과(結果) 배초소요시간(焙焦所要時間)이 각각(各各) 1분(分) 50초(秒) 및 3분(分) 10초(秒)가 소요(所要)되었다. 박피가능률(剝皮可能率)은 적은 것이 100%, 큰 것이 98.5%였으며 저장(貯藏)밤과 수확후(收穫後)의 밤의 박피능률(剝皮能率)에는 약(約) 20%의 차(差)가 있었으며 저장(貯藏)밤의 경우가 어려웠다. 라) 단위시간당(單位時間當) 배초처리능력(焙焦處理能力)은 배초처리진동식(焙焦處理振動飾)의 반경(半徑)의 자승(自乘)에 비례(比例)하며 그 처리능력(處理能力) y와 진동식(振動飾)의 반경(半徑) x와의 사이에는 $y=2.45(x-4)^2$의 관계(關係)가 성립(成立)되며 동일기계(同一機械)로서 진동식(振動飾)의 반경(半徑)만 조절(調節)하면 그 능력(能力)의 신축성(伸縮性)이 비교적(比較的) 크다.

농산식품 안전성에 대한 생산자의 인식 및 정책인지도 (Producers' Perceptions of Agricultural Food Safety and Policy)

  • Recent trends of global food production, processing, distribution and preparation under free trade circumstance are creating an increase in common' concerns about food safety. It is important that farmers improve agricultural products/food safety for satisfying consumer needs and health. Cognizant to the situation, this study was conducted to analyze how the Producers gather information, and determine their awareness about agricultural Products safety using a safety Questionnaire. The Questionnaire was given to 500 farmers who cultivate rice, fruit trees, vegetables, and other crops from September through October 2005. More than half of the producers felt concerns about the agricultural products/foods safety. Uneasiness of the producers was higher amongst those who were younger and earned a higher income. Pesticides and zoonosis (BSE AI, etc.) emerged as the main risk factors causing concerns among the greatest number of producers. Producers had a positive opinion of the effects and perception of food safety, but no opinion of the activity of government. The producers showed a high level of understanding of the Country of Origin Labeling System (88.2%), the quality certification system of agricultural and livestock products (71.9%), and the raising system of environment-friendly agriculture (72.7%). However, their level of understanding of the GAP (59.3%) and the Traceability System (22.8%) was still low. To effectively implement these policies, awareness of producers who are the beneficiaries of the above policies has to be enhanced. Therefore, the safety information should be provided at a more appropriate time and should be easier to understand.

농산물 유통 정보화를 위한 공급사슬경영 프로세스 모델링 (A Supply Chain Management Process Modeling for an Agriculture Marketing Information System)

  • A supply chain is a network of facilities and distribution options that performs the functions of procurement of materials, transformation of these materials into intermediate and finished products, and the distribution of these finished products to customers. SCM(Supp1y Chain Management), by definition, encompasses all activities associated with moving goods, from the raw materials stage through to the end user. It includes source and procurement, production scheduling, order processing, inventory management, transportation, warehousing, and customer service. Importantly, it encompasses the information systems used to monitor these activities. In this paper, the present situation and problems of marketing process in Korean agricultural environments were reviewed through a systematic methodology, and then we proposed a new business process for solving these problems by appling a supply chain management. We expect this supply chain management system applied to agricultural marketing process can improve significantly the rationality and transparency of Korean agricultural marketing structure.

  • 농협 중앙회 소속 조합단위들은 지역 농산물의 수매량을 늘리기 위한 목적으로 가공공장을 설립하였으나, 각 공장들이 개별조직의 개념으로 운영되어 영세성을 면하지 못하고 있고, 일반 기업체의 제품과의 경쟁력이 점점 상실되는 상황에 처해 있다. 이러한 상황에서 농협 중앙회는 농판매대행센타의 설립의 추진을 통하여 농협 조합단위에서 운영하고 있는 가공공장들의 판매체계를 간소화하고 유통경로의 체계화를 추진하고 있다. 본 보고서에서는 농협 중앙회가 판매 대행센타의 설립을 추진하게 된 배경 및 추진 단계를 소개하고 판매대행센타의 설립 추진시 예상되는 문제점 및 해결방안을 점검하였다. 특히 농협은 비영리단체이기 때문에 일반 기업과는 다른 여러 가지 조직적인 문제점을 안고있는데, 비영리단체에서도 마케팅 개념에 입각한 판매체계 및 유통경로의 체계화 추진이 가능함을 잘 보여주고 있다.

  • APC 지정시설과 APC 미지정시설의 선별대와 작업자, 공중낙하균을 대상으로 하여 미생물 오염도를 비교해 보았다. 그 결과 선별대의 경우 일반세균과 대장균군 모두 높은 수준으로 오염되어 있었고 S. aureus와 Salmonella도 검출되었다. 특히 모든 시료에서 S. aureus 의 오염이 매우 높아 제품으로의 직접적인 교차 오염이 우려되었다. 이와 같이 APC 지정시설과 APC 미지정시설간의 미생물 오염도 차이가 거의 없는 것은 기존의 APC 시설이 미생물학적 개념이 없이 단순히 저장의 용도로만 설치되었기 때문인 것으로 생각된다. 하지만 GAP제도를 도입 운영하기 위하여 APC 시설은 단순한 농산물 저장의 기능뿐만 아니라 2차 오염이 발생할 수 없는 구조를 갖추어 위생적인 선별 및 유통이 이루어져야 하고, GAP 운영의 연장선에서 관리 운영해야 할 것 이다. 아울러 일정한 기간마다 시설에 대한 위해요소 분석을 하여 APC시설의 미생물학적 측면에서의 적절한 유지, 보관 여부를 모니터링 하고, 그 결과를 문서화 하여야 할 것이다.

Identification of Association between Supply of Pork and Production of Meat Products in Korea by Canonical Correlation Analysis

  • To identify correlation between fresh meat and processed meat products, we performed canonical correlation analysis (CCA) to predict the relationship between pork supply and meat product production in Korea. Results of CCA showed a canonical correlation of 0.8576 in the first canonical pair (p<0.01). The production of meat products showed the highest correlation with pork import but the lowest correlation with the production of domestic pork. Although Korean consumer preferred meat products produced by fresh domestic pork, inexpensively imported pork with high share in meat products was supplied in the market. Therefore, securing domestically produced raw meat is important for expanding consumption of domestic meat products. Results of this study suggest that meat processor and pig producer can achieve the $6^{th}$ industrialization by combining the production of raw pork materials, meat processing, and sales service.

Effect of Postmortem Phases on Lamb Meat Quality: A Physicochemical, Microstructural and Water Mobility Approach

  • To investigate the effect of postmortem phases on lamb meat quality, the physicochemical quality, microstructure and water mobility of oyster cut, short loin, knuckle and silverside muscles from Small-Tail Han sheep were evaluated in the pre-rigor, rigor mortis and post-rigor phases. Pre-rigor lamb meat had higher pH and water holding capacity (WHC), whereas lower CIE L*, b*, hue angle values than rigor mortis and post-rigor meat (p<0.05). The Warner-Bratzler shear force (WBSF) values were higher in rigor mortis short loin and silverside than their pre-rigor and post-rigor counterparts, pre-rigor short loin had lower WBSF value than its post-rigor counterpart (p<0.05). Muscle fibers shrank laterally and longitudinally during the onset of rigor mortis. Rigor mortis and postrigor lamb meat exhibited wide I-bands, dark A-bands, short sarcomeres and large inter-myofibrillar spaces. The shift of immobilized water to free water and repulsion from the intra-myofibrillar space to the extracellular space result in the increase of water loss in rigor mortis and post-rigor lamb meat. The results of the principal component analysis (PCA) indicated that rigor mortis and post-rigor lamb meat had similar quality properties but different from pre-rigor lamb meat. In conclusion, the lamb meat in the pre-rigor phase had good tenderness, color and WHC. The results of this research could provide some theoretical references for lamb meat production and processing.

RECOGNITION ALGORITHM OF DRIED OAK MUSHROOM GRADINGS USING GRAY LEVEL IMAGES

  • Dried oak mushroom have complex and various visual features. Grading and sorting of dried oak mushrooms has been done by the human expert. Though actions involved in human grading looked simple, a decision making underneath the simple action comes from the result of the complex neural processing of the visual image. Through processing details involved in human visual recognition has not been fully investigated yet, it might say human can recognize objects via one of three ways such as extracting specific features or just image itself without extracting those features or in a combined manner. In most cases, extracting some special quantitative features from the camera image requires complex algorithms and processing of the gray level image requires the heavy computing load. This fact can be worse especially in dealing with nonuniform, irregular and fuzzy shaped agricultural products, resulting in poor performance because of the sensitiveness to the crisp criteria or specific ules set up by algorithms. Also restriction of the real time processing often forces to use binary segmentation but in that case some important information of the object can be lost. In this paper, the neuro net based real time recognition algorithm was proposed without extracting any visual feature but using only the directly captured raw gray images. Specially formated adaptable size of grids was proposed for the network input. The compensation of illumination was also done to accomodate the variable lighting environment. The proposed grading scheme showed very successful results.

의사결정나무분석법을 활용한 6차산업 유형별 산업적 기능결합 요인탐색 (Exploring Industrial Function Combining Factors for Each Type in the 6th Industry Based on Decision Tree Analysis)

  • This study aims to identify the characteristics of businesses influencing the choice of their type in the 6th industry and analyze how they work. This study analyzed data of 752 businesses certified as belonging to the 6th industry in 2015 through the classification and regression tree (CART) algorithm in decision tree analysis. The results of analysis showed that the type of agricultural product processing, region, the type of service, and the production percentage in a province affected a choice of the type. The most important variable that impacted how businesses in the 6th industry chose their type was the type of agricultural product processing, and if a business produced simple agricultural products, it was likely to specialize into $1st^*2nd$ or $1st^*3rd$. Access to large consumption areas was a critical factor in the growth of 2nd and 3rd industrial functions. These findings would contribute to establishing a model to develop the 6th industry and empirically demonstrate the importance of access to large consumption areas for agricultural businesses and rural tourism.

  • The red ginseng is very popular as a health food. It has been manufactured with raw ginseng by the conventional method. But, the yield of the heaven grade ginseng (the best quality red ginseng) among the whole products is around 5-7%, Therefore, the yield should be improved in order to increase economic returns. In this study, a new model of drying system was developed to improve the yield of heaven grade ginseng from 7% to 15% or more. For this system, temperature and relative humidity were controlled by the feedback control system, and a solenoid valve for steam supply and other variables were controlled by the PC. The special features of this system developed are an image processing system for monitoring the red ginseng during the drying process in the drying chamber, and a cylindrical porous tray for holding ginseng that is rotating with the speed of 0-10rpm in the drying chamber and makes uniform drying of red ginseng possible.
