Changes in Physicochemical Properties and by the Aging Conditions of Garlic (숙성 조건 변화에 의한 흑마늘의 이화학적 특성변화)

  • When garlic is aged for a certain period of time while maintaining proper humidity, it causes a browning reaction by its own ingredients and enzymes. In this study, the physicochemical properties were analyzed by varying the temperature conditions for aging garlic. It was found that about 20% of the weight of garlic was reduced through the aging process. During the aging process, both samples showed the highest water content on the 10th day of aging, and the water content of the two samples was similar after the aging was completed. In the analysis of total sugar content change, AG1 (22.0±0.7 vs 21.4±0.6) showed a significantly higher sugar content on the 10th day of aging, but showed a tendency to gradually decrease thereafter, whereas AG2 showed a steady increase in sugar content during the aging process (18.7 < 21.4 < 21.7 < 22.3 < 23.7). The pH change that occurred during the aging process showed the most pH change on the 10th day. In AG1, the pH gradually decreased as the aging period increased, whereas in AG2, the pH increased significantly after the 10th day. In the analysis of browning, AG1 increased sharply on the 10th day and maintained the state, and AG2 showed a significant increase in browning according to the aging process. In conclusion, based on the results of this study, if various ripening temperature conditions are set, it is judged that it will play a positive role in improving the productivity of black garlic.

Degradation and Failure Analysis of Lead-free Silver Electrodes with Thermal Cycling (무연계 Ag 외부전극재의 열충격에 따른 열화특성과 고장해석)

  • Silver pastes as the outer electrodes have been prepared using Pb-free glass frits with different content of $Bi_2O_3$ and the effects of glass composition on the degradation behaviors of the Ag electrodes were investigated using the change of adhesion between Ag electrode and alumina substrate with thermal cycle stress. Low adhesion and high surface resistance were observed in Ag electrode using glass frit with a $Bi_2O_3$ content of 60 wt%, owing to the open microstructure formed at the firing temperature of $600^{\circ}C$. When the $Bi_2O_3$ was increased to 80 wt% in the glass frit, the Ag electrodes had a dense microstructure with high adhesion and a low surface resistance. Delamination of the Ag electrodes was a major failure mode under thermal cycle stress and this was attributed to residual stress due to the thermal expansion mismatch between the Ag electrode and the alumina substrate.

  • In the present work, we have investigated the combined effect of high-energy milling and Agb addition on microstructure and superconducting properties for Bi-2223/Ag. tape. The addition of siver plays an important role in enhancing liquid phase formation, Resulting in densification and cracking during solidification. Further study is needed for the optimization of Ag content and heat-treatment which can reduce the cracking.

Preparation and Optical Properties of Ag-Coated Cu Powder by Dropping Method of Coating Agent (피복제 적하법에 의한 Ag 피복 Cu 미립자의 제조 및 광학적 특성)

  • Ag-coated Cu particles were prepared by dropping method of coating agent and were evaluated by scanning electron microscope and color difference meter. The shape of Cu particles having obvious crystal plan and edge was changed spherically according to the increase of Ag coating amount. When the Ag coating amount was 50 wt% to Cu particles, the whiteness of Ag-coated Cu particles was almost similar to that of pure Ag particles. Adding $NH_4$OH in reductant solution could increase effectively the whiteness of the Ag-coated particles. The Ag-coated particles having the highest whiteness was obtained when the content of hydrazine in reductant solution was 0.48 M.

  • Ag thick-film has usually been used for the front electrode of Si solar cells with the outstanding electrical properties. Ag paste consists of Ag powers, vehicles, frits and additives. Ag paste has broadly been screen-printed on the front side of Si wafer with the merits of low cost and simplicity. The optimal contact formation between Ag electrodes and Si wafer in the front electrode during a fast firing has been considered as the key factor for high efficiency. Although the content of frit in Ag pastes is less than 5wt%, it can profoundly influence the contact formation between Ag and Si under the fast firing. In this study, the effects of lead-free frits on the contacts between Ag and Si were studied with the thermal properties and compositions of various frits. Our experimental results showed that the electrical properties of cells were related to the interface structures between Ag and Si. It was found that current path of electrons from Si to Ag would be possible through the tunneling mechanism assisted by tens of nano-Ag recrystals on $n^+$ emitter as well as Ag recrystals penetrated into $n^+$ emitter layers. These preliminary studies will be helpful for designing the proper frits for the Ag pastes with considering the properties of various Si wafers.

Effect of Aged and Fermented Garlic Extracts as Natural Antioxidants on Lipid Oxidation in Pork Patties

  • The aim of this study was to investigate the natural antioxidant activity of raw garlic (RG), aged black garlic (AG), and garlic fermented with Bacillus subtilis (FG) extracts on pork patty lipid oxidation throughout refrigerated storage. The total polyphenol, total flavonoid content, 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activity of three different types of garlic extracts were measured. The total phenolic and flavonoid content of AG was significantly higher than that of FG and RG; FG also showed a significantly higher total phenolic content than that of RG (p<0.05). The DPPH and ABTS radical scavenging activity of AG and FG was significantly higher than that of RG and that of AG was significantly higher than that of FG (p<0.05). To investigate the effect of processed garlic extracts on pork patty lipid oxidation, freeze-dried extracts of RG, FG, and AG were added to the patties at levels of 0.5% (w/w). Patties containing 0.01% (w/w) ascorbic acid (AA) and patties without treatment (CON) were compared with patties containing garlic extracts. The pH value, 2-thiobarbituric acid reactive substances value, and volatile basic nitrogen value of pork patties containing AG and FG extracts were significantly decreased compared to the other groups (CON, AA, and RG; p<0.05). Taken together, these results suggest that AG and FG extracts possess strong antioxidative activity and can serve as natural antioxidative additives to prevent pork patty lipid oxidation.

PL and TL behaviors of Ag-doped SnO2 nanoparticles: effects of thermal annealing and Ag concentration

  • In this article, we present the effects of Ag doping and after-growth thermal annealing on the photoluminescence (PL) and thermoluminescence (TL) behaviors of $SnO_2$ nanoparticles. $SnO_2$ nanoparticles of 4-7 nm size range containing different Ag contents were synthesized by hydrothermal process. It has been observed that the after-growth thermal annealing process enhances the crystallite size and stabilizes the TL emissions of $SnO_2$ nanostructures. Incorporated Ag probably occupies the interstitial sites of the $SnO_2$ lattice, affecting drastically their emission behaviors on thermal annealing. Both the TL response and dose-linearity of the $SnO_2$ nanoparticles improve on 1.0% Ag doping, and subsequent thermal annealing. However, a higher Ag content causes the formation of Ag clusters, reducing both the TL and PL responses of the nanoparticles.

[ $Ag^+$ ]-Chitosan Complex Membranes for Propylene/Propane Separation

  • We have prepared new water-swollen chitosan-$Ag^+$ complex membranes and studied their permeation and separation behavior for propylene and propane gases. The $Ag^+$ containing chitosan complex membranes were prepared from chitosan and $AgNO_3$ aqueous solution. The $AgNO_3$ and water content in the membrane were controlled by adjusting $AgNO_3$ concentration of casting solution. The permeation properties of propylene and propane were investigated as a function of $AgNO_3$ concentration, and various operation conditions. High permeability of above 17 barrer and high selectivity of above 170 could be obtained with the membranes prepared from 3 M $AgNO_3$ aqueous solution. Periodic regeneration test confirmed these membranes could be very useful for the separation of propylene/propane and other olefin/paraffin separation.

The Influence of (Pd+Ag) Additions on the Glass Forming Ability of Zr-Al-Cu-Ni based Alloys (Zr-Al-Cu-Ni계 합금의 비정질형성능에 미치는 Pd과 Ag 복합첨가의 영향)

  • The influence of Pd and Ag additions on the thermal stability, the glass forming ability (GFA) and mechanical property of $Zr_{55}Al_{10}Cu_{20}Ni_{10}Pb_{(5-x)}Ag_x$ (x = $0{\sim}5at%$) alloys obtained by melt spun and injection casting method have been investigated by using of X-ray diffraction, thermal analysis (DTA, DSC) and micro-Vickers hardness(Hv) testing. The thermal properties of melt-spun $Zr_{55}Al_{10}Cu_{20}Ni_{10}Pb_{(5-x)}Ag_x$ (x = $0{\sim}5at%$) alloys exhibit a supercooled liquid region(${\Delta}T_x$) exceeding 91 K before crystallization. The largest ${\Delta}T_x$ reaches as large as 126 K for the $Zr_{55}Al_{10}Cu_{20}Ni_{10}Pb_5$ alloy. The reduced glass transition temperature, $T_{rg}$ increased with increasing Ag content. The largest $T_{rg}$ is obtained for the $Zr_{55}Al_{10}Cu_{10}Ni_{10}Ag_5$ alloy. The $Zr_{55}Al_{10}Cu_{10}Ni_{10}Ag_5$ bulk amorphous alloy rod with 3 mm in diameter was fabricated by injection casting. Hv increased with increasing Ag content and the largest value was obtained for the $Zr_{55}Al_{10}Cu_{10}Ni_{10}Ag_5$ bulk amorphous alloy.
